Transport yourself to the heart of traditional flavors with 'Pittu,' a beloved Sri Lankan dish made with steamed rice flour and infused with the magic of coconut. 👌👌 Each bite offers the perfect balance of soft, fluffy texture and aromatic flavors, making it a true culinary experience. Whether you enjoy it with a spicy curry, tangy chutney, or a simple drizzle of coconut milk, 'Pittu' brings warmth to your soul and fills your heart with comfort! 😋😇 PITTU Ingredients 1½ cups rice flour 1 cup fresh scraped coconut Salt to taste Oil for brushing Method 1. Put rice flour in a bowl, add salt and scraped coconut and 2 tbsps water and mix well. 2. Heat 1 cup water in the bottom container of puttu steamer. 3. Brush the cylindrical mould with oil, fill it with the rice flour mixture. Spread it evenly. Cover its lid. Place in the steamer and steam for 12-15 minutes. Remove the puttu mould, push the puttu through the cylinder with a wooden stick onto a serving plate and serve hot. Ready to try a chaat that will steal your heart? Well, @Chef Anupa is here with her unbeatable 'Chole Papdi Chaat'! 😍 This irresistible dish combines crispy papdi and perfectly spiced chole, topped with fresh veggies and tangy chutneys. It's the ultimate snack for any occasion and will leave everyone coming back for more. Tune in as Chef Anupa shows you how to make this beloved chaat at home! 😇😇 CHOLE PAPDI CHAAT Ingredients 2 cups boiled chickpeas (chole) Papdis as required 2 tbsps Milky Mist Ghee 1 tsp cumin seeds A pinch of turmeric powder 1 tsp red chilli powder ½ tbsp chole masala Salt to taste ½ tsp chaat masala Milky Mist Cooking Butter as required Red chilli-garlic chutney as required Green chutney for drizzling Date and tamarind chutney for drizzling Roasted cumin seeds for sprinkling Chopped onion as required Lemon wedges as required Sev for garnsh Chopped fresh coriander leaves for garnish Fresh pomegranate seeds for garnish Method 1. Heat Milky Mist Ghee in a non-stick pan. Add cumin seeds and let them change colour. Add turmeric powder, red chilli powder, chole masala and boiled chole and mix well. 2. Add salt and chaat masala and mix well. Cover and cook till the mixture comes to a boil. 3. Lightly mash the mixture using a masher. Cook for 1-2 minutes and take the pan off the heat. 4. To serve, add a portion of the Milky Mist Cooking Butter in an earthen bowl or kulhad. Pour a portion of the hot chole mixture. Drizzle red chilli-garlic chutney, green chutney and date and tamarind chutney. Sprinkle roasted cumin seeds, some of the chopped onion, squeeze the juice of lemon, crush a few papdis and sprinkle on top. Garnish with sev, coriander leaves and fresh pomegranate seeds. Bharwan Lauki with Kadhi | भरवां लौकी विथ कढ़ी | Sanjeev Kapoor Khazana

Transport your taste buds to a world of comforting flavors with 'Bharwan Lauki with Kadhi'! 👌 This traditional Indian dish features lauki stuffed with aromatic spices and cooked to perfection, served alongside a tangy, creamy kadhi. It’s a nourishing and well-balanced meal that brings warmth to your soul with every bite. Serve it with rice or roti to enjoy a complete experience. 😍💚 BHARWAN LAUKI WITH KADHI Ingredients 1 medium bottle gourd (lauki) 1 cup yogurt 2 tbsps amaranth (rajgira) flour 100 gms cottage cheese (paneer) 2 medium potatoes, boiled and peeled 2 tbsps khoya Salt to taste 1½ tsps crushed black peppercorns 3 tbsps oil 4-5 cloves 4-5 green cardamoms 1 inch cinnamon stick 1 tbsp fresh cream Method 1. Peel bottle gourd, cut into thick roundels and remove seeds from the center to make a hollow. 2. Grate cottage cheese and potatoes into a bowl. Add khoya, salt and 1 tsp crushed peppercorns and mix well, mashing lightly. 3. Stuff the bottle gourd roundel centres with the cottage cheese-khoya mixture. 