Chicken Soup by #TanTanaDone is all you need to comfort yourself on a chaotic day! Especially because this one is totally fuss-free, hearty and rustic, making it a must try. ♨️🍜 CHICKEN SOUP WITH RICE Ingredients 2 chicken thighs 3 cups cooked rice 4 inch lemongrass stalk 2 inch ginger 20-30 black peppercorns 2 medium carrots 6-8 button mushrooms ½ medium broccoli Salt to taste 20-30 baby spinach leaves Method 1. Add chicken thigh to the pressure cooker. Crush the lemongrass stalk lightly and add to the mortar. 2. Roughly chop ginger and add to the mortar. Add black peppercorns and crush coarsely. 3. Add crushed mixture to the pressure cooker. Add 2 cups water, close the lid and cook on medium heat till the pressure is released 2-3 times. 4. Peel carrot and cut into ½ inch pieces. Quarter mushrooms. Cut broccoli into small sized florets. 5. Open the cooker once the pressure is settled completely. Remove the crushed spices, add carrot to the stock and pull the chicken leg into small pieces. Cook for 2-3 minutes. 6. Add broccoli and mushrooms and cook for 2-3 minutes 7. Add rice to 4 individual bowls and chicken on top. 8. Add salt to the chicken soup. Also sprinkle some salt on chicken. 9. Add baby spinach leaves to the bowl. Add prepared soup and serve hot.
