Kombdi Vade | कोंबडी वड़े | Maharashtrian Recipe | Sanjeev Kapoor Khazana

This Authentic Maharashtrian dish consists of kombdi i.e chicken cooked in a deliciously spicy gravy served with Vade i.e a multigrain deep fried puris. A perfectly balanced meal! KOMBDI VADE Ingredients 750 grams chicken, cut into 2 inch pieces on the bone 1 tbsp ginger-garlic-green chilli paste ½ tsp turmeric powder Salt to taste Masala paste 2 tbsps oil 5-6 green cardamoms 1-2 star anise 3-4 cloves 1 inch cinnamon stick 6-8 black peppercorns 1 black cardamom 1 inch ginger, sliced 8-10 garlic cloves 2 medium onions, sliced 3-4 green chillies, slit ½ cup scraped fresh coconut ½ cup coriander seeds ½ cup dried coconut slices ½ cup fresh coriander leaves Gravy 3 tbsps oil 2 medium onions, finely chopped 1 tbsp ginger-garlic paste 1 large tomato, finely chopped Salt to taste ½ tsp turmeric powder 1 tbsp red chilli powder ½ tsp garam masala powder 1½ tbsps malwani masala Fresh coriander leaves foe garnish Vade 2 cups rice flour 1 cup split skinless black gram (dhuli urad dal) flour 2 tbsps grated onion Salt to taste ¼ tsp turmeric powder 2 tbsps oil Oil to deep fry + for greasing Method 1. Take chicken in a large bowl. Add ginger-garlic-green chilli paste, turmeric powder and salt and mix well. Set aside to marinate for 15-20 minutes. 2. To make the masala paste, heat oil in a non-stick pan. Add green cardamoms, star anise, cloves, cinnamon stick, black peppercorns, black cardamom, ginger and garlic and sauté till golden brown. 3. Add onion, mix and sauté till translucent. Add green chillies, mix and cook till the onions turn golden. 4. Add the fresh coconut and coriander seeds and mix well. Roast till golden. 5. Add dried coconut slices and coriander leaves, mix and roast till golden brown. Transfer on to a plate and allow to cool. 6. Put the roasted mixture into a blender jar. Add 1¾ cups water and blend to a fine paste. 7. To make the gravy, heat oil in a non-stick deep pan. 8. Add onions and mix well. Cook till they turn golden brown. 9. Add ginger-garlic paste and mix well. Cook for 1-2 minutes. 10. Stir in the tomatoes and salt and mix well. Cook till soft and pulpy. 11. Add the chicken and sauté on high heat for 3-4 minutes. Add turmeric powder, red chilli powder, garam masala powder and malwani masala and mix well. 12. Add the blended paste, mix and cook for 1-2 minutes. Add 2 cups water, mix, cover and cook on medium heat for 10-12 minutes or till done. 13. To make the vade, take rice flour in a large bowl. Add split skinless black gram flour, onion, salt and turmeric powder. Add 1½ cups hot water, mix and knead into a semi-soft dough. Add oil and knead again till well combined. 14. Divide the dough into equal portions and shape each portion into a ball. 15. Place a plastic sheet on worktop and grease it with some oil. Place a dough ball on it, and flatten it into a thin disc. Make a hole in the centre. 16. Heat sufficient oil n a non-stick kadai. Gently slide in discs one at a time and deep fry till golden brown and crisp. Drain on an absorbent paper. 17. Arrange the vade on a serving plate, transfer the chicken gravy into a serving bowl, garnish with coriander leaves and serve hot. Zarda Pulao | ज़र्दा पुलाव | Sweet Rice | Chef Afraz | Modern Khansama | Sanjeev Kapoor Khazana

A saffron infused sweet rice dish made for special occasions. Sprinkled with nuts and dried fruits. A royal dessert indeed. ZARDA PULAO Ingredients A large pinch of saffron 2 cups Basmati rice, washed, soaked for 30 minutes and drained ¼ cup ghee 2-4 green cardamoms 1 inch cinnamon stick 10-12 cashew nuts 2 tbsps raisins 1½ cups sugar ½ tsp green cardamom powder Blanched, peeled and slivered pistachios for garnish Silver warq for garnish Method 1. Heat ghee in a handi. Add green cardamoms, cinnamon stick and sauté till fragrant. 2. Add cashew nuts and mix well. Cook till light golden. Add raisins, mix and cook till they puff up. 3. Add the soaked Basmati rice and mix with light hand. Add saffron and mix. 4. Pour 3¾ cups water, mix and cook till the mixture comes to a boil and cook for 8-10 minutes. Add sugar and mix with light hand till well combined. 5. Add green cardamom powder and mix. 6. Reduce the heat to low, cover the handi with a lid and continue to cook for 8-10 minutes or till the rice is cooked completely. Switch the heat off and allow the mixture to rest for 5-10 minutes. 7. Transfer into a serving bowl, garnish with blanched pistachios, and silver warq. Khajurachi Vadi | खजुराची वड़ी | Date and Dry Fruit Roll | Sugar Free Recipe | Sanjeev Kapoor Khazana