4. Heat oil in a non-stick pan, add cloves, cardamoms and cinnamon and sauté for a minute. Place stuffed bottle gourd roundels in the pan, cover and cook till the underside turns brown. 5. Put yogurt into another bowl, add amaranth flour, salt and remaining crushed peppercorns and mix well. Add ½ cup water and whisk well to make a smooth batter. 6. Uncover the pan, flip the bottle gourd pieces, cover and cook they are done similarly on the other side. 7. Pour the yogurt mixture in another non-stick pan, and cook, stirring continuously, till the mixture thickens. Add fresh cream and mix well. Simmer for a minute. 8. Put some of the kadhi on a serving plate, arrange the stuffed bottle gourd roundels over it and serve immediately. Serve the remaining kadhi as required. Heat oil in a shallow nonstick pan. Add cumin seeds and once they start to change the colour, add green chillies and sauté for a few seconds. 2. Add turmeric powder, red chilli powder, chaat masala, salt and mix well. 3. Add boiled potatoes, coriander and mix well. 4. Heat a nonstick tawa. Place the rotis and cook for 30 seconds. Flip and drizzle some oil and cook on other side for 30 second more. 5. Transfer on work top and spread schezwan chutney on top. Top up with a portion of potato mixture and spread little. 6. Grate Milky Mist Processed Cheese Block and sprinkle chaat masala and roll tightly. Serve. Get ready to indulge in the perfect blend of sweet and savory with 'Aam Ras Ka Gosht.' 😍 This dish combines tender, slow-cooked meat with the refreshing sweetness of ripe mangoes, creating a rich and flavorful experience. If you love food that tells a story and offers unique flavors, this gem from our #KesarKhazana series is one you won’t want to miss. 💛 AAMRAS KA GOSHT Ingredients 1 cup ripe mango pulp 750 gms mutton, 1½ inch pieces on the bone 4 tbsps oil 4 medium onions 15 almonds, blanched and peeled 2 tbsps melon seeds (magaz), blanched Salt to taste 1 tbsp ginger paste 1 tbsp garlic paste ¼ tsp turmeric powder 1 tsp red chilli powder 5 green chillies 1 cup water ½ cup yogurt 15 raisins 1 tsp garam masala powder A few saffron strands Method 1. Heat 4 tbsps oil in a deep non stick pan. Roughly chop onions and put in a chopper and chop finely. Add to the pan and sauté till lightly browned. 2. Grind together almonds and melon seeds with a little water, to a smooth paste. Set aside. 3. Add mutton to the onions along with salt, ginger paste, garlic paste, mix well and sauté for 1 minute. 4. Add turmeric powder and red chilli powder. Break green chillies and add. Mix everything well. Add 1 cup water and mix. Cover and cook for 20-25 minutes. 5. Add almond-melon seed paste and mix. Add mango pulp and mix. Add yogurt and raisins and mix well. 6. Add garam masala powder and saffron and mix. Cook till mutton is completely done. Serve hot. Moong Beans | मूंग बीन्स | #MoongKiPathshala | Sanjeev Kapoor Khazana

It's easy to cook, gentle on your gut, and so flavorful that we’re sure you’ll want to make it a weekly ritual! 😇✨ MOONG BEANS Ingredients 1½ cups split skinless green gram (dhuli moong dal), soaked for 2 hours and drained 250 gms French beans, cut into 1 inch pieces 1 tbsp oil 1 tsp mustard seeds 1 tsp cumin seeds 1 medium onion ¼ tsp turmeric powder Salt to taste ½ inch ginger, cut into small pieces 2-3 green chillies 1 tsp lemon juice ½ tsp garam masala powder Thin strips of ginger, for garnishing Fresh coriander sprig for garnishing Method 1. Heat oil in a non-stick pan, add mustard seeds and cumin seeds and let them splutter. 2. Slice onion and add to the pan and sauté till onion turns translucent. 3. Add split green gram and mix well. Cover and cook for 3-5 minutes. 