BBQ Tofu with Rice Noodles | बार्बेक्यू टोफू विथ राइस नूडल्स कैसे बनाते हैं | Sanjeev Kapoor Khazana
When craving for some delicious vegetarian noodles, then this beautiful BBQ Tofu with Rice Noodles is your answer! So, serve up the yummy recipe where in rice noodles are sauted along with range of colourfulveggies some flavourings, then topped with BBQ tofu! BBQ TOFU WITH RICE NOODLES Ingredients 2 tbsps barbeque sauce 200 grams firm tofu 3 cups cooked rice noodles 4-5 tbsps chopped garlic 1 tbsp red chilli sauce Salt to taste Crushed black peppercorns to taste 4 tbsps oil 2-3 spring onion bulbs, diagonally sliced into 1 inch pieces 1 small carrot, peeled and cut into thin strips 1 small green capsicum, cut into thin strips 1 small red capsicum, cut into thin strips 1 tsp soy sauce Toasted white sesame seeds for garnish Chopped spring onion greens for garnish Method 1. Cut the tofu into 1-inch square slices. 2. To make the marinade, take 2 tbsps garlic in a large bowl. Add barbeque sauce, red chilli sauce, salt, crushed black peppercorns, and mix well. 3. Add the tofu squares and apply the marinade well on each square. 4. Skewer a few tofu squares on a satay stick. 5. Heat oil in a shallow pan. Add garlic, spring onion bulbs, carrot, green capsicum, red capsicum and sauté on high heat for 30 seconds. 6. Add salt, crushed black peppercorns, soy sauce and mix well. Add the cooked rice noodles and toss till well combined. 7. Heat oil in a non-stick grill pan, arrange the tofu satay and grill on high heat for 1-2 minutes. Flip, drizzle the remaining marinade and cook the other side for 1-2 minutes well. Add 2-3 tbsps water and cook for a few seconds. 8. Serve the noodles hot with the tofu satay, garnish with toasted white seeds and spring onion greens. Ghiya Chicken | लौकी और चिकन की आसान रेसिपी | Chicken Curry | Sanjeev Kapoor Khazana
Ghiya chicken, a combo recipe which features two heroes together making it double the masaledaar fun. Pair it with a classic roti and make your meal enjoyable. GHIYA CHICKEN Ingredients 500 grams bottle gourd (doodhi / ghiya), peeled and cut into 1 inch cubes 750 grams chicken, cut into 2 inch pieces on the bone 2 tbsps ghee 10-12 black peppercorns 4-5 green cardamoms 1 black cardamom 1 inch cinnamon stick, broken 2 bay leaves 1½ tsps caraway seeds (shahi jeera) 3 medium onions, thinly sliced Salt to taste 1½ tbsps ginger-garlic paste 2 medium tomatoes, thinly sliced ½ tsp turmeric powder 2 tsps coriander powder 1 tsp red chilli powder 1 tsp cumin powder 1 tsp garam masala powder 2-3 green chillies, slit ½ cup fresh mint leaves 2-3 tbsps chopped fresh coriander leaves Paranthe to serve Method 1. Heat ghee in a pressure cooker, add black peppercorns, green cardamoms, black cardamom, cinnamon stick, bay leaves, and caraway seeds and sauté till fragrant. 2. Add onions and salt and mix well. Cook till golden brown. 3. Add ginger-garlic paste, mix and sauté for 1-2 minutes. 4. Stir in the tomatoes and cook till soft and pulpy. 5. Add turmeric powder, coriander powder, red chilli powder, cumin powder, and garam masala powder and mix well. Cook for 1-2 minutes. 6. Add bottle gourd, and sauté for 2-3 minutes. Add the chicken, sauté on high heat for 3-4 minutes. 7. Add 1½ cups hot water, mix, cover and cook on medium heat, under pressure till 3-4 whistles are released. 8. Switch the heat and allow the pressure to reduce completely. 9. Open the cooker, add green chillies, and coriander leaves. Switch the heat on and cook for 1-2 minutes. 10. Transfer the gravy in a serving bowl. Serve hot with paranthe. Experience the best of both worlds with 'Khatta Vada' - it's not just healthy, it's delicious too! KHATTA VADA Ingredients 1½ cups short grain rice ½ cup split skinless black gram (dhuli urad dal) 1 tsp fenugreek seeds (methi dana) ¾ cup yogurt 1 tbsp oil + for deep frying 1 tsp fennel seeds (saunf) powder 1 tsp cumin seeds ½ tsp crushed black peppercorns ½ tsp turmeric powder 1½ tbsps white sesame seeds 1 tbsp ginger-green chilli paste Salt to taste 1 tsp coriander seeds, roasted and coarsely crushed 2 tbsps chopped fresh coriander leaves Method 1. Dry roast rice, split skinless black gram, and fenugreek seeds in a pan on medium heat for 2-3 minutes. Take the pan off the heat and allow to cool. Transfer in a grinder jar and grind to a fine powder. 2. Take 1½ cups of the fine powder and transfer into a large bowl. You can use the remaining for the next time. 3. Add yogurt to the mixture and mix with the help of your hand. Add 1 tbsp oil and mix well. Cover with a lid and set aside to ferment for 6-8 hours. 4. Add fennel seeds powder, cumin seeds, crushed black peppercorns, turmeric powder, white sesame seeds, ginger-green chilli paste, salt, coriander seeds, and mix well. 5. Add coriander leaves and mix till well combined. Add 1 tbsp ground powder and mix well. 6. Heat sufficient oil in a kadai. 7. Grease your fingers with some oil, take small portions of the mixture, shape each portion into a ball and flatten it slightly. Slide these into the hot oil and deep fry till golden brown and crisp. Drain on an absorbent paper. 8. Serve hot. Gajar Gobhi aur Shalgam ka Achaar | गाजर गोभी और शलगम का स्वादिष्ट अचार | Sanjeev Kapoor Khazana