KHAJURACHI VADI Ingredients 5-6 dates (khajur), deseeded and chopped ¼ cup chopped walnuts ¼ cup chopped almonds ¼ cup chopped pistachios 2-3 tsps poppy seeds 1½ tbsps ghee 1 tbsp gond 2-3 figs, chopped Method 1. Dry roast walnuts, almonds, pistachios and poppy seeds in a non-stick pan till slightly golden and crisp. Transfer in a bowl. 2. Heat 1 tbsp ghee in another non-stick pan. Add gond and fry till it puffs up. Drain in another bowl. 3. Coarsely grind together dates and figs and transfer in another bowl. 4. Coarsely grind the roasted nuts along with fried gond. Add to ground date mixture and mix. 5. Add remaining ghee and mix till well combined. 6. Divide the mixture into 2-3 equal portions and shape them into thick logs, rolling on the worktop. 7. Wrap the logs with aluminium foil and refrigerate till set. 8. Cut into pieces and serve. Chettinad Fish Fry | चेट्टिनाड फिश फ़्राय | Fish Fry | South Indian Recipe | Sanjeev Kapoor Khazana

Mouth-watering and delicious chettinad masala marinated fish fry. A yummy accompaniment for sure! CHETTINAD FISH FRY Ingredients 2 large king fish (surmai) darnes 1 tsp black peppercorns 2 tsps cumin seeds 2 tsps fennel seeds ¼ cup coriander seeds 10-12 pandi dried red chillies, stemmed ½ tsp asafoetida (hing) ½ tsp turmeric powder Salt to taste ½ cup shallots 10-12 garlic cloves Coconut oil for shallow frying 2 green chillies, slit 10-15 curry leaves 1 lemon Method 1. Heat a nonstick pan. Dry roast black peppercorns, cumin seeds, fennel seeds, coriander seeds, dried red chillies till fragrant. 2. Add asafoetida, turmeric powder, salt and mix well. Take the pan off the heat and allow to cool. 3. Transfer shallots in a blender jar. Add garlic, roasted spices and grind to a fine paste. 4. Transfer the fish darnes in a plate and apply the prepared paste over them. 5. Heat coconut oil on a nonstick tawa. Place the fish pieces, place some green chillies and curry leaves on the side and shallow fry for 4-5 minutes on medium heat. Flip and cook on other side for 4-5 minutes. 6. Transfer on serving plate, squeeze lemon and serve hot. Meethi Tamatar ki Chutney | मिठी टमाटर की चटनी | Sweet Tomato Chutney | Sanjeev Kapoor Khazana

Sweet tomato chutney made with simple ingredients easily available at home! MEETHI TAMATAR KI CHUTNEY Ingredients 4 medium tomatoes, quartered 2 tbsps oil 1 tsp cumin seeds 2 bay leaves 6-8 dried red chillies 1 tbsp raisins Salt to taste ½ cup chopped jaggery Method 1. Heat oil in an earthen pot. Add cumin seeds and let them change colour. Add bay leaves and dried red chillies and sauté for 30 seconds. 2. Add the tomatoes, raisins and salt and mix well. Cover and cook for 5-6 minutes or till the tomatoes turn soft and pulpy. 3. Add jaggery, mix, cover and cook for 5-6 minutes. Switch the heat off and allow the mixture to cool completely. Discard the bay leaves and dried red chillies. 4. Transfer the mixture into a serving bowl. Serve. Raw mango turned into this stylish and delicious drink! Take your aam panna to the next level with this recipe! RAW MANGO FIZZ ( Serves 1) Ingredients 1 raw mango wedge 2 tbsps boiled raw mango puree 2 tsps salt 1 tsp chaat masala 2 tsps roasted cumin powder ¾ tsp black salt 2 lemons 2 tsps mint paste 2 tbsps sugar syrup Ice cubes as required Drinking soda as required Fresh mint sprig for garnish Method 1. Mix salt, chaat masala, roasted cumin powder, black salt in a bowl. 2. Slice the raw mango and give multiple slits without cutting through. Halve the lemons. 3. Take raw mango puree in a glass. Add 1 tsp of the prepared spice mix. 4. Add mint paste. Squeeze ½ lemon and add sugar syrup. 5. Add ice cubes, close with a steel glass and shake well. 6. Strain into serving glass. Add ice cubes, top up with drinking soda and stir. 7. Garnish with raw mango slices and serve chilled garnished with mint sprig. Agri Mutton Rassa | आगरी मटन रस्सा | Mutton Curry | Maharashtrian Recipe | Sanjeev Kapoor Khazana

