SWEET POTATO SOUP WITH ALMONDS Ingredients 300 grams sweet potatoes, peeled and cut into 1 inch cubes 8-10 almonds 1 tbsp butter 1 tsp olive oil 1 tsp finely chopped celery stalk 1 tsp finely chopped garlic 1 medium onion, roughly chopped 4-5 cups vegetable stock Salt to taste Crushed black peppercorns to taste + for garnish 1½ cups almond milk 2 tbsps fresh cream + for garnish Chopped fresh chives for garnish Breadsticks to serve Method 1. Heat butter and olive oil in a deep non-stick pan. Add celery, and garlic and sauté for a minute. Add onion, mix and sauté till it turns translucent. 2. Add the almonds and mix well. Cook for a minute. 3. Add the sweet potatoes and sauté on high heat for 2-3 minutes. Pour vegetable stock and mix well. 4. Sprinkle salt and crushed black peppercorns, mix and let the mixture come to boil. Cover and cook for 15-20 minutes. Switch the heat off and blend the mixture till smooth using an electric hand blender. 5. Pour the almond milk and mix till well combined. Add 1 cup water and mix well. Switch the heat back on and cook till the mixture comes to a boil. 6. Add fresh cream, mix and transfer into serving bowls. Garnish with fresh cream, chives and crushed black peppercorns. Serve hot with breadsticks. GINGERBREAD CARAMEL MILKSHAKE Ingredients ¾ tsp ginger powder Caramel as required 2 cups milk ½ tsp cinnamon powder 2-3 tbsps honey ½ tsp vanilla essence 4-5 scoops of vanilla ice cream Whipped cream for piping Marshmallow snow man to serve Colourful sugar sprinklers for garnish Method 1. Pour the milk into a mix blender jar, add ginger powder, cinnamon powder, honey, vanilla essence, and vanilla ice cream and blend till smooth. 2. Drizzle caramel into the serving glasses. Pour the milkshake, pipe out whipped cream on top. Drizzle caramel sauce over it, garnish with marshmallow snow man and sprinkle colourful sugar sprinkles. Serve immediately. LEHSUNI TAWA MASALA Ingredients 1½ cups garlic cloves (lehsun) 3 tbsps oil + for deep frying 1½ tsps cumin seeds 2 medium onions, chopped Salt to taste 2-3 green chillies, chopped 2 medium tomatoes, chopped ¼ tsp turmeric powder 1 tsp red chilli powder 2 tsps coriander powder ½ tsp garam masala powder ¼ cup yogurt 2-3 tbsps chopped fresh coriander leaves ½ lemon Fresh coriander sprig for garnish Paranthas for serving Method 1. Heat sufficient oil in a kadai. Add the garlic cloves and deep fry till golden brown. Drain on absorbent paper and set aside. 2. Heat 3 tbsps oil on a tawa. Add cumin seeds and once they start to change the colour, add onions, salt and sauté till golden brown. 3. Add green chillies, tomatoes and cook till the tomatoes are pulpy. 4. Add turmeric powder, red chilli powder, coriander powder, garam masala powder and mix well. 5. Add yogurt and sauté for 2 minutes. Add 1 cup water and mix well. 6. Add fried garlic cloves, coriander leaves and mix well. Squeeze lemon and mix well. 7. Transfer on a serving plate, garnish with coriander sprig and serve hot with paranthas. GREEN GARLIC CHUTNEY Ingredients ¾ cup chopped green garlic bulbs ¾ cup chopped green garlic stalks 2 tbsps oil ½ cup raw peanuts 100 grams dried coconut, sliced Sea salt to taste 1½ tbsps Kashmiri red chilli powder Bhakri for serving Method 1. Heat oil in a kadai. Add the raw peanuts and sauté till they turn golden brown. 2. Add green garlic bulbs and sauté for a minute. 3. Add dried coconut and sauté for 3-4 minutes. Add green garlic stalks, sea salt and sauté for 2-3 minutes. Transfer the mixture in a plate and allow to cool. 4. Transfer the mixture in a blender jar, add the red chilli powder and grind coarsely. 5. Serve with bhakri. You might have tried endless versions of thalipeeth, now try a healthier version with oats and enjoy! OATS THALIPEETH Ingredients 1½ cups oats flour 1 small carrot, grated 1 large onion, finely chopped 2 tbsps chopped fresh coriander leaves ½ tsp cumin powder ½ tsp coriander powder 1 tsp red chili powder ¼ tsp turmeric powder ½ tsp garam masala powder Salt to taste 2-3 green chillies, chopped Oil for drizzling Green chutney to serve Method 1. Take oats flour in a bowl. Add carrot, onion, coriander leaves, cumin powder, coriander powder, red chili powder, turmeric powder, garam masala powder, salt and green chillies and mix well. 2. Add 1 cup water, and knead into soft dough. 