Experience the magic of Desi pickles with our unique 'Gajar, Gobhi, and Shalgam Achar'! A recipe that's tangy, spicy, and oh-so-authentic, so pair it alongside a bowl of hot khichdi or as a zesty accompaniment to your evening snacks. GAJAR, GOBHI AUR SHALGAM KA ACHAR Ingredients 500 gms carrots (gajar), cut into 1½ inch pieces 500 gms cauliflower (gobhi) 500 gms turnips (shalgam) ¾ cup cumin seeds 12-15 cloves 4 black cardamoms 3 one-inch cinnamon 1 cup grated jaggery 3 tbsps malt vinegar ¾ cup mustard oil 6 tbsps coarsely grated ginger 4 tbsps coarsely grated garlic 1 tbsp ginger-garlic paste 1½ tbsps Kashmiri red chilli powder 1½ tbsps mustard powder 1½ tbsps salt Method 1. To make garam masala powder, dry roast cumin seeds, cloves, black cardamoms and cinnamon in a non-stick pan till fragrant. Cool and grind to a powder. 2. Place jaggery in a bowl, add vinegar and mix. 3. Peel turnips, slice them vertically and then horizontally into fingers. Separate cauliflower into medium florets. Mix them with carrot in a large bowl. 4. Heat mustard oil in a deep non-stick pan till it begins to smoke. Add grated ginger and grated garlic and saute. Add ginger-garlic paste and continue to saute for 8-10 minutes or till they turn reddish. 5. Add jaggery and vinegar mixture and cook till jaggery melts. 6. Add red chilli powder, mustard powder, garam masala powder and salt and mix well. 7. Add vegetables little by little and keep mixing. Switch off heat. 8. Cool and store in sterilized bottles to use when required. NIZAMI MUTTON MASALA Ingredients 500 grams boneless mutton, cut onto 1 inch pieces ¾ cup yogurt 1½ tbsps ginger-garlic paste 2 tsps coarse red chilli powder 2 tsps coriander powder ½ tsp turmeric powder Salt to taste ½ tsp garam masala powder 2-3 tbsps chopped fresh coriander leaves 2-3 green chillies, chopped 1 tbsp lemon juice ¾ cup fried onion ½ cup grated dried coconut 8-10 almonds 8-10 cashew nuts 3-4 tbsps oil 6-8 black peppercorns 3-4 green cardamoms 3-4 cloves ½ blade of mace ½ inch cinnamon stick 2 tbsps chopped fresh coriander leaves Fresh coriander sprig for garnish Naan to serve Method 1. Take the mutton in a large bowl. Add yogurt, ginger-garlic paste, red chilli powder, coriander powder, turmeric powder, salt, garam masala powder, coriander leaves, green chillies, lemon juice and mix well. Set aside to marinate for 30-35 minutes. 2. Put the fried onion in a grinder jar, add coconut, almonds, cashew nuts and 1 cup water and grind to a fine paste. 3. Heat oil in a pressure cooker, add black peppercorns, green cardamoms, cloves, mace and cinnamon stick and sauté till fragrant. 4. Add the mutton and sauté on high heat for 4-5 minutes. Add the ground paste, mix and continuously sauté till the oil separates. 5. Add 1½ cups water, mix and cook till the mixture comes to a boil. Cover and cook under pressure on medium heat till 5 whistles. 6. Open the cooker once the pressure has reduced completely. 7. Add the coriander leaves and mix well. Transfer into a serving bowl. Garnish with coriander sprig and serve hot with naan. TANDOORI MAKKI KI ROTI Ingredients 2 cups corn meal (makki ka atta) Salt to taste Fresh home-made white butter, as required Method 1. Put some water in the bottom container of the Gas Oven Tandoor. Place the perforated plate over and cover with the lid and heat. 2. Place corn meal in a bowl. Add salt and mix. Add lukewarm water and knead into a soft dough. 3. Take small portions of dough in your damp palm and spread with damp fingers into a small roti. 4. Keep them on the perforated plate, cover and cook for 2 minutes. 5. Sarson ka Saag | सरसों का साग घर पर कैसे बनाएं | Winter Recipe | Sanjeev Kapoor Khazana
Iconic Sarson ka saag and makki ki roti is a combination made in heaven. This time I decided to add in carrots and turnips which gives the traditional recipe a special taste, making it perfect for winter. SARSON KA SAAG WITH SHALGAM AND GAJAR Ingredients 1 kg fresh mustard leaves 200 gms fresh spinach 200 gms fresh bathua 4 tbsps ghee 2 medium onions, chopped 1 tbsp chopped ginger 1 tbsp chopped garlic 2-3 green chillies, roughly chopped 1 medium turnip 1 medium carrot Salt to taste 2 tsps corn meal (makki ka atta) 2 tbsps fresh home-made white butter Method 1. Heat ghee in a non-stick pan, add onion and saute for 2 minutes. 2. Roughly chop fresh mustard leaves. 3. Add ginger and garlic to the pan and saute. Add green chillies, mustard leaves and bathua. 4. Roughly chop spinach and add. Roughly chop turnip and carrot and add. Mix everything well. 5. Add salt and 1 cup water and mix well. Cover and cook till all the vegetables are tender. 