Sugarcane Hangover Cure | Drink It Easy | #HappyNewYear | Sanjeev Kapoor Khazana

When the hangover is bad, ultimately it is our good old sugarcane juice suffused with indigenous spices that comes to the rescue. SUGARCANE HANGOVER CURE Ingredients 200 millilitre sugarcane juice Black salt to taste Red chilli powder as required Black pepper powder as required Chaat masala as required Honey as required ¼ cup grated ginger 1 lemon 10 -15 fresh mint leaves Ice cubes as required Method 1. Spread black salt, red chilli powder, black pepper powder and chaat masala in a plate. 2. Spread honey in a small plate and rim 4 shot glasses with it. Roll the rims in red chilli powder mixture. 3. Transfer the ginger in a muslin cloth and squeeze to extract the juice. Cut lemon into pieces and add to the glass. Add ginger juice , black salt, mint leaves and muddle well. 4. Add ice cubes, sugarcane juice, cover with another glass and shake well. 5. Strain in individual shot glasses and serve. LONG ISLAND ICED TEA Ingredients 30ml white rum 30ml orange liquor 30ml vodka 30ml gin 30ml tequila 30ml orange juice (optional) 45ml lemon juice 30ml simple syrup Cola to serve Ice cubes as required Cola for topping Lemon slice for garnish Fresh mint sprigs for garnish Method 1. Fill a tall serving glass with ice cubes. Add white rum, orange liquor, vodka, gin, tequila, orange juice, lemon juice, simple syrup and stir well. Pinacolada | Drink It Easy 2.0 | #HappyNewYear | Cocktails at Home | Sanjeev Kapoor Khazana

This chilled cocktail with pineapple juice and rum is an interesting vegan tropical cocktail. PINACOLADA Ingredients 60ml white rum 45ml coconut cream 60ml pineapple juice 1 lemon 5-6 ice cubes + for serving Pineapple slice with the skin for garnish Pineapple leaves for garnish Method 1. Cut the pineapple slice into triangles, make a diagonal slit on it. Snip some pineapple leaves and spray with some water to clean it. 2. Pour the rum in a cocktail shaker, add coconut cream, pineapple juice, cut the lemon in half and measure 15ml of the lemon juice and pour it into the shaker. Add some ice cubes and shake it well for a few seconds. 3. Fill a serving glass with some ice and strain the drink into it. Garnish with the pineapple triangle and pineapple leaves. Serve immediately. Whiskey Sour | Drink It Easy 2.0 | #HappyNewYear | Cocktails at Home | Sanjeev Kapoor Khazana

WHISKY SOUR Ingredients 60ml whisky 20ml lemon juice Ice block as required Malta orange for garnish 15ml simple syrup 1 egg 3-4 ice cubes Method 1. Carefully carve and cut the ice block into a cube that can be placed into the serving glass. Place the cube into the glass. 2. To make the garnish, slice the Malta orange into roundels, skewer a toothpick over a slice. 3. Pour the whisky in a cocktail shaker, add simple syrup, lemon juice. Break in the egg in a small bowl and separate the egg whites from the yolk. Add 15ml egg whites into the shaker and shake it for a few seconds for the egg whites to foam. Add some ice cubes and shake again. 4. Pour the mixture into the prepared glass. Garnish with the orange. Serve immediately. Note – To make simple syrup, dissolve 1 part of grain sugar or castor sugar in 1 part of water. Spiced and Spiked Hot Chocolate | स्पाईस्ड अँड स्पाईक्ड हॉट चॉकलेट | Sanjeev Kapoor Khazana

How about adding a little rum and spice to hot chocolate? Makes chilly winters really warm, na? SPICED AND SPIKED HOT CHOCOLATE Ingredients 2 star anise 3-4 cloves 1 inch cinnamon stick ½ cup rum 1 cup chopped dark chocolate 1 cup fresh cream ¼ cup cocoa powder + for dusting 4 cups full fat milk ¼ cup castor sugar Marshmallow for garnish Method 1. Heat fresh cream in a non-stick pan, add dark chocolate and cook till chocolate melts completely. Take the pan off the heat and allow to cool slightly. Add rum and mix well. 2. Take cocoa powder in a bowl, add 1 cup milk and whisk till well combined. 3. Add remaining milk in a non-stick deep pan, add castor sugar and mix well. 4. Add star anise, cloves, cinnamon stick and bring to a boil. Add coco powder mixture and cook for 3-4 minutes on a medium heat or till mixture comes to a boil. Stir occasionally. 5. Strain the mixture into a jar and froth the mixture using an electric frothing machine. 6. Pour a portion of the rum mixture into individual serving glasses and pour hot chocolate over it. Dust some coco powder on top and garnish with marshmallows. Pesto Bread | पेस्तो ब्रेड | Easy Bread Recipe | Sanjeev Kapoor Khazana

