Take gram flour in a bowl. Add whole wheat flour, semolina, dried fenugreek leaves, turmeric powder, red chilli powder, garam masala powder, cumin powder, coriander powder, salt, sugar and crushed black peppercorns and hot oil and mix well. 2. Add 1 cup water little by little and knead well to form stiff dough. Set aside for 10-15 minutes. 3. Divide the dough into equal portions and roll out into a semi thick roundel. Sukode | सुकोडे | उडीद डाळीचे वडे कसे बनवायचे | Urad Dal Fritters | Sanjeev Kapoor Khazana

Chai ke saath khaane ke liye banae Maharashtrian special fritters made using urad dal and some handful of ingredients. Serve this garma-garam puri like fun fritter to your loved ones today. SUKODE Ingredients 1 cup split skinless black gram (dhuli urad dal), washed, soaked for 3-4 hours and drained ½ cup whole wheat flour (gehun ka atta) Salt to taste 1 tsp coriander powder 1 tsp cumin powder 1 tsp red chilli powder ½ tsp crushed black peppercorns ½ tsp turmeric powder 6-8 curry leaves, thinly shredded 2 tbsps chopped fresh coriander leaves Oil for deep frying Coconut chutney to serve Method 1. Put the soaked split skinless black gram in a mixer jar. Add salt and blend to a fine thick paste. Add some water if required. 2. Transfer the paste into a large bowl. Add coriander powder, cumin powder, red chilli powder, crushed black peppercorns, turmeric powder, curry leaves, coriander and whole wheat flour and mix till well combined. Continue to beat the mixture with the help of your hand for 5 minutes or till the batter turns light and fluffy. 3. Take a small sheet of plastic, apply some water on it and place a portion of the mixture. Flatten it into a disc. 4. Heat sufficient oil in a kadai. Gently slide in the discs a few at a time and deep fry till golden brown and crisp. Drain on an absorbent paper. 5. Arrange on a serving plate and serve hot with coconut chutney. Vatali Dal | वाटली दाल | चटपटीत वाटली डाळ | Dal Recipes | Sanjeev Kapoor Khazana

A simply delicious Maharashtrian recipe made using bengal gram or chana dal. Usually prepared as tea time snack, it requires minimum efforts and gives 100% satisfaction. VATALI DAL Ingredients 1½ cups Bengal gram, soaked for 3-4 hours, and drained 3-4 green chillies, stemmed 2-3 tbsps oil 1 tsp mustard seeds 1 tsp cumin seeds ½ tsp asafoetida (hing) 10-12 curry leaves ¼ tsp turmeric powder 1 tsp red chilli powder Salt to taste 2 tbsps chopped fresh coriander leaves + for garnish ¼ cup scraped fresh coconut Method 1. Grind soaked Bengal gram and green chillies to a coarse paste. 2. Heat oil in a pan. Add mustard seeds and let them splutter. Add cumin seeds and asafoetida and mix well. 3. Add curry leaves, turmeric powder, and red chilli powder and mix well. Cook for 30 seconds. 4. Add the ground paste and mix well. Continuously stir and cook for 1-2 minutes. Add salt and mix well. Sprinkle ½ cup water, mix, cover and cook for 8-10 minutes, stirring in between every few minutes. 5. Add coriander leaves and coconut and mix well. Cook for 1-2 minutes. 6. Serve hot garnished with coriander leaves. Sri Lankan Prawns Curry | झींगा करी बनाने का तरीका | Sanjeev Kapoor Khazana

Bring some amazing Sri Lankan Prawns Curry to the table at home and make it a international cuisine day! Loaded with flavours this typical curry goes very well with some roti or even rice. SRI LANKAN PRAWNS CURRY Ingredients 16-20 medium prawns, peeled and deveined, tails intact 2 tbsps coconut oil 1 inch cinnamon stick ½ tsp fenugreek seeds 2 medium onions, sliced 1 tbsp chopped ginger 1 tbsp chopped garlic 1 tbsp chopped lemongrass 1 pandan leaf, roughly chopped 10-15 curry leaves 1 medium tomato, chopped ½ tsp turmeric powder ½ tsp red chilli powder 1 tbsp curry powder Salt to taste 2 cups prawn stock 2-3 green chillies, slit 1 cup coconut milk Crushed black peppercorns to taste Fresh coriander sprig for garnish Steamed rice for serving Method 1. Heat coconut oil in a pan. Add cinnamon, fenugreek seeds and sauté for a few seconds. 