6. Blend with a hand blender. Add ½ cup water and mix. 7. Add corn meal and mix well. Add home-made butter and mix well. 8. Serve hot with makki ki roti. What can be better than a simple, tasty comfort food made using horse gram flour, which is also super healthy? Pair this cozy Maharashtrian dish with some bhakri and thecha on the side. KULTHACHA PITHLA Ingredients 1 cup roasted horse gram (kulith) flour ½ tsp turmeric powder Salt to taste 2 tbsps oil 1 tsp mustard seeds 1 tsp cumin seeds 10-12 garlic cloves, coarsely crushed 1 medium onion, finely chopped 2-3 green chillies, coarsely crushed ½ tsp red chilli powder ¼ tsp turmeric powder 1-2 sprigs of curry leaves 4-5 kokum petals 2 tbsps chopped fresh coriander leaves Fresh coriander sprig for garnish Steamed rice to serve Method 1. Take horse gram flour in a large bowl. Add turmeric powder, salt and 1 cup water and mix till a smooth lump free mixture is formed. 2. Heat oil in a kadai Add mustard seeds and let them splutter. Add cumin seeds and let them change colour. 3. Add garlic and mix well. Cook for 1-2 minutes. Add onion and sauté till translucent. 4. Add green chillies, red chilli powder, turmeric powder and curry leaves and mix well. Cook for 1 minute. 5. Stir in ½ cup water, cook till it comes to a boil. Add the horse gram mixture and continuously stir and cook for a few seconds. 6. Add kokum petals, adjust salt, pour 2½ cups water and mix well. Cook on medium heat for 3-4 minutes. 7. Add coriander leaves and mix well. 8. Transfer into a serving bowl, garnish with coriander sprig and serve hot with steamed rice. Marathwada Style Mutton | मराठवाडा स्पेशल मटण रेसिपी | Mutton Recipes | Sanjeev Kapoor Khazana
Marathwada style mutton ka maza ek baar loge, toh bar bar khaneka man jarur karega. This classic mutton recipe in a Maharashtrian style, is loaded with flavours goes perfectly well along with bhakri, roti or even rice. MARATHWADA STYLE MUTTON Ingredients 750 grams mutton, cut into 2 inch pieces on the bone, boiled with salt, turmeric powder and whole spices 10-15 garlic cloves, charred 7-8 cloves ½ inch cinnamon stick 5-6 black peppercorns ½ cup charred dried coconut slices 2 medium onions, cut into quarters and charred Curry 3-4 tbsps oil ½ inch cinnamon stick 2 bay leaves 2 large onions, finely chopped Salt to taste 1½ tbsps ginger-garlic paste 1 tsp cumin powder 1 tsp coriander powder ½ tsp turmeric powder 1 tsp red chilli powder 1 tsp garam masala powder 2 tbsps yesur masala 3-4 tbsps chopped fresh coriander leaves + for garnish To serve Bhakris as required Mukha pyaz as required Lemon wedges as required Method 1. Put the garlic cloves in a mixer jar, add cloves, cinnamon stick, black peppercorns, coconut, onion and ½ cup water and grind to a fine paste. 2. To make the curry, heat oil in a deep pan. Add cinnamon stick and bay leaves and cook till fragrant. 3. Add onions and salt, mix and cook till golden brown. 4. Add ginger-garlic paste, mix and cook for 1-2 minutes. Add the ground paste and mix well. Cook till the oil separates. 5. Add cumin powder, coriander powder, turmeric powder, red chilli powder, garam masala powder and mix well. Cook for 1-2 minutes. 6. Add boiled mutton and sauté for 1-2 minutes. Add 3 cups of the boiled mutton stock and mix well. Cook till the mixture comes to a boil. Cover and cook for 6-8 minutes. 7. Add yesur masala, mix and cook for 3-4 minutes or till the mixture thickens slightly. Add coriander leaves and mix well. 8. Transfer into a serving bowl, garnish with coriander leaves and serve hot with bhakris, onion and lemon. Nepali cuisine ka mix veg achaar, popular in almost each house, showcases a range of tangy chatpata flavour in each bite. NEWARI BHOJ KO ACHAAR ( Nepali Mixed Vegetable Pickle) Ingredients 1 large pink radish, cut into thick strips 2 medium carrots, peeled and cut into thick strips 2 medium English cucumbers, cut into thick strips ¼ cup shelled green peas 2 medium onions, thickly sliced 4 medium potatoes, boiled, peeled and cut into 1 inch pieces 1/3 cup white sesame seeds 1 tbsp cumin seeds 4-5 dried red chillies, stemmed 6-8 garlic cloves 2-3 green chillies, slit 3 tbsps tamarind pulp 2-3 tbsps chopped fresh coriander leaves Salt to taste ½ cup mustard oil 1 tsp fenugreek seeds ½ tsp turmeric powder Method 1. Heat a pan. Dry roast white sesame seeds for a minute. Transfer in a mortar and coarsely crush with a pestle. 2. Heat the same pan. Add cumin seeds, dried red chillies and dry roast for a minute. 3. Transfer into a mortal, add garlic and crush coarsely. 4. Take red radish in a bowl. Add carrots, cucumber, green peas, onions, green chillies, potatoes, tamarind pulp, coriander, chilli-garlic mixture, salt, sesame seed powder and mix well. 5. Heat a small nonstick pan. Add mustard oil and allow to smoke. Add fenugreek seeds and sauté for 30 seconds. Add turmeric powder and mix well. 6. Pour this tempering over the vegetable mixture and mix well. 7. Serve. Yakhni Pulao | घर पर बनाएं यखनी पुलाव | Kashmiri Pulao | Sanjeev Kapoor Khazana
