ONE POT MACARONI Ingredients 1½ cups macaroni 1½ cups tomato concasse 3 cups vegetable stock ½ medium zucchini, roughly chopped 5-6 button mushrooms, quartered ½ cup corn kernels 1 small carrot, peeled and cut into triangles 6-8 broccoli florets Salt to taste 1 tsp sugar ½ tsp red chilli flakes ½ tsp dried mixed herbs ¼ cup grated parmesan cheese 1 tbsp extra virgin olive oil Fresh basil sprig for garnish Method 1. Heat a nonstick pan. Add tomato concasse, vegetable stock, zucchini, button mushrooms, corn, carrot, broccoli florets, salt, sugar, red chilli flakes, dried mixed herbs, parmesan cheese, macaroni and olive oil. Cover and cook on medium heat for 10-15 minutes. 2. Transfer in a serving bowl, garnish with basil sprig and serve hot.
