Looking for a quick, healthy and delicious snack? Try this Maharashtrian special Dhirde with some chutney! DHIRDE Ingredients 1 cup sorghum (jowar) flour ¼ cup whole wheat flour (gehun ka atta) ½ cup gram flour (besan) 1½ tsps garlic-green chillies paste ½ tsp turmeric powder ¼ tsp red chilli powder Salt to taste Oil for drizzling Coconut chutney to serve Method 1. Take sorghum flour in a large bowl. Add whole wheat flour, gram flour, garlic-green chilli paste, turmeric powder, red chilli powder, salt and 1 cup water and mix well. Add 1 cup water and mix till well combined. Add ½ cup water and mix till a smooth batter is formed. 2. Heat a non-stick tawa. Drizzle a little oil and pour sufficient batter and swirl the pan to make a thin disc. Drizzle oil and cook for 1-2 minutes. Flip and cook the other side for 1-2 minutes as well. 3. ONE POT MACARONI Ingredients 1½ cups macaroni 1½ cups tomato concasse 3 cups vegetable stock ½ medium zucchini, roughly chopped 5-6 button mushrooms, quartered ½ cup corn kernels 1 small carrot, peeled and cut into triangles 6-8 broccoli florets Salt to taste 1 tsp sugar ½ tsp red chilli flakes ½ tsp dried mixed herbs ¼ cup grated parmesan cheese 1 tbsp extra virgin olive oil Fresh basil sprig for garnish Method 1. Chicken Egg Pulao | चिकन अंडा पुलाव बनाने की विधि | Pulao Recipes | Sanjeev Kapoor Khazana

No marination required for this quick pulao that has chicken leg and eggs cooked together in a spicy preparation. A fabulous, quick treat. CHICKEN EGG PULAO Ingredients 750 grams chicken leg boneless, cut into 1 inch pieces 4 hard-boiled eggs 1½ cups Basmati rice, washed, soaked for 20 minutes and drained 2-3 tbsps ghee 1 bay leaf 2 inch cinnamon stick 5-6 cloves 3-4 green cardamoms 1 tsp cumin seeds 2-3 green chillies, slit 2 medium onions, sliced 1½ tbsps ginger-garlic paste Salt to taste 1½ tbsps chicken masala Chopped fresh coriander leaves for garnish Raita to serve Method 1. Heat ghee in a non-stick wide pan. Add bay leaf, cinnamon stick, cloves, green cardamoms and cumin seeds and sauté till fragrant. 2. Add green chillies and onions, mix and cook till translucent. 3. Add ginger-garlic paste and sauté for 1-2 minutes. 4. Add the chicken and sauté on high heat for 2-3 minutes. Add salt and continue to sauté for 3-4 minutes. 5. Add the eggs and mix well. Add the chicken masala and mix. Cook for 1 minute. 6. Add the rice and gently mix. Add 3½ cups hot water, mix, cover and cook on medium heat for 12-15 minutes. Switch the heat off, allow the chicken egg pulao to rest for 10-15 minutes. 7. Transfer the pulao in a serving bowl, garnish with coriander leaves and serve hot with raita. If there is anything simple and fantastic then these potatoes cooked in a besan gravy with fluffed up pooris on the side is what you must make. The dish is typically served as a breakfast or brunch item, and it is a popular street food in India. POORI CURRY Ingredients 1 tsp mustard seeds 1 tsp cumin seeds 1 tbsp split Bengal gram, (chana dal) 3 dried red chilies 1 tsp chopped ginger 3 medium onions sliced 6-8 curry leaves 2 slit green chilies ¼ tsp turmeric powder 3 tbsps besan ½ cup blanched green peas Method 1. Heat oil in a nonstick pan, 1 tsp mustard seed and let the seeds splutter, add 1 tsp cumin seeds, chana dal, and sauté for 30 seconds. Dried red chilies, ginger, onions, sauté for a minute and cook till translucent. 2. Mix well, add the curry leaves, green chilies and mix well. Add turmeric powder and mix well. 3. Take a besan in a bowl add ½ cup of water and mix well. Add the mixture in to the pan, mix well and cook till mixture thickens, add salt to taste. 4. Mash the potatoes and add to the curry, and mix well, lower the heat, cover with the lid and cook for 4-5 minutes. 5. Open the lid and add the green peas and mix well. Transfer the curry in a serving bowl and serve hot with the poori. A delicious toovar dal with sharp and tangy flavours of ginger and lemon. Also the unqiue garnish, makes the dal even more delectable. ADRAK NIMBU WALI DAL Ingredients 2 tbsps grated ginger 2 tbsps lemon juice 1½ cups soaked split pigeon peas (toor dal) ½ tsp turmeric powder ½ tsp asafoetida (hing) Salt to taste Tempering 2 tbsps ghee ½ tsp mustard seeds 1 tsp cumin seeds ¼ tsp asafoetida 1 tsp finely chopped garlic 1 inch ginger cut into strips 1 medium onion, finely chopped Sal to taste 2-3 green chilies, slit 2-3 tbsps chopped fresh coriander leaves Garnish Red chilli powder for sprinkling Fresh coriander sprig for garnish Method 1. Heat a pressure cooker, add split pigeon peas, squeeze the juice of ginger, add turmeric powder, asafoetida, salt and 2 cups water. Mix, cover and cook under pressure for 3-4 whistles. 2. Open the cooker once the pressure has reduced completely. Mix and mash the gram mixture with the back of a spoon. 3. To make the tempering, heat ghee in a deep pan. Add mustard seeds and cumin seeds and cook for a few seconds. 4. Add garlic and sauté for 1 minute. Add ginger strips, mix well and cook for 1 minute. 5. Add onion and sauté till translucent. 