Warm Pesto bread and the lovely aroma coming from garlic and parmesan powder, will make you drop everything and grab a pesto mayo to slather on it. PESTO BREAD Ingredients Pesto 2 cups fresh basil leaves 4-5 garlic cloves 10-12 cashew nuts 2-3 tbsps parmesan cheese powder + for sprinkling 4-5 tsps extra virgin olive oil + for applying 1-2 tbsps chopped garlic Salt to taste Pesto mayo for serving Dough 1¼ tsps fresh yeast 1 tbsp sugar 1¼ cups refined flour (maida) + for dusting ¾ cup whole wheat flour (gehun ka atta) Salt to taste Oil for greasing Method 1. Take yeast in a small bowl. Add ¼ cup warm water and sugar mix till well combined. Set aside for 5 minutes to activate. 2. To make the dough, put the refined flour in a food processor jar fitted with a hook attachment. Add whole wheat flour, salt, and the activated yeast and add 1 cup water in batches and knead on medium speed till a soft dough is formed. 3. Grease a large bowl with some oil, transfer the dough into this bowl, cover with a cling wrap and set aside to prove for 30-35 minutes. 4. To make the pesto, put the basil leaves in a blender jar. Add garlic, cashew nuts, parmesan cheese powder, extra virgin olive oil and salt and blend to a fine paste. 5. Knock back the dough and knead it lightly. 6. Dust the worktop with some refined flour and place the dough on it. Knead it lightly again and dust some more refined flour and press and spread the dough into a large disc. Add the pesto and spread it evenly over the disc. Roll the disc from one end to the other to make a log. Vertically slit the log in half and braid both the halves together. 7. Transfer the braided dough in a greased bread loaf tin, cover and set aside to prove for 20-25 minutes. 8. Meanwhile, preheat the oven at 200°C. 9. Sprinkle the chopped garlic over the dough, sprinkle parmesan cheese powder, and apply some olive oil. 10. Place the proved dough in the preheated oven and bake for 20-25 minutes. 11. Take out the dough from oven and allow to cool and cut into slices and serve with pesto mayo. Prawns Ravioli with Herb Butter | प्रॉन्स रवियोली विथ हर्ब बटर | Sanjeev Kapoor Khazana

A lovely warm herbed butter as a drizzle over the prawn-stuffed ravioli is a gorgeous Italian dish. PRAWNS RAVIOLI WITH HERB BUTTER Ingredients 15-20 medium prawns, shelled and deveined 1 cup refined flour (maida) Salt to taste 2 eggs Salt to taste Crushed black peppercorns to taste 1-2 sprigs fresh thyme 1 tbsps, chopped garlic 2 tbsps fresh cream 2 tbsps fresh parsley leaves 2 tbsps olive oil 2-3 tbsps butter 1 tbsp fresh oregano leaves Micro greens for garnish Parmesan cheese powder for garnish Method 1. Take refined flour on work top add salt and mix well. Make a well in the center. 2. Break the eggs separate the egg white in a bowl and add the egg yolk in a well. 3. Beat the egg yolks with help of fork and mix well into the flour. Gradually add 1/3 cup of water and combine well. Continue to knead to form a stiff dough. Add olive oil and knead well. 4. Cover the dough in a cling wrap and rest the dough for an hour. 5. Add the prawns in a food presser jar, add salt crushed black peppercorns, thyme leaves, garlic, fresh cream, and parsley. Close the jar and blend into the fine paste. 6. Transfer the mixture in a piping bag and keep aside. 7. Divide the dough into half portions. And shape it into a ball. Dust some refined flour on a work top. Place the dough and roll into the thin rectangular sheet. 8. Cut the roundels of the sheet with ring cutter. And remove the excess dough. Cut the nip of piping bag and pipe out the portion of mixture in center. 9. Brush some water sides of mixture and fold into half and gently press the edges to close. 10. Apply water on edges and bring the edges into center to form a tortellini shape. 11. Heat sufficient oil in deep pan. Add 1 tbsp olive oil. Place the strainer in center add in the tortellini and cook for 6-7 minutes. Drain and set aside. 12. Melt the butter in a small shallow pan add 1 tbsp olive oil and oregano leaves and add inn the cooked tortellini and toss cook for 30 seconds. 13. Arrange the tortellini on serving plate drizzle the butter overt it and garnish with micro greens, sprinkle parmesan cheese powder and serve. Twice slow grilled lamb shanks with Mediterranean staples over a bed of veggies and sauce is a unique Turkish preparation is just as juicy. TURKISH LAMB Ingredients 6-8 lamb shanks Salt to taste 1 tsp paprika Crushed black peppercorns to taste 2 tbsps olive oil 1 medium brinjal, cut into 1 inch pieces 2-3 small white onions, halved 2 medium potatoes, cut into quarters 2 small tomatoes, cut into quarters Ready-made pita dough as required Refined flour (maida) for dusting Egg wash for brushing Black sesame seeds for sprinkling White sesame seeds for sprinkling Sauce ½ cup tomato puree Salt to taste Crushed black peppercorns to taste 1 tsp dried thyme 2 tsps paprika 2-3 tbsps olive oil Method 1. Preheat the oven at 180ºC. 2. Take lamb shanks in a bowl. Add salt, paprika, crushed black peppercorns and olive oil and mix well. 3. Put the brinjal, white onions, potatoes, and tomatoes in a deep oven-proof bowl. 4. To make the sauce, mix tomato puree, salt, crushed black peppercorns, dried thyme, paprika, olive oil and 1 cup water in another bowl. Pour this mixture over the vegetables. 5. Arrange the lamb shanks over the vegetables, cover with almunium foil and place it in the preheated oven and bake for 40-45 minutes. 6. Dust the worktop with some refined flour, place the pita dough on it and roll it into a thin disc. 7. Bring the bowl out of the oven, remove the foil, place the disc over it, press the edges to seal. Brush some egg wash over it, sprinkle toasted black sesame seeds, white sesame seeds. Place it back in the oven for 10-15 minutes. 8. Bring the bowl out of the oven, and serve hot. Blueberry Muffins | ब्लुबेरी मफिन्स | Sanjeev Kapoor Khazana