3. Take a non-stick tawa, add a portion of the dough, dip your fingers in water and spread it into a thick disc. Make a few holes in the center. 4. Place the non-stick tawa on heat and cook for 4-5 minutes on medium heat. Drizzle a little oil. Flip and cook the other side for 2-3 minutes or until golden and crisp. 5. if you are a fan of the classic Motichoor ke laddoo, then you will surely love this decadent Motichoor Ice Cream. Try it soon and indulge! MOTICHOOR ICE CREAM Ingredients 3-4 motichoor laddoos 1 tbsp chopped almonds 1 tbsp chopped walnuts 1 tbsp chopped pistachios 1 tbsp chopped cashew nuts 1½ cups sweetened whipping cream ½ tsp green cardamom powder 6-8 pistachios, blanched, peeled and slivered Method 1. Dry roast almonds, walnuts, pistachios and cashew nuts for 3-4 minutes or till golden brown and fragrant. Transfer on a plate and allow to cool. 2. Take whipping cream in a large bowl, add green cardamom powder and whisk it with an electric beater till it reaches soft peaks. Add ¾ of the roasted nuts, crumble the motichoor laddoos and add into the whipped cream mixture and gently fold till well combined. 3. Transfer the mixture into an air tight container, sprinkle remaining roasted nuts on top, cover with a lid and place it in the freezer for 6-8 hours or till set. 4. Scoop out the ice cream and serve garnished with slivered pistachios. GREEN PEAS USSAL Ingredients 2 cups fresh green peas, shelled 2 tbsps oil 1 tsp mustard seeds 1 tsp cumin seeds 2 medium onions, finely chopped Salt to taste ½ tsp turmeric powder 1½ tsps goda masala 2 tbsps chopped fresh coriander leaves ½ lemon Green paste 1 cup fresh coriander leaves 1 inch ginger, roughly chopped 10-12 garlic cloves 3-4 green chillies ½ cup scraped fresh coconut To serve Pavs Chopped onion as required Lemon wedges as required Method 1. To make the green paste, put coriander leaves, ginger, garlic, green chillies, coconut, and ½ cup water in a mixer jar and grind to a fine paste. 2. Heat oil in a pressure cooker. Add mustard seeds and cumin seeds and sauté for a few seconds. 3. Add onions and salt and sauté till golden brown. Add the green paste, mix and cook for 2-3 minutes. 4. Add green peas and mix well. Sprinkle the turmeric powder and goda masala and mix. Cook for 1-2 minutes. 5. Stir in 2 cups water and cook till it comes to a boil. Cover with a lid and cook under pressure till 3-4 whistles are released. 6. Open the cooker once the pressure has reduced completely. Add coriander leaves and squeeze the juice of lemon and mix well. 7. Serve hot with pavs, onion and lemon wedges. CHICKEN ULLIKARAM Ingredients 750 grams chicken, cut into 2 inch pieces on the bone 2 medium onions 10-12 garlic cloves 1 inch ginger, roughly chopped 2 green chillies 8-10 black peppercorns 1 tbsp coriander seeds 1 tsp fennel seeds (saunf) 7-8 dried red chillies 3-4 tbsps oil 1 tsp mustard seeds 1 tsp cumin seeds 2 medium onions, finely chopped Salt to taste ½ tsp turmeric powder 1½ tsps red chilli powder 1 tsp garam masala powder 2 sprigs of curry leaves 2 tbsps chopped fresh coriander leaves ½ lemon Method 1. Roast the onions on direct flame till they are well charred from all sides. Transfer them in a bowl of water. 2. Peel the charred portion of the onions and cut them into quarters. Transfer them into a mixer jar, add garlic, ginger, green chillies, black peppercorns, coriander seeds, fennel seeds and dried red chillies and grind to a fine paste. 3. Take chicken in a large bowl, add the ground paste and rub well on all the pieces of the chicken. Set aside to marinate for 45-50 minutes. 4. Heat oil in a kadai. Add the mustard seeds and let them splutter. Add the cumin seeds and let them change colour. 5. Add onions and salt and sauté till golden brown. Add the marinated chicken and sauté on high heat for 3-4 minutes. 6. Add turmeric powder, red chilli powder and garam masala powder and sauté for 1-2 minutes. 7. Add the curry leaves and mix well. Reduce the heat to medium, add ¾ cup water, mix, and cook for 6-8 minutes. 8. Add coriander leaves and squeeze the juice of the lemon into it and mix well. Cook for a few minutes. 9. Serve hot with steamed rice. संगम वड़ा | Sangam Vada | Sanjeev Kapoor Khazana