2. Add onions and sauté till golden brown. 3. Add ginger, garlic and sauté for a minute. 4. Add lemongrass, pandan leaf, curry leaves and mix well. 5. Add tomato and mix well. Cook on medium heat till soft and pulpy. 6. Add turmeric powder, red chilli powder, curry powder and salt and mix well. 7. Add prawns and mix well. Add prawn stock, green chillies and mix well. 8. Once the mixture comes to a boil, lower the heat and cook for 4-5 minutes. 9. Add coconut milk, crushed black peppercorns and mix well. Cook for 2-3 minutes. 10. Transfer in a serving bowl, garnish with coriander sprig and serve hot with steamed rice. Little Millet Khichdi | मिलेट खिचड़ी | Healthy Khichdi | #MilletKhazana | Sanjeev Kapoor Khazana

Our comfort buddy, khichdi, has now ultra heartwarming, tasty and healthy because of little millet. Serve it garma-garam along with some achar and papad on the side. LITTLE MILLET KHICHDI Ingredients 1½ cups little millet ¼ cup soaked split red lentils (masoor dal) ¼ cup soaked split pigeon peas (toovar dal) ¼ cup soaked split skinless green gram (dhuli moong dal) ¼ tsp fenugreek seeds ½ tsp turmeric powder Salt to taste 2 tbsps ghee + to drizzle 1 tsp cumin seeds 1 tbsp crushed ginger-garlic 2-3 green chillies, slit 8-10 curry leaves 1 medium onion, chopped 1 medium tomato, chopped Salt to taste 1 tsp red chilli powder ¼ tsp turmeric powder 2 tbsps chopped fresh coriander leaves Fresh coriander sprig for garnish Method 1. Take little millet in a bowl. Add sufficient water and wash well 2 times. 2. Add more water and set aside for 15-20 minutes. 3. Drain the water and transfer in a pressure cooker. Add red lentils, pigeon peas, split skinless green gram, fenugreek seeds, turmeric powder, salt and 3 cups water and mix well. 4. Cover with the lid and cook on medium heat till pressure is released 2-3 times. Open the lid once the pressure settles completely. 5. Heat ghee in a non-stick pan. Add cumin seeds and once they start to change the colour, add crushed ginger-garlic and sauté for 30 seconds. 6. Add green chillies, curry leaves and mix well. 7. Add onion and sauté till golden brown. 8. Add tomato, salt and cook on medium heat till the tomatoes turn pulpy. 9. Add red chilli powder, turmeric powder and mix well. 10. Add cooked millet mixture, 1 cup water and mix well. Cook for 3-4 minutes. 11. Add coriander and mix well. 12. Transfer in a serving bowl, drizzle some ghee, garnish with coriander sprig and serve hot. Chakli ke bina Diwali ki celebration shuru nahi hoti, toh iss saal banao dhamakedaar ragi chakli. Festive snack mein millets matlab double the fun and frolic. RAGI CHAKLI Ingredients ¾ cup finger millet (ragi) flour 2 tbsps butter Salt to taste 1 tsp cumin seeds ¾ cup fine semolina (suji) 1 tbsp oil +for greasing + for deep frying Method 1. Heat a nonstick pan. Add 1½ cups water and once it comes to a boil, add butter, cumin seeds and allow the butter to melt. 2. Add semolina and finger millet flour and mix well. Cover and cook for 4-5 minutes. 3. Transfer the mixture in a parat and add 1 tbsp oil and knead well to form a smooth dough. 4. Grease a chakli press and transfer the mixture in it which is fitted with chakli attachment. Press small chaklis on the worktop. 5. Heat sufficient oil in a kadai and slide the prepared chaklis and deep fry till crisp. 6. Drain on absorbent paper and allow to cool. 7. Serve. Heat a nonstick pan. Add puffed finger millet, puffed sorghum, puffed pearl millet, pressed rice and puffed wheat and dry roast on medium heat for 6-8 minutes. Transfer in a plate and set aside. 