4. Add turmeric powder and salt and mix well. Add 2 tbsps water and mix well. Cover and cook for 2-3 minutes. Add French beans and mix well. Add ginger pieces. Cover and continue to cook for a minute. 5. Roughly chop green chillies and add to the pan. Add 2-3 tbsps water. Cover and cook on low heat till the green gram and beans are done. 6. Uncover the pan, add lemon juice and garam masala powder and mix well. 7. Transfer into a serving platter, garnish with ginger strips and fresh coriander sprig and serve hot. Whether you are starting your day, powering through a busy afternoon, or refuelling after a workout, this cheela offers the perfect balance of nourishment and deliciousness. 😍😇 PROTEIN CHEELA Ingredients 1 cup chickpea/ gram flour (besan) 1 medium carrot, grated ⅓ cup sweet corn kernels, boiled and coarsely crushed 50 grams Milky Mist Paneer, grated 2 tbsps chopped fresh coriander leaves 2-3 green chillies, chopped Salt to taste Crushed black peppercorns to taste 1 tbsp roasted white sesame seeds 100 grams Milky Mist Pro Biotic Curd Oil for drizzling Method 1. Take the chickpea flour in a large bowl, add carrot, sweet corn, Milky Mist Paneer, coriander leaves, green chillies, salt, crushed black peppercorns, white sesame seeds and Milky Mist Pro Biotic Curd and mix well. Add ¾ cup water little by little, mixing till a lump free batter is formed. 2. Heat a non-stick pan on medium heat. Drizzle a little oil and pour a ladleful of the batter and spread it lightly. Cook on medium heat for 1-2 minutes, drizzle a little oil and continue to cook for 1-2 minutes more. Flip the cheela and cook the other side for 2-3 minutes or till golden brown. Introducing the 'Laal Maath Moong Bhajiya' from our #MoongkiPathshala series, a snack that’s both guilt-free and exciting! 👌👌 These crispy, golden fritters combine the iron-rich goodness of laal maath with the protein power of moong dal, creating a truly mouthwatering snack. Whether you're serving them at a gathering or enjoying them with your evening chai, pair them with some green chutney for the perfect bite every time! 😍✨ LAAL MAATH MOONG BHAJIYA Ingredients 2 cups chopped red amaranth (laal math) 1 cup split skinless green gram (moong dal) 1 tbsp coriander seeds 2 tsps fennel seeds 2 tsps cumin seeds Salt to taste ¼ tsp turmeric powder ¾ tsp red chilli powder 2 green chillies, chopped ¼ tsp asafoetida ( hing) ¼ tsp dried mango powder 1 medium onion, chopped 2 tbsps chopped fresh coriander Tomato ketchup for serving Method 1. Wash and soak the dal for 2 hours. 2. Heat a nonstick pan. Add coriander seeds, fennel seeds and cumin seeds and dry roast for a minute, allow to cool and grind coarsely. 3. Drain the dal and transfer in a blender. Grind coarsely. 4. Transfer in a bowl. Add red amaranth, salt, turmeric powder, red chilli powder, 3 tsps crushed mixture, green chillies, asafoetida, dried mango powder, onion, coriander and mix well. 5. Heat sufficient oil in a kadai. Dip your hands in water and drop small portions of the mixture and deep fry till golden brown and crisp. 6. Drain on absorbent paper and serve hot with tomato ketchup. Tune in and learn how to whip them up effortlessly! 😍😇 CHILLI CHEESE EGG BITES Ingredients 8 eggs 4-5 green chillies, chopped 8 Milky Mist Cheese Cubes Salt to taste Crushed black peppercorns to taste ½ tsp turmeric powder ½ tsp + a pinch of red chilli powder Oil for cooking 8 white bread slices 2 tbsps chopped fresh coriander 3 tbsps chopped onions 3 tbsps chopped tomatoes Tomato ketchup for serving Method 1. Moong Toast | मूंग टोस्ट | #MoongKiPathshala | Sanjeev Kapoor Khazana