The moisture from the blueberries and the soft muffins with a lovely brown crust are such a delightful treat anytime of the day. Taste yum when warm. BLUEBERRY MUFFINS Ingredients 15-20 fresh blueberries + for topping 1 cup castor sugar 1 cup butter 3 eggs 1 tsp vanilla essence 1 cup + 1 tbsp refined flour (maida) 1 tsp baking powder Method 1. Preheat the oven at 180ºC. 2. Take the sugar in a large bowl, add butter and beat the mixture with the help of an electric beater till light and fluffy. 3. Break in the eggs one at a time and continue to beat till the mixture is well combined. Add vanilla essence and beat well. 4. Sift 1 cup refined flour, baking powder directly into the butter-sugar mixture. 5. Take the blueberries in a small bowl, add remaining refined flour and mix well. Add this into the butter-sugar mixture as well. Gently fold in till well combined. 6. Transfer the mixture into individual lined muffin moulds, top with a few blueberries and place it in the preheated oven and bake for 30-35 minutes. 7. Bring the muffin out of the oven and allow to cool completely. 8. Serve. Chai Biscuit Cheesecake | चाय बिस्किट चीज़केक | Sanjeev Kapoor Khazana

For the love of tea, no desserts, actually both. This cheesecake has masala chai suffused into the cheesecake and with a base of Glucose biscuits, this dessert will wow both tea lovers and dessert fans. CHAI BISCUIT CHEESE CAKE Ingredients 1½ tbsps tea leaves (chai) 15 – 20 glucose biscuits 1¼ cups cream cheese 1 tbsps sugar ½ inch ginger, grated 3-4 green cardamoms 1 inch cinnamon stick 2-3 black peppercorns ¼ tsp green cardamom powder ¼ cup melted butter ¾ cup yogurt ½ cup condensed milk 1 tbsps corn flour ½ tbsps refined flour Method 1. Preheat the oven to 180ºC. 2. Heat 1 cup water in a nonstick pan, add sugar, tea leaves and ginger. Open the green cardamom pods and add to the mixture, add cinnamon stick, black peppercorns and mix well. Cook till the mixture reduces to half. Strain and allow to cool completely. 3. Add glucose biscuits and green cardamom powder in a food processor jar. Process to a fine powder. Add melted butter and continue to process until well combined. 4. Put the mixture into a lined 6-inch round loose bottom cake tin, spread it evenly and press to get a smooth surface. Refrigerate this for 15 minutes. 5. Take cream cheese in a large bowl and beat with an electric beater till smooth. Add yogurt and beat till well combined. 6. Add condensed milk, tea mixture, sift the corn flour and refined flour directly into the bowl and beat till a smooth mixture is formed. 7. Add the prepared mixture over the biscuit layer, place it on a baking tray, add water in it and cover the top of the cake tin with an aluminum foil. Place it in the preheated oven and bake for 35-40 minutes. 8. Bring the tray out of the oven, allow the cheesecake to cool to room temperature and refrigerate for 2-3 hours. 9. Gently demould the cheesecake, pipe out whipped cream on the edges and garnish with glucose biscuit halves. Cut into wedges and serve. Jam Babka | जॅम बाबका | Jewish Bread | Sanjeev Kapoor Khazana

On the outside, it is braided bread with a generous layer of mixed fruit jam inside that gives a marble effect and when brushed with melted butter, your breakfast is ready. JAM BABKA Ingredients ¾ cup mixed fruit jam 1¼ tsps instant dry yeast 1 tbsp castor sugar ¾ cup milk 1 tsp vanilla essence 2 cups refined flour (maida) + for dusting A pinch of salt 2-3 tbsps butter, room temperature + for applying Melted butter for brushing Method 1. Take instant dry yeast in a large bowl. Add castor sugar, ¼ cup milk, and vanilla essence and whisk till well combined. 2. Add refined flour, and salt, and mix well. Add remaining milk little at a time and knead till a soft dough is formed. 3. Add butter and knead for another 4-5 minutes. 4. Apply some butter into the bottom and sides of a large bowl. Place the dough in it, cover with a cling wrap and keep it aside for 45-50 minutes or till it doubles in size. 5. Knock back the dough. 6. Dust the worktop with some refined flour, place the dough on it, and roll it into a rectangular sheet of medium thickness. 7. Apply jam evenly over the sheet. Tightly roll into a log from the horizontal side. Vertically cut the log into two. Braid two halves together and place it in a greased loaf tin. Set it aside for 30-35 minutes. 8. Meanwhile, preheat the oven at 180ºC. 9. Place the braided bread into the preheated oven and bake for 30-35 minutes or till done. 10. Bring the bread out of the oven, and brush melted butter. Allow to cool to room temperature. De-mould the bread and cut into slices. 11. Arrange on a serving plate and serve. PLUM CAKE Ingredients 1¾ cups refined flour (maida) ¾ cup brown sugar 1 cup orange juice 3 tbsps chopped dried figs 3 tbsps chopped dried apricots 3 tbsps raisins 2 tbsps chopped cashew nuts 2 tbsps chopped walnuts 3 tbps chopped dried cranberries ¾ cup Nutralite Doodhshakti Butter Spread 1¼ tsps baking soda 1 orange ½ tsp all spice powder 1 tsp vanilla essence ¼ cup cocoa powder 1½ tsps baking powder 2 tbsps yogurt ¼ cup Nutralite Choco Spread Broken cashew nuts to sprinkle Broken walnuts to sprinkle Method 1. Heat a pan. Add brown sugar, orange juice, figs, golden apricots, raisins, cashew nuts, walnuts, cranberries, Nutralite Doodhshakti Butter Spread, ½ tsp baking soda and mix well. Cook on medium heat for 5-6 minutes or till the dried fruits are soft. 2. Transfer the mixture in a bowl and allow to cool. Zest the orange directly in the mixture. 3. Preheat the oven to 180ºC. 4. Add all spice powder and vanilla essence. Sift cocoa powder, refined flour, baking powder, remaining baking soda in the mixture. Add yogurt and mix well. 5. Add Nutralite Choco Spread and mix well. 6. Transfer the prepared batter in a greased and lined baking tin and sprinkle cashew nuts and walnuts on top, cover with aluminium foil and bake in preheated oven for 90 minutes. 7. The best part of Oriental cooking is that a good stir fry is good enough to prepare a dish. The choicest and the exotic of mushrooms stir fried. It’s that simple. EXOTIC MUSHROOM STIR FRY Ingredients 8-10 oyster mushrooms 4 dried shitake mushrooms, soaked in warm water for 20 minutes 12-15 white shimeji mushrooms 1 bunch of enoki mushrooms 10-12 pak choy 2 tbsps blended sesame oil 2 tbsps finely chopped ginger 2 tbsps finely chopped garlic 2-3 fresh red chillies, chopped 1 medium onion, sliced 1 medium red capsicum, cut into strips 2 tbsps oyster sauce 1 tbsp black rice vinegar or malt vinegar 2 tbsps cooking wine Salt to taste Black pepper powder to taste Toasted white sesame seeds for garnish Sliced spring onion greens for garnish Method 1. Slice the oyster mushrooms. 2. Drain the shitake mushrooms and roughly slice them. Roughly chop the shimeji mushrooms. Trim the ends of the enoki mushrooms and roughly chop them. 3. Roughly slice the pak choy. 4. Heat blended sesame oil in a wok. Add ginger, garlic, and red chillies and mix well. 5. Add onion and sauté for 1 minute. Add the mushrooms and sauté for 2-3 minutes. 6. Add the red capsicum and toss for 1 minute. 7. Add the pak choy and mix well. Cook for 1-2 minutes. 8. Stir in the oyster sauce, black rice vinegar, and mix well. Add salt, and black pepper powder and mix till well combined. 9. Serve hot garnished with toasted white sesame seeds and spring onion greens. Upside Down Orange Cake | अपसाइड डाउन ऑरेंज केक | Sanjeev Kapoor Khazana

