Lauki Chana Dal | लौकी चना दाल | Sanjeev Kapoor Khazana
Simplicity at its best, with a dash of richness … Lauki and chana cooked to sheer tenderness and tempered in ghee and light spices. LAUKI CHANA DAL Ingredients 1 small bottle gourd (lauki), peeled and cut into 1 inch pieces ½ cup split Bengal gram (chana dal), soaked for 1 hour Salt to taste ½ teaspoon turmeric powder ½ teaspoon red chilli powder 2 teaspoons coriander powder 2 green chillies, chopped ½ inch ginger, chopped 2 tablespoons ghee ½ teaspoon cumin seeds A large pinch of asafoetida 1 tsp sugar 2 teaspoons lemon juice 2 tablespoons chopped fresh coriander leaves Fresh coriander sprig for garnish Method 1. Heat a pressure cooker. Add bottle gourd, chana dal, salt, turmeric powder, red chilli powder, coriander powder, green chillies, ginger, and 1½ cups water and mix well. 2. Close the lid and cook on medium heat till 2 whistles are released. 3. Open the lid once the pressure reduces completely. Mash the mixture lightly. 4. Heat ghee in a nonstick kadai. Add cumin seeds and once they start to change the colour, add asafoetida and mix well. 5. Add the cooked bottle gourd mixture and mix well. Add sugar and cook on medium heat for 2-3 minutes. 6. Switch the heat off, add lemon juice, coriander leaves and mix well. 7. Transfer in a serving bowl, garnish with coriander sprig and serve hot. This coastal, rice and prawn preparation is Maharashtra’s answer to prawn pulao. Spicy and yet balanced with the refreshing coconut milk. Excellent for a Sunday afternoon meal. KOLAMBI BHAAT Ingredients ¾ cup shelled and deveined small prawns 1½ cups basmati rice, soaked for 20 minutes and drained 1 teaspoon lemon juice Salt to taste 3 green chillies, roughly chopped 1 inch ginger, roughly chopped 6-7 garlic cloves, roughly chopped ½ cup fresh coriander leaves 12-15 fresh mint leaves ½ cup scraped fresh coconut + for garnish 3 tablespoons oil 1 inch cinnamon stick 4 black cardamoms 2 star anise 4 cloves 1 teaspoon cumin seeds 2 medium onions, finely chopped ½ cup coconut milk Chopped fresh coriander leaves for garnish Method 1. Take prawns in a bowl. Add lemon juice, salt and mix well. Set aside for 10-15 minutes. 2. Transfer green chillies in a blender. Add ginger, garlic, coriander leaves, mint leaves, coconut, ¾ cup water and grind to a fine paste. 3. Heat oil in a deep nonstick pan. Add cinnamon, black cardamoms, star anise, cloves and cumin seeds. Sauté for 1 minute. 4. Add onions and sauté till golden brown. Add the ground paste and sauté for 30 seconds. 5. Add marinated prawns and sauté for 2-3 minutes. 6. Add rice, coconut milk and 2 cups hot water and mix well. Add salt and mix. 7. Once the mixture comes to a boil, cover and cook on medium heat for 10-15 minutes. 8. Transfer in a serving plate, sprinkle coconut, coriander leaves and serve hot. The heart and soul of every Bengali household, the hilsa fish cooked in a sharp, pungent mustard paste is a perfect accompaniment to steamed rice. ILISH MACHER SORSE JHOL Ingredients 8 half-inch thick darnes of hilsa (ilish) fish 2 tablespoons mustard seeds Salt to taste ½ teaspoon turmeric powder 8 green chillies, slit + for garnish 4 tablespoons mustard oil 1 teaspoon red chilli powder Steamed rice for serving Method 1. Transfer mustard seeds in a grinder jar, add salt, turmeric powder, 4 green chillies and ½ cup water. Grind to a fine paste. 2. Take fish pieces in a bowl. Add half the prepared paste, 2 tablespoons mustard oil and mix well. 3. Heat remaining mustard oil in a nonstick kadai. Once it starts to smoke, reduce the heat, add fish pieces and cook for 2-3 minutes. 4. Add remaining green chillies, 2 cups water and mix well. 5. Add red chilli powder and mix well. 6. Add 1 cup water to remaining mustard paste and add to the pan and mix well. 7. Cover and cook on medium heat for 6-8 minutes. 8. Transfer in a serving bowl, garnish with green chilli and serve hot with steamed rice. The pleasure of savouring, slow cooked fish that cooks fast … Fish grilled in a plantain leaf with a generous smear of flavourful, rustic masala is a famous sea-food from Kerala. FISH POLLICHATHU Ingredients 4 tilapia fish, cleaned and slit 5 tablespoons coconut oil ½ cup shallots ½ teaspoon fenugreek seeds ½ teaspoon mustard seeds ½ teaspoon fennel seeds 15-16 black peppercorns 16 dried red chillies, stemmed 4 tablespoons coriander seeds 2 inch ginger, peeled and roughly chopped 16 garlic cloves 6 green chillies 25-30 curry leaves, chopped 2 teaspoons tamarind pulp Salt to taste ½ cup chopped shallots 4 pieces of banana leaf, roasted on direct heat Chopped fresh coriander leaves for garnish Method 1. Heat 2 tablespoons coconut oil in a shallow nonstick pan. Add shallots, fenugreek seeds, mustard seeds, fennel seeds, black peppercorns, dried red chillies, coriander seeds, ginger, garlic, green chillies, half the curry leaves, tamarind pulp, salt and sauté for 2-3 minutes. 