Mutton lovers ke liye special Kashmiri one pot meal chahiye toh here's the ultimate flavourful Yakhni pulao! The tender pieces of mutton make it for a beautiful dawat at home. YAKHNI PULAO Ingredients 750 grams mutton, cut into 2 inch pieces on the bone 1½ cups Basmati Rice 1 tbsp coriander seeds ½ tbsp fennel seeds (saunf) 2 tbsps ghee 2 green cardamoms 1 black cardamom 2-3 cloves 6-8 black peppercorns 2 inch cinnamon stick 1 bay leaf 2 medium onions, sliced Salt to taste Pulao 2 tbsps ghee 1 tsp caraway seeds (shahi jeera) 1 bay leaf 2 inch cinnamon stick 2 green cardamoms 1 black cardamoms 7-8 black peppercorns 3-4 cloves 2 large onions, sliced 1 tbsp ginger-garlic paste 1 cup whisked yogurt Salt to taste 1 tsp garam masala powder Fried onions for garnish Fresh mint sprig for garnish Method 1. Transfer Basmati Rice in a large bowl. Add water and wash it thoroughly for 2-3 times. Drain and ad sufficient water. Set aside to soak for 30 minutes. Drain. 2. Take coriander seeds and fennel seeds in a small muslin cloth, bring the sides to the centre and tie it into a knot. This is a potli. 3. Heat ghee in a pressure cooker. Add green cardamoms, black cardamom, cloves, black peppercorns, cinnamon stick and bay leaf and mix well. Cook till fragrant. 4. Add onions, mix and cook till translucent. 5. Add mutton and sauté on high heat for 4-5 minutes. Add 4-5 cups hot water, salt and the prepared potli and mix well. Cover and cook on medium heat for 4-5 whistles. 6. Open the cooker once the pressure has reduced completely. Drain the mixture through a strainer. Discard the whole spices and reserve the mutton and the stock. 7. Heat ghee in a wide non-stick deep pan. Add caraway seeds and let them change colour. Add bay leaf, cinnamon stick, green cardamoms, black cardamom, black peppercorns, cloves and sauté till fragrant. 8. Add onions and mix well. Cook till translucent. 9. Add ginger-garlic paste, mix and cook for 1-2 minutes. Add the mutton pieces and sauté on high heat till golden brown. 10. Reduce the heat to medium, add yogurt, mix and cook till the fat separates. 11. Add salt and garam masala powder and mix well. 12. Add the drained rice and mix well. Add 2 cups of the reserved stock and mix well. Cover and cook on low heat for 20-25 minutes. 13. Switch the heat off and allow to rest for 10-15 minutes. Transfer into a serving plate, garnish with fried onions and mint sprig. Put the white onions in a food processor jar. Add the green chillies, dried red chilli flakes, all spice powder, smoked paprika, crushed black peppercorns, lemon juice, coriander leaves and process to a coarse paste. Yesur Masala | येसूर मसाला | Maharashtrian Recipe | Sanjeev Kapoor Khazana
Marathwada special, Yesur Masala is a simple homemade spicy masala which can easily substitute chilli powder and garam masala in any veg or non-veg recipes. YESUR MASALA Ingredients 7-8 cloves 10-12 black peppercorns 3 bay leaves 1 inch cinnamon stick 1 tbsp cumin seeds 2 tbsps coriander seeds 2 tbsps short grain rice 1 tbsp split green gram with skin (chilkewali moong dal) ¼ cup Bengal gram (chana dal) ¾ cup pearl millet (bajra) Method 1. Dry roast cloves, black peppercorns, bay leaves and cinnamon stick till fragrant in an iron pan. Transfer in a bowl and allow to cool. 2. Similarly, dry roast cumin seeds and coriander seeds for 1-2 minutes in the same pan. Transfer in the same pan and allow to cool. 3. Add rice, split green gram, Bengal gram in the same pan and roast till golden brown. Transfer into the same bowl and allow to cool. 4. Similarly, dry roast the pearl millet for 3-4 minutes in the same pan. Transfer into the same bowl and allow to cool completely. 5. Transfer the roasted mixture into a grinder jar and grind to a fine powder. Sift it through a strainer into a large bowl. 6. Allow the masala to cool completely. Once cooled, store in an air tight container and use as required. Classic sweet delight made using rawa, banana and some other basic handful of ingredients, then mashed up together into small spheres fried to golden perfection, taste delicious. Try it out soon. KELE MULIK Ingredients 3 ripe yellow bananas, peeled, and broken into 1 inch pieces ¼ cup chopped jaggery ¼ tsp salt ½ tsp green cardamom powder ¼ tsp nutmeg powder ½ cup semolina (rawa) ¼ cup whole wheat flour (gehun ka atta) Oil for deep frying Method 1. Put the bananas into a blender jar, add jaggery, and blend to a fine paste. Transfer this into a bowl. Add salt, green cardamom powder, nutmeg powder, and semolina and mix well. Garlic Fish Parcels | गार्लिक फिश पार्सल | Steamed Fish | Fish Recipes | Sanjeev Kapoor Khazana