2. HEALTHY TEX MEX SALAD Ingredients Salad 1 cup cooked quinoa ½ cup boiled kidney beans ¼ cup boiled sweet corn kernels 1 small red capsicum, cut into triangles 1 small green capsicum, cut into triangles ¼ cup chopped purple cabbage 5 -6 assorted baby tomatoes, cut into wedges Romaine lettuce leaves as required Baked nacho chips to serve Avocado slices for garnish Dressing 3 tbsps olive oil 2 tsps honey Salt to taste Crushed black peppercorns to taste ¼ tsp smoked paprika powder ¼ tsp paprika powder 1 lemon 1 tsp fried garlic Method 1. To make the dressing, take olive oil in a small jar, add honey, salt, crushed black peppercorns, smoked paprika powder, paprika powder, squeeze the juice of lemon directly into it and add the fried garlic. Cover the jar with a lid and shake till well combined. 2. To make the salad, take quinoa in a large bowl, add kidney beans, corn kernels, red capsicum, green capsicum, purple cabbage, baby tomatoes, drizzle the dressing and mix well. 3. Arrange the lettuce over a serving plate, place the salad over it. Arrange some nacho chips and garnish with avocado slices. Serve immediately. ROTLI NU SHAK Ingredients 5-6 leftover rotis 2 tbsps oil 1 tsp mustard seeds 3-4 green chillies, chopped 1½ tbsps finely chopped garlic 3 medium onions, chopped Salt to taste 2 tsps red chilli powder 1½ tbsps coriander powder 1½ tsps cumin powder 2½ cups buttermilk 1 tsp sugar 2 tbsps chopped fresh coriander leaves Fresh coriander sprigs for garnish Method 1. Break the rotis into small pieces in a large bowl. Add mustard seeds and let them splutter. Add green chillies and garlic and mix well. Cook till golden brown. 2. Add onions and mix well. Cook till translucent. Add salt and mix well. Cook for 1-2 minutes. 3. Add red chilli powder, coriander powder, and mix well. Cook for 1 minute. Add cumin powder and sauté for a few seconds. 4. Add the roti pieces and mix till well combined. Add buttermilk and mix. Cook till the mixture comes to a boil. Add sugar and mix well. Cover and cook for 3-4 minutes. 5. Add coriander leaves and mix. 6. Serve hot garnished with coriander sprig. Heat ghee in a pan. Add cumin seeds and let them change colour. Add green chillies and baby potatoes and sauté for 1-2 minutes. Add salt, turmeric powder and mix well. 2. A simple spongy dosa made using Little Millet, brings along a lot of health benefits. Besides, this savoury South Indian pancake taste absolutely yummy when served with Chutney or Sambar! LITTLE MILLET SET DOSA Ingredients 1 cup little millet, washed, soaked for 6-8 hours, and drained ½ cup split skinless black gram (dhuli urad dal), washed, soaked for 6-8 hours, and drained ½ cup pressed rice (poha), washed ½ tsp fenugreek seeds (methi dana) Salt to taste Oil for greasing White butter to serve Coconut chutney to serve Molagapodi with sesame oil to serve Method 1. Transfer little millet, split skinless black gram, pressed rice and fenugreek seeds in a grinder jar, add ¾ cup water and grind to fine paste. 2. Transfer in a bowl and set aside to ferment for 8-10 hours. 3. Add salt and mix well. 4. Heat a cast iron tawa. Drizzle some oil and wipe well with a kitchen towl. 5. Spread a ladleful of batter, drizzle some oil, cover and cook for 4-5 minutes. 6. Add white butter and transfer on a serving plate. 7. Serve hot with coconut chutney and molagapodi mixed with sesame oil. Mutton Pulao | मटन पुलाव बनाने का सबसे आसान तरीका | Non Veg Pulao | Sanjeev Kapoor Khazana