2. Transfer on a plate and allow to cool. 3. Transfer the mixture in a grinder jar. Add ½ cup water and grind to fine paste. 4. Take the fish in a parat and apply half the ground paste over so that the fish is nicely coated with the paste. Set aside for 10-15 minutes. 5. Heat 1 tbsp coconut oil in a nonstick pan. Add chopped shallots, remaining curry leaves and sauté till shallots turn translucent. 6. Add the remaining ground paste and sauté for 4-5 minutes. 7. Place a piece of banana leaf on the worktop and spread some of the sauteed masala on top. Now keep a piece of fish and add some more masala on top. Fold the sides to make a pocket. Secure with a thread. 8. Heat remaining coconut oil in a non-stick pan, place the fish parcels and cook for about 3 to 4 minutes on each side or till the fish is completely cooked. Ensure that the leaves do not burn while cooking. 9. Serve hot in the parcel itself garnished with coriander leaves. Phirni | फिरनी | Popular Indian Dessert | Khazana of Indian Recipes | Sanjeev Kapoor Khazana
Phirni is a light, flavourful and a fragrant rice and milk pudding that’s just perfect for festivals, occasions or just for a simple sweet-tooth craving … PHIRNI Ingredients 5 tbsps rice, soaked for 30-40 minutes, and drained 1 litre milk A generous pinch of saffron ¾ cup sugar ½ tsp green cardamom powder 10-15 pistachios, blanched, peeled and slivered Method 1. Transfer the rice in a grinder jar, add ¼ cup water and grind to a coarse paste. 2. Bring milk to boil in a deep nonstick pan. Add the prepared rice paste, saffron strands and cook on medium heat for 10-12 minutes or till the rice is completely cooked. 3. Add sugar and cook on medium heat for 2-3 minutes or till it dissolves completely. 4. Add green cardamom powder and mix well. 5. Transfer the mixture in individual earthenware bowls, sprinkle blanched pistachios and allow to come down to room temperature. 6. Refrigerate for 2-3 hours. 7. Serve chilled. Chef’s Tip: It is a good idea to grind green cardamom with a little sugar as otherwise the quantity of green cardamom may be too little to grind. For the love of paneer .. A stir-fried preparation of paneer and veggies in a fiery tempering is what you will often find on the menu of restaurants. PANEER JALFREZI Ingredients 400 grams-cottage cheese (paneer), cut into 2-inch-long pieces 3 tbsps oil 1 tsp cumin seeds 2 dried red chillies, stemmed and broken 2 one-inch pieces of ginger, cut into thin strips 1-2 green chillies, chopped 2 medium onions, thickly sliced and layers separated 1 tsp turmeric powder 1½ tsps red chilli powder 2 medium green capsicums, seeded and cut into thick strips Salt to taste 1½ tbsps vinegar 2 medium tomatoes, seeded and cut into thick strips 1 tsp garam masala powder 2 tbsps chopped fresh coriander leaves Method 1. Heat oil in a non-stick kadai. Add cumin seeds. When they change colour add red chillies, ginger strips, green chillies and onions. Sauté for 30 seconds. 2. Add turmeric powder, red chilli powder, mix well and add capsicum. Cook for 2-3 minutes. Add paneer pieces and toss. Add salt and vinegar and cook for 2-3 minutes. Add tomato pieces and garam masala powder and mix well. 3. Serve hot garnished with coriander leaves. Up your health quotient with split moong dal pancakes, combined with a cottage cheese-veggie stuffing for your dose of multi-vitamins and proteins… MOONG KE CHEELAY Ingredients 1 cup split green gram skinless (dhuli moong dal), soaked for 1-2 hours, and drained 1 tsp cumin seeds 2 green chillies, roughly chopped A pinch of asafoetida (hing) Salt to taste 100 grams cottage cheese, grated 1 medium onion, chopped 1 medium tomato, chopped 2 tbsps chopped fresh coriander leaves ½ tsp red chilli powder Oil for greasing + drizzling Green chutney to serve Method 1. Transfer the drained dal and in a grinder jar. Add cumin seeds, green chillies and 1 cup water. Grind to a fine paste. 2. Transfer in a bowl. Add asafoetida, salt and mix well. 3. Take cottage cheese in a bowl. Add onion, tomato and coriander, salt and red chilli powder and mix well. 4. Heat a non-stick tawa. Grease with oil, and pour a ladle full of batter onto the tawa and spread it to make a medium sized disc. Drizzle some more oil and cook for about 1-2 minutes. 