Agri food is known for its spices and heat! This recipe is exactly that! Loaded with flavours and aroma. A perfect combination to rice or bhakri! AGRI MUTTON RASSA Ingredients 750 grams mutton, cut into 2 inch pieces on the bone 4 tbsps oil 10-12 garlic cloves 1 inch ginger piece, roughly chopped 3-4 green chillies, stemmed 1 cup grated dried coconut 1 cup fresh coriander leaves 8-10 black peppercorns 3-4 green cardamoms 1 black cardamom 1 inch cinnamon stick 2 bay leaves 3 medium onions, sliced Salt to taste 2 medium tomatoes, chopped 1 tsp turmeric powder 1½ tbsps agri koli masala 2 medium potatoes, quartered 2 tbsps chopped fresh coriander leaves 1 tbsp lemon juice Fresh coriander sprig for garnish Bhakri for serving Method 1. Heat 2 tbsps oil in a pan. Add garlic, ginger, green chillies and sauté for a few seconds. 2. Add dried coconut and sauté till golden brown. Add coriander and sauté for 2 minutes. Allow to cool slightly. 3. Transfer in a blender jar, add 1 cup water and grind to fine paste. 4. Heat remaining oil in a pan. Add black peppercorns, green cardamom, black cardamom, cinnamon, bay leaves and sauté till fragrant. 5. Add onions, salt and sauté till the onions turn golden brown. 6. Add tomatoes and sauté for 2 minutes on medium heat. 7. Add mutton and sear on high heat for 2-3 minutes. 8. Add turmeric powder, agri koli masala and mix well. 9. Add potatoes and mix well. Add 1 cup water and mix well. 10. Add the ground paste, 1½ cups water and mix well. Cover and cook on medium heat for 25-30 minutes. 11. Add coriander leaves, lemon juice and mix well. 12. Transfer in a serving bowl, garnish with coriander sprig and serve hot with bhakri. This ‘no meat’ meaty dish made with soya chaap marinated in a spicy and tasty tandoori marination. Cooked till charred and stuffed between bread and some mayo for the creaminess. A snack to remember! TANDOORI SOYA CHAAP SANDWICH Ingredients 3-4 ready-made tandoori soya chaaps 8 white bread slices ½ cup mayonnaise 2 tbsps chopped fresh coriander leaves Salt to taste Crushed black peppercorns to taste ½ tsp chaat masala ½ cup shredded purple cabbage 1 small carrot, cut into thin strips ½ cup shredded cabbage Butter for applying Green chutney for applying Onion rings for topping Sandwich masala for sprinkling Potato chips to serve Tomato ketchup to serve Method 1. Chop the tandoori soya chaaps into small pieces and transfer into a large bowl. Add mayonnaise, coriander leaves, salt, crushed black peppercorns, chaat masala, purple cabbage, carrot, cabbage, and mix well. 2. Apply some butter on all slices of bread and apply some green chutney on each slice. Place a portion of the soya chaap mixture on top of 4 slices of bread. Arrange some onion rings and sprinkle some sandwich masala. Cover with the remaining the slices with the butter side facing down. 3. Apply some butter on top of each sandwich. 4. Heat an electric sandwich griller. Place the sandwiches with the butter side facing down and apply some more butter on top of the sandwich. Grill till done. 5. Diagonally halve the sandwiches and serve hot with potato chips and tomato ketchup. Tandoori Soya Chaap | तंदूरी सोया चाप | Street Food India | Dhaba Style | Sanjeev Kapoor Khazana