6. Add salt, green chillies and sauté for a minute. Add lemon juice, add the cooked gram mixture and mix well. 7. Stir in 1 cup water and bring to a boil. Add coriander leaves and mix well. 8. Transfer the dal in a serving bowl, sprinkle some red chilli powder and garnish with coriander sprig and serve hot. MALVANI METHI PRAWNS MASALA Ingredients 1½ cups chopped fresh fenugreek leaves 15-20 medium prawns, peeled and deveined 2 tbsps oil 8-10 curry leaves 2 medium onions, chopped 1 tbsp ginger-garlic paste 1 cup fresh tomato puree ½ tsp turmeric powder 1 tsp cumin powder 1 tbsp coriander powder 2 tsps red chilli powder 2 tsps Malvani masala Salt to taste 2-3 tbsps chopped fresh coriander leaves + for garnish 1 tbsp lemon juice Chapati for serving Method 1. Heat oil in a nonstick pan. Add curry leaves, onions and sauté till golden brown. 2. Add ginger-garlic paste and sauté for a minute. 3. Add fresh tomato puree, cover and cook till oil separates. 4. Add turmeric powder, cumin powder, coriander powder, red chilli powder, Malvani masala, salt and ¼ cup water and mix well. 5. Add prawns and mix well. Add ¼ cup water, cover and cook on medium heat for 4-5 minutes. 6. Add fenugreek leaves and mix well. Cook for 2-3 minutes on medium heat. 7. Add coriander, lemon juice and mix well. 8. Transfer in a serving bowl, sprinkle coriander and serve hot with chapatis. These delicious pearl millet savoury pancakes are loaded with calcium from the sesame seeds, vitamins and minerals from fresh methi leaves and a burst of many flavours! A must try for sure! BAJRI NA CHAMCHAMIYA Ingredients 1½ cups pearl millet (bajra) flour 1/3 cup yogurt 4 tsps chopped jaggery 2-3 tbsps white sesame seeds + to sprinkle Salt to taste ½ tsp turmeric powder ¾ tsp red chilli powder ½ tsp cumin powder 1 tsp coriander powder 1 tbsp coarsely crushed ginger-green chilli 1½ cups chopped fresh fenugreek leaves 2 tbsps chopped fresh coriander leaves 1 tsp fruit salt Ghee for cooking Pickle for serving Yogurt for serving Method 1. Take yogurt in a bowl. Add jaggery and mix well. Once the jaggery melts, add bajra flour, white sesame seeds, salt, turmeric powder, red chilli powder, cumin powder, coriander powder, crushed ginger-green chilli, fenugreek leaves, coriander leaves and mix well. 2. Add 1¼ cups water and mix well. Add fruit salt and mix well. 3. Heat a nonstick shallow pan. Add ghee, sprinkle white sesame seeds and pour a small ladleful of batter on top. Sprinkle some more sesame seeds on top. 4. Cook on low heat for 3-4 minutes. Flip, drizzle ghee and cook on other side for 2-3 minutes more. 5. Serve hot with pickle and yogurt. This Chicken Sizzler will definitely make your mouth water as you get a real restaurant-like dining experience. Wait, there’s something more surprising here. That is the costing. Take a look at the video for a budget-friendly Chicken Sizzler. CHICKEN SIZZLER Chicken 1 chicken breast boneless Salt to taste Black pepper to taste 1 tsp red chilli powder 1 tsp dried mixed herbs 1 tbsp chopped garlic 1 tbsp light soy sauce 1 tbsp lemon juice 1 tsp red chilli sauce Sauce 2-3 tbsps oil 1 tbsp chopped garlic 1 tbsp butter 1 tbsp refined flour 1 tsp sugar 2 tbsps tomato ketchup Veggies 1 tbsp oil 1 butter 1 tsp chopped garlic 1 large onion, cut into thick roundels, and layers separated 1 large capsicum, cut into triangles 8-10 button mushrooms, halved 1 medium carrot, peeled, cut into diamonds, blanched, and drained 6-8 French beans, stringed, cut into 2-inch pieces diagonally, blanched, and drained Black pepper powder to taste Rice 2 tbsps butter 2 cups cooked basmati rice 2 tbsps chopped fresh coriander leaves 2 tbsps chopped fresh mint leaves Salt to taste Black pepper powder to taste 1 tsp red chilli flakes Assembly 3-4 tbsps melted butter 4-5 cabbage leaves Ice cubes 2 tbsps butter, cut into cubes French fries ready-made to serve Method: - 1. Make some slits on one side of the chicken. Transfer the chicken on a plate. Add salt, black pepper powder, red chilli powder, dried mixed herbs, garlic and light soy sauce, lemon juice, red chilli sauce and oil. Rub the mixture to all sides of chicken. And marinade for 20 minutes. 2. Heat some oil in a grill pan. Place the chicken thighs on it with the skin side facing down and add the remaining marinade. Cook on high heat for 4-5 minutes. Flip and cook the other on high heat for 4-5 minutes or till done. Transfer the chicken covered on a plate. 3. Add 1 cup of water in same pan and mix well. Switch of the heat. 4. Heat oil in a still pan, add butter, garlic, sauté and cook till it become golden brown. Then add onion rings and salt to taste and sauté for 1 minute. Add 2-3 tbsps of water and mix well. 5. Add in the capsicum, mushroom, and mix well, continue to cook for 2-3 minutes. Add carrots, French beans and black pepper powder and toss well. Transfer the veggies covered on a plate. 6. In same pan add the butter and refined flour and cook till the mixture thickens and become golden brown. Strain in the prepared liquid from grill pan and mix well till combine. Add ¼ cup of water and mix well with the help of whisk till it become smooth and thick sauce. 7. Add the sugar and tomato ketchup and mix well. And keep aside. 