5. Flip and cook on other side for 1-2 minutes. 6. Flip again and place a portion of the cottage cheese mixture on 1 side. Fold the other side over. 7. Transfer on serving plate and serve hot with green chutney. MOHANTHAL Ingredients 2 cups gram flour (besan) 2 tbsps + ½ cup ghee + for greasing 4 tbsps milk 1 cup sugar ¼ tsp green cardamom powder ¼ tsp nutmeg powder 8-10 almonds, sliced 8-10 pistachios, sliced Method 1. Sift gram flour through a fine sieve into a parat and discard the residue. 2. Heat 2 tbsps ghee and milk in a non-stick pan. Pour both over the gram flour. 3. Mix thoroughly with your fingers so that no lumps are formed and it resembles bread crumbs. Pass it through a sieve again and set aside. 4. Grease a burfi tray with some ghee. 5. Heat a deep nonstick pan. Add sugar, ¾ cup water and cook on medium heat till the syrup reaches 1½ strings consistency. 6. Heat ½ cup ghee in a non-stick kadai. Add the prepared gram flour mixture and cook, stirring continuously, on low for 15-20 minutes or till fragrant and the flour turns golden brown. 7. Add cardamom powder and nutmeg powder. Remove from heat and add the hot sugar syrup when the besan mixture is still hot. Mix continuously to ensure that no lumps are formed. Continue to mix till it reaches setting consistency. 8. Pour onto greased burfi tray and tap it on a flat surface to flatten it. Garnish with almonds and pistachios. Let it cool and set for 15-20 minutes. 9. Cut into squares and serve. LAPSI AUR SHIMLA MIRCH SALAD Ingredients 1½ cups-soaked broken wheat (lapsi) 1 large red capsicum (lal shimla mirch) 1 large yellow capsicum (pili shimla mirch) 1 medium onion, sliced 2 medium tomatoes, seeded and diced 1 tbsp chopped fresh coriander leaves Salt to taste White pepper powder to taste A pinch of sugar 1 tbsp lemon juice 4 tbsps finely chopped fresh mint leaves A few leaves of iceberg lettuce Method 1. Roast each capsicum over direct flame till well charred from all sides. Set aside to cool. 2. One of the most delicious gravy dish made with cauliflowers simmered in a rich, thick tomato gravy. Totally lip-smacking. GOBHI MUSSALLAM Ingredients 2 small cauliflowers Salt to taste 1 tsp turmeric powder 2-3 tbsps melon seeds (magaz) paste 3 tbsps oil 2 medium onions, grated 2 tbsps ginger-garlic paste 1 tsp cumin powder 1 tbsp red chilli powder 1 tbsp coriander powder 1 tsp garam masala powder 1 cup tomato puree ½ cup grated khoya/mawa ½ cup fresh cream Fresh coriander leaves for garnish Method 1. Remove stalks from the cauliflowers. Boil sufficient water in a deep non-stick pan, add salt and ½ tsp turmeric powder and mix. Add the cauliflowers and cook for 10-15 minutes or till half cooked. 2. Heat oil in a non-stick kadai. Add onions and sauté until golden brown. 3. Add ginger-garlic paste, and mix well. Cook for 1-2 minutes. 4. Add cumin powder, red chilli powder, coriander powder, remaining turmeric powder, garam masala powder and salt. Sauté for 30 seconds. 5. Add tomato puree, mix, and cook till oil separates. 6. Drain the cauliflower and set aside. 7. Add melon seeds paste, and 2 cups water to the pan and mix well. Bring it to a boil. 8. Add khoya and mix till well combined. 9. Add half cooked cauliflowers, and mix till the cauliflower is well coated with the masala, cover and cook on low heat for 8-10 minutes. Top with the fresh cream and cook for 2-3 minutes. 10. Serve hot, garnished with coriander leaves. Kudos to the maker of this amazing combination of incorporating chocolate in Indian sweets. Easily the most favourite of kids !! CHOCOLATE BURFI Ingredients 3 cups grated mawa / khoya Ghee for greasing ½ cup sugar 3 tbsps cocoa powder Silver varq for garnish Method 1. Grease a tray with ghee and keep aside. 2. Cook mawa in a thick-bottomed non-stick pan, stirring continuously, till it melts completely and has a thick sauce like consistency. Do not let it colour. 3. Add sugar and stir till it is completely melted and mawa is cooked. 