Satisfy your cravings with delicious Mutton Pulao, loaded with amazing flavours. It is a perfect recipe of happiness, so get cooking soon. MUTTON PULAO Ingredients 500 grams mutton, cut into 1 inch pieces on the bone and boiled with turmeric powder and whole spices 1½ cups Basmati Rice 2 tbsps oil 1 black cardamom 2 green cardamoms 1 bay leaf 1 inch cinnamon stick 2 cloves 6-8 black peppercorns 1 tsp cumin seeds 2 medium onions, sliced 1 tbsp ginger-garlic paste 1 medium tomato, sliced Salt to taste ¼ tsp turmeric powder 2¼ cups mutton stock Chopped fresh coriander leaves to sprinkle Burani raita for serving Method 1. Transfer Basmati Rice in a bowl. Wash thoroughly 2-3 times. Add sufficient water and soak for 30 minutes. Drain the water. 2. Heat oil in a nonstick pan. Add black cardamom, green cardamoms, bay leaf, cinnamon, cloves, cumin seeds and sauté till fragrant. 3. Add onions and sauté till golden brown. Add ginger-garlic paste and sauté for 30 seconds. 4. Add tomato, salt and sauté for 2-3 minutes. Add turmeric powder and mix well. 5. Add boiled mutton, rice and mix well. Add mutton stock and mix. 6. Once the mixture comes to a boil, cover and cook for 10 minutes. Set aside for 10 minutes. 7. Transfer in a serving plate, sprinkle coriander and serve hot with burani raita. Jhatpat banane wali chutney chahiye, toh try this fun kanda papad chutney. Serve as a side dish for a refreshing uplift to your regular meal. KANDA PAPAD CHUTNEY Ingredients 2 medium onions (kanda), thickly sliced 6 roasted urad dal papads 10-12 garlic cloves 4 green chillies, stemmed and broken ½ cup roasted peanuts 3 tbsps oil 1 tsp cumin seeds 1 small tomato, chopped Salt to taste 2-3 tbsps chopped fresh coriander leaves Method 1. Take garlic in a mortar, add green chillies, roasted peanuts and crush coarsely with the help of a pestle. 2. Heat oil in a nonstick pan. Add cumin seeds and once they change colour, add onions and sauté till light golden. 3. Add the crushed mixture and sauté for 2-3 minutes. Add tomato and salt and sauté for a minute. 4. Khatte Meethe Aloo | खट्टे मीठे आलू | Potato Recipes | Aloo Recipes | Sanjeev Kapoor Khazana

Bring in the tingling twist to our regular aloo ki sabzi and make Khatte Meethe Aloo. Tamarind and jaggery add in that sweet and tangy flavour loved by everyone, making it a must try recipe. KHATTE MEETHE ALOO Ingredients 500 gms small potatoes, boiled and peeled 2 tsps tamarind paste 2 tsps grated jaggery 2 medium onions 2 tbsps oil ½ tsp cumin seeds 3-4 dried red chillies, halved 2 tsps ginger paste ¼ tsp turmeric powder 1 tsp coriander powder Salt to taste 1 tsp red chilli powder ¼ tsp black salt 1 fresh coriander sprig Method 1. Heat oil in a non stick pan. Finely chop onions. 2. Add cumin seeds, dried red chillies and onions to the hot oil and saute for 1 minute. 3. Add ginger paste, turmeric powder, coriander powder and saute for 1 minute more. 4. Add potatoes and mix well. Add ¼ cup water and mix. Add salt, red chilli powder, black salt, tamarind paste and ¼ cup water and mix. 5. Add jaggery and mix well. Cook for 3-4 minutes or till the potatoes are well coated with the masala. 6. PISTA CAKE Ingredients 1 cup ProV Regal California Jumbo Pistachios ¾ cup fine semolina 2 cups milk 1 cup softened butter 1¼ cups castor sugar 3 eggs 1 tsp vanilla essence ¾ cup refined flour (maida) 1 tsp baking powder 6-8 fresh cherries Sugar glaze as required Blanched and slivered ProV Regal California Jumbo Pistachios to sprinkle Method 1. Preheat the oven at 180°C. 2. Shell ProV Regal California Jumbo Pistachios. Transfer in a grinder jar, add semolina and grind to fine powder. 3. Transfer in a bowl, add milk and mix well. Set aside for 10-15 minutes. 4. Take butter in a large bowl. Add ¾ cup castor sugar and whisk till the sugar dissolves completely. 5. Break in the eggs one at a time and whisk after each addition. Add vanilla essence and whisk well. 6. Sift the refined flour and baking powder directly into it. Add the pistachios mixture and whisk till a smooth batter is formed. 7. Transfer the batter in a lined loaf tin and spread it evenly. Tap it for a few times. Place it in the preheated oven and bake for 40-45 minutes. Allow to cool and demould. 8. For topping, heat a pan. Add remaining castor sugar, ½ cup water, fresh cherries and cook for 6-8 minutes. 9. Besan aur Nariyal Sheera | बेसन और नारियल शीरा | Sheera Recipe | Dusherra | Sanjeev Kapoor Khazana