8. Heat some oil in steel pan add butter, cooked rice, coriander leaves, mint leaves, salt to taste, black pepper powder and red chilli flakes, mix well and cook for 1-2 minutes. Place the grilled chicken piece on a work top and cut into thick slices. 9. Arrange the blanched cabbage leaves on an iron pan. Put the portion of rice on it and, put a portion of grilled veggies on side and French fries and place the grilled chicken on it. Pour the prepared sauce over it. 10. serve hot. No ‘Matargashti’, only lots of ‘matar’(peas). Yes, another family favourite, Matar Paneer is made at least once a week at home. Our guests demand this dish too, because it is delicious, simple and an easy gravy preparation. It goes well with rotis, naan and plain parathas. MATAR PANEER Ingredients 1 cup shelled green peas 300 grams cottage cheese (paneer) Salt to taste 2 tbsps oil 1 tsp cumin seeds 1¼ cups onion paste 1½ tbsps ginger-garlic-green chilli paste 1¼ cups fresh tomato puree 1 tsp coriander powder ¼ tsp turmeric powder ½ tsp Kashmiri red chilli powder ½ tsp garam masala powder + for garnish 1 tbsp chopped fresh coriander leaves + for garnish Phulkas to serve Method 1. Heat sufficient water in a deep pan. Add green peas and salt and mix well. Cook for 2-3 minutes. 2. Cut the cottage cheese in 1 inch cubes. 3. Heat oil in a kadai. Add cumin seeds and let them change colour. Add onion puree and mix well. Cook till golden brown. 4. Add ginger-garlic-green chilli paste and mix well. Cook for 1-2 minutes. 5. Add tomato puree, mix and cook till the oil separates. Add salt, coriander powder, turmeric powder and Kashmiri red chilli powder and mix well. Cook for 1-2 minutes. 6. Strain the green peas into the gravy and mix well. 7. Cook for 2-3 minutes. 8. Add cottage cheese and light mix. Cook for 1-2 minutes. 9. Add garam masala powder and mix well. Sprinkle coriander leaves and mix well. 10. Transfer into a serving bowl. Garnish with garam masala powder and coriander leaves. Serve hot with phulkas. This sweet potato preparation is not only good for fasts, but also when you need a quick, less-sweet pampering RATALYACHE GOD KAAP Ingredients 2 medium sweet potatoes (shakarkhand/ratalu) 2 tbsps ghee 5-6 cashew nuts ¼ cup scraped fresh coconut + for garnish ½ cup sugar ½ tsp green cardamom powder Method 1. Thinly slice the sweet potatoes into roundels. 2. Heat ghee in a pan. Add the sweet potatoes and mix well. 3. Add cashew nuts and continuously sauté on high heat till golden brown. Preheat the oven at 200°C. 2. Brush some olive oil on the red capsicums and place on a baking tray. Keep this in the preheated oven and roast for 30-35 minutes. 3. Bring the baking tray out of the oven. Allow to cool slightly. 4. Peel the roasted red capsicums, discard the seeds and roughly chop them. Allow to cool completely. 5. Heat olive oil in a non-stick pan. Add garlic and cumin seeds and mix well. Cook for 1-2 minutes. 6. Add onion, mix and cook till translucent. Add red chilli powder and sauté for 1 minute. Switch the heat off and allow the mixture to cool slightly. 7. Put the chopped roasted red capsicums and the sautéed onions in a blender jar. Add fresh breadcrumbs, walnuts, lemon juice and salt and blend to a semi-fine paste. 8. Transfer the mixture into a serving bowl. Drizzle a little olive oil and garnish with toasted walnuts and coriander sprig. A mouth-watering appetiser in the form of deep-fried crispy crab pockets served with a sweet chilli sauce will win hearts in the first round of appetisers. CREAMY CRAB POCKETS Ingredients ½ cup cream cheese 2-3 crab sticks, finely chopped 8 spring roll sheets (3” x 3”) 1 tbsp finely chopped garlic 1 tbsp finely chopped celery ¼ cup finely chopped carrot 2-3 spring onions bulbs, finely chopped ¼ cup finely chopped spring onion greens White pepper powder to taste Salt to taste Refined flour slurry for applying Oil for deep frying Sweet chilli sauce to serve Method 1. Take cream cheese in a large bowl. Add garlic, celery, carrot, crab sticks, spring onion bulbs, spring onion greens, white pepper powder and salt and mix till well combined. 2. Place a portion in the centre of a spring roll sheet, apply some refined flour slurry on all the sides, bring the edges to the centre, press to seal and make a pocket. 3. Heat sufficient oil in a kadai. Gently slide in the pockets and deep fry till golden brown and crisp. Drain on an absorbent paper. 4. Arrange the creamy crab pockets on a serving plate and serve hot with sweet chilli sauce. A healthier version of upma prepared with foxtail millet. Breakfast menu sorted! FOXTAIL UPMA Ingredients 1½ cups foxtail millet 2 tbsps coconut oil 1 tbsp Bengal gram (chana dal) 1 tbsp split skinless black gram (dhuli urad dal) 1 tsp mustard seeds ¼ tsp cumin seeds 3-4 green chillies, chopped 7-8 curry leaves 1 medium onion, finely chopped 1 large tomato, finely chopped 1 medium carrot, cut into small cubes Salt to taste ¼ cup boiled green peas 2 tbsps chopped fresh coriander leaves Fresh coriander sprig for garnish Coconut chutney to serve Method 1. Dry roast foxtail millet in a non-stick pan till golden brown. Transfer this into a bowl. 2. Heat coconut oil in the same pan. Add Bengal gram and split skinless black gram and sauté till they turn golden brown. 