Whether it's a satisfying breakfast, a quick snack, or a delightful lunch, this twist on classic toast will make your meals even more enjoyable! 😋🍞 MOONG TOAST Ingredients 1 cup whole green gram (sabut moong), soaked, boiled 8 brown bread slices 1 medium onion 3 medium potatoes, boiled and peeled Salt to taste 2 tsps chaat masala 1 tbsp pav bhaji masala Coriander-mint chutney, as required Butter to cook 1 medium onion, cut into thin roundels, layers separated Method 1. Chop onion finely and put into a bowl and add green gram. Crush boiled potatoes and add. 2. Add salt, chaat masala and pav bhaji masala and mix well mashing slightly. 3. Apply coriander-mint chutney on all the bread slices. Spread gram mixture generously on 4 slices and cover them with the remaining. 4. Apply a little butter on outer sides of the sandwiches. 5. Grease a sandwich toaster with butter or oil or ghee, place a sandwich in it, close and cook on medium heat, turning sides till both sides are golden. 6. Cut into 2 triangles, arrange on serving plate, garnish with onion rings and serve hot. Tune in to discover how to bring this classic dish to life! 😋🔥 PODI IDLI FRY Ingredients 1 tbsp gun powder (idli podi/molaga podi) 4-5 leftover idlis 1½ tbsps Milky Mist Cooking Butter 8-10 curry leaves 2 tsps crushed coriander seeds 1 tsp split skinless black gram (dhuli urad dal) 1 tsp bengal gram (chana dal) 1 tsp white sesame seeds ½ tsp red chilli flakes 1-2 green chillies, chopped 1 small onion, sliced Salt to taste Fresh coriander sprig for garnish Method 1. Cut idlis into ½ inch pieces. 2. Heat Milky Mist Cooking Butter in a non-stick pan. Let it melt. 3. Add curry leaves, coriander seeds, split skinless black gram, Bengal gram, white sesame seeds, red chilli flakes and green chillies and saute for 1-2 minutes. 4. Add onion, mix and cook till it turns translucent. 5. Add the idli pieces and sprinkle idli podi and toss well. Add salt if required and mix well. 6. TOMATO DOLMA Ingredients 4 large tomatoes 1 tbsp olive oil + for drizzling 2 medium onions, finely chopped 1 tbsp finely chopped garlic ½ cup grated carrot Salt to taste 1 cup soya granules, soaked in warm water and drained 2 tbsps tomato puree 1¼ cups vegetable stock Crushed black peppercorns to taste ¼ cup short-grained rice, soaked and drained 4-5 fresh curly parsley sprigs 2 tbsps butter Method 1. Preheat oven to 180º C. Heat olive oil in a non-stick pan. 2. Cut thin slices from top and bottom parts of the tomatoes. Reserve the top slices. Scoop out the pulp with a spoon to make tomato cups. Discard the pulp. 3. Add onions and garlic to the pan and sauté till lightly browned. Add carrot and salt and mix well. Cook for 2-3 minutes. Add soya granules and mix. 4. Add tomato puree, ¼ cup vegetable stock, crushed peppercorns, rice, parsley and butter and mix well. Cook for 8-10 minutes. 5. Stuff the tomato cups with the rice mixture and cover each with the reserved top slices of tomatoes. 6. Place the stuffed tomatoes in a cake tin, pour remaining vegetable stock and drizzle olive oil on top. Place the cake tin in the preheated oven and bake for 20 minutes. Reduce the temperature to 160º C and bake for 15 minutes more. 7. Arrange the tomato dolmas on a serving platter and serve hot. Kachche Sabziyon kii Biryani | कच्चे सब्ज़ियों की बिर्यानी | #KesarKhazana | Sanjeev Kapoor Khazana

When seasonal vegetables meet the timeless elegance of saffron, a magical recipe is born – 'Kachche Sabziyon ki Biryani'! ✨ This aromatic dish from our #KesarKhazana series brings together an array of fresh vegetables layered with fragrant basmati rice, slow-cooked to perfection. What makes it truly regal is the generous infusion of saffron, lending a luxurious aroma to every bite. 