Begin your day with a sweet treat - Besan Aur Narial Sheera- which is super easy to make and tastes delicious. Enjoy it for breakfast today and then your family will ask for it every morning! BESAN AUR NARIYAL SHEERA Ingredients ¼ cup coarse gram flour (jada besan) 1 cup scraped fresh coconut (nariyal) 4 tbsps desi ghee 1 cup sugar 1¼ cup semolina (rawa / suji) 15 almonds, coarsely powdered 15 pistachios, coarsely powdered + to sprinkle 1 cup milk Method 1. Heat ghee in a deep non stick pan. 2. Heat 2½ cups water in another non stick pan. Add sugar and cook to make a syrup. 3. When ghee melts add gram flour and saute for 3-4 minutes. Add semolina and continue to saute till lightly coloured and fragrant. 4. Add hot syrup and mix well and cook, covered, on medium heat till all moisture gets absorbed. 5. Heat another non stick pan, add coconut and roast on medium heat, stirring continuously, till lightly coloured and fragrant. 6. Add almond powder and pistachio powder and continue to roast. Add this to the sheera and mix well. 7. Add milk and mix till it gets completely absorbed. 8. Transfer into a serving plate, sprinkle pistachio powder on top and serve hot. Methi Chicken Sukka | मेथी चिकन सूखा | Chicken Recipes | Sanjeev Kapoor Khazana

METHI CHICKEN SUKKHA Ingredients 3 cups fresh fenugreek leaves (methi) 750 grams chicken, cut into 2 inch pieces on the bone ½ tsp turmeric powder ½ tsp cumin powder 1 tsp red chilli powder 2 tsps coriander powder 1 tsp garam masala powder 1½ tbsps ginger-garlic-green chilli paste ½ lemon Salt to taste 2-3 tbsps mustard oil 2-3 green chillies, finely chopped 1½ tbsps finely chopped garlic 2 medium onions, sliced 2 small tomatoes, sliced Paranthe to serve Method 1. Take chicken in a large bowl, add turmeric powder, cumin powder, red chilli powder, coriander powder, garam masala powder, ginger-garlic-green chilli paste, squeeze the juice of lemon, salt, and mix till each chicken piece is coated with the masala. Set aside to marinate for 30 minutes. 2. Heat mustard oil in a non-stick kadai. Let it smoke. Add cumin seeds and let them change colour. 3. Add green chillies, and garlic and mix well. Cook for 1-2 minutes. Add onions, and salt and sauté till golden brown. 4. Add tomatoes, mix and cook till soft and pulpy. 5. Add the marinated chicken and sauté on high heat for 4-5 minutes. Add ½ cup water, mix, and cook till the mixture comes to a boil. Cover and cook on medium heat for 10-15 minutes. 6. Add fresh fenugreek leaves, mix and cook for 4-5 minutes. 7. Pancakes make for a yummy breakfast especially when made with little millet, they become an amazing breakfast recipe! Try it out this morning. LITTLE MILLET PANCAKES Ingredients 1 cup little millet flour 3 ripe bananas ½ tsp vanilla essence ½ tsp baking powder ½ tsp cinnamon powder ½ cup milk Butter as required Berry compote as required Banana slices as required Method 1. Peel and mash bananas in a bowl. 2. Add vanilla essence.. Sift little millet flour, baking powder and cinnamon powder directly in the bowl. 3. Add milk and whisk well to form smooth batter. 4. Kale Chane with Rajgira Puri | राजगिरा पूरी और काले चने | Ashtami Special | Sanjeev Kapoor Khazana