3. Ad mustard seeds and cumin seeds and cook for a few seconds. Add green chillies, curry leaves and onion and mix well. Cook till the onion turns translucent. 4. Add tomato, carrot and salt and mix well. Cover and cook for 2-3 minutes. 5. Add the roasted foxtail millet, mix and cook for 1-2 minutes. Add 3 cups hot water, mix, cover and cook on high heat till the water evaporates. Reduce the heat to low and continue to cook for 8-10 minutes. 6. Add green peas and coriander leaves, mix, cover and cook for 1 minute. 7. Take the pan off the heat and garnish with coriander sprig. Serve hot with coconut chutney. Shawarma Spring Roll | शवर्मा स्प्रिंग रोल कैसे बनाते हैं | Sanjeev Kapoor Khazana

The taste of shawarma in a spring roll! Yum! And with French Fries, a leafy salad and pickled beetroots and carrots on the side, this is going to be mindblowing. SHAWARMA SPRING ROLL Ingredients 2 boneless chicken breasts Salt to taste ½ cup yogurt 1 tbsp garlic paste 1½ tsps all spice 1 tsp cumin powder 1 tsp onion powder ½ tsp paprika powder Crushed black peppercorns to taste 3 tbsps oil 1 medium carrot, peeled and cut into thin strips ½ small cabbage, finely shredded 1 cup ready-made aioli 1½ tsps red chilli-garlic chutney 4-6 spring roll sheets Refined flour slurry as required Oil for deep frying To serve French fries as required Leafy salad as required Pickled carrot as required Pickled beetroot as required Method 1. Take chicken breasts in a large bowl. Add salt, yogurt, garlic paste, all spice, cumin powder, onion powder, paprika powder, crushed black peppercorns and mix well. Set aside to marinate for 30 minutes. 2. Heat oil in a non-stick grill pan. Place the chicken breasts on it and grill on high heat for 3-4 minutes. Flip and cook the other side for 3-4 minutes as well. Reduce the heat to medium and continue to cook till done. 3. Take the pan off the heat and place the grilled chicken breasts on a worktop and shred them. Transfer in a large bowl. 4. Add carrot, cabbage, aioli, and red chilli-garlic chutney and mix till well combined. 5. Take a spring roll sheet, add a portion of the chicken mixture on one side, apply some refined flour slurry on the sides and roll it into a spring roll. 6. Heat sufficient oil in a kadai. Gently slide in the spring rolls and deep fry till golden brown and crisp. Drain on an absorbent paper. 7. Diagonally slice the spring roll in half and arrange on a serving plate. Serve hot with French fries, leafy salad, pickled carrot and pickled beetroot. Arsi Vadai | अरसी वडई रेसिपी | Rice Vada | Sanjeev Kapoor Khazana

When its coffee time like that in the South, snack like the way they do with Arsi Vadai. A flavourful vadai made from rice fermented in buttermilk. Filter kaapi must to go with it. ARSI VADAI Ingredients 1 cup parboiled rice (arsi) 2 cups buttermilk 2-3 green chillies ¼ tsp asafoetida (hing) 2 dried red chillies Salt to taste 1 cup fresh coriander leaves ½ cup scraped fresh coconut 8-10 curry leaves, finely shredded Oil for deep frying Coffee to serve Method 1. Wash the rice with sufficient water and drain. Add buttermilk and set aside to soak for 3-4 hours. 2. Drain the rice and reserve some of the buttermilk and add into the mixer jar. Add green chillies, asafoetida, dried red chillies, salt, and coriander leaves and grind to a coarse paste. Add coconut and ¼ cup of the reserved buttermilk and grind to a fine paste. 3. Transfer the paste into a bowl, add curry leaves and mix till well combined. Dip your fingers in some water and take a small portion of the mixture, shape it into a ball, and flatten it on a piece of banana leaf. This is a vadai. 4. Heat sufficient oil in a kadai. Gently slide in the vadais a few at a time and deep fry till golden brown and crisp. Drain on an absorbent paper. 5. Arrange the vadai in a serving bowl. Serve hot with coffee. Hainanese Chicken Rice | हैनानीज चिकन राइस | Chinese Food | Sanjeev Kapoor Khazana

Hainanese chicken rice is a traditional dish that originated in Hainan, China and is now popular in many Southeast Asian countries such as Singapore and Malaysia. It consists of steamed chicken served with fragrant rice cooked in chicken stock and ginger, accompanied by a spicy chili sauce and cucumber slices. The dish is known for its delicate flavors and simple preparation, making it a staple in Asian cuisine. HAINANESE CHICKEN RICE Ingredients 1.5 kilograms whole chicken 2 inch ginger Salt to taste 2-3 spring onions Sesame oil for applying Cucumber-cherry tomato salad to serve Sauce 1 1-2 spring onions 1 inch ginger 4 tbsps oil Salt to taste Sauce 2 ½ cup light soy sauce 1 tbsp sesame oil Sauce 3 2 tbsps finely chopped ginger 5-6 garlic cloves 8-10 fresh red chillies Salt to taste ½ tsp sugar ½ lemon Rice 1½ cups jasmine rice 3 tbsps oil 2 tbsps finely chopped garlic 1 tbsp finely chopped ginger ½ cup thinly sliced shallots 2 pandan leaves Method 1. Roughly slice the ginger into strips. 2. Trim the fat and the skin of the chicken and reserve them. Sprinkle salt all over the chicken, stuff the chicken with some ginger, fold spring onions in half and stuff it in the chicken. 