The perfect protein fix for a vegetarian! Who doesn’t love Tandoori food? Well, here you have a lip-smacking soya chaap tandoori for not just the tandoori craving but also for protein! TANDOORI SOYA CHAAP Ingredients 6 soya chaaps ¾ cup hung yogurt ¾ tsp red chilli powder ½ tsp cumin powder ½ tsp garam masala powder ¼ tsp turmeric powder Salt to taste ¼ tsp green cardamom powder ½ tsp dried mint powder ¼ tsp roasted dried fenugreek leaves (kasuri methi) powder 1 tsp green chilli paste 1 tbsp ginger-garlic paste 2 tbsps fresh cream 1 tbsp mustard oil 3 tbsps Kashmiri red chilli paste 2 tbsps roasted gram flour Ghee for drizzling 3-4 cloves Butter for basting Onion rings for garnish Lemon wedges for garnish Fresh mint leaves for garnish Mini laccha paranthas to serve Green chutney to serve Method 1. Take hung yogurt in a large parat. Add red chilli powder, cumin powder, garam masala powder, turmeric powder, salt, green cardamom powder, dried mint powder, roasted dried fenugreek leaves, green chilli paste, ginger-garlic paste, fresh cream and mustard oil and mix well. 2. Add Kashmiri red chilli paste and roasted gram flour and mix well. 3. Place the soya chaaps and coat each well with the mixture. 4. Take a hot piece of charcoal in a small stainless steel bowl. Place it in the centre of the chaaps and drizzle ghee. Sprinkle cloves and immediately cover and let the flavour infuse for 2 minutes. Discard the bowl and keep the chaaps aside to marinate for 10-15 minutes. 5. Preheat the oven at 180ºC. 6. Arrange the chaaps on a greased baking tray and place it in the preheated oven. Bake for 10-12 minutes while basting with butter in between. 7. Bring the baking tray out of the oven and arrange them on a serving plate. Garnish with onion rings, lemon wedges and mint leaves. Sprinkle some chaat masala and serve hot with laccha paranthas and green chutney. Bangda Curry with Raw Mango | बांगड़ा और कैरी की करी | Fish Curry Recipe | Sanjeev Kapoor Khazana

BANGDA CURRY WITH RAW MANGO Ingredients 2 mackerel (bangda), cleaned, and halved ½ medium raw mango, sliced ¼ tsp fenugreek seeds 1½ tbsps coriander seeds 15-20 black peppercorns 1 tsp mustard seeds ½ tbsp cumin seeds Curry 2 tbsps oil 1 tsp mustard seeds ¼ tsp fenugreek seeds 2 dried red chillies 20-25 curry leaves 3-4 green chillies 2 tbsps finely chopped garlic 2 small onions, finely chopped 2 cups fresh tomato puree Sea salt to taste 1½ tbsps red chilli powder ½ tsp turmeric powder 1 tbsp coriander powder Chopped fresh coriander leaves for garnish Onion rings to serve Lemon wedges to serve Fresh red chillies to serve Method 1. Dry roast fenugreek seeds, coriander seeds, black peppercorns, mustard seeds and cumin seeds till fragrant. Transfer in a bowl and allow to cool. Transfer into a mixer jar and blend to a fine powder. 2. Heat oil in a kadai. Add mustard seeds and let the splutter. Add fenugreek seeds, dried red chillies, 8-10 curry leaves, and green chillies and mix well. Add garlic and mix , cook for 1 minute. Add onions and mix well. Cook till golden brown. 3. Add tomato puree and mix well. Stir in sea salt, cover and cook till oil separates. 4. Add red chilli powder, turmeric powder and coriander powder and mix well. Cook for 2 minutes. 5. Add raw mango, mix and cook for 1 minute. Add 2 tsps of the blended mixture and mix well. Cover and cook till oil separates. 6. Add 1½ cups water, mix and cook till the mixture comes to a boil. Slide in the mackerel and mix well. 7. Add remaining curry leaves, mix, cover and cook for 6-8 minutes. Switch the heat off, transfer the mixture into a serving bowl, garnish with coriander leaves and serve hot with onion rings, lemon wedges and fresh red chillies. MASALA NUTS Ingredients 1 tsp castor sugar ½ tsp green cardamom powder Salt to taste 1 tsp chaat masala ½ tsp red chilli powder ½ cup walnuts ½ cup cashewnuts ½ cup almonds Oil for deep-frying Method 1. Heat sufficient oil in a kadai. 2. To prepare masala, take castor sugar in a bowl. Add cardamom powder, salt, chaat masala and chilli powder and mix. 3. Deep-fry walnuts in hot oil on low heat till golden and crisp. Drain on absorbent paper. Similarly, deep-fry cashewnuts and almonds. 4. Hot and Sour Mango Chicken | हॉट अँड सार मँगो चिकन | Indo Chinese Recipes | Sanjeev Kapoor Khazana