Fish fillets wrapped in parchment paper or foil along with veggies and fun flavours of garlic, make up amazing garlic fish parcels, which will become your top favourite in no time. GARLIC FISH PARCELS Ingredients 8-10 garlic cloves 2 medium Indian salmon (rawas) fillets, cut into 4 pieces each 3 cups boiled rice vermicelli 1medium carrot, peeled, and cut into thin strips 1 medium English cucumber, cut into thin strips 2 spring onion bulbs, finely chopped 4 tbsps finely chopped spring onion greens Salt to taste Black pepper powder to taste 2 tbsps sweet chilli sauce Salt to taste White pepper powder to taste 1 lemon, cut into half 8 rectangular pieces of banana leaves, 3” x 6” each 3-4 fresh red chillies, diagonally sliced 2-3 tbsps oil 20-25 coriander stems 2 inch ginger, roughly chopped ½ cup fresh coriander leaves Method 1. To make the salad, combine together boiled rice vermicelli, carrot, English cucumber, spring onion bulbs, spring onion greens, salt, black pepper powder, and sweet chilli sauce in a large bowl. Refrigerate this mixture for 1 hour. 2. Take the fish pieces in a wide bowl. Add salt, white pepper powder, and squeeze the juice of lemon. Apply the mixture well on all the fish pieces. Set aside for 5-10 minutes. 3. Lightly roast the banana leaves over direct flame for a few seconds. 4. To make the spice mixture, put the coriander stems in a chopper, add garlic, ginger, and coriander leaves and coarsely chop them. 5. Place a banana leaf on a worktop, add a spoonful of the spice mixture in the centre, place a fish piece over it. Add another spoonful of the spice mixture and spread it lightly over the fish. Sprinkle a few red chillies and wrap the banana leaf into a parcel. 6. Heat oil in a non-stick shallow pan. Place the parcels on it and cook on medium heat for 2-3 minutes on each side. 7. Place the parcels on a serving plate, open the parcel, and serve hot with the prepared salad. Craving for something nice? Then make Prawn Coconut Roast, a simple recipe made using prawns coated in a spicy scraped coconut mixture will make you want to eat more! PRAWN COCONUT ROAST Ingredients 24-30 medium prawns, peeled and deveined 1 cup sliced fresh coconut ¼ tsp turmeric powder 1 tsp red chilli powder ½ tsp crushed black peppercorns Salt to taste 15-20 shallots 40-50 curry leaves 10-12 garlic cloves 1 inch ginger, roughly chopped 1½ tbsps tamarind pulp 2 -3 tbsps oil Fried curry leaves for garnish Method 1. Take prawns in a bowl, add turmeric powder, red chilli powder, crushed black peppercorns and salt, mix well and set aside to marinate for 10-15 minutes. 2. Take shallots in a blender jar, add 25-30 curry leaves, garlic cloves, ginger, tamarind pulp ,2 tbsps water and grind to a fine paste. 3. Heat oil in a nonstick pan, add coconut and cook for 2-3 minutes. Add the ground paste and cook till oil separates. 4. Add the marinated prawns and remaining curry leaves, cook for 4-5 minutes. 5. Transfer the prawns on a serving plate, garnish with fried curry leaves and serve hot. Here's a traditional Nepali recipe made using potatoes, sesame seeds and some local spices and flavourings. Serve along with roti for a perfectly delicious meal. GORKHA CHUTNEY Ingredients ½ cup black sesame seeds ¼ cup mustard oil ½ tsp fenugreek seeds ½ tsp turmeric powder 2 cups boiled dried white peas 2 tsps crushed ginger-garlic 2-3 green chillies, slit 3-4 medium potatoes, boiled and peeled and cut into 1 inch pieces Salt to taste 2 tbsps tamarind paste 2 medium onion, sliced 2 tbsps chopped fresh coriander leaves Method 1. Heat a pan. Dry roast black sesame seeds for a minute. Transfer in a mortar and crush coarsely with a pestle. 2. Heat a pan. Add mustard oil and allow to smoke. Add fenugreek seeds, turmeric powder and mix well. 3. Add dried white peas, crushed ginger-garlic, green chillies, seeds powder and mix well. Cook for a minute. 4. Add potatoes, salt, tamarind paste and mix well, add onion, coriander and sauté for a minute. 5. Serve. Ambur Biryani | अंबूर मटन बिरयानी | Mutton Biryani | Biryani Recipe | Sanjeev Kapoor Khazana
Craving for biryani but a little different version where the spice levels are a little lower than the rest, then try out this amazing meat lovers biryani- Ambur Biryani. AMBUR BIRYANI Ingredients 750 grams mutton, cut into 2 inch pieces on the bone 2 cups Basmati Rice 2 tbsps ghee + for drizzling 2 inch cinnamon stick 3-4 cloves 2-3 green cardamoms 2 large onions, finely chopped 1 tbsp garlic paste 1 tbsp ginger paste 2 medium tomatoes, finely chopped Salt to taste 2 tsps red chilli powder ½ cup whisked yogurt 2 tbsps chopped fresh coriander leaves + for sprinkling 2 tbsps chopped fresh mint leaves + for sprinkling 2-3 green chillies, slit 2 tsps lemon juice 2 inch ginger, cut into thin strips 2 tbsps fried onions + for garnish Fresh coriander sprig for garnish Curd onion to serve Method 1. Transfer Basmati Rice in a bowl. Wash thoroughly 2-3 times. 2. Soak in sufficient water for 30 minutes. Drain the water. 3. Heat ghee in a non-stick deep pan. Add cinnamon stick, cloves, and green cardamom and mix well. Cook till fragrant. 4. Add onions, mix and cook till translucent. Add garlic paste and ginger paste and mix well. Cook till the onions turn golden. 5. Add tomatoes and salt and mix well. Cook till soft and pulpy. 6. Add red chilli powder, mix and cook for 1 minute. 7. Add mutton and sauté on high heat for 3-4 minutes. Stir in the yogurt, add coriander leaves, mint leaves and green chillies and mix well, cook for 2-3 minutes. 8. Reduce the heat to medium, cover and cook for 25-30 minutes or till the mutton is ¾ done. 9. Heat sufficient water in a deep pan. Add salt and bring the mixture to a boil. 10. Add the drain rice and cook for 6-8 minutes or till ¾ cooked. 