3. Bring sufficient water in a deep pan. Add salt and mix well. Gently slide in the chicken, cover and poach the chicken for 30 minutes on medium heat. 4. To make the sauce 1, thinly slice spring onion bulbs into roundels. Finely chop the spring onion greens. 5. Finely chop the ginger. 6. Heat oil in a small non-stick pan. 7. Transfer the chopped ginger and sliced spring onions in a mortar and coarsely pound it with the help of a pestle. Add salt and mix well. Once the oil is hot, transfer it into this and mix well. 8. To make the sauce 2, take light soy sauce in a bowl. Add sesame oil and ¼ cup of the cooking liquor and mix well. 9. To make the sauce 3, coarsely pound ginger, garlic, red chillies, and salt in a mortar and pestle. Add sugar and squeeze the juice of lemon and mix well. Add 1 cup of the cooking liquor. 10. Take sufficient ice cold water in a large deep pan. Add salt and mix well. 11. Transfer the chicken in to the ice cold water. And reserve the cooking liquor. Drain the chicken and apply some sesame on it. 12. To make the rice, heat a deep pan. Add the reserved chicken skin and chicken fat along with oil. Cook till golden brown. Discard the chicken skin and chicken fat. 13. Add garlic and ginger and mix well. Cook for 1-2 minutes. Add the shallots and mix and cook on high heat till golden. 14. Add the rice and sauté for 1-2 minutes. Add 4 cups reserved cooking liquor and salt and mix well. 15. Tie a knot on pandan leaves and add into the rice mixture and mix well. Cover and cook for 20-25 minutes or till done. 16. Meanwhile, cut and slice the chicken. 17. Serve the chicken with the prepared rice, remaining cooking liquor, three of the prepared sauces, and cucumber-cherry tomato salad. Chicken Corn Harissa | चिकन कॉर्न हरीसा कैसे बनाये | Kashmiri Recipe | Sanjeev Kapoor Khazana

During winters in Kashmir, Harissa becomes the most preferred delicacy.. Harissa is a popular dish among Arab countries. People generally eat it during breakfast to ensure body warmth during winters. CHICKEN CORN HARISSA Ingredients 400 grams boneless chicken thighs, cut into 2 inch pieces 1 cup sweet corn kernels 1 cup short grain rice, washed, soaked for 20 minutes and drained 3-4 green cardamoms 1 inch cinnamon stick 1 tbsp fennel seeds (saunf) 5-6 cloves 2 black cardamoms ½ cup fried onion + for garnish 2 tbsps fried garlic 1 tsp dried ginger powder (saunth) Salt to taste 1 cup milk Hot ghee to serve Method 1. Heat 3 cups water in a deep pan. Add rice, and sweet corn kernels and mix well. Cook till it comes to a boil. 2. Mix well and continue to cook for 10-15 minutes or till the rice is done, while mixing occasionally. 3. Once the rice is cook, mash the mixture with the back of a wooden spoon. 4. Add the chicken, green cardamoms, cinnamon stick, fennel seeds, cloves, black cardamoms and mix well. Add 2 cups water, mix and continue to cook for 2-3 minutes. 5. Add fried onion and fried garlic, mix and mash again. 6. Add dried ginger powder, and mix well. Reduce the heat to medium; continue to cook 20-25 minutes or till the chicken is cooked completely, while stirring in between. 7. Switch the heat off, discard the black cardamoms and coarsely blend the mixture with the help of en electric hand blender. 8. Place the pan back on heat, add salt, and mix till well combined. Add milk, continuously stir and cook for 1-2 minutes. 9. Transfer into a serving bowl, arrange chicken seekh, garnish with fried onions, and pour hot ghee. Coffee Crème Brulee | Coffee Dessert Recipe | कॉफी लवर्स के लिए रेसिपी | Sanjeev Kapoor Khazana

Coffee Creme Brulee is a variation of the classic French dessert, Creme Brulee. It is made by adding coffee to the custard mixture and then caramelizing the sugar on top to create a crispy, caramelized crust. It can be served as a standalone dessert or paired with other coffee-flavored treats. COFFEE CREME BURLEE Ingredients 2 ½ cups fresh cream ¼ cup ground coffee ¾ cup castor sugar + to sprinkle 6 eggs 1 tsp vanilla essence Method 1. Preheat the oven at 160°C. 2. Fill some water in a moka pot machine, add ground coffee in its strainer. Attach the top part and cover it with the lid. Place the pot on direct flame. Bring it to a boil on low heat till the decoction gets collected in the top compartment of the moka pot machine. 3. Heat fresh cream in a deep pan, add castor sugar and cook till the sugar melts. 4. Add the coffee decoction into cream and mix well. Set aside to cool slightly. 5. Break the egg yolks from the eggs whites in a bowl. Add the vanilla essence into the yolks and mix well. (Use the egg whites for any other recipe of your choice.) 6. Add a portion of coffee-cream mixture and mix well, gradually add the remaining mixture and mix till well combined. 7. Strain the mixture into a jar and pour into individual oven proof cups, place the cups on a baking tray, add some water in the tray and place it in the preheated oven and bake for 20-25 minutes. 8. Bring the cups out of the oven and allow to cool to room temperature. Place them in the refrigerator for 2-3 hours. 9. To serve, sprinkle some castor sugar over the prepared cups and caramelise the sugar using a blow torch. 10. Serve. Bajra Mathri | सर्दियों के लिये बाजरे की मठरी | #MilletKhazana | Sanjeev Kapoor Khazana

