Sprouted Moong Poriyal | Healthy South Indian Recipe By Chef @sanjeevkapoorkhazana

Light, wholesome, and full of flavour, this dish proves that healthy food doesn’t have to be boring. If you’re looking for a simple way to upgrade your daily sprouts into something comforting, nutritious, and genuinely enjoyable, this poriyal is a must-try. One bite, and sprouts might just become your new favourite. ๐ŸŒฟ Ingredients 1½ cups sprouted green gram (moong) 2 tbsps coconut oil ¼ tsp asafoetida (hing) 1 tsp mustard seeds 1 tsp split skinless black gram (dhuli urad dal) 2 dried red chillies, stemmed 2 green chillies, chopped 8-10 curry leaves Salt to taste ¼ cup scraped fresh coconut Method 1. Heat coconut oil in a nonstick kadai. Add asafoetida, mustard seeds and urad dal and once the mustard seeds start to splutter, add dried red chillies, green chillies and curry leaves and sautรฉ for a minute. 2. Add sprouted green gram, salt and cook for 6-8 minutes on medium heat. 3. Add coconut and mix well. Transfer in a serving bowl and serve hot. Some sweets don’t just satisfy a craving they create a feeling. ✨ This Kesar Coconut Laddu brings together the gentle sweetness of coconut and the warm aroma of saffron to create a dessert that feels festive, elegant, and comforting all at once. Soft, fragrant, and beautifully balanced, each laddu carries the richness of tradition with a delicate modern touch. Perfect for festivals, gifting, or simply making an ordinary day feel special, this mithai is simple to prepare yet rich in flavour and nostalgia. One bite, and you’ll understand why some sweets never go out of style. ๐ŸŒธ KESAR COCONUT LADDOO Ingredients A generous pinch of saffron (kesar) 1½ cups scraped fresh coconut 2 tbsps ghee ½ cup sugar ½ cup milk ½ tsp green cardamom powder Desiccated coconut as required Method 1. Heat a shallow nonstick pan. Add saffron and cook on low heat for 30 seconds. 2. Transfer in a mortar and crush with the help of a pestle. 3. Heat ghee in a nonstick kadai. Add coconut, crushed saffron and sautรฉ for 4-5 minutes. 4. Add sugar and cook till the sugar dissolves. 5. Add milk, green cardamom powder and cook till mixture thickens. 6. Transfer the mixture in a plate and allow to cool completely. 7. Divide the mixture into equal portions and roll into balls. Roll these balls in desiccated coconut and serve.