The candied orange slices atop the cake serve as a great garnish. This upside down orange cake is a delightful tea cake, perfect for a casual tea party. ORANGE UPSIDE DOWN CAKE Ingredients 2 Malta oranges 1 cup sugar ¾ cup soft butter ½ cup condensed milk 1 cup refined flour (maida) ½ tsp baking powder ½ tsp baking soda 1 tsp vanilla essence Rosemary leaves for garnish Method 1. Heat a nonstick pan. Add sugar, 1½ cups water and mix well. Cook on medium heat till sugar melts. 2. Meanwhile cut 1 orange into medium thick slices. 3. Add the slices to sugar syrup and cook on medium heat for 10 minutes. Allow to cool. 4. Preheat the oven at 180ºC. 5. Take butter in a bowl. Add condensed milk and beat till light and fluffy. 6. Sift refined flour, baking powder and baking soda directly in the bowl. Zest remaining orange and mix well. 7. Squeeze the orange juice and mix well. Add vanilla essence and mix well. 8. Arrange the cooked orange slices in a greased baking tray and pour the prepared batter over it. 9. Bake in preheated oven for 25-30 minutes. 10. Demould while still warm. Brush the remaining sugar syrup while still warm. 11. Allow to cool completely. Cut into slices, garnish with rosemary leaves and serve. Basque Cheesecake | बॅस्क चीज़केक | How to make Cheesecake | Sanjeev Kapoor Khazana

Like a flambee’d crust, this Spanish cheesecake has a lovely crispy layer and a luscious, smooth interior, except that the cheesecake is baked. BASQUE CHEESECAKE Ingredients 1½ cups cream cheese ¾ cup castor sugar 3 eggs 1 tsp vanilla essence ¾ cup fresh cream 1¼ tbsps refined flour (maida) ¼ tsp salt Method 1. Preheat the oven at 200°C. 2. Take cream cheese in a bowl fitted with a paddle attachment. Add sugar and beat well till light and fluffy. Scrape the sides of the bowl at regular intervals of time. 3. Break eggs in a bowl. Add 1 egg at a time and beat till well combined. Add vanilla essence and mix well. 4. Add fresh cream and beat for 1 minute. 5. Add refined flour, salt and mix well with light hands. 6. Pour the batter in a loose bottom cake tin lined with a parchment paper. Tap well to get rid of any air bubbles. 7. Bake in preheated oven for 35-40 minutes. Allow to cool completely. 8. Refrigerate for 3-4 hours. 9. Demould, cut into wedges and serve. Green Garlic Kulcha | हरे लहसुन का कुलचा | Winter Recipes | Sanjeev Kapoor Khazana

