Sounds impossible right? But here we have an amazing mini omelete with sausage chunks inside onion rings. Tastes just so awesome. EGG RINGS Ingredients 2 large onions, peeled and cut into thick roundels 4 eggs 1 small onion, finely chopped 2-3 sausages, chopped 2-3 green chillies, finely chopped Salt to taste Crushed black peppercorns to taste ¼ tsp turmeric powder ¾ tsp red chilli powder 2-3 tbsps finely chopped fresh coriander leaves + for garnish 2-3 tbsps oil Tomato ketchup to serve Method 1. Break eggs in a large bowl, add the chopped onions, sausages, green chillies salt, crushed black peppercorns, turmeric powder, red chilli powder and coriander leaves. Mix till well combined. 2. Heat oil in non-stick pan, arrange the onion rings. And add a portion of the egg mixture in centre of each onion ring. Cover the pan with a lid and cook on medium heat for 1-2 minutes. Remove the lid, flip the onion rings, cover the pan again and cook the other side for 1-2 minutes as well. 3. Transfer the cooked egg rings on a serving plate. Garnish with coriander leaves and serve hot with tomato ketchup.