These bite sized mathris are made with Bajra instead of refined flour, which makes them just slightly more nutritious and a lot more tasty. BAJRA MATHRI Ingredients 1½ cups pearl millet (bajra) flour ½ cup whole wheat flour (atta) ½ tsp dried red chilli flakes ¼ tsp crushed black peppercorns ½ tsp carom seeds (ajwain) Salt to taste ¼ cup ghee Oil for deep frying Method 1. In a parat, add pearl millet flour and whole wheat flour. Add dried red chilli flakes, crushed black peppercorns and crush carom seeds and add salt. Mix well. 2. Add ghee and mix well. Add ¼ cup water and knead till a stiff dough is formed. 3. Take a small portion of the mixture and shape it into a ball and flatten it. Prick all over with a knife. 4. Heat sufficient oil in a kadai, deep fry till golden and crisp. Drain on an absorbent paper. 5. Store in air tight container and serve as required. Here’s another interesting recipe in a fresh new episode of Family Food Tales. When fasting, and especially for Navratri, this recipe always features on the menu on most days at home. The reasons being, it’s filling and one feels full longer. Soothing raita perfectly complements the parantha. SINGHADA PARANTHA WITH RAITA Ingredients 1½ cups water chestnut (singhada) flour + for dusting 3-4 medium potatoes, boiled, peeled and mashed Rock salt (sendha namak) to taste ½ tsp roasted cumin powder 1 tsp ginger-green chilli paste 1 tbsp chopped fresh coriander leaves 1-2 tbsps oil Ghee for applying Raita 1 cup yogurt 1 medium cucumber, peeled and grated Rock salt (sendha namak) to taste ¼ tsp roasted cumin powder + to sprinkle Chopped fresh coriander leaves to sprinkle Method 1. Take water chestnut flour, add potatoes, rock salt, roasted cumin powder, ginger-green chilli paste, coriander leaves, and oil and mix well. Knead till a soft dough is formed. 2. Cover with a damp muslin cloth. 3. Take a portion of the dough and shape it into a ball. Dust the worktop with some water chestnut flour and place dough ball on it and press it lightly. Roll it into a disc of medium thickness. 4. Heat a non-stick tawa. Place the disc on it and cook on medium heat for 2-3 minutes. Flip and apply some ghee and cook the other side for 1-2 minutes as well. 5. To make the raita, take yogurt in a bowl. Add cucumber, rock salt and roasted cumin powder and mix well. 6. Transfer in a bowl, sprinkle roasted cumin powder and coriander. Serve with the prepared paranthe. Focaccia Pizza | स्वादिष्ट फ़ोकासिया पिज़्ज़ा कैसे बनाते है | Sanjeev Kapoor Khazana

How about a soft and light pizza? This herby focaccia embedded with red and yellow cherry tomatoes and olives makes for a great dinner option or option for party-time snacks. FOCACCIA PIZZA Ingredients 2 cups refined flour (maida) + for dusting ½ tsp instant dry yeast Salt to taste ½ tsp sugar ¼ cup olive oil + for greasing + for drizzling Pizza sauce as required 5-6 yellow cherry tomatoes, halved 4-5 red cherry tomatoes, halved 4-5 pitted black olives 4-5 pitted green olives 150 grams mozzarella cheese A few sprigs of fresh thyme Fresh basil sprigs for garnish Method 1. Take refined flour in a large bowl. Add instant dry yeast, salt, sugar and mix well. 2. Take ¾ cup lukewarm water in a small bowl, add olive oil and whisk well. Transfer this into the flour mixture and mix well. Knead till a soft dough is formed. Shape it into a ball. Grease a bowl with some olive oil, place the dough in it, cover with a damp muslin cloth and set aside to prove for 40-45 minutes or till the dough doubles in size. 3. Knockback the dough and knead it lightly. 4. Dust the worktop with refined flour. Place the dough on it and roll it into a thick disc. 5. Grease an iron skillet with some olive oil. 6. Place the dough in it. Cover with a damp muslin cloth and set aside to prove for 20 minutes. 7. Preheat the oven at 200ºC. 8. Make a few holes in the focaccia, apply the pizza sauce, arrange some yellow cherry tomatoes, red cherry tomatoes, black olives, green olives, sprinkle salt, tear small pieces of mozzarella cheese and arrange on the focaccia. Add a few sprigs of thyme, drizzle olive oil, place it in the preheated oven and bake for 20-25 minutes. 9. Bring the focaccia pizza out of the oven and drizzle some olive oil. Garnish with fresh basil leaves. Cut into squares and serve. Double the spiciness of the amazing spices and the crispiness makes chicken so delicious, you just can’t stop eating at one. Guess, that’s why they are called Chicken Pop Corn. CHICKEN POPCORN Ingredients 300 grams chicken thigh boneless, cut in to 1 inch cubes Salt to taste Black pepper powder to taste 1 tsp Kashmiri red chilli powder 1 tsp dried oregano ¼ cup onion paste 1 ½ tbsps garlic paste 1 tbsp lemon juice Spice mix- 1 2 tsps dried mint leaves ½ tsp citric acid 1 tsp black salt 1 tsp sugar Salt to taste 1 tsp Chaat masala Spice mix- 2 1 tsp red chilli powder 1 tsp dried mixed herbs 1 tsp sugar Sal to taste 1 tsp red chilli flakes ½ tsp black pepper powder Coating 2 eggs Salt to taste Crushed black peppercorns to taste 1 cup refined flour 1 tsp Kashmiri red chilli powder ½ tsp black pepper powder ½ tsp cinnamon powder 1 tsp powder sugar 1 cup panko breadcrumbs Oil for deep frying Tomato ketchup to serve Mayonnaise to serve Method: - 1. Take chicken in a large bowl, add salt, black pepper powder, Kashmiri red chilli powder, dried oregano, cumin powder, onion paste, garlic paste and lemon; mix well till combine and marinade the chicken for 20 minutes. 