4. Remove half of this mixture and pour onto the greased tray. For spreading the mawa evenly on the tray, hold the tray from two sides and tap it on a hard surface 2-3 times. Let it cool. 5. Keep the remaining half on low heat. Add cocoa powder and mix well. 6. Pour the cocoa mixture over the earlier mixture. Let it cool completely. Garnish with silver varq, cut into pieces and serve. Punjabiyaan di Shaan ..Tandoori chicken makes everyone go weak-in-the-knees … A delicious marination and grilled on slow charcoal fire gives it that earthy, smoked taste. TANDOORI CHICKEN Ingredients 750 grams chicken, cut into 2 breast pieces and 2 leg pieces on the bone 1 teaspoon Kashmiri red chilli powder ½ lemon Salt to taste Butter, for basting ½ teaspoon chaat masala Onion rings to serve 2 lemons, cut into wedges Mint leaves to serve Green chutney to serve Marinade ½ cup hung yogurt 1 tablespoon ginger paste 1 tablespoon garlic paste 1 teaspoon Kashmiri chilli powder Salt to taste ½ lemon ½ teaspoon garam masala powder ½ tsp dried fenugreek leaves (kasuri methi) powder 2 teaspoons mustard oil Method 1. Make incisions with a sharp knife on breast and leg pieces of the chicken. 2. Apply a mixture of Kashmiri red chilli powder, lemon juice and salt to the chicken pieces set aside for ½ hour preferably in the refrigerator. 3. To make the marinade, take hung yogurt in a large bowl. Add ginger paste, garlic paste, Kashmiri red chilli powder, salt, squeeze the juice of lemon directly into it, add garam masala powder, dried fenugreek leaves powder, and mustard oil and mix. 4. Apply this marinade to the chicken pieces and refrigerate for 3-4 hours. 5. Preheat the oven at 200º C. 6. String the chicken pieces onto the skewers and arrange on a baking tray. And place it in the preheated oven for 10-15 minutes. 7. Bring it out of the oven and baste with some butter and place it back in the oven for 2-3 minutes. 8. Bring it out of the oven again, baste with butter again. 9. Sprinkle chaat masala over them and serve hot with onion rings, lemon wedges, mint leaves, and green chutney. SAI BHAJI Ingredients 400 grams spinach leaves, finely shredded ½ medium bunch sorrel leaves, finely shredded 15-20 sorrel leaves 2 tablespoons oil 1 teaspoon cumin seeds 2 medium onions, finely chopped 1 inch ginger, finely chopped 3-4 green chillies, finely chopped 2 small long brinjals, cut into 1 inch cubes 1 small potato, peeled and cut into 1 inch cubes 4 tablespoons split Bengal gram, soaked for ½ hour and drained 2 large tomatoes, roughly chopped ¼ teaspoon turmeric powder 1 teaspoon red chilli powder Salt to taste Ginger strips for garnish Method 1. Heat oil in a pressure cooker and add cumin seeds. When they begin to change colour, add onions and sauté till golden brown. 2. Add ginger and green chillies, and sauté for a few seconds. 3. Add spinach, shredded sorrel leaves, whole sorrel leaves, brinjal, potato, drained Bengal gram, tomatoes, turmeric powder, red chilli powder and salt. Mix well and stir in 1½ cups water. 4. Cover and cook till one whistle is released. Reduce the heat and cook for 8-10 minutes more. Switch the heat off and open the lid when the pressure has reduced completely. 5. Remove potato cubes with a slotted spoon and blend the remaining mixture with a hand blender. Add potato cubes and mix well. 6. Serve hot garnished with ginger strips. This sweet, syrupy spiral delicacy has a mind-blowing fan base. And naturally so, the delicious sweetness and crunch is what everybody loves. JALEBI Ingredients 1½ cups + 2½ tablespoons refined flour (maida) 1 teaspoon soda bi-carbonate 2½ cups sugar 2 tablespoons milk ½ teaspoon green cardamom powder A large pinch of saffron Ghee for deep frying ¼ tsp edible yellow or saffron food colour (optional) Blanched, peeled, and slivered pistachios for garnish Rabdi to serve Method 1. Mix 1½ cups refined flour and soda bi-carbonate in a large mixing bowl. Add 1½ cups water and mix well with your hand till a smooth batter is formed. Continue to mix for 10-15 minutes. Make sure that there are no lumps. Cover and leave it overnight to ferment. 2. To make the sugar syrup, heat sugar and 2½ cups water in a deep pan. Cook till the mixture comes to a boil and continue to cook till sugar melts. 3. Add milk and mix. Collect the scum that forms on the surface of the syrup and discard it. 4. Cook till the mixture reaches one string consistency. Add green cardamom powder and saffron and mix well. 5. Switch the heat off. 6. Once the batter is fermented, mix it again and add remaining refined flour and continue to mix for 2-3 minutes. Add the food colour and mix till well combined. 7. Heat ghee in a jalebi tawi or a flat kadai or a frying pan on medium heat. 8. Pour batter into a jalebi cloth and then squeeze it into medium hot ghee giving it a jalebi shape. Start from outside to inside for better results. 9. Deep fry till golden and crisp. Drain and soak in the sugar syrup for 5 minutes. 