Do you know that even with a tawa, a delicious fresh green garlic kulcha tastes just as awesome? GREEN GARLIC KULCHA Ingredients 1 small bunch of green garlic 2 cups refined flour (maida) + for dusting 1 tsp instant dry yeast Salt to taste 1 tsp castor sugar 2 tbsps melted butter + for brushing 2 tbsps yogurt Onion seeds (kalonji) for sprinkling To serve Dal makhani to serve Green chutney to serve Onion rings to serve Lemon wedges to serve Method 1. Sift the refined flour into a large bowl. Add instant dry yeast, salt, castor sugar and whisk well. Make a well in the centre, add melted butter, yogurt and ¾ cup water. Mix and knead for 5-6 minutes to form a smooth soft dough. Cover with a damp muslin cloth and set aside for 1 hour or till the dough doubles in size. 2. Finely chop the green garlic bulbs and the greens. 3. Knockback the dough and divide it into equal portions. Shape each portion into a ball. 4. Dust the worktop with some flour. Place a dough ball on it and roll it into a disc. Apply some water and sprinkle some chopped green garlic and some onion seeds. Press it. 5. Heat an iron tawa. Apply some water on the base of the disc and place it on the hot tawa with the garlic side facing up. Sprinkle some water on the sides, cover with a lid and cook on medium heat for 2-3 minutes. 6. Carefully flip the tawa and place the kulcha slightly above the direct flame and cook for 1-2 minutes. Transfer the kulcha in a serving plate. Brush melted butter and slightly crush the kulcha. Serve hot with dal makhani, green chutney, onion rings and lemon wedges. Pork Pickle | पोर्क पिकल | How to make Pork Pickle at home | Sanjeev Kapoor Khazana

The flavour of South India in this pork pickle. PORK PICKLE Ingredients 500 grams boneless pork belly, cleaned and cut into 1 inch pieces ¾ tsp turmeric powder 1½ tsps red chilli powder 1 tbsp ginger-garlic paste Salt to taste 2 tbsps oil Spice mix 2-inch ginger, roughly chopped 7-8 garlic cloves 1½ tbsps coriander seeds ½ tbsp cumin seeds 1 inch cinnamon stick 2-3 dried bedgi chillies, deseeded 3-4 dried Kashmiri chillies, deseeded 2 tbsps white vinegar 2 tbsps castor sugar Method 1. Take pork in a large bowl. Add turmeric powder, red chilli powder, ginger-garlic paste, salt, and 1 tbsp oil and mix well. Set aside to marinate for 20 minutes. 2. To make the spice mix, put the ginger in a blender jar. Add garlic, coriander seeds, cumin seeds, cinnamon stick, dried bedgi chillies, dried Kashmiri red chillies, and white vinegar and blend well. 3. Add ¾ cup water and blend to a fine paste. 4. Heat remaining oil in a pressure cooker. Add the marinated pork and sauté on high heat for 5-6 minutes. 5. Add the blended paste, and continue to stir and cook for 2-3 minutes. Add salt, mix, and cook for 3-4 minutes. 6. Stir in 1½ cups water, cover and cook under pressure for 2-3 whistles on medium heat. 7. Open the cooker once the pressure has reduced completely. 8. Switch the heat back on, add castor sugar and mix well. Continue to cook for 1 minute. 9. Switch the heat off and allow to cool completely. Transfer the pickle into airtight jar and serve as required. Skillet Brownie | स्किलेट ब्राउनी | How to make Brownie | Sanjeev Kapoor Khazana

The usual dense, gooey brownie baked in a skillet. SKILLET BROWNIE Ingredients 1¼ cups butter + for brushing 1½ cups chopped dark chocolate 1½ cups castor sugar 3 eggs 1 tsp vanilla essence 1 cup refined flour (maida) 1/3 cup chopped walnuts + for sprinkling Chopped milk chocolate for sprinkling Vanilla ice cream to serve Method 1. Preheat the oven at 180ºC. 2. Combine together butter and chocolate in a bowl and microwave it till it melts. 3. Take castor sugar in another bowl. Break in the eggs, and add vanilla essence, and beat with the help of an electric beater till the mixture turns light and fluffy. 4. Transfer the melted chocolate-butter mixture into the beaten eggs and continue to beat till well combined. 5. Sift the refined flour, add walnuts and beat well. 6. Grease an 8 inch iron skillet with some butter. 7. Transfer the batter into the skillet and sprinkle walnuts, and milk chocolate. Place it in the preheated oven and bake for 40-45 minutes. 8. Take the skillet out of the oven and allow to cool to room temperature. Cut into wedges and serve with vanilla ice cream. Prawn Tempura Sushi Roll | प्रॉन टेम्पुरा सुशी रोल | Sanjeev Kapoor Khazana

Don’t be surprised to find avocado in this yummy sushi roll with crisp fried prawns. PRAWN TEMPURA SUSHI ROLL Ingredients 4 medium prawns, peeled and deveined, tails intact 2 cups cooked sushi rice 1 egg ¾ cup drinking soda 1½ tbsps refined flour (maida) Salt to taste Oil for deep frying 1 nori sheet ¼ medium cabbage, shredded 8-10 avocado slices ¼ medium carrot, peeled and cut into thin strips Sriracha mayo to drizzle Pickled ginger for serving Wasabi paste for serving Japanese soy sauce for serving Method 1. Give small cuts on both the sides of the prawns. 2. Break egg in a bowl. Add drinking soda and whisk well. Add refined flour, salt and whisk well. 3. Heat sufficient oil in a kadai. Dip the prawns in egg mixture and deep fry in hot oil till golden brown and crisp. Drain on absorbent paper and set aside. 4. Place a sushi mat on the worktop. Place a nori sheet on top. 5. Apply some water on your palms, take some sushi rice and spread evenly leaving the edges. 6. Arrange the prawns, and sprinkle cabbage on top. Arrange avocado slices and carrot on top. 7. Drizzle sriracha mayo and roll tightly. 8. Slice and serve with pickled ginger, wasabi and Japanese soy sauce. Coconut Cake | कोकोनट केक | How to make Cake at home | Sanjeev Kapoor Khazana