💛💛 KACHCHE SABZIYON KI BIRYANI Ingredients 10-12 cauliflower florets 7-8 French beans, cut into 1 inch pieces 2 medium potatoes, diced ½ cup shelled green peas 1½ cups Daawat basmati rice, soaked Salt to taste ¼ tsp turmeric powder 1 tsp red chilli powder ¾ tsp garam masala powder 1 tbsp ginger paste 1 tbsp garlic paste 3 green cardamoms 1 inch cinnamon stick 3 cloves ½ cup chopped fresh coriander leaves ½ cup fresh mint leaves ½ tsp caraway seeds (shahi jeera) 2 green chillies A few saffron strands ¼ cup milk Wheat flour dough to seal ½ tsp rose water ½ tsp screw pine (kewda) water ¾ cup yogurt 1 inch ginger, cut into thin strips 1 tbsp rose petals Method 1. Boil plenty of water in a deep non stick pan. 2. Place cauliflower, beans, potatoes and peas in a bowl. Add salt, ¼ tsp turmeric powder, 1 tsp red chilli powder, ½ tsp garam masala powder, ginger paste, garlic paste and mix well. 3. When the water begins to boil, add green cardamoms, cinnamon and cloves. Drain and add rice along with salt. 4. Add half the coriander leaves, half the mint leaves, caraway seeds, green chillies to the vegetables and mix well. Transfer this into a deep non stick pan. 5. Preheat oven to 160°C - 170°C. Soak saffron in milk and heat in microwave on HIGH for 1 minute. 6. Roll the dough into a long sausage and place it around the rim of the pan. 7. Cook rice till ¾ done. Strain the rice well and spread it over the vegetables. Sprinkle rose water, kewra water, saffron milk, yogurt, remaining garam masala powder, ginger strips, rose petals, remaining coriander leaves and mint leaves. 8. Place the lid over the dough and press to seal. Cook on high heat for 3-4 minutes. 9. Keep the pan in the preheated oven and cook for 25-30 minutes. Let it stand in the oven for 10 minutes more and serve. Mixed Dal | मिक्स्ड दाल | #NorthEastKaSwaad | Sanjeev Kapoor Khazana

There’s beauty in simplicity, and Northeastern cuisine captures that perfectly. One such comforting example is 'Mixed Dal'. 💛💛 This humble yet hearty dish is a delicious way to experience #NorthEastKaSwaad. It brings together a wholesome mix of local lentils, slow-cooked with gentle spices and tempered to perfection. Whether you enjoy it with steamed rice or on its own, this timeless classic never goes out of style! 😋😍 MIXED DAL Ingredients ½ cup split red lentils (masoor dal), soaked for 30 minutes and drained ½ cup split black gram with skin (chilkewali urad dal), soaked for 30 minutes and drained ½ cup split skinless green gram (dhuli moong dal), soaked for 30 minutes and drained ½ cup split pigeon peas (toovar dal), soaked for 30 minutes and drained ½ cup split Bengal gram (chana dal), soaked for 30 minutes and drained Salt to taste ¾ tsp turmeric powder 4 tbsps mustard oil 1 bay leaf 1 tbsp chopped garlic ½ tbsp chopped ginger 1 medium onion, finely chopped 1 medium tomato, finely chopped 2 green chillies, slit Fried dried red chilli for garnish Steamed rice to serve Method 1. Transfer all the soaked dals in a pressure cooker. Add salt, turmeric powder, 1 tbsp mustard oil, bay leaf and 4 cups water. Cover the lid and cook on medium heat till the pressure is released 4-5 times. 2. Open the lid once the pressure settles completely. 3. Heat remaining mustard oil in a deep pan, add garlic, ginger and sauté for 30 seconds. 4. Add onion and sauté on medium heat till onions turn golden brown. Add tomato, green chillies and sauté till tomatoes turn pulpy. Add boiled dal, salt and 1½ cups water and mix well. Cook for 5 minutes on medium heat. 5. Transfer in a serving bowl, garnish with fried red chilli and serve hot with steamed rice. Gur ka Parantha | गुड़ का परांठा | Jaggery Parantha | Sanjeev Kapoor Khazana

