STUFFED PIZZA Ingredients Fresh dough for 2 pizzas 1 medium onion 1 green capsicum 3 tbsps extra virgin olive oil ¼ cup tomato concasse 1 cup grated mozzarella cheese ½ tsp crushed black peppercorns ½ tsp dried mixed herbs 1 dried red chilli, thinly sliced 2 pickled jalapeno peppers, sliced Method 1. Preheat oven at 180° C. Slice onion and green capsicum. 2. Divide the pizza dough into 2 portions and roll each as thinly as possible. 3. Brush 1 tbsp extra virgin olive oil on a baking tray and place one pizza on it. 4. Spread most of the tomato concasse on it. Sprinkle most of the onion and capsicum. 5. Sprinkle most of the mozzarella cheese, crushed black pepper, ¼ tsp mixed herbs, fresh red chilli, 1 tbsp extra virgin olive oil and place the second pizza round over. Press the edges to seal and roll them slightly. 6. Sprinkle remaining mozzarella cheese over the top of the second pizza round, remaining tomato concasse, pickled jalapeno, remaining onion and capsicum, remaining olive oil and remaining mixed herbs. 7. Keep the tray in the preheated oven and bake till the base is cooked the cheese melted. 8. Remove from oven, cut into wedges and serve hot.