10. Drain and garnish with slivered pistachios. Serve with rabdi. FISH MOILEE Ingredients 600 grams rohu/pomfret, cut into ½ inch thick slices Salt, to taste 2 teaspoons lemon juice 2 tablespoons oil 1 teaspoon mustard seeds 10-15 curry leaves 2 medium onions, chopped 2 teaspoons ginger paste 2 teaspoons garlic paste 3 green chillies, slit 1 teaspoon turmeric powder 2 cups coconut milk Fried curry leaves for garnish Steamed rice to serve Method 1. Apply a little salt and lemon juice to the fish slices and keep aside for 15 minutes. 2. Heat oil in a non-stick kadai, add mustard seeds. When they splutter, add curry leaves and sauté for a few seconds. Add onions and cook until soft and translucent. 3. Add ginger paste, and garlic paste and mix well. Cook for 1-2 minutes. 4. Add green chillies and turmeric powder and sauté for 1 minute. 5. Add the fish pieces, gently mix till each piece is well coated with the masala. Cook on high heat for ½ minute. 6. Add coconut milk and adjust salt and mix. Cover and cook on low heat for about 10 minutes. 7. Garnish with fried curry leaves and serve hot with steamed rice. Sharp and sweet with a dash of pungency, the stuffed gujiyas are simply melt-in-the-mouth and an instant hit with everybody. DAHI GUJIA Ingredients 2 cups split skinless black gram, soaked for 4 hours and drained 1 teaspoon cumin seeds ½ teaspoon fennel seeds Salt, to taste 15-20 cashew nuts, chopped 2 tablespoons raisins 4-5 black peppercorns, coarsely crushed Oil for deep frying 6 cups yogurt Black salt to taste 1 teaspoon roasted cumin powder 1 teaspoon red chilli powder 2 tablespoons chopped fresh coriander leaves + for garnsih 1 inch ginger, cut into thin strips Date and tamarind chutney for drizzling Green chutney for drizzling Masala dal for garnish Fresh pomegranate pearls for garnish Nylon sev for garnish Method 1. Grind the soaked split skinless black gram with ½ cup water till a thick and fine paste is formed. Transfer it into a bowl. The batter should be thick, not runny. Add cumin seeds, fennel seeds and salt and mix well with your hand for 1-2 minutes. 2. To make the stuffing, mix cashew nuts with raisins and crushed black peppercorns in a small bowl. 3. Heat sufficient oil in a kadai. 4. Apply some oil in the centre of a rectangular plastic sheet, add a small ladleful of the batter over it, dip your fingers in some water and spread the batter into a circle of 2½ inch diameter. Place 1 teaspoon of the stuffing in the center. 5. Hold 2 corners of the plastic sheet and bring towards the other two corners to join them to make a crescent shape. Gently slide the gujiya into hot oil. Make more gujias similarly. 6. Deep-fry the gujias till golden brown on both sides. Drain and soak in sufficient warm water for 10-15 minutes. 7. Strain the yogurt through a muslin cloth into a large bowl. Add salt, and black salt and mix well. 8. Gently squeeze the gujias and transfer into the yogurt. 9. Sprinkle roasted cumin powder, red chilli powder, coriander leaves, and ginger strips. Refrigerate for 3-4 hours. 10. Serve topped with date and tamarind chutney, green chutney, and garnished with masala dal, pomegranate pearls, nylon sev, and coriander leaves. Chicken Makhani | चिकन मखनी | Butter Chicken | Sanjeev Kapoor Khazana
The marinade does something magical to the spiced, soft, succulent chicken that’s simmered in a wonderfully, thick makhani gravy. CHICKEN MAKHANI Ingredients 750 grams chicken, cut into 2 breast pieces and 2 leg pieces on the bone 1 teaspoon Kashmiri red chilli powder ½ lemon Salt to taste Butter, for basting Marinade ½ cup hung yogurt 1 tablespoon ginger paste 1 tablespoon garlic paste 1 teaspoon Kashmiri chilli powder Salt to taste ½ lemon ½ teaspoon garam masala powder ½ tsp dried fenugreek leaves (kasuri methi) powder 2 teaspoons mustard oil Makhani gravy 400 grams tomato puree 3 tablespoons butter 2-3 green cardamoms 4-5 cloves 7-8 black peppercorns 1 inch cinnamon 1 tablespoon ginger paste 1 tablespoon garlic paste 2 green chillies, chopped 1 tablespoon red chilli powder ½ teaspoon garam masala powder Salt, to taste 2 tablespoons sugar ½ teaspoon dried fenugreek leaves powder + for garnish 1 cup fresh cream + for garnish Method 1. Make incisions with a sharp knife on breast and leg pieces of the chicken. 2. Apply a mixture of Kashmiri red chilli powder, lemon juice and salt to the chicken pieces set aside for ½ hour, preferably in the refrigerator. 3. To make the marinade, take hung yogurt in a large bowl. Add ginger paste, garlic paste, Kashmiri red chilli powder, salt, squeeze the juice of lemon directly into it, add garam masala powder, dried fenugreek leaves powder, and mustard oil and mix well. 4. Apply this marinade to the chicken pieces and refrigerate for 3-4 hours. 