2. For spice mix add the dried mint leaves, citric acid, black salt, sugar, and salt to taste, and blend the mixture into fine powder. Add in the chaat masala and blend again to fine powder; and transfer the spice mix into a small bowl. 3. For second spice mix add red chilli powder, dried mixed herbs, sugar, salt to taste, red chilli flakes and black pepper powder. Close the jar and blend into a fine powder; and transfer the spice mix into a small bowl. 4. Break the eggs in a bowl add in the salt to taste and crushed black peppercorns; and beat the mixture with help of folk, till well combine. 5. Take refined flour on a plate, add salt to taste, Kashmiri red chilli powder, black pepper powder, cinnamon powder, and powder sugar. And mix well. 6. Coat the marinated chicken pieces into flour mixture and dip it into an egg mixture; and coat it again into the flour mixture. Coat well from all the sides. 7. For second coating coat chicken pieces in flour mixture, dip it in egg mixture and coat into panko breadcrumbs. Repeat the process if you want double coating. 8. Heat sufficient oil for deep frying, gently slide in the chicken pieces, and deep fry the chicken on medium flame till it becomes golden brown and crisp. 9. Drain on an absorbent pepper. 10. Transfer the portion of chicken popcorns in bowl and sprinkle the mint spice mix and toss the chicken popcorns till well combine. Then transfer another portion of chicken popcorns in a bowl and sprinkle some spicy spice mix on it and toss the chicken popcorns till well combine. Keep the remaining popcorns as it is. 11. Transfer the popcorns serving plate and serve with tomato ketchup and mayonnaise. Thai green curry noodle soup is a popular dish that combines the flavors of Thai green curry with noodles in a broth. The soup includes ingredients such as coconut milk, green curry paste, chicken, vegetables, and rice noodles. It is a hearty and flavorful dish that can be enjoyed as a main course. THAI GREEN CURRY NOODLE SOUP Ingredients 2 tbsps Thai green curry paste 150 grams boneless chicken breasts, cut into ½ inch cubes 2 cups boiled rice noodles 3 tbsps olive oil 15-20 madras onions, sliced Sea salt to taste 4 cups chicken stock 8-10 small broccoli florets 1 small carrot, peeled, and cut into roundels 2-3 kafir lime leaves 5-6 basil leaves + for garnish ¼ cup beans sprouts + for serving ¾ cup coconut milk 1-2 fresh red chillies, diagonally sliced + for garnish Fried garlic for garnish 4 lemon slices for garnish Method 1. Heat 2 tbsps olive oil in a non-stick pan. Add madras onions and sauté till translucent. 2. Add the chicken and sea salt and sauté on high heat for 2-3 minutes. Transfer in a bowl. 3. Heat remaining olive oil in the same pan. Add green Thai curry paste and sauté for 1-2 minutes. 4. Add chicken stock, broccoli, carrot, tear the kafir lime leaves along with basil leaves and add into the mixture. Bring the mixture to a boil. 5. Add the chicken mixture and bean sprouts and mix well. Cover and cook for 4-5 minutes. 6. Add red chillies and mix well. Cook for a few seconds. 7. Take some noodles into individual serving bowls. Add some beans sprouts, pour the soup over it. Garnish with basil leaves, fried garlic, red chillies, and lemon slice. Serve hot. Lemon Coriander Chicken | नींबू धनिया चिकन बनाने का तरीका | Chicken Recipes | Sanjeev Kapoor Khazana

Lemon and coriander works well with chicken too. When looking to make a quick meal, bring your staple groceries to make this flavourful dry preparation that is simple too. LEMON CORIANDER CHICKEN Ingredients 1 lemon, halved 1 tbsp lemon juice 1½ cups fresh coriander leaves + for garnish 4 chicken thighs, cut into 3 inch pieces on the bone Salt to taste ½ tsp turmeric powder ¼ cup coriander seeds 2 tsps cumin seeds 1 inch cinnamon stick 3-4 cloves 8-10 black peppercorns 1 black cardamom 5-6 garlic cloves 1 inch ginger, roughly chopped 2-3 green chillies Salt to taste 2-3 tbsps oil Lemon slices for garnish Method 1. Make slits on the chicken pieces and place on a large plate. Add salt, turmeric powder, squeeze the juice of lemon and rub the mixture well on each piece of chicken. Set aside to marinate for 10-15 minutes. 2. Dry roast coriander seeds, cumin seeds, in a pan till fragrant. Add cinnamon stick, cloves, black peppercorns, black cardamom, and roast for 1 minute. Take the pan off the heat and allow to cool slightly. 3. Put the roasted spices in a blender jar, add coriander leaves, garlic cloves, ginger, break the green chillies and add into the blender jar. Add salt, ¼ cup water and lemon juice and blend to a fine paste. 4. Add the blended paste into the chicken mixture and mix till each piece is well coated with the paste. Set aside for 5-10 minutes. 5. Heat oil in a shallow pan. Place the chicken pieces and cook on high heat for 2-3 minutes. Flip each piece of chicken and cook the other side for 2-3 minutes. 6. Reduce the heat to medium, add 1 cup water, mix, cover and cook for 6-8 minutes or till the chicken is cooked completely. 7. Serve hot garnished with coriander leaves and lemon slices. Millet Buddha Bowl | टेस्टी हेल्दी कोदो मिलेट बोल | #MilletKhazana | Sanjeev Kapoor Khazana

