MAWA GUJIYA Ingredients Stuffing 2-3 tbsps grated dried coconut ½ cup grated khoya/ mawa 1 cup mixed nuts powder ½ cup powdered sugar ½ tsp green cardamom powder ¼ tsp nutmeg powder Dough 2 cups refined flour (maida) 2 tbsps fine semolina A pinch of salt 2 tbsps melted ghee Method 1. Heat a shallow nonstick pan. Add dried coconut and sauté for a minute. Transfer in a bowl and set aside. 2. Add khoya in the same pan and sauté for a minute. 3. Add nut powder to roasted coconut mixture. Add khoya, powdered sugar and mix well. 4. Add green cardamom powder, nutmeg powder and mix well. 5. To make dough, take refined flour in a bowl. Add semolina, salt and melted ghee and mix well. 6. Add ¾ cup water and knead to stiff dough. Cover with a moist muslin cloth and set aside for 10-15 minutes. 7. Heat sufficient ghee and oil in a kadai. 8. Divide the dough into equal portions and roll into balls. Flatten each ball and stuff with a portion of khoya- nut mixture. Apply some water on the edges, gather the edges and seal properly. Pinch the edges to make design. 9. Deep fry in oil – ghee mixture on medium heat till golden brown and crisp. Drain onan absorbent paper and allow to cool. 10. Serve.