5. Preheat the oven at 200º C. 6. String the chicken pieces onto the skewers and arrange on a baking tray. And place it in the preheated oven for 10-15 minutes. 7. Meanwhile, for the makhani gravy, heat butter in a non-stick pan. Add green cardamoms, cloves, peppercorns and cinnamon and sauté till fragrant. Add ginger paste, garlic paste and green chillies. Sauté for 2 minutes. 8. Add tomato puree and cook for 1-2 minutes. 9. Add red chilli powder, garam masala powder, salt and mix well. Stir in 1 cup of water and bring the mixture to a boil. Cover the pan, reduce the heat to low and simmer for 10 minutes. 10. Bring the chicken out of the oven and baste with some butter and place it back in the oven for 2-3 minutes. 11. Bring it out of the oven again, baste with butter again. 12. Cut each tandoori chicken piece into two. 13. Add sugar and dried fenugreek leaves powder. Cook for 1 minute. 14. Add the chicken pieces and simmer for 5 minutes. Add fresh cream and mix lightly. 15. Transfer the chicken makhana in a serving bowl, garnish with fresh cream and dried fenugreek leaves powder. 16. Serve hot with naan or parantha. A milk-only recipe that has curdled milk chunks simmered in reduced milk adding to the richness of this delicacy from the eastern parts of India. CHENNAR PAYESH Ingredients 1 cup grated cow milk cottage cheese (chenna) 5 cups milk A few strands of saffron + for garnish ½ teaspoon green cardamom powder 3½ tablespoons sugar Blanched, peeled, and slivered pistachios for garnish Method 1. Heat milk in a deep non-stick pan and cook till it reduces to half the original quantity, while stirring continuously. 2. Add saffron and green cardamom powder and mix. Cook for 1-2 minutes. 3. Add sugar and mix well. Cook till the sugar melts completely. 4. Add grated cottage cheese, mix and cook on low heat for another 2 minutes. 5. Take the pan off the heat and set aside to cool. Kolhapuri hai to teekhaa to banegaa hi… Veggies simmered in an eye-catching, fiery, red gravy with a generous dollop of butter .. Pair it with butter naan, lacchaa paratha. VEGETABLE KOLHAPURI Ingredients 1 medium carrot, peeled and cut into ½ inch pieces 1 medium potato, peeled and cut into ½ inch pieces 6-8 cauliflower florets 6-8 French beans, stringed and cut into ½ inch pieces ¼ cup green peas Salt to taste 4 tablespoons oil ½ cup grated dried coconut 8 cloves 8 black peppercorns 1 teaspoon poppy seeds (khas khas) 1 teaspoon coriander seeds 6 dried red chillies 2 large onions, chopped 1 tablespoon ginger-garlic paste 2 large tomatoes, chopped 1½ teaspoons red chilli powder 1 teaspoon turmeric powder A few sprigs of fresh coriander leaves, chopped Fresh coriander sprigs for garnish For Kolhapuri garam masala ½ teaspoon fennel seeds (saunf) 1 inch cinnamon stick 1 stone flower ½ teaspoon cumin seeds 2 bay leaves 2 black cardamoms 10-12 black peppercorns Method 1. Boil carrot, potato and cauliflower in sufficient boiling salted water in a deep non-stick pan till nearly done and then add French beans and green peas. Boil for 5 minutes more. Drain and refresh in cold water. Drain again and transfer in a bowl. 2. For Kolhapuri garam masala, grind fennel seeds, cinnamon, stone flower, cumin seeds, bay leaves, black cardamoms and black peppercorns into a fine powder and transfer in a small bowl. 3. Heat 2 tablespoons oil in a non-stick kadai. Add grated dried coconut, cloves, black peppercorns, poppy seeds, coriander seeds and red chillies and sauté till golden. Add ⅔ of the chopped onions and sauté till light brown. Cool, grind to a paste with ½ cup water. 4. Heat remaining oil in another non-stick kadai. Add remaining chopped onions and sauté till brown. Add ginger-garlic paste and continue to sauté till lightly browned. Add tomatoes, red chilli powder, turmeric powder, and mix well. Cook till oil separates. 5. Add the ground paste, add ½ cup water and cook for 4-5 minutes. 6. Add boiled vegetables, adjust salt and simmer for 4-5 minutes. Sprinkle 3 tsps of Kolhapuri garam masala powder and mix well. 7. Garnish with coriander leaves and serve hot garnished with coriander sprigs. Soyabean Granules Sabzi | सोयाबीन ग्रॅन्यूल्स सब्ज़ी | Protein Rich Recipe | Sanjeev Kapoor Khazana