Sangam vada is a popular street food from Solapur which is similar to a vada pav. Topped with chutneys, onions and crispy sev, this snack tastes just wow anytime of the day. SANGAM VADA Ingredients 3 medium potatoes, boiled, peeled and mashed 4 pavs 3 green chillies, stemmed and broken 8 garlic cloves ½ inch ginger, roughly chopped 2 tbsps oil + to deep fry 8 curry leaves, shredded 1 tsp turmeric powder Salt to taste 2 tbsps chopped fresh coriander leaves + to sprinkle 1¼ cups gram flour ¼ cup rice flour 1 tsp red chilli powder ¼ tsp baking soda Date and tamarind chutney to drizzle Green chutney to drizzle Chopped onions to sprinkle Nylon sev to sprinkle Method 1. Transfer green chillies, garlic cloves and ginger in a mixer jar and grind coarsely without adding any water. 2. Heat oil in a non-stick pan. Add curry leaves and sauté for a few seconds. 3. Add the prepared paste and sauté for 2 minutes on medium heat. 4. Add ½ tsp turmeric powder, salt and mix well. Cook for 30 seconds. 5. Add the boiled potatoes and mix well. Sprinkle 2 tbsps water and cook for 2-3 minutes or till the mixture is heated thoroughly. 6. Add coriander leaves and mix well. Transfer in a bowl and set aside to cool down. 7. For the batter, take gram flour in a bowl. Add rice flour, red chilli powder, remaining turmeric powder, salt, baking soda and mix well. 8. Add 1¼ cups water and mix well to form a smooth batter. 9. Slit the pavs without cutting through. Apply a generous portion of the potato mixture on lower half and close it. 10. Heat sufficient oil in a kadai. Dip the pav pieces in the gram flour batter and slide into the hot oil. Deep fry till golden brown and crisp. Drain on absorbent paper. 11. Cut the fried pav sandwich into 4 pieces and transfer on a serving plate. 12. Drizzle date and tamarind chutney and green chutney on top. 13. Sprinkle chopped onion, sev and coriander leaves. RED CHILLI GARLIC CHUTNEY Ingredients 10-12 dried red chillies 8-10 garlic cloves Oil for applying 2 tsps lemon juice Salt to taste ½ tsp cumin seeds Method 1. Apply some oil on your fingers and deseed the dried red chillies. Transfer the chillies in a large bowl, add sufficient water and soak for 2-3 hours. 2. टोमेटो अँड पेपर टार्ट | Tomato and Pepper Tart | Sanjeev Kapoor Khazana

TOMATO AND PEPPER TART Ingredients 3-4 yellow cherry tomatoes 3-4 red cherry tomatoes 1 small red capsicum (bell pepper), cut into thin strips 4 puff pastry squares (4 x 4 inches each) 4 tsps ready-made pesto 6-8 asparagus, blanched 40 grams mozzarella cheese 6-8 black olives, pitted and halved Salt to taste Crushed black peppercorns to taste Extra virgin olive oil for drizzling Method 1. Preheat the oven at 180ºC. 2. Halve the yellow cherry tomatoes and red cherry tomatoes. 3. Arrange the puff pastry squares on a baking tray. 4. Leaving ½ inch from each side of the puff pastry square, lightly press with your fingers to make an outline of a square. Apply a portion of the pesto on each square. Arrange red capsicum strips, yellow cherry tomato halves and red cherry tomato halves. Place a few asparagus pieces over each tart, tear small pieces of the mozzarella cheese and add on top of the tarts. Arrange black olives, sprinkle some salt and crushed black peppercorns. 5. Fold ½ inch of the edge from each side of the puff pastry square to make a tart. 6. Place the tarts in the preheated oven and bake for 20-25 minutes. 