KALE CHANE WITH RAJGIRA PURI Ingredients 1½ cups black Bengal gram (kale chane), soaked overnight, drained and boiled in fresh water 1 cup amaranth (rajgira) flour 1 tbsp +1 tsp oil + for deep-frying 1 tsp cumin seeds 1 tbsp finely chopped ginger 1 tbsp coriander powder Black salt to taste ½ tsp red chilli powder ¼ cup black gram stock ½ medium potato, boiled and peeled Salt to taste Method 1. Heat 1 tbsp oil in a non-stick pan, add cumin seeds and once the seeds change colour, add ginger and sauté for ½ a minute. Add coriander powder and mix well. 2. Heat sufficient oil in a kadai. 3. Add black gram, black salt, red chilli powder and black Bengal gram stock to the pan and mix well. Cook till the black gram is done. 4. Put amaranth flour into a bowl, grate potato into it. Add salt and mix well. Add ½ cup water and knead into a soft dough. Add 1 tsp oil and knead again. 5. Divide the dough into equal portions, shape them into balls and roll out into small pooris. 6. Deep-fry pooris in hot oil till brown and crisp on both the sides. Drain on absorbent paper. 7. Transfer the chane into a serving bowl, place it on one side of the serving plate, place fried pooris on the other side and serve immediately. Coconut Moong Soup | पौष्टिक मूंग दाल कोकोनट सूप | Healthy Soup | Sanjeev Kapoor Khazana

COCONUT MOONG SOUP Ingredients 3 cups thin coconut milk ¾ cup soaked whole green gram (sabut moong) 1 tbsp ghee 1 tbsp finely chopped garlic ½ tbsp finely chopped ginger 1 medium onion, chopped 1 medium carrot, peeled and cut into small cubes ¼ cup sweetcorn kernels 1 bay leaf ½ inch cinnamon stick Salt to taste Crushed black peppercorn to taste 1 fresh red chilli, diagonally sliced 2 tbsps chopped spring onions greens Fresh coriander sprigs for garnish Method 1. Heat ghee in a nonstick deep pan, add garlic, ginger and onion and sauté till translucent. 2. Add bay leaf and cinnamon and sauté for 1-2 minutes. 3. Add the carrot, sweetcorn kernels and salt, mix and cook for 1 minute. Add the soaked green gram and mix well. 4. Stir in the thin coconut milk and 1 cup water and mix well. Add crushed black peppercorns and red chilli and mix well. 5. Bring the mixture to a boil, reduce the heat to low and cook for 10-12 minutes. 6. Add spring onion greens and mix well. 7. Transfer the soup in a serving bowl, garnish with coriander sprigs and serve hot. Eggless rice pudding recipe which tastes amazing, is often offered to the goddess as prasad. Being made with jaggery instead of sugar, this kheer wins a million hearts. GUDWALI KHEER Ingredients ½ cup rice, soaked and drained ¾ cup powdered jaggery 4 cups milk ½ tsp green cardamom powder 2 tbsps ghee 10-12 cashewnuts 2 tbsps raisins Method 1. Heat milk in a non-stick pan, add rice, mix well and cook, stirring continuously, till the rice is done. Add cardamom powder and mix well. Switch off the heat and cool down to room temperature. 2. Heat ghee in another non-stick pan, add cashewnuts and raisins and sauté till lightly browned. Transfer them into a bowl. 3. Place the 2nd pan back on heat, add powdered jaggery and ½ cup water and stir continuously till the jaggery dissolves. Switch off the heat and cool down to room temperature. 4. Add the sautéed nuts, reserving some for garnishing, to the 1st pan and mix well. Add jaggery mixture and mix well. 5. Transfer the kheer into a serving bowl, garnish with reserved nuts and serve immediately. Chaunsa Dal | घर पर बनाएं गढ़वाली चौंसा दाल | Uttarakhand Special | Sanjeev Kapoor Khazana