Protein-rich soya granules cooked in a simple tomato-onion semi-dry version. Tastes great even with chapatis or stuff between bread slices for a variation of sandwich. SOYABEAN GRANULES SABZI Ingredients 200 grams soyabean granules 2 cups warm milk 3 tablespoons oil 1 teaspoon cumin seeds 3 medium onions, finely chopped 1 tbsp ginger-green chilli paste 3 medium tomatoes, chopped 1 teaspoon red chilli powder ½ teaspoon turmeric powder Salt to taste ¼ cup chopped fresh coriander leaves + for garnish Method 1. Wash soyabean granules with lukewarm water. Drain and then soak in warm milk for ½ hour. 2. Heat oil in a non-stick pan. Add cumin seeds. When they start to change colour, add onions and sauté till golden brown. Add ginger-green chilli paste and cook for ½ minute. 3. Add tomatoes and cook for 4-5 minutes. Add red chilli powder and turmeric powder. Cook till the oil separates. 4. Add soyabean granules and mix well. Cover and cook till soya granules are cooked. These normally take about 10 minutes. Add a little water if required. Add salt and cook till it is almost dry. 5. Add coriander leaves, mix and cook for a few seconds. 6. Serve hot garnished with coriander leaves. Simple is awesome. Just a light touch of spices to the versatile moong and you have a wonderful accompaniment to rotis/chapatis. SOOKHI MOONG DAL Ingredients 1¼ cups split skinless green gram (dhuli moong dal), soaked for 30 minutes and drained Salt to taste ½ teaspoon turmeric powder 3 tablespoons oil ½ teaspoon cumin seeds A pinch of asafoetida 2 one-inch ginger pieces, chopped 1 green chilli, chopped 1 teaspoon red chilli powder 2 teaspoons lemon juice 1 tablespoon chopped fresh coriander leaves + for garnish Method 1. Take dal in a deep non-stick pan, add 2½ cups water, salt and turmeric powder and cook till just cooked but not mashed. Drain excess water. 2. Heat oil in a non-stick kadai. Add cumin seeds and asafoetida. Once the cumin seeds start to change colour, add ginger and green chilli and sauté for ½ minute. 3. Add red chilli powder and the cooked dal and mix till well combined. Add lemon juice and salt if required. Mix lightly taking care not to mash the dal and cook till dry. 4. Add coriander leaves and mix. 5. Serve hot garnished with coriander leaves. Traditional phirni with caramelised phirni scrapings as an appealing garnish never tasted so delicious !! Divine … Surreal !! GULATHTHI Ingredients 2 litres full fat milk ¾ cup short grain, soaked for 30 minutes and drained ½ cup sugar A large pinch of saffron ¾ cup grated khoya 2 tbsps charoli + for garnish 2 tbsps raisins + for garnish 2 tbsps slivered almonds + for garnish 2 tbsps slivered cashew nuts + for garnish ½ cup desiccated coconut 2 tbsps ghee ½ tsp green cardamom powder Silver warq for garnish Method 1. Heat milk in a pan. Let it come to a boil. 2. Meanwhile, put the rice in a blender jar and coarsely blend it. Transfer this paste into the milk and mix well. Continuously stir till the mixture thickens and the rice is cooked completely. 3. Add sugar and saffron and mix well. Cook till the sugar melts completely. 4. Add charoli, raisins, almonds, and cashew nuts and mix well. Cook for 2-3 minutes. 5. Add desiccated coconut and mix well. Switch the heat off. 6. Heat ghee in a small pan and let it heat up. Switch the heat off and add green cardamom powder and mix well. Pour this into the milk-rice mixture and mix well. 7. Transfer most of the mixture into an earthen serving bowl. Garnish with charoli, almonds, cashew nuts and raisins. 8. Place the pan back on heat and cook on high heat till the mixture starts to caramelize and turns dark brown. Scrape the bottom of the pan and roll into a spiral. Cut them in half and arrange it over the prepared mixture. Garnish with silver warq. Serve chilled. Seafood lovers’ special, this spicy, coconut-based clam curry is what every western coastal native will claim to be their speciality. TISRYA KALVAN Ingredients 4 cups clams (tisrya), soaked in 5 cups water for 15 minutes, cleaned, and washed Salt to taste ½ tablespoon lemon juice 2 medium onions 4 tablespoons oil 5 cloves 5-6 black peppercorns 2 inch cinnamon ½ teaspoon caraway seeds 1 teaspoon coriander seeds 5-6 dried red chillies ½ cup grated dried coconut 2 tablespoons tamarind pulp 1 tablespoon ginger paste 1 tablespoon garlic paste ¼ teaspoon turmeric powder ½ cup coconut milk 1 tablespoon chopped fresh coriander leaves Steamed rice to serve Method 1. Boil 2 cups water in a deep non-stick pan. Add clams and cover with a lid. 2. Remove the lid after 1 minute and check if the clams have opened slightly. If they have, then strain clams through a colander and reserve the water for later use. Refresh the clams under running water and drain. 