11. Drain the rice and layer directly over the mutton mixture and spread it evenly. Drizzle ghee, lemon juice, and sprinkle some mint leaves, coriander leaves, ginger strips and fried onions. 12. Cover the pan with aluminum foil, cover with a lid and place it on low heat. Cook for 10-15 minutes. 13. Switch the heat off and allow to rest for 10-15 minutes. 14. Discard the aluminum foil and transfer into a serving plate. Garnish with fried onions, and coriander sprig. Serve hot with curd onion. ProV ke saath banayein apne dessert ko extra special! ✨ STICKY DATE PUDDING Ingredients 1 cup ProV Fard Dates 1 tsp baking soda 1 cup brown sugar ½ cup softened butter + for greasing 2 tbsps molasses or golden syrup or dark corn syrup or honey 2 eggs 1 tsp vanilla essence 1½ cups refined flour (maida) Vanilla ice cream to serve Fresh mint sprigs for garnish Toffee sauce ½ cup brown sugar 2 tbsps butter ½ cup fresh cream Method 1. Preheat the oven at 180ºC. 2. Deseed the dates and finely chop the dates. Transfer in a bowl. Add baking soda, and 1 cup hot water and mix well. Set aside for 5-10 minutes. 3. Take brown sugar in a large bowl. Add butter, molasses, break in the eggs, and add the vanilla essence and whisk till well combined. 4. Lightly mash the dates and add into the bowl and whisk well. Sift the flour into the mixture. Fold till everything is well combined. 5. Grease 4 ramekin moulds with some butter. Pour the batter into each ramekin mould and tap it a few times. Place them in the preheated oven for 25-30 minutes. 6. To make the toffee sauce, heat the brown sugar, butter, and cream in a pan. Cook till the sugar melts and the mixture thickens slightly. Take the pan off the heat. 7. Bring the ramekins out of the oven and allow to cool slightly. Make a hole in the centre to create a cavity. Fill it up with a portion of the warm toffee sauce. 8. Demould the cakes while they are still warm. Serve with vanilla ice cream and garnished with mint sprigs. Curried Chicken Nacho Salad | चिकन नाचो सलाद बनाने का तरीका | Sanjeev Kapoor Khazana
Curried Chicken Nacho Salad features a tasty fusion of tender grilled chicken, crispy nacho chips, fresh veggies, and yummy corn. Enjoy it on its own or pair it with a squeeze of lime for a zesty kick! CURRIED CHICKEN NACHO SALAD Ingredients 2 boneless chicken breasts ½ cup nachos + for serving Salt to taste ½ tsp cumin powder 1 tsp coriander powder ¼ tsp turmeric powder ½ tsp red chilli powder 1 tsp onion powder 1 tsp garlic powder 2 tsps + 1½ tbsps oil 20-22 assorted lettuce leaves ½ cup boiled sweet corn kernels ¼ cup ready-made salsa Salt to taste Mayonnaise for drizzling Micro greens for garnish Method 1. Take chicken breasts on a plate, add salt, cumin powder, coriander powder, turmeric powder, red chilli powder, onion powder, garlic powder and 2 tsps oil and apply the mixture well on both the chicken breasts. Set aside to marinate for 20 minutes. 2. Heat remaining oil in a non-stick grill pan. Place the chicken breasts on it and grill on high heat for 2-3 minutes. Flip and grill the other side for 2-3 minutes as well. Reduce the heat to medium, and continue to cook for 2-3 minutes. Take the pan off the heat and allow the chicken to cool slightly. 3. Tear lettuce leaves in a large bowl, add sweet corn kernels, ready-made salsa, salt and crush nachos add into it and toss till well combined. 4. Horizontally slice the chicken breasts. 5. Arrange the salad on a serving plate, add some nachos on the side, place the chicken slices on top. Drizzle mayonnaise, and garnish with micro greens. Prawns Ambotik | प्रॉन अंबोटिक कैसे बनाएं | Prawn Curry | Sanjeev Kapoor Khazana
Prawn Ambotik is a zesty Goan curry that has a rich, velvety texture and tastes the best when paired with steamed rice - a tasty combination everyone must try! PRAWNS AMBOTIK Ingredients 20-22 medium prawns, shelled and deveined Salt to taste ½ tsp turmeric powder 1 tbsp roasted coriander seeds 1 tsp roasted cumin seeds 1 cup scraped fresh coconut 8-10 dried red chillies, stemmed and broken 1 inch ginger, roughly chopped 8-10 garlic cloves 4-5 cloves 1 inch cinnamon stick 1 tbsp vinegar 2-3 tbsps oil 2 medium onions, chopped 2-3 green chillies, slit 1 tbsp tamarind pulp Chopped fresh coriander leaves for garnish Method 1. Take prawns in a bowl, add salt and turmeric powder and set aside to marinate for 10-15 minutes. 2. Take a blender jar and add coriander seeds, cumin seeds, coconut, dried red chillies, ginger, garlic cloves, cloves, cinnamon stick, vinegar and 1 cup water and grind to a fine paste. 3. Heat oil in a kadai, add onions and sauté till golden brown. 4. Add green chillies and the ground paste and sauté for 4-5 minutes. 5. Add 2½ cups water and let it boil. Add prawns and tamarind pulp, cover and cook for 6-8 minutes. 6. Transfer the curry to a serving bowl. Garnish with chopped coriander and serve hot. Chicken Zurbian Rice | चिकन जुरबियान राइस | Arabic Recipe | Sanjeev Kapoor Khazana