Uttarakhand style protein packed dal taste yummy when served alongside rice. Try this pahadi se aai hui heartwarming recipe with your family today. CHAUNSA DAL Ingredients 1 cup whole black gram (sabut urad dal) 3 tbsps mustard oil 1 tsp mustard seeds 1 tsp cumin seeds ½ tsp asafoetida (hing) 2 tbsps chopped garlic 1 tbsp chopped ginger 2 medium onions, finely chopped Salt to taste 2 medium tomatoes, finely chopped 1 tsp coriander powder 1 tsp red chilli powder ½ tsp turmeric powder 2 tbsps chopped fresh coriander leaves Slit green chillies for garnish Method 1. Dry roast the whole black gram for 4-5 minutes. Allow to cool. 2. Put the roasted gram in a grinder jar and grind to a coarse powder. 3. Heat mustard oil in a pressure cooker, let is smoke. Add mustard seeds, cumin seeds, asafoetida and mix well. Add garlic, ginger, onions, salt and sauté for 1-2 minutes. 4. Add tomatoes and mix well. Cook for 3-4 minutes. 5. Add 4 cups water and mix. Cook till it comes to a boil. 6. Add coriander powder, red chilli powder and turmeric powder and mix. Cover and cook under pressure for 3-4 whistles. 7. Open the cooker once the pressure reduces completely. Add coriander leaves and mix. 8. Serve hot garnished with slit green chillies. We have made it easy to incorporate millets in your meals and even in your desserts. So, here we brought to you little millet phirni which will blow your mind. LITTLE MILLET PHIRNI Ingredients ¾ cup little millet 3 cups milk 10-15 saffron strands + for garnish 2-3 tbsps slivered almonds 2-3 tbsps blanched and slivered pistachios + for garnish ½ tsp green cardamom powder ½ cup sugar Method 1. Take little millet in a bowl, add sufficient water and wash 2 times. 2. Add more water and set aside for 15-20 minutes. 3. Heat a non-stick pan. Add milk, saffron and cook for 4-5 minutes. 4. Drain the water from little millet and add to the pan. Cook on medium heat for 5-6 minutes. 5. Add almonds, pistachios, green cardamom powder and mix well. Cook on medium heat for 6-8 minutes. 6. Add sugar and continue to cook for 3-4 minutes more. 7. Transfer the prepared phirni in earthenware bowl, sprinkle blanched pistachios and saffron strands on top. Allow to cool. 8. Refrigerate for 1-2 hours. 9. Serve chilled. Sabudana Ladoo | नवरात्री स्पेशल साबूदाना के लड्डू | Navratri Special | Sanjeev Kapoor Khazana

Navratri ke vrat mein Sabudana inevitable hai, issi liye yeh- sabudana ladoo. These laddoos are soon going to become a regular as it's amazing. SABUDANA LADDOO Ingredients 2 cups sago (sabudana) 1 cup desiccated coconut ½ cup ghee 8-10 cashewnuts, roughly chopped 1½ cups powdered sugar ½ tsp green cardamom powder ¼ tsp nutmeg powder Method 1. Dry roast sago in a non-stick pan for 25-30 minutes or till lightly browned. Cool and grind to a fine powder 2. Dry roast desiccated coconut in another non-stick pan till fragrant. Add ground sago and roast further for a minute. 3. Heat ghee in a third non-stick pan, add cashewnuts and sauté till lightly browned. Add coconut-sago mixture and mix well. Add powdered sugar, cardamom powder and nutmeg powder and mix well. Cook for 5-7 minutes. 4. Divide the prepared mixture into equal portions and shape them into laddoos. 5. Arrange the laddoos on a serving plate and serve immediately. Transfer Pro V Regal Walnuts in a chopper and crush coarsely. 2. Heat oil in a small nonstick pan. Add garlic, onion, mushrooms, crushed walnuts, thyme sprigs and sauté for 4-5 minutes. 3. Add crushed black peppercorns, salt, paprika powder, Worcestershire sauce and cook for 2-3 minutes. Allow to cool. 4. Add dried breadcrumbs and mix well. 5. Divide the mixture into equal portions and shape into patties. 6. Heat sufficient oil in a shallow nonstick pan and shallow fry the patties till golden brown and crisp on both the sides. 7. Turai Muthiya nu Shaak | तुरिया मुठिया नु शाक | Gujarati Special | Sanjeev Kapoor Khazana