3. Remove one shell keeping the meat on the other shell. Similarly prepare all the clams and put them into a bowl. 4. Marinate the clams with salt and lemon juice for 15 minutes, preferably in a refrigerator. 5. Slice 1 onion and chop the other. 6. Heat 1 tablespoon oil in a small non-stick pan, add sliced onion. Sauté for 3-4 minutes or till they turn golden brown. Transfer the browned onions on a plate and allow to cool slightly. 7. Dry-roast cloves, peppercorns, cinnamon, caraway seeds, coriander seeds, red chillies and coconut till fragrant in the same pan. Take the pan off the heat and allow to cool. 8. Transfer the browned onions and roasted spices in a mixer jar, add tamarind pulp, and ½ cup water and grind to a fine paste. 9. Heat remaining oil in another deep non-stick pan, add chopped onion and sauté till light golden brown. 10. Add ginger paste, garlic paste and sauté for 1 minute. Add ground paste and sauté for 5 minutes. Add 2½ cups of the reserved clam water and bring the mixture to a boil. 11. Add clams, turmeric powder and coconut milk. Adjust salt, and mix well. Cook for 5 minutes. 12. Add chopped coriander leaves and mix. Serve hot with steamed rice. Besan and spice-coated paneer deep fried and spiked with chaat masala when serving. PANEER KOLIWADA Ingredients 300 grams cottage cheese (paneer), cut into 2 inch cubes 1 cup gram flour (besan) ½ teaspoon cumin powder 2 teaspoons Kashmiri red chilli powder Salt to taste 1 tablespoon ginger paste 1 tablespoon garlic paste 2 tablespoons yogurt 2 tablespoons lemon juice Oil for deep frying Chaat masala for sprinkling Method 1. Take gram flour in a bowl, add cumin powder, red chilli powder, salt, ginger paste, garlic paste, yogurt and lemon juice and ½ cup water to make a smooth batter. Marinate the paneer pieces in this batter for 10-15 minutes. 2. Heat sufficient oil in a kadai and deep-fry the paneer pieces till crisp on the outside. Drain on absorbent paper. 3. Serve hot sprinkled with chaat masala. Chef’s Tip: To make Paneer Koliwada extra crisp, add 1 tablespoon corn flour to the batter. Teekha kam jyadaa chalegaa, lekin hara to hona hi chahiye … Chicken cooked in a pungent, creamy green curry goes well with tandalachi/rice flour bhakri. MALWANI CHICKEN HIRWA MASALA Ingredients 750 grams chicken, cut into 2 inch pieces on the bone Salt to taste 1¼ cups fresh coriander leaves ½ cup scraped fresh coconut ½ inch ginger, chopped 4 garlic cloves, peeled 6 green chillies, chopped 2 tablespoons oil 1 inch cinnamon stick 2 black cardamoms 2 green cardamoms 1 bay leaf 2-3 cloves ½ teaspoon cumin seeds 3 medium onions, chopped ½ cup thick coconut milk ¼ teaspoon garam masala powder 2 tbsps chopped fresh coriander leaves Method 1. Take chicken pieces in a bowl, add salt and rub in well. Cover the bowl and set aside to marinate for 10-15 minutes. 2. Grind the coconut with ginger, garlic, green chillies, coriander leaves, and 4 tablespoons water to a fine paste. Add this paste to the chicken and mix well so that all the chicken pieces are covered with the green chutney. 3. Heat oil in a deep non-stick pan, add cinnamon, black cardamoms, green cardamoms, bay leaf, cloves and cumin seeds and sauté till fragrant. Add onions and cook for 3 minutes or till soft and translucent. 4. Add marinated chicken and sauté on low heat for 5-6 minutes. 5. Add 2 cups water and cook for 5-6 minutes or till the chicken is done. 6. Add coconut milk and garam masala powder and mix well. 7. Garnish with the reserved coriander leaves and serve hot. Lauki Ke Pakode | लौकी के पकोड़े | Monsoon Special | Sanjeev Kapoor Khazana
The humble lauki (bottle gourd), cut into thin roundels, coated with a mildy spiced pakoda batter and deep fried till nice and scrumptious! Always, always the best with green chutney…. LAUKI KE PAKODE Ingredients 1 medium bottle gourd 1 cup gram flour (besan) 2 tbsps rice flour ½ tsp turmeric powder ½ tsp red chilli powder Salt to taste ½ tsp carom seeds (ajwain) 1 tsp ginger-garlic green chilli paste 1 tbsp chopped fresh coriander leaves Oil for deep frying Green chutney to serve Method 1. Peel the bottle gourd and cut into thin roundels, 2. In a bowl add gram flour, rice flour, turmeric powder, red chilli powder, salt to taste and ajwain, ginger-garlic green chilli paste, chopped coriander leaves, gradually add ¾ cup water and mix till well combined. Continue to mix for 3-4 minutes. 3. Heat sufficient oil in a kadai, dip the roundels in the batter and gently slide into the hot oil. Deep fry till golden brown and crisp. Drain on an absorbent pepper. 4. Serve hot with green chutney.