HOT AND SOUR MANGO CHICKEN Ingredients 1 ripe Alphanso mango, peeled and cut into 1 inch pieces 400 grams boneless chicken, cut into 1 inch pieces Salt to taste Crushed black peppercorns to taste 1½ tbsps ginger-garlic paste 2 tbsps corn flour Oil for deep frying 2 tbsps sesame oil 2½ tbsps finely chopped garlic 1½ tbsps finely chopped ginger 1½ tbsps finely chopped celery 2 spring onion bulbs, sliced 3-4 green chillies, slit 2-3 fresh red chillies, slit ¼ cup + 2 tbsps chopped spring onion greens + for garnish 2 tsps red chilli sauce ½ tsp dark soy sauce ½ medium red capsicum, cut into 1 inch pieces 1 small onion, cut into 1 inch dices ½ medium green capsicum, cut into 1 inch pieces 2 tbsps corn flour slurry 2 tsps vinegar Toasted white sesame seeds for garnish Method 1. Take chicken in a large bowl, add salt, crushed black peppercorns, and ginger-garlic paste and mix well. Set aside to marinate for 10-15 minutes. 2. Add corn flour and mix till well combined. 3. Heat oil in a kadai. Gently slide in the chicken pieces into the hot oil and deep fry on medium heat till golden and crisp. Drain on an absorbent paper. 4. Heat sesame oil on high heat in a non-stick wok. Add garlic, ginger, and celery and sauté for 1-2 minutes. 5. Add spring onion bulbs, green chillies and red chillies and mix well. 6. Add ¼ cup spring onion greens, salt, and crushed black peppercorns and mix well. Pour 1 cup water and mix well. 7. Add red chilli sauce and dark soy sauce and mix well. 8. Add red capsicum, onion and green capsicum and mix well. Cook for 1-2 minutes. 9. Stir in the mango and fried chicken and mix till well combined. 10. Add corn flour slurry and mix, cook till the mixture thickens. 11. Switch the heat off and add vinegar and remaining spring onion greens and mix well. Transfer into a serving plate, garnish with spring onion greens, and toasted white sesame seeds and serve hot. Muskmelon Kulfi | ख़रबूज़े की कुल्फी | Homemade Kulfi | Easy Kulfi Recipe | Sanjeev Kapoor Khazana

MUSKMELON KULFI Ingredients 1 medium muskmelon 4-5 cups full fat milk ½ cup sugar 2 tbsps almonds 2 tbsps cashew nuts 2 tbsps pistachios A pinch of saffron Method 1. Trim the top of the muskmelon and keep it aside. Scoop out the seeds from the centre of the muskmelon to make a cavity and discard the seeds. 2. Bring milk to a boil in a non-stick kadai. Lower the heat and continue to cook while stirring continuously till the milk reduces to half and thickens slightly. 3. Dry roast the almonds, cashew nuts, and pistachios in a non-stick pan for 6-8 minutes on medium heat or till crisp. Take the pan off the heat and allow the nuts to cool slightly. 4. Coarsely chop the nuts. 5. Add sugar to the milk and mix well. Cook till the sugar melts. 6. Add saffron and the chopped nuts and mix till well combined. Continue to cook till the mixture thickens. 7. Take the pan off the heat and allow to cool slightly. 8. Pour the prepared mixture into the muskmelon cavity, place the top part of the muskmelon on it and secure it with toothpicks. Place this in an upright position in a bowl and place it in the freeze for 6-8 hours or till set. 9. Bring the muskmelon kulfi out of the freezer, remove the top along with the toothpicks. Carefully cut into wedges and arrange on a serving plate. 10. Serve immediately. Madras Onion Pickle | मद्रास अनियन पिकल | Indian Pickle Recipe | Sanjeev Kapoor Khazana

MADRAS ONION PICKLE Ingredients 1½ cups madras onions ½ cup mustard oil 2 tsps red chilli powder ½ tsp turmeric powder 3 tsps lemon juice Salt to taste 2 tsps coarsely crushed fennel seeds 6 tbsps methi na kuria 1 tbsp split yellow mustard seeds (rai na kuria) Method 1. Heat mustard oil in a pan. Let it smoke and switch the heat off. Allow to cool completely. 2. Take madras onions in a large bowl. Add red chilli powder, turmeric powder, lemon juice, salt and mix well. Add crushed fennel seeds and mix again. Set aside to marinate for 2-3 hours. 3. Add methi na kuria and split yellow mustard seeds and mix well. Add the cooled mustard oil and mix well. Transfer in an air tight jar, cover and set aside in sun for 6-8 days. 4. Use as required. Kamal Kakdi ka Achaar | कमल ककड़ी का अचार | Lotus Stem Pickle | Sanjeev Kapoor Khazana