Here's a yummy Gujarathi recipe made using ridge gourd which is easy to prepare and quick to finish. Pair Turai Muthia Nu Shaak with rice or a classic rotla and enjoy. TURAI MUTHIYA NU SHAAK Ingredients 2 medium ridge gourds (turai) 3 tbsps oil + for deep frying 1 tsp cumin seeds 1 tsp carom seeds (ajwain) ¼ tsp asafoetida (hing) 1 medium onion, sliced 2-3 green chillies, chopped ½ tbsp chopped garlic 2 medium tomatoes, chopped 1½ tsps red chilli powder 2 tsps coriander powder ½ tsp turmeric powder Salt to taste ½ cup chopped fresh fenugreek leaves (methi) ½ cup gram flour (besan) ¼ cup whole wheat flour A pinch of baking soda Salt to taste ½ tsp garam masala powder ½ tsp sugar Chopped fresh coriander for garnish Method 1. Halve and scrape the ridge gourds. Take water in a bowl, add salt and mix well. 2. Roughly chop the ridge gourds and transfer in salted water. 3. Heat 2 tbsps oil in a nonstick pan. Add cumin seeds and once they start to change the colour, add ½ tsp carom seeds, asafoetida and sauté for a few seconds. 4. Add onion, green chillies and sauté till the onions turn translucent. 5. Add garlic and sauté for 30 seconds. 6. Add tomatoes and cook till they turn pulpy. 7. Add 1 tsp red chilli powder, 1 tsp coriander powder, turmeric powder and mix well. Add ¼ cup water, salt and mix well. 8. Add the ridge gourd and mix well. Cover and cook on medium heat for 8-10 minutes. 9. Heat sufficient oil in a kadai. 10. For muthiya, take fenugreek leaves in a bowl. Add gram flour, whole wheat flour, baking soda, salt, remaining coriander powder, garam masala powder, remaining red chilli powder, remaining carom seeds, sugar, 1 tbsp oil and mix well. 11. Add ½ cup water and knead to a soft dough. 12. Divide the dough into equal portions and shape into cylinders. Slide in hot oil and deep fry till golden brown and crisp. Drain on absorbent paper. 13. Add the fried muthiyas to the ridge gourd mixture and mix well. Add 1 cup water, cover and cook on medium heat for 4-5 minutes. 14. Transfer in a serving bowl, sprinkle coriander and serve hot. Vegetarian special raw banana rava fry is a wonderful alternative to the fish fry. Mock meat ke jamanka healthy option kha ke dekho, the crisp will win your heart. RAW BANANA RAWA FRY Ingredients 3 medium raw bananas ½ cup semolina 1½ tbsps ginger-garlic-green chilli paste Salt to taste ½ tsp turmeric powder 1½ tsps red chilli powder ¾ tsp garam masala powder 1 tsp coriander powder ½ lemon 2 tbsps rice flour 1 tbsp chopped fresh coriander leaves Oil for cooking Coriander leaves for garnish Method 1. Peel, halve and thickly slice raw bananas. 2. Take ginger-garlic-green chilli paste in a bowl. Add salt, turmeric powder, 1 tsp red chilli powder, ½ tsp garam masala powder and coriander powder. 3. Squeeze lemon and mix well. 4. Add sliced bananas and mix well. 5. Spread semolina on a plate. Add rice flour, remaining red chilli powder, remaining garam masala powder, salt, coriander leaves and mix well. 6. Heat oil on a nonstick tawa. 7. Roll the banana slices in semolina mixture and arrange on tawa. Drizzle some more oil, cover and cook on medium heat for 5-6 minutes. 8. Flip and cook for 3-4 minutes more on medium heat. 9. Transfer on a serving plate, garnish with coriander leaves and serve hot. The famous Middle Eastern creamy dip made using chickpeas goes beautifully well with pita bread or even veggie sticks. Snack in a fun way. HUMMUS Ingredients 1 cup chickpeas, soaked for 6-8 hours, drained, and boiled 2 tbsps tahini 4-5 garlic cloves Salt to taste 2 tbsps extra virgin olive oil + for drizzling ¼ cup chickpeas liquor 1 green chilli 2½ tbsps yogurt 2 tbsps lemon juice Paprika for sprinkling Black olive slices for garnish Lavash to serve Bread sticks to serve Pickled beetroot strips to serve Carrot strips to serve Cucumber strips to serve Method 1. Put the chickpeas in a grinder jar, add tahini, garlic, salt, extra virgin olive oil, ½ cup cooked chickpeas liquor, and grind till smooth.