Indulge in the warm, irresistible goodness of 'Gur Ka Parantha'! 👌 This traditional Indian flatbread, sweetened with the natural richness of jaggery, strikes the perfect balance of crispiness and comfort. Simply pair it with cooling yogurt or a generous drizzle of ghee, and you’ve got yourself a satisfying meal that’s both nostalgic and nourishing. 😍❤ GUR KA PARANTHA Ingredients 1½ cups whole wheat flour (atta) + as required 1 cup grated jaggery (gur) Salt to taste 2 tbsps ghee + for basting ¾ cup scraped fresh coconut ¼ cup white sesame seeds Method 1. Mix together wheat flour and salt in a bowl. Add sufficient water and knead into a stiff dough. 2. Heat 2 tbsps ghee in a non-stick pan. Add coconut and sauté for 2 minutes. Add sesame needs and sauté for a few seconds. Transfer the mixture in a bowl. 3. Add jaggery and mix well. Set aside to cool down a little bit. 4. Divide the dough into equal portions, dust with flour and roll out into thick discs. 5. Add 2 tbsps wheat flour to jaggery mixture and mix well. 6. Place a spoonful of jaggery mixture in the centre of the discs, gather the edges, seal and shape into balls. Dust with some flour, flatten and set aside to rest for 5 minutes. 7. Heat a non-stick tawa. 8. Dust the stuffed portions with some flour and roll out into thick paranthas 9. Place the paranthas, one by one, on the hot tawa and roast, basting with ghee, till evenly browned from both the sides. 10. Cut into halves and serve hot. Whether you're hosting a special occasion or simply craving something sweet, this irresistible dessert is sure to impress! 😍😇 FRUIT TRIFLE Ingredients 3 eggs 2 tsps cornstarch 1 tbsp refined flour ½ cup castor sugar ½ cup Milky Mist UHT Cream ½ tsp vanilla essence 4 eggless vanilla sponge slices 1 kiwi, peeled 3 strawberries 4 blueberries ¼ medium apple Sugar syrup as required Strawberry jelly pieces as required Whipped cream as required Method 1. Separate 2 egg yolks and whites and transfer yolks in a deep nonstick pan. Add the remaining egg to the pan and whisk well. 2. Add cornstarch, refined flour and whisk well. Add castor sugar and Milky Mist UHT Cream and mix well. 3. Transfer the pan on the heat and cook on low heat for 2-3 minutes stirring continuously 4. Strain through a sieve, add vanilla essence and mix well. Refrigerate for 1 hour. 5. Cut cake slices into small pieces. Chop half the kiwi. 6. Chop strawberries, halve blueberries and slice remaining kiwi. Chop apple. 7. Transfer sponge pieces in individual glasses, Drizzle some sugar syrup on top. 8. Pour some of the prepared custard on top. Top up with chopped fruits. 9. Place some strawberry jelly pieces on top. 10. Pipe whipped cream on top. Garnish with kiwi slices, blueberries and serve. Whether you’re serving it at a party or enjoying it as a creative evening snack, this wholesome treat is sure to make your day even better. 😋😇 MOONG AND CHANA CROSTINI Ingredients ½ cup split skinless green gram (dhuli moong dal), soaked ¼ cup split Bengal gram (chana dal), soaked 4 small buns Salt to taste ¼ tsp crushed black peppercorns 4 spring onion with greens 6-8 garlic cloves 2 tbsps extra virgin olive oil + to drizzle Salt to taste 1 lemon A few thin strips of red capsicum Method 1. Drain and put green gram and Bengal gram in a non-stick pan, add 1 cup water, salt and crushed black peppercorns and cook. Remove the scum as it rises to the top, reduce heat and let the grams cook. 2. Cut the buns into 4 slices each. Heat another non-stick pan, place the bread slices in it and toast. 3. Roughly cut spring onions with the greens and put into a chopper jar and chop. 4. Flip the bread slices so that they get toasted on the other side too. When they evenly toasted on both sides, switch off the heat. 5. Put the spring onions in a bowl. Chop garlic cloves and add to the bowl. Drizzle a little extra virgin olive oil on each toast. 