7. Remove the tarts from the oven and drizzle extra virgin olive oil. 8. Prepare this fabulous and decadent brownie with roasted almonds and caramel. It's so good that you will definitely keep coming back for more. ROASTED ALMONDS AND CARAMEL BROWNIE Ingredients 8-10 roasted almonds, vertically halved + for arranging 15-20 caramel candies 1 cup chopped dark chocolate 1 cup butter ¾ cup castor sugar 2 eggs 1 tsp vanilla essence 1 cup refined flour (maida) ½ tsp baking powder ¼ cup cocoa powder 150 grams milk chocolate Method 1. Preheat the oven at 180ºC. 2. Melt chocolate and butter in a bowl over a double boiler till the chocolate melts completely. Set aside to cool slightly. 3. Take castor sugar in a large bowl, break in the eggs and whisk with the help of an electric beater till the mixture reaches ribbon consistency. 4. Add the melted chocolate-butter mixture and mix till well combined. Sift refined flour, baking powder and cocoa powder directly into the bowl and gently fold till a lump free batter is formed. 5. Roughly chop 8-10 caramel candy and add into the batter. Add roasted almonds and mix. 6. Roughly chop milk chocolate and halve remaining caramel candies. 7. Transfer the batter into a greased and lined 6” x 6” x 3” square cake tin. Tap a few times. Arrange the halved caramel candies, chopped milk chocolate and roasted almonds. 8. Bake in the preheated oven for 35-40 minutes. Take it out of the oven and allow to cool to room temperature. 9. Cut the brownie in squares and serve. मलाई बोटी पुलाव | Malai Boti Pulao | Sanjeev Kapoor Khazana

A finger-licking good pulao with flavourful chicken, amazing medley of spices and some other condiments. The perfect way to comfort yourself during your lunch or dinner time. MALAI BOTI PULAO Ingredients 750 grams chicken thigh boneless, cut into 2 inch pieces ½ cup thick yogurt 1½ tbsps ginger-garlic paste 1 tsp green chilli paste Salt to taste ½ tsp green cardamom powder 1 tsp garam masala powder 2-3 tbsps fresh cream 2 tsps butter 1 tsp oil Pulao 1½ cups Basmati rice, soaked for 20 mins and drained 2 tbsps ghee 1 tsp caraway seeds (shah jeera) 1 bay leaf 1 inch cinnamon stick 8-10 black peppercorns 4-5 cloves 4-5 green cardamoms 1 star anise 2 medium onions, thinly sliced 1 tbsp ginger-garlic paste 2 tbsps thick yogurt 2 tsps coriander powder A pinch of garam masala powder Salt to taste 3 cups chicken stock 2 tbsps fresh cream 1-2 tbsps browned onion + for sprinkling 6-8 fresh mint leaves + for garnish Fresh mint sprigs for garnish Method 1. Take chicken in a large bowl, add yogurt, ginger-garlic paste, green chilli paste, salt, green cardamom powder, garam masala powder and fresh cream and mix well. Set aside to marinate for 1 hour. 2. Heat butter and oil in a non-stick pan. Place the chicken pieces and cook on high heat for 4-5 minutes. Flip each piece and cook the other side for 4-5 minutes as well. 3. To make the pulao, heat ghee in a deep pan. Add caraway seeds, bay leaf, cinnamon stick, black peppercorns, cloves, green cardamoms, and star anise and sauté till fragrant. 4. Add onions and sauté till translucent. Add ginger-garlic paste and mix well. Cook for 1 minute. 5. Add thick yogurt and mix well. Cook for 2-3 minutes. Add coriander powder and garam masala powder and mix. 6. Add rice and mix till well combined. Add salt and chicken stock and mix. Cook till it comes to a boil. Cover and cook on medium heat for 6-8 minutes or till the rice is ¾ cooked. 7. Arrange the cooked chicken pieces on top of the rice mixture. Drizzle some fresh cream, add browned onion and sprinkle some mint leaves. Cover and continue to cook on medium heat for 6-8 minutes. 8. Transfer the pulao on a serving plate. Garnish with mint sprigs and mint leaves. Sprinkle browned onions and serve hot. Steaming hot chicken momos served in a bed of flavour-packed Manchurian gravy is a winter-treat everybody is going to love. Try this super easy and yum recipe and serve it to your family! CHICKEN MANCHURIAN MOMOS Ingredients 200 grams chicken mince (keema) Ready-made momo dough made using 1 cup refined flour (maida) 1 small carrot, grated 100 grams finely shredded cabbage 2 spring onions, chopped with the greens 1 inch ginger, finely chopped 1-2 green chillies, finely chopped 1 tsp soy sauce Crushed black peppercorns