Tasted anything like this before? A delightful coconut cake with a coconut-white chocolate ganache. The garnish with mango slices with a sprig of mint is yet another interesting aspect. COCONUT CAKE Ingredients ¾ cup desiccated coconut + for sprinkling ½ cup room temperature butter ½ cup brown sugar ½ cup castor sugar 3 eggs 1 tsp vanilla essence 1¼ cups refined flour (maida) 2 tsps baking powder ¼ cup coconut milk 1 ripe Alphanso mango, peeled and cut into cubes Fresh mint leaves for garnish Ganache 1 cup coconut milk 1 cup chopped white chocolate Method 1. Preheat the oven at 180°C. 2. Take butter in a large bowl. Add brown sugar and castor sugar and beat till the mixture turns light and fluffy. 3. Break in an egg and add vanilla essence and continue to beat till well combined. Break in the remaining eggs one at a time and beat after each addition. 4. Sift the refined flour and baking powder into the bowl. Add desiccated coconut and gently fold in till well combined. Add coconut milk and continue mix till a smooth batter is formed. 5. Transfer the batter in a greased and lined 7 inch round cake tin. Place this in the preheated oven and bake for 35-40 minutes. Bring the cake tin out of the oven and allow to cool completely. 6. To make the ganache, bring the coconut milk to a boil in a non-stick pan. Add white chocolate and mix well. Cook till the chocolate melts. Switch the heat off and allow the mixture to cool to room temperature. 7. Apply the ganache over the cake and spread it evenly. Sprinkle desiccated coconut and arrange mango pieces on it and garnish with fresh mint leaves. 8. Cut into wedges and serve. Surti Undhiyo | सुरती ऊंधियो | Winter Recipe | Seasonal Recipe | Sanjeev Kapoor Khazana

A very special and most-awaited of winter delicacies of Gujarat. One of the most delicious of preparations with the season’s best produce. A wholesome, vegetarian main course dish, is literally the identity of Gujarat. SURTI UNDHIYO Ingredients 4-5 small brinjals 2 raw bananas 1 large sweet potato, washed and cleaned 2 medium potatoes, peeled 350 grams purple yam, peeled 150 grams surti papdi, stringed and vertically halved 150 grams ivy gourd (tendli), vertically cut into quarters ½ cup fresh pigeon peas (toovar dana) Masala 2 cups finely chopped green garlic with the stalks 1½ cups scraped fresh coconut 2½ tbsps ginger-green chilli paste Salt to taste ½ tsp turmeric powder Muthia 1 cup gram flour ½ cup whole wheat flour 1½ cups chopped fenugreek leaves 1 tsp coriander powder 1 tsp red chilli powder ¼ tsp turmeric powder A pinch of baking soda ¼ tsp asafoetida (hing) 1 tbsp ginger-green chilli paste Salt to taste 1 tbsp chopped jaggery 3 tbsps yogurt 1½ tbsps oil + for deep frying 2 tsps white sesame seeds To serve Shrikhand as required Puris as required Method 1. To make the muthias, take gram flour in a large bowl. Add whole wheat flour, fenugreek leaves, coriander powder, red chilli powder, turmeric powder, baking soda, asafoetida, ginger-green chilli paste, salt, jaggery, yogurt, oil, white sesame seeds and ⅓ cup water and knead into a stiff dough. Cover with a damp muslin cloth and set aside for 5-10 minutes. 2. Trim the top of the brinjals, make crisscross slits without cutting through. Trim the tops of the raw bananas as well and cut into 1 inch pieces. And make crisscross slits on each piece without cutting it through. 3. Trim the tops of the sweet potato, cut into thick roundels and cut each roundel into half. Prick each half with a fork. 4. Cut the potato in half and prick each half with a fork. 5. Cut the purple yam into 1 inch pieces and prick each piece all over with a fork. 6. To make the masala, take green garlic in a parat, add coconut, ginger-green chilli paste, salt and turmeric powder and mix till well combined. Add brinjals, raw bananas, potatoes, purple yam, sweet potatoes, surti papdis¸ivy gourds, fresh pigeon peas and mix till everything is well combined. 7. Heat sufficient oil in a kadai. Gently slide in the muthias in the hot oil and deep fry on medium heat till golden brown and crisp. Drain on an absorbent paper. 8. Heat ½ cup of the hot oil into a wide and deep non-stick pan. Add the vegetables and mix till well combined. Adjust salt and mix. Cover and cook on medium heat for 20-25 minutes while stirring in between every few minutes. 9. Add the muthias and mix. Cover again and continue to cook on medium heat for 10-15 minutes. 10. Transfer the undhiyo into a serving bowl, serve hot with shrikhand and puris. Pesto Mushroom Puff | पेस्तो मशरूम पफ | Snack Recipes | Sanjeev Kapoor Khazana

