Black bean salad dressed in an fresh Argentinean Chimichurri dressing tastes delicious and is easy to make. So surprise your taste buds with a healthy twist. CHIMICHURRI BLACK BEAN SALAD Ingredients ½ cup boiled black bean 1 cup fresh flat parsley leaves 5-6 sprigs of fresh oreganos 10-15 garlic cloves 1 tbsp red wine vinegar ¼ cup extra virgin olive oil 1 tsp dried red chilli flakes Crushed black peppercorns to taste Salt to taste 2 cups assorted lettuce leaves, torn into small pieces ½ cup boiled sweet corn kernels 5-6 assorted baby tomatoes, halved Method 1. To make the chimichurri dressing, Put the parsley leaves in a food processor, pluck the leaves of the oregano and add into it along with garlic cloves, red wine vinegar, extra virgin olive oil, red chilli flakes, crushed black peppercorns, salt and process to a coarse paste. 2. Take lettuce leaves in a large bowl, add sweet corn kernels, boiled black bean, crushed black peppercorns, assorted baby tomatoes and drizzle some of the chimichurri dressing and gently mix till well combined. 3. Transfer the salad in a serving plate, serve immediately with the remaining dressing.