Lotus roots mixed in a combination of spices to make this delicious pickle. Make it this summer and use it for the entire year! KAMAL KAKDI KA ACHAAR Ingredients 2 medium lotus roots, washed, peeled and sliced 1½ tsps onion seeds (kalonji) ½ tsp fenugreek seeds (methi) 1¼ tbsps fennel seeds (saunf) 1¼ tbsps coriander seeds 15-20 black peppercorns ½ tsp cumin seeds 1 cup mustard oil ½ tsp turmeric powder 2 tsps red chilli powder Salt to taste Method 1. Dry roast onion seeds, fenugreek seeds, fennel seeds, coriander seeds, black peppercorns and cumin seeds till fragrant in a pan. Add dried red chillies and sauté till they turn crisp. Take the pan off the heat and allow to cool slightly. Put the mixture into a blender jar and blend to a coarse powder. 2. Heat mustard oil in a pan, let it smoke. Switch the heat off and allow to cool completely. 3. Take lotus roots in a large bowl, add turmeric powder, red chilli powder, salt and 3 tbsps of the blended powder and mix till well combined. Transfer this in a clean and dry glass jar, pour in the cooled mustard oil, cover with a lid, keep it aside for to mature for 7-8 days in the sun. 4. Use it as required. A great way of using Palakottai (Jackfruit seeds) in this form i.e to turn them into these spicy and tasty deep fried vadas! PALAKOTTAI VADAI Ingredients 3 cups ripe jackfruit seeds, peeled 4-5 dried red chillies, soaked for 20 minutes and drained ½ tsp black pepper powder 1 tsp fennel (saunf) powder 1-2 green chillies, chopped 10-12 curry leaves, finely shredded ¼ tsp turmeric powder 2 tsps finely chopped ginger 1 medium onion, finely chopped 2 tbsps rice flour Oil for deep frying Coconut chutney to serve Method 1. Put the jackfruit seeds in a pressure cooker. Add 2 cups water, salt, and mix well. Cover and cook under pressure for 2-3 whistles. 2. Open the cooker once the pressure has reduced completely. 3. Drain the cooked jackfruit seeds, transfer them in a chopper, add soaked dried red chillies, and finely chop them. Transfer in a large bowl. Add black pepper powder, fennel powder, green chillies, curry leaves, turmeric powder, ginger, salt, onion, and rice flour, lightly mash and mix with your hand till well combined. 4. Take a small portion of the mixture and shape it into a ball, and lightly flatten it. This is a vadai. 5. Heat sufficient oil in a kadai. Gently slide in the vadais a few at a time and deep fry till golden brown and crisp. Drain on an absorbent paper. 6. Arrange the vadai on a serving plate, serve hot with coconut chutney. Jackfruit Wontons | कटहल के वाँटन्स | Jackfruit Recipes | Whats in Season | Sanjeev Kapoor Khazana

Deliciously sweet and fragrant ripe jackfruit mixture stuffed in wontons and deep fried till golden and crisp. Dessert with a twist! JACKFRUIT WONTONS Ingredients 6-8 wonton sheets ½ cup scraped fresh coconut ½ cup finely chopped ripe jackfruit ¼ tsp green cardamom powder A pinch of nutmeg powder ¼ cup chopped jaggery 2 tsps poppy seeds Refined flour slurry for applying Oil for deep frying Method 1. Heat a non-stick pan. Add coconut, ripe jackfruit, green cardamom powder, nutmeg powder, jaggery, and 2 tbsps water and mix well. Cook till moisture is absorbed. 2. Transfer the mixture in a plate and allow to cool. Add poppy seeds and mix till well combined. 3. Stuff a wonton sheet with a portion of the prepared jackfruit mixture and apply some refined flour slurry on the edges and shape it into a wonton. 4. Heat sufficient oil in a kadai. Gently slide in the wontons and deep fry till golden brown and crisp. Drain on an absorbent paper. 5. Arrange on a serving plate and serve warm. Eggless Mango Pudding | एगलेस आम का पुडिंग | Eggless Dessert Recipes | Sanjeev Kapoor Khazana

Let’s make a smooth mango pudding using simple ingredients from the kitchen and it happens to be eggless too! Do try this quick and easy recipe at home and let us know how it turned out. EGGLESS MANGO PUDDING Ingredients 2 ripe Alphanso mangoes ¼ cup sugar ¼ cup corn flour 1½ cups milk A pinch of salt 1 lemon wedge Chopped ripe mangoes for garnish Fresh mint sprigs for garnish Method 1. Peel the Alphanso mangoes. Roughly chop them and transfer in a blender jar. Add sugar and blend to a fine paste. 2. Take corn flour in a bowl, add ½ cup milk and mix till well combined. 3. Heat a deep pan, add the blended paste and remaining milk, mix and cook till the mixture comes to a boil. Add salt and the corn flour-milk mixture and continuously mix and cook for 2-3 minutes or till the mixture thickens. Switch the heat off. 4. Squeeze the juice of lemon and mix well. Transfer the mixture into individual moulds and allow the mixture to cool completely. 5. Place the moulds in the refrigerator for 5-6 hours or till set completely. 6. Gently de-mould the pudding on to individual serving plates. Garnish with chopped mangoes and mint sprigs. Serve immediately. Aam Panna | आम पन्ना | Raw Mango Drink | Summer Cooler | Mango Recipes | Sanjeev Kapoor Khazana