This easy-peasy flaky puff pastry with a pesto and mushroom filling is great to bite into with tea/coffee or an in-between snack. PESTO MUSHROOM PUFF Ingredients 6 tsps coriander mint pesto 4 puff pastry squares 2 cups chopped button mushrooms 2 tsps olive oil 1 tbsp chopped garlic 2 green chillies, chopped 1 medium onion, chopped ½ cup boiled and crushed corn kernels Salt to taste Crushed black peppercorns to taste Milk as required Method 1. Preheat the oven at 180°C. 2. Heat olive oil in a pan. Add garlic, green chillies and sauté for 30 seconds. 3. Add onion and sauté till translucent. 4. Add mushrooms and cook on high heat for 2 minutes. 5. Add corn, salt, crushed black peppercorns and cook for 2 minutes. 6. Take the pan off the heat and transfer in a bowl. 7. Place the puff pastry squares on the working top. Place coriander mint pesto in the centre. 8. Place the mushroom stuffing in the centre, apply water on the edges and fold to make a triangle. 9. Press the edges with a fork. Apply milk on top and bake in preheated oven for 15-20 minutes. 10. Bring the puffs out of the oven and serve hot. Signals the start of Christmas spirit. This dessert is quick to make and exciting to serve. Looks gorgeous too, with the cream atop strawberries in tartlets. STRAWBERRY AND CREAM TARTLETS Ingredients 6-8 strawberries Strawberry slices for garnish ½ cup whipping cream 8 readymade tart shells ¼ cup melted white chocolate + as required 2-3 eggless vanilla cake slices 2-3 tsps castor sugar Fresh basil leaves for garnish Method 1. Brush white chocolate on the inner sides of the tart shells. 2. Chop strawberries roughly. Cut cakes slices into small pieces. 3. Transfer the chopped strawberries in a bowl. Add castor sugar and mix well. Set aside for 5 minutes, 4. Whip the cream till soft peaks are formed. 5. Add ¼ cup melted white chocolate and whisk well. 6. Put the cake pieces at the base of tart shells and top up with strawberry mixture. 7. Poi with Eggs | पोई विथ एग्स | Breakfast Series 2.0 | Chef Afraz | Sanjeev Kapoor Khazana

A typical Goan breakfast, poi or bread served with scrambled eggs, grilled tomatoes and sausages. Looks lovely, no? POI WITH EGGS Ingredients 4 pois 8 eggs 2 tbsps tbsp olive oil + for drizzling 8 chicken sausages Salt to taste 1 cup milk 15-16 cherry tomatoes Crushed black peppercorns to taste ¼ small bunch fresh coriander leaves 2 tbsps butter 1 cup grated mozzarella cheese Method 1. Break the eggs in a bowl, add salt and milk, whisk well. 2. Heat olive oil in a nonstick grill pan. 3. Cut the chicken sausages vertically, place them on the hot grill pan. Sprinkle salt, grill on both the sides for 1 minute on each side. 4. Cut the cherry tomatoes in half, sprinkle salt and crushed peppercorns. Drizzle some olive oil over it. 5. Chop coriander leaves and add to the tomatoes. Mix till well combined. 6. Heat butter in a nonstick pan, add the egg mixture and grated cheese, cook for 1-2 minutes. Add crushed peppercorns and mix lightly. Cook for another minute. 7. Cut the pois in half. 8. Serve the scrambled eggs with pois, grilled sausages, and cherry tomatoes mixture. MINI RASMALAI CHEESECAKE Ingredients 8 readymade rasmalai ¾ cup cream cheese 1 cup Nutralite Choco Spread 1½ cups whipped cream 4 white chocolate disks for garnish Blanched and slivered pistachios to sprinkle White chocolate triangles for garnish Dark chocolate rolls for garnish Method 1. Add rasmalai at the base of each serving mug. 2. Take Nutralite Choco Spread in a bowl. Add cream cheese and mix well. 3. Add whipped cream and mix. Transfer the mixture in a piping bag fitted with a star nozzle and pipe on the rasmalai layer. 4. Place 1 more rasmalai in each glass and finally pipe out some more chocolate mixture on top. 5. Golden Fried Rice | The Wok Street | Chef Ankit | Sanjeev Kapoor Khazana

Guess where the bright golden colour comes from? Egg yolks, and prawns, spring onions complete this Oriental Dish. GOLDEN FRIED RICE Ingredients 4 eggs 3 cups cooked short grain rice 2 tbsps oil 2 tbsps finely chopped garlic 20-25 medium prawns, peeled, cleaned, and deveined 1 tbsp cooking wine 3-4 asparagus stalks, diagonally sliced White pepper powder to taste Salt to taste 3-4 asparagus, peeled and trimmed 2-3 tbsps diagonally sliced spring onion greens Method 1. Separate the egg yolks from the egg whites. Transfer the yolks into the rice and mix well. 2. Heat oil in a wok, add garlic and sauté for 1-2 minutes. 3. Add prawns and sauté on high heat for 2-3 minutes. Add cooking wine and mix well. 4. Add asparagus stalks and sauté for 2-3 minutes. 5. Add the asparagus and mix well. Add the rice and toss till well combined. Add the spring onion greens and mix well. 6. Transfer into a serving plate. Serve hot. Palakachi Takatali Bhaji | पालकाची ताकतली भाजी | Maharashtrian Recipe | Sanjeev Kapoor Khazana

A leafy green kadhi, this Maharashtrian buttermilk-based spinach curry is a lovely tangy and mildly sweet curry, that’s best had with steamed rice. What makes it different is the tempering with ghee. PALAKACHI TAKATALI BHAJI Ingredients 4 cups shredded spinach 4 cups buttermilk (taak) 2 light green chillies ½ cup raw peanuts 2½ tbsps gram flour (besan) Salt to taste 2-3 tbsps chopped jaggery Steamed rice to serve Tempering 1 tbsp ghee + to serve 1 tsp cumin seeds ¼ tsp asafoetida (hing) 1 light green chilli ½ tsp turmeric powder Method 1. Heat a pressure cooker, add the spinach leaves, break the green chillies and add into it. Add the raw peanuts and 2 cups water, mix, cover and cook under pressure till 3-4 whistles are released. 2. Open the cooker once the pressure has reduced completely. Add gram flour, churn with the help of a wooden churner till the flour is well combined with the mixture. 3. Stir in the buttermilk and continue to churn for a few minutes. 4. Add 1 cup water, salt and jaggery and mix well. Cook on medium heat for 6-8 minutes, while stirring in between. 5. To make the tempering, heat ghee in a non-stick pan. Add cumin seeds and let them change colour. Add asafoetida, break the green chilli and add into it. Stir in the turmeric powder and cook for a few seconds. Pour this immediately into the spinach mixture and mix well. 6. Continue to cook for 5 minutes, while stirring in between few minutes. 7. Transfer into a serving bowl, serve hot with steamed rice and ghee. Surti Papdi ki Sabzi | सुरती पापड़ी की सब्ज़ी | Winter Recipe | Sanjeev Kapoor Khazana