6. When the grams are just done strain them and let them cool. Crush them in the chopper with a little water and add to the spring onion mixture in the bowl. Add salt, juice of 1 lemon and 2 tbsps extra virgin olive oil and mix well. 7. Arrange the bread toasts on a serving plate, top with the gram mixture, garnish with red capsicum strips and serve. Try it today and experience how simple ingredients come together to create something truly amazing! 😍✨ PUMPKIN RAITA Ingredients 300 grams pumpkin, peeled, cut into 1 inch cubes and boiled 400 grams Milky Mist Pro Biotic Curd Salt to taste ½ tsp sugar ¼ cup coarsely crushed roasted peanuts Tempering 1 tbsp Milky Mist Ghee 1½ tsps mustard seeds 1 tsp cumin seeds ¼ tsp asafoetida (hing) 2-3 green chillies, finely chopped 6-8 curry leaves Method 1. Cut the pumpkin into small pieces. Transfer into a bowl. 2. Take Milky Mist Pro Biotic Curd in a large bowl and whisk it well. Add ¼ cup water and whisk till well combined. 3. Add the pumpkin pieces, salt, sugar and peanuts and mix well. 4. To make the tempering, heat ghee in a pan. Add mustard seeds and let them splutter. Add cumin seeds, asafetida, green chillies and curry leaves and sauté for a few seconds. Pour this immediately into the raita and mix well. 5. Serve immediately. Keep following our #KesarKhazana series for more such delights. 💛💛 KESARI INDRAYANI Ingredients 20-25 small rosogullas 1½ litres full cream milk A few saffron threads ¾ cup sugar ½ cup mawa/khoya, grated 1 cup fresh cream 8-10 pistachios, blanched, peeled and sliced ½ cup almonds, blanched and peeled ½ cup fresh pomegranate kernels Method 1. Bring the milk to a boil in a deep non stick pan, lower the heat and simmer till the milk reduces to half its original volume. 2. Add the saffron and sugar and cook till the sugar dissolves. Add the khoya to thicken the milk. 3. Squeeze the rosogullas to remove excess syrup and place them in a bowl. Pour the milk mixture over and set aside to cool. When completely cold, place in a refrigerator to chill. 4. To serve, place a few chilled rosogullas in each bowl. Drizzle fresh cream and sprinkle pistachios, almonds and pomegranate kernels on top and serve at once. Bhuni Baingan Khichdi | भुनी बैगन खिचड़ी | #MoongKiPathshala | Sanjeev Kapoor Khazana

This recipe from our #MoongkiPathshala series is a reminder that even the simplest ingredients can come together to create something truly comforting and delicious. Try it out and let every bite wrap you in warmth and nostalgia. 😍✨ BHUNI BAINGAN KHICHDI Ingredients 1½ cups Tata Sampann Moong Dal ½ large brinjal 1½ medium onions 8-10 garlic, minced 1 tbsp finely chopped ginger 10-12 curry leaves 2 green chillies ½ lemon 1 tsp red chilli powder Salt to taste 1½ tbsps mustard oil ¼ tsp dried fenugreek leaves (kasuri methi) 1 cup kolam rice, soaked and drained ½ tsp turmeric powder 3 tbsps ghee + for drizzling Coriander sprig for garnish Method 1. Preheat the oven at 200˚C. 2. In a bowl, add Tata Sampann Organic Moong Dal and sufficient water. Soak it for 1-2 hours. 3. Trim the top of the brinjal and cut it into ½ inch cubes, set aside. Slice onions, and transfer them on a baking tray. 4. Add garlic, ginger, curry leaves, break and add green chillies.Squeeze lemon into the same pan. Add red chilli powder, salt, and drizzle mustard oil. 5. Sprinklekasuri methi and mix till the mixture is well combined. Bake for 20-25 minutes. 6. Add rice and soaked moong dal in a non-stick pressure cooker. Add salt, turmeric powder and 1 tbsp ghee. Add 6-7 cups water and cook till 3-4 whistles are released. Allow the pressure to be released completely. 7. Add ¾ of the roasted brinjal-onion mixture into the pressure cooker. Add remaining ghee and mix well. Transfer into serving plate, drizzle a little ghee on top and top it up with the remaining brinjal-onion mixture. 8. Garnish with coriander sprig and serve hot.