One of the highlights of Summer is “Aam Panna”. A sweet and tangy refreshing beverage made with raw mango pulp! AAM PANNA Ingredients 2 medium raw mangoes 1½ cups sugar 1 tsp black salt ½ tsp roasted cumin powder Ice cubes as required Method 1. Thoroughly wash the raw mangoes. 2. Transfer the raw mangoes in a pressure cooker. Add 1 cup water and cook under pressure for 3-4 whistles. 3. Open the cooker once the pressure has reduced completely. 4. Transfer the cooked raw mango in a bowl, peel and squeeze the pulp and discard the seeds. Add sugar and mix well. Transfer this in a blender jar, and blend to a fine paste. 5. Heat a non-stick pan. Add the blended paste and cook for 5-6 minutes. 6. Add black salt and roasted cumin powder and mix well. Cook for 1-2 minutes. Take the pan off the heat. 7. Allow the mixture to cool completely. Transfer in a jar and use as required. 8. To make aam panna drink, put a portion of the prepared mixture in individual serving glasses, add ice cubes and water as required. Mix and serve. Honey Chilli Baby Corn | हनी चिली बेबी कॉर्न | Indo Chinese Recipe | Sanjeev Kapoor Khazana

Crispy baby corns tossed in a sweet and spicy sauce. HONEY CHILLI BABY CORN Ingredients 1½ tbsps honey 1 fresh red chilli, chopped 1 green chilli, chopped 10-12 baby corns, halved vertically ¼ cup corn flour ¼ cup rice flour 1 tsp onion powder 1 tsp garlic powder Salt to taste Crushed black peppercorns to taste ½ cup refined flour (maida) Salt to taste 1½ tbsps oil + for deep frying 1 tbsp finely chopped garlic ½ tbsp finely chopped ginger 2 spring onion bulbs, finely chopped ½ tbsp red chilli paste 1 tsp red chilli sauce A dash of soy sauce A dash of vinegar 4 tbsps diagonally sliced spring onion greens + for garnish 1 tbsp toasted white sesame seeds + for garnish Method 1. Take corn flour in a large bowl. Add rice flour, onion powder, garlic powder, salt and crushed black peppercorns and mix well. Add baby corns and mix till well coated with the mixture. 2. To make the batter, take refined flour in another bowl. Add salt and crushed black peppercorns. Make a well in the centre and pour ½ cup water and whisk till a smooth batter is formed. 3. Heat sufficient oil in a kadai. Dip each baby corn into the batter and coat it well and gently slide into the hot oil. Deep fry till golden and crisp. Drain on an absorbent paper. 4. Heat 1½ tbsps oil in a pan. Add garlic and ginger and sauté for 1-2 minutes. Add red chilli, green chilli and spring onion bulbs and mix well. Cook for 1-2 minutes. 5. Add the red chilli paste and mix well. Add ¼ cup water and mix well. Cook for 1-2 minutes. 6. Add red chilli sauce, soy sauce, vinegar and mix well. Add 2 tbsps spring onion greens and fried baby corns and toss till well combined. 7. Switch the heat off and add honey, toasted white sesame seeds and mix well. 8. Add remaining spring onion greens and mix. 9. Serve hot garnished with toasted sesame seeds and spring onion greens. Peanut Butter Noodles | पीनट बटर नूडल्स | Noodle Recipes | Quick & Easy | Sanjeev Kapoor Khazana

This perfectly balanced noodles recipe has the sweetness and nuttiness from the peanut butter and a hint of heat from the chillies! A must try recipe, indeed! PEANUT BUTTER NOODLES Ingredients ¼ cup creamy peanut butter 300 grams boiled noodles ½ tsp dark soy sauce 1 tsp red chilli sauce Crushed black peppercorns to taste Salt to taste ½ tsp corn flour 2 tbsps oil 2 spring onion bulbs, diagonally sliced 1 tbsp finely chopped ginger 1 tbsp finely chopped garlic 1 small red capsicum, cut into thin strips 1 small green capsicum, cut into thin strips 1 small carrot, cut into thin strips Diagonally sliced spring onion greens for garnish Diagonally sliced fresh red chillies for garnish Method 1. Take peanut butter in a bowl. Add dark soy sauce, red chilli sauce, crushed black peppercorns, salt, corn flour and 2 tbsps water and whisk till smooth. 2. Heat oil in a non-stick wok. Add spring onion bulbs, ginger and garlic and sauté on high heat for 1-2 minutes. 3. Add red capsicum, green capsicum, and carrot and sauté for 1-2 minutes. Add boiled noodles and toss well. 4. Add the prepared paste and 2 tbsps water and mix well. 5. Transfer the noodles into a serving bowl, garnish with spring onion greens and fresh red chillies. Serve hot. Koonthal means Squids in Malayalam. This recipe is a spicy squid roast coming all the way from Kerala. KOONTHAL ROAST Ingredients 300 grams squid rings 2 tbsps coconut oil 1 tsp mustard seeds 1 tbsp finely chopped ginger 2-3 green chillies, slit 10-12 garlic cloves, vertically sliced 15-20 curry leaves 2 large onions, thinly sliced Salt to taste 1 large tomato, sliced 1 tsp red chilli powder 1 tsp coriander powder 1 tsp fennel (saunf) powder ½ tsp crushed black peppercorns ½ tsp garam masala powder ¼ tsp turmeric powder Method 1. Heat coconut oil in an earthen pot. Add mustard seeds and let them splutter. Add ginger, green chillies, garlic and curry leaves and sauté for a minute. 2. Add onions and salt and mix well. Cook till the onions turn translucent. 3. Add tomato, mix and cook till it turns soft and pulpy. 4. Add red chilli powder, coriander powder, fennel powder and crushed black peppercorns and garam masala powder and mix well. Cook for 1 minute. 5. Add the squid rings and sauté on high heat for 2-3 minutes. Add ½ cup water, mix and cook for 3-4 minutes. 6. Add turmeric powder and mix well. Cook for 3-4 minutes or till the mixture turns dry. 7. Transfer in a serving bowl and serve hot. Pumpkin Ketchup | कद्दू का केचप | How to make Ketchup at Home | Sanjeev Kapoor Khazana