Have a taste blast with Zurbian Rice, which brings a flavor explosion! This tasty fusion of aromatic basmati rice and tender chicken, combined with a blend of spices, creates a perfect balance. Elevate the experience by pairing it with cool cucumber raita to make it even more special! CHICKEN ZURBIAN RICE Ingredients 750 grams chicken, cut into 2-inch pieces on the bone 2 cups basmati rice, soaked for 30 minutes and drained 2-3 tbsps oil Salt to taste 1½ tsps red chilli powder 1 tbsp coriander powder ½ tsp turmeric powder ½ tsp cumin powder 1 tsp Arabic spice mix 4 small potatoes, peeled and halved ½ cup + 2 tbsps fried onions + for garnish 1 cup yogurt 8-10 garlic cloves 1 inch ginger, roughly chopped 2 tbsps chopped fresh mint leaves 2 tbsps chopped fresh coriander leaves 2 bay leaves ½ inch cinnamon 4-5 cloves 4-5 black peppercorns 4 tbsps freshly chopped coriander leaves 2 tbsps saffron water 2-3 tbsps melted butter Fresh mint sprigs for garnish Method 1. Heat oil in a nonstick pan, add chicken and sauté on high heat for 2-3 minutes. 2. Add salt, red chilli powder, coriander powder, cumin powder and Arabian spice mix, sauté for a minute. 3. Add potatoes and mix well. Cover and cook for 5-6 minutes. 4. Transfer ½ cup fried onions in a grinder jar. Add yogurt, garlic cloves and ginger and grind to a fine paste. 5. Add the yogurt mixture to the pan and mix well. Add mint, 2 tbsps coriander and 1 cup water and mix well. Cover and cook on medium heat for 5-6 minutes. 6. Heat sufficient water in a deep pan, add bay leaves, cinnamon, cloves, black peppercorns, salt and rice. Cook till rice is ¾ done. 7. Strain the rice and spread on the chicken layer. Sprinkle remaining coriander, remaining fried onions on top. Drizzle saffron water and melted butter on top. 8. Cover and cook on low heat for 10-15 minutes. Set aside for 10-15 minutes. 9. Transfer on a serving plate, garnish with mint sprig and fried onions and serve hot. Kolambo | कोळंबो | Temple Style Sambhar | Vegetable Sambhar | Sanjeev Kapoor Khazana
'Kolambo' is a Konkani version of sambar and is a delightful dish that's filled with a variety of vegetables and lentils. This recipe combines these ingredients to create a creamy texture that pairs well with everything KOLAMBO (TEMPLE STYLE SAMBHAR) Ingredients ½ cup split pigeon peas, washed, soaked for 20 minutes and drained 1 small potato, peeled and cut into 1 inch pieces 1 long light green brinjals, cut into 1 inch pieces 4-5 French beans, cut into 1 inch pieces 1 mall carrot, peeled and cut into 1 inch pieces 100 grams drumsticks, stringed and cut into 2 inch pieces ¼ tsp turmeric powder 1 tbsp oil ¼ tsp mustard seeds ¼ tsp asafoetida (hing) 8-10 curry leaves 1-2 dried red chillies Salt to taste 1 small tomato, chopped 1 tbsp chopped fresh coriander leaves ½ tbsp ghee Steamed rice to serve Masala paste 1 tbsp oil 1 tbsp split Bengal gram (chana dal) 1 tbsp split skinless black gram (sabut urad dal) 2 tbsps coriander seeds ¼ tsp fenugreek seeds (methi dana) ¾ tsp cumin seeds 4-5 cloves ¾ cup scraped fresh coconut 4 dried red chillies 1 lemon sized tamarind ball ½ tsp turmeric powder Method 1. Put the pigeon peas in a pressure cooker, add potato, brinjals, French beans, carrot, drumsticks, 3-4 cups water and turmeric powder and mix well. Cook under pressure for 2 whistles. 2. Meanwhile, to make the masala paste, heat oil in a non-stick shallow pan. Add split Bengal gram, split skinless black gram, coriander seeds, fenugreek seeds, cumin seeds and cloves and sauté till fragrant. Take the pan off the heat and allow to cool slightly. 3. Put the coconut in a grinder jar. Add dried red chillies, tamarind, roasted spices, turmeric powder and 1 cup water and grind to a fine paste. 4. Open the cooker once the pressure has reduced completely. Lightly mash the cooked gram mixture. 5. To make the tempering, heat oil in a deep non-stick pan. Add mustard seeds and let them splutter. Add asafoetida and curry leaves and mix well. Add the dried red chillies and the masala paste and sauté till the oil separates. 6. Add the cooked gram mixture, salt, 1½ cups water, mix and cook till it comes to a boil. 7. Add tomato, coriander leaves and ghee and mix well. Cook for 2-3 minutes. 8. Transfer into a serving bowl, garnish with coriander leaves and serve hot with steamed rice. Mutton Masala | सबसे टेस्टी मटन मसाला बनाने का राज़ | All Time Favourite | Sanjeev Kapoor Khazana