to taste Salt to taste Oil for greasing Manchurian sauce 2 tbsps oil 1 tbsp finely chopped garlic ½ tbsp finely chopped ginger 1 spring onion bulb 1½ tbsps red chilli sauce 1 tsp soy sauce 2 tsps schezwan sauce Salt to taste Crushed black peppercorns to taste 1 cup chicken stock 2 tbsps corn flour slurry Diagonally sliced spring onion greens for garnish Method 1. Take chicken mince in a bowl. Add carrot, cabbage, spring onions, ginger, green chillies, soy sauce, crushed black peppercorns and salt and mix well. 2. Divide the dough into 16 equal portions and shape each portion into a ball. 3. To make a momo, slightly flatten each dough ball and roll it into a small thin disc. 4. Stuff each disc with a portion of the chicken mixture, apply some water on the edge. Pleat and press the edges. Bring it to the centre and pinch to seal. This is a momo. 5. Heat sufficient water in a steamer. Grease the steamer basket with some oil and arrange the momos on them. Cover and steam for 15-20 minutes. 6. To make the Manchurian sauce, heat oil in a non-stick wok. Add garlic, ginger and spring onion bulb and sauté for 1 minute on high heat. 7. Add red chilli sauce, soy sauce ad schezwan sauce and mix well. Add salt and crushed black peppercorns and mix well. 8. Add chicken stock and mix. Let the mixture come to a boil. 9. Add corn flour slurry, mix and cook till the mixture thickens. 10. Transfer the prepared sauce in a shallow serving bowl. Arrange the momos over it and garnish with spring onion greens. PHYLLO APPLE PIE Ingredients 12 phyllo sheets 2 medium apples ½ lemon ¼ cup roasted and crushed walnuts ¼ cup raisins 6 tbsps castor sugar ¼ tsp cinnamon powder Butter for greasing + as required 2 eggs 2 tbsps corn flour ¾ cup milk Toffee sauce to drizzle Vanilla ice cream to serve Method 1. Core the apples, peel and chop them. Transfer in a bowl. Squeeze lemon, add walnuts, raisins, 3 tbsps castor sugar, cinnamon powder and mix well. 2. Line a baking tray with parchment paper grease with butter. 3. Preheat the oven at 180ºC. 4. Place 2 phyllo sheets on worktop and apply butter evenly. Top up with 2 more phyllo sheets and apply some more butter on top. 5. Spread a portion of apple stuffing, gather the edges so as to create pleats. 6. Place the tray in preheated oven and bake for 15 minutes. 7. For the custard, break eggs in a bowl. Add remaining castor sugar, corn flour and mix well. Add milk and mix. 8. Strain the custard directly on the baked pies and bake for another 20 minutes. 9. Cut into pieces, drizzle toffee sauce and serve with vanilla ice cream. फ़्लॅक्स सीड्स पोड़ी | Flax Seeds Podi | Sanjeev Kapoor Khazana

FLAX SEEDS PODI Ingredients ¼ cup flax seeds (alsi) ¼ cup split skinless black gram (dhuli urad dal) ¼ cup Bengal gram (chana dal) 1 tbsp white sesame seeds (safed til) 1 tsp cumin seeds ¼ tsp fenugreek seeds (methi dana) 2 tsps oil 6-8 dried red chillies (kashmiri and pandi) 8-10 garlic cloves 6-8 curry leaves Sea salt to taste A small piece of rock asafoetida (hing) Idli to serve Sesame oil to drizzle Method 1. Dry roast flax seeds till they start to pop in a non-stick pan. Transfer on a plate and allow to cool. 2. Dry roast the split skinless black gram and Bengal gram individually till they turn golden brown in the same non-stick pan. Transfer on to the same plate and allow to cool. 3. Similarly, dry roast white sesame till they pop in the same pan. Transfer on the same plate and allow to cool. 4. Dry roast cumin seeds and fenugreek seeds for 1 minute in the same non-stick pan. Transfer on the same plate and allow to cool. 5. Heat oil in the same non-stick pan. Add dried red chillies and sauté for a minute. Add garlic cloves and curry leaves and continue to sauté for 1-2 minutes. Transfer on the same plate and allow to cool. 6. Transfer the roasted spices in a mixer jar. Add sea salt and rock asafoetida and grind to a coarse powder. This is podi. 7. Transfer the podi into an air tight container. Allow it to cool to room temperature before covering it with a lid. 8. Serve with idli and sesame oil.