Sauteed in ghee and carom seeds and then given a tempering of green garlic bulbs and stalks, this Surti Papdi sabzi is unusual. SURTI PAPDI KI SABZI Ingredients 300 grams surti papdi, stringed and halved 3 tbsp ghee ¼ tsp carom seeds (ajwain) 1 tsp red chilli powder ½ tsp turmeric powder 1 tsp cumin powder Salt to taste 2 tsps coriander powder 2 tsps chopped jaggery ½ tsp garam masala powder 1½ tsps cumin seeds 2 tbsps chopped fresh green garlic bulbs 2 green chillies, chopped ½ cup chopped green garlic stalks 2 tbsps chopped fresh coriander leaves Fresh coriander sprig for garnish Chapatis for serving Method 1. Heat 1 tbsp ghee in a pressure cooker. Add carom seeds and sauté for 30 seconds. 2. Add surti papdi and mix well. 3. Add red chilli powder, turmeric powder, cumin powder, salt, coriander powder and mix well. 4. Add 1½ cups water, jaggery, garam masala powder and mix well. 5. Cover the lid and cook on medium heat till the pressure is released thrice. 6. Open the lid once the pressure settles completely. 7. Heat remaining ghee in a pan. Add cumin seeds and once they start to change the colour, add fresh green garlic bulbs, green chillies and sauté for 30 seconds. 8. Add green garlic stalks, coriander and mix well. 9. Add this tempering to cooked surti papdi and mix well. 10. Transfer in a serving bowl, garnish with coriander sprig and serve hot with chapatis. Smart Tiffins | Beetroot Parantha | Paneer Bhurji | Energy Balls | Sanjeev Kapoor Khazana

In the Smart Tiffin series, we bring to you smart tiffin ideas, be it doing the preparations, cooking and even packing. We bring to you recipes that are easy, can be made in less time and with easily available ingredients. The first in the series, we have Beetroot Parantha, Energy Balls and Paneer Bhurji. BEETROOT PARANTHA Ingredients 1½ cups whole wheat flour (gehun ka atta) + for dusting ½ tsp carom seeds (ajwain) Salt to taste 1 tsp ginger-green chilli paste 1 cup boiled beetroot puree 1 tbsp oil Ghee for applying Method 1. Take whole wheat flour in a large parat. Add carom seeds, salt, ginger-green chilli paste, and beetroot puree and mix well. 2. Add ½ cup water, and knead till a soft dough is formed. Add oil and continue to knead for 1-2 minutes. Cover with a damp muslin cloth and set aside for 10-15 minutes. 3. Dust the worktop with some flour, take a small portion of the dough and shape it into a ball. Place it over the dusted worktop, and dust some whole wheat flour over it and roll it into a disc. 4. Heat a non-stick tawa. Place the disc on it and cook for 1-2 minutes. Flip and cook the other side for 1-2 minutes as well. Apply some ghee and cook for a few seconds. 5. Arrange the paranthe in the tiffin box and serve. PANEER BHURJI Ingredients 300 grams mashed cottage cheese (paneer) 1 tbsp oil 1 tsp cumin seeds 2 green chillies, chopped 1 tsp finely chopped ginger 1 medium onion, finely chopped ¼ cup boiled green peas ½ cup chopped mixed coloured capsicums (green, red, and yellow) ¼ cup boiled sweet corn kernels ¼ tsp turmeric powder Salt to taste ¼ tsp garam masala powder ½ tsp dried fenugreek leaves (kasuri methi) 2-3 tbsps chopped fresh coriander leaves Method 1. Heat oil in a non-stick pan. Add cumin seeds and let them change colour. 2. Add green chillies, and ginger and mix well. Cook for a minute. 3. Add onion and mix well. Cook till translucent. 4. Add boiled green peas, capsicums, boiled sweet corn kernels and mix well. Cook for 1-2 minutes. 5. Add turmeric powder, salt, garam masala powder, and crush the dried fenugreek leaves between your palm and add into the mixture. And mix well. Cook for 1 minute. 6. Add paneer and mix till well combined. Add coriander leaves and mix well. Cook for 1 minute. 7. Take the pan off the heat and allow to cool slightly. 8. Pack it in tiffin box and serve. ENERGY BALLS Ingredients ½ cup roughly chopped walnuts ¼ cup roughly chopped pistachios ¼ cup roughly chopped almonds ¼ cup chopped golden apricots ¼ cup chopped dried figs 12-15 seedless dates 1 tbsp flax seeds Method 1. Put the walnuts, pistachios, and almonds in a mixer jar and coarsely grind. Add apricots, dried figs, dates, and flax seeds and grind to a coarse paste. Transfer the mixture into a bowl, take small portions and shape each portion into a ball. 2. Arrange a few pieces in a tiffin box and serve as required.