Strong flavours se bharpur aapke homemade mutton masala ka aroma sabhi ka dil khush kar dega, fir recipe mein use karenge toh aur bhi maza aaega. MUTTON MASALA Ingredients 750 grams mutton, cut into 2 inch pieces on the bone ½ cup yogurt ½ tsp turmeric powder Salt to taste 2 tbsps red chilli paste ½ lemon ¼ cup ghee 1 tsp cumin seeds 3-4 green cardamoms 1 black cardamom 2 inch cinnamon stick 2 bay leaves 5-6 cloves 6-8 black peppercorns 2 large onions, finely chopped 1 tbsp ginger-garlic paste 2 large tomatoes, finely chopped 2½ tsps red chilli powder 2 tsps coriander powder 1 tsp cumin powder ½ tsp turmeric powder 2-3 green chillies, slit + for garnish 2 tbsps chopped fresh coriander leaves ½ tsp garam masala powder Ginger strips for garnish Fresh coriander sprigs for garnish Phulkas to serve Onion slices to serve Fresh mint leaves to serve Lemon wedges to serve Method 1. Take mutton in a large bowl, add yogurt, turmeric powder, salt, red chilli paste, and squeeze the juice of lemon and mix well. Marinate for 35-40 minutes. 2. Heat ghee in a handi. Add cumin seeds, green cardamoms, black cardamom, cinnamon stick, bay leaves, cloves, and black peppercorns, and sauté till fragrant. Add onions and sauté till golden brown. 3. Add ginger-garlic paste, mix and cook for 1-2 minutes. 4. Add the mutton and sauté on high heat for 3-4 minutes. Add tomatoes, mix and cook till soft and pulpy. 5. Reduce the heat to low, add red chilli powder, coriander powder, cumin powder, turmeric powder, and mix well. 6. Add salt, mix and cook for 2-3 minutes. Add 2 cups water, mix, cover with a lid and cook for 45-50 minutes. 7. Remove the lid, and continue to cook for 10-15 minutes or till the mixture thickens. 8. Add green chillies, coriander leaves, and garam masala powder and mix well. Transfer into a serving bowl, garnish with ginger strips, green chillies, and coriander sprigs. 9. Serve hot with phulkas, onion slices, mint leaves, and lemon wedges. A super fun snack time recipe from the Sri Lankan cuisine, Seeni Sambol bread is a soft and fluffy brioche bun filled with savoury caramelised onion relish. The hints of tangy and sweet notes will make you want to eat more. SEENI SAMBOL BREAD Ingredients 5-6 medium onion, sliced 2 cups refined flour (maida) ¼ cup milk powder 1½ tsps salt 2 tsps instant yeast 2 tbsps butter 1 egg 1 cup lukewarm water Prove, 1-1.5 hrs 2 tbsps coconut oil 8-10 garlic cloves, thinly sliced 10-12 curry leaves Salt to taste 1 tsp red chilli powder ½ tsp red chilli flakes ½ tsp cloves powder ½ tsp cinnamon powder 2 tsps tamarind paste 2 tbsps sugar Method 1. Take refined flour in a large bowl, add milk powder, salt, instant dry yeast, butter and mix. 2. Make well in a center and break egg, mix well. Add lukewarm water and knead into soft dough and cover with damp muslin cloth and set aside for an hour. 3. Heat coconut oil in a pan, add garlic, curry leaves and sauté for a minute. Add onion and cook till golden brown on a medium heat. 4. Add salt, red chilli powder, red chilli flakes, cloves powder, cinnamon powder, tamarind paste and mix well, add ¼ cup water and mix. 5. Add sugar and sauté for 2-3 minutes on a medium, take the pan off the heat and transfer the mixture in a bowl and allow to cool completely. 6. Kock back the dough and kneaded once and divide into 6-8 portions and shape it into balls. Roll out each portion into a disc and place the 8. Bread Sauce | ब्रेड सॉस | Homemade Sauce | Dips and Sauces | Sanjeev Kapoor Khazana
The classic English sauce served alongside roast during Christmas is a simple creamy recipe. Made essentially using breadcrumbs and some fun ingredients, bread sauce tastes yummy so you must try it. BREAD SAUCE Ingredients 4-5 white bread slices, roughly torn 3 cups milk ½ onion 1 bay leaf 1clove 1 tbsp butter 2 tbsps fresh cream Salt to taste Crushed black peppercorns to taste ¼ tsp nutmeg powder + for sprinkling Method 1. Transfer bread slices in a grinder jar and grind to a fine mixture. 2. Boil milk in a deep nonstick pan. Take onion and stud with bay leaf and clove, add to the milk and cook for 2-3 minutes. 3. Discard the onion and add the ground bread to the milk. 4. Add butter, fresh cream, salt, crushed black peppercorns and nutmeg powder, mix well. Cook for 2-3 minutes on medium heat. 5. Transfer the prepared sauce in a serving bowl, sprinkle nutmeg powder and serve hot or use as required. Transfer horse gram in a pressure cooker. Add 3 cups water, cover and cook on medium heat till the pressure is released 4-5 times. 2. Heat 2 tbsps oil in a nonstick pan. Add cumin seeds and once they start to change the colour, add black peppercorns, dried red chillies, garlic, 10-15 curry leaves and sauté for a minute. 3. Add onions and sauté till translucent. Add tomato and cook till pulpy. Reserve some masala. 4. Open the lid of the pressure cooker once the pressure settles completely. Strain the mixture and reserve water. 5. Add the drained horse gram to the pan, add 2-3 tbsps coconut, 2-3 tbsps coriander and mix well. 6. Add salt and mix well. Cook for 1-2 minutes. 7. Transfer the remaining coconut in a grinder jar. Add remaining coriander, ¼ cup horse gram mixture, reserved masala, tamarind. ½ cup water and grind to fine paste. 8. Heat remaining oil in a nonstick pan. Add mustard seeds and once they start to splutter, add remaining curry leaves, garlic and sauté for 30 seconds. 9. Add sliced onion and sauté till translucent. Add the ground paste and sauté till oil separates. 10. Add the reserved stock, salt and boil for 3-4 minutes. 11. Transfer both in serving bowls and serve hot with steamed rice.