Learn how to make this unique ketchup, made of Pumpkin! Yes, Pumpkin can also be turned into delicious, smooth, sweet, and spicy ketchup! PUMPKIN KETCHUP Ingredients 500 grams red pumpkin, peeled, seeded and cut into 1 inch pieces A pinch of turmeric powder Salt to taste A pinch of red chilli powder White pepper powder to taste 1½ tsps onion powder 1 tsp garlic powder ¼ tsp black salt ¼ tsp dried ginger powder 2 tsps sugar A large pinch of roasted cumin powder 1 tsp oil 1 tsp vinegar Method 1. Heat a nonstick pan. Add pumpkin, 1½ cups water, turmeric powder and cook on medium heat for 8-10 minutes. 2. Allow to cool and transfer in a blender jar. Grind to a fine paste. 3. Heat a shallow nonstick pan. Transfer the prepared puree, add salt, red chilli powder, white pepper powder, onion powder, garlic powder, black salt, dried ginger powder, sugar and mix well. 4. Cook on medium heat for 5-6 minutes or until the mixture is thick. 5. Add roasted cumin powder, oil, vinegar and mix well. 6. Allow to cool and store in airtight container. 7. Use as required. Chicken Egg Roll | चिकन एग रोल | Sanjeev Kapoor Khazana

Chicken keema stuffed with a deliciously creamy mixture of eggs and spices, deep fried till golden and crunchy! CHICKEN EGG ROLL Ingredients 400 grams chicken mince 4-5 hard boiled eggs, peeled and chopped 2 tbsps mayonnaise 1 tsp kasundi mustard paste Salt to taste 5 tbsps chopped fresh coriander leaves 1 tbsp finely chopped ginger 1½ tbsps finely chopped garlic 2-3 green chillies, finely chopped ¼ cup browned onions 1 tsp garam masala powder ¼ tsp green cardamom powder Salt to taste Crushed black peppercorns to taste ¼ lemon Breadcrumbs for coating 4 eggs, whisked Oil for deep frying Green chutney to serve Onion rings to serve Lemon slices for garnish Fresh mint leaves for garnish Green chilli for garnish Method 1. To make the stuffing, take chopped eggs into a large bowl. Add mayonnaise, kasundi mustard paste, salt and 1½ tbsps coriander leaves and mix well. 2. Take chicken mince in another large bowl. Add ginger, garlic, green chillies, browned onions, garam masala powder, green cardamom powder, salt, remaining coriander leaves and crushed black peppercorns and mix till well combined. Transfer this mixture into a food processor and process to a fine paste. Transfer this into the same bowl 3. Squeeze the juice of lemon directly into the chicken mixture and mix well. 4. Dip your palms in some water and take a portion of the chicken mixture and spread it evenly on to your palm. Place a generous portion of the egg mixture and bring the sides to the centre and press to seal. Shape it into a log. 5. Roll the chicken logs on to bread crumbs Dip into whisked eggs and roll again on to the bread crumbs and coat it well on all sides. 6. Heat sufficient oil in a kadai. Dip each chicken log into the whisked eggs again and gently slide them into the hot oil and deep fry till golden brown and crisp. Drain on an absorbent paper. 7. Diagonally halve the chicken egg roll and arrange on a serving plate. Serve hot with green chutney and onion rings garnished with lemon slices, mint leaves and green chilli.