A Buddha bowl consists of all a complete balanced meal served together in a beautiful way in a bowl. There is no rule for making a Buddha bowl and this one is a fusion that has the balance of carbs, protein, fibres, Fats, Vitamins and Minerals. BUDDHA BOWL Ingredients Millet mixture ¾ cup kodo millet 1 ½ tbsp olive oil 2 tsp garlic, finely chopped 1 small onion, finely chopped Salt to taste Crushed black peppercorn to taste Spicy chickpeas 1 cup boiled chickpeas 1 tsp smoked paprika 1 tsp red chili powder 1 tsp coriander powder 1 tsp cumin powder 1 tsp garlic, finely chopped 1 tbsp parsley, finely chopped A juice of half lemon Dressing 1 tbsp olive oil Juice of one lemon 2 tbsps tahini 2 tbsps maple syrup 1tsp mustard paste Salt to taste Crushed black peppercorn to taste 100 grams tofu, cut into 1 inch cube Toppings Baby spinach leaves 10-15 Cucumber slices, as required 7-8 snow peas, blanched Assorted cherry tomatoes, as required Toasted black sesame seeds, for garnish Method 1. Heat oil in nonstick pan, add garlic, sauté on high heat for 1 minute. Add onion and sauté till translucent. Add kodo millet and sauté for1-2 minutes. 2. Add 2 cups water and mix well. Add salt, crushed black peppercorns, and mix well. Cook till the mixture comes to a boil. Cover and cook for 4-5 minutes or till most of the moisture is absorbed. Reduce the heat to low and continue to cook for 2-3 minutes. Switch the heat off and allow to rest for 5-10 minutes. 3. To make spicy chickpeas, mix together chickpeas, salt, crushed black peppercorn, smoked paprika, red chili powder, coriander powder, cumin powder, garlic, parsley, olive oil in a bowl. and squeeze the juice of half lemon and mix well till combine, marinate for 4-5 minutes 4. To make the dressing take olive oil in bowl, add juice of one lemon, tahini, maple syrup, mustard paste, salt and crushed black peppercorns and mix well add ¼ cup water and mix till well combine. 5. Heat 1 tbsp oil in nonstick pan add tofu, sprinkle some salt and cook on high heat for 1-2 minutes flip on other side cook for 1-2 minutes, transfer in bowl. 6. In the same pan add the chickpeas mixture and sauté on high heat for 2-3 minutes. Take the pan off the heat. 7. To assemble the bowl, arrange the 30-35 baby spinach leaves, add a portion of the cook millet, portion of the chickpeas mixture, cucumber slices, add portion of a tofu, 15-20 snow peas, blanched, assorted cherry tomatoes as required, drizzle some dressing, and toasted black sesame seeds. And serve with the remaining dressing. Eggless Lemon Cupcakes | Lemon Cupcakes without Egg | बिना अंडे का कपकेक | Sanjeev Kapoor Khazana

A bit of a change from the routinely sweet cupcakes, the eggless lemon cupcakes with a sweet and luscious cream cheese icing are delightfully surprising. EGGLESS LEMON CUPCAKES Ingredients 5 lemons ½ cup butter ½ cup + 1/8 cup castor sugar 1 cup refined flour (maida) 1 tsp baking powder 1 tsp baking soda ½ tsp vanilla essence ½ cup drinking soda Lemon cream cheese icing as required Edible silver sugar balls to sprinkle Fresh mint sprig for garnish Method 1. Preheat the oven at 180°C. 2. Take butter in a bowl. Add castor sugar, zest lemons and beat till light and fluffy. 3. Sift refined flour, baking powder and baking soda directly in the bowl and mix with light hands. 4. Add vanilla essence, squeeze 2 lemons, add drinking soda and mix well. 5. Transfer the batter in cupcake moulds and bake in preheated oven for 25-30 minutes. Allow to cool. 6. Demould and pipe lemon cream cheese icing on top. Sprinkle edible silver sugar balls, garnish with mint sprigs and serve. Marvellously easy, these mushrooms with a deep golden brown colour and sweet-tart flavours is an easy-peasy recipe. Another great side to your favourite Oriental main course. BALSAMIC GLAZED MUSHROOMS Ingredients ½ cup balsamic vinegar 35-40 button mushrooms 2 tbsps sugar 2 tbsps oil 2 tbsps finely chopped garlic 1 medium onion, finely chopped Salt to taste 1 tsp red chilli flakes ½ cup frozen blanched edamame, thawed 2 tbsps corn flour slurry 2 tbsps chopped spring onion greens Fried rice to serve Method 1. Caramalise sugar in a shallow pan. Add balsamic vinegar and mix well. Cook for 6-8 minutes or till the mixture thickens. 2. Heat oil in another shallow pan. Add garlic and onion and sauté till translucent. Add mushrooms, salt, dried red chilli flakes and mix. Cook on high heat for 3-4 minutes. 3. Add the reduced balsamic reduction and mix well. Cook for 1-2 minutes. 4. Add edamame and corn flour slurry and mix well. Cook for 1-2 minutes. 5. Add spring onion greens, mix and serve hot with fried rice.
