EGGLESS BROOKIES Ingredients Brownie ½ cup butter 1 cup chopped dark chocolate ¼ cup yogurt ¾ castor sugar 1¼ cups refined flour 1 tsp baking powder A large pinch of salt 2 tbsps coffee decoction (2 tsps coffee powder mixed with 2 tbsps warm water) ¼ cup milk 1 tsp vanilla essence Cookies ½ cup castor sugar ½ cup butter 1¼ cups refined flour ¼ tsp baking soda ¼ tsp baking powder Small pinch of salt ¼ cup milk ⅓ cup chocolate chips + for sprinkling 1 tsp vanilla essence Method 1. Preheat the oven at 180ºC. 2. To make the brownie mixture, mix together butter and dark chocolate in bowl, microwave till the mixture melts while stirring in between every 30 seconds. 3. Take yogurt in a large bowl, add castor sugar and mix well. 4. Add the chocolate-butter mixture and mix well till combined. Sift refined flour, baking powder and salt directly into the mixture. Add coffee decoction, milk and vanilla essence. Gently fold till well combined. 5. For the cookie dough, take butter in another large bowl. Add castor sugar and beat with the help of an electric beater till the mixture becomes light and fluffy. 6. Sift refined flour, baking soda, baking powder and salt directly into the bowl. add milk, chocolate chips and vanilla essence and mix till well combined. 7. Transfer the brownie mixture in a greased and lined square baking tin and spread evenly. 8. Take small portions of the cookie dough and randomly place them over the brownie mixture and sprinkle some chocolate chips. Place this in the preheated oven and bake for 30-35 minutes. 9. Remove the baking tin out of the oven, allow to cool completely, demold and cut into squares. Arrange on serving plate and serve. Almond Cookies | आमंड कूकीज | How to make cookies | Sanjeev Kapoor Khazana
These dense cookies have a hint of coconut and the goodness of choco-chips. A wonderful mix of flavours. ALMOND COOKIES Ingredients 3 cups almond flour ½ tsp salt 1 tsp vanilla essence 6 tbsps coconut oil 6 tbsps maple syrup ½ cup chocolate chips Method 1. Preheat the oven to 180ºC. 2. Take almond flour in a bowl. Add salt, vanilla essence, coconut oil, maple syrup and chocolate chips and mix till well combined. 3. Scoop out small portions of the mixture and place them at equidistance on a greased baking tray. Place the baking tray in the preheated oven and bake for 12-15 minutes. 4. Bring the tray out of the oven and allow the cookies to cool completely. 5. Arrange them on a serving plate and serve. Cheesy Veg Sandwich Rolls | चीज़ी वेज सॅन्डविच रोल्स | Sanjeev Kapoor Khazana
Fun times roll in with these Cheesy Veg Sandwich Rolls. A lovely flavourful spread on bread slices served even more attractively with lettuce, cherry tomato and black olive halves. CHEESY VEG SANDWICH ROLLS Ingredients 5-6 white bread slices ¾ cup cream cheese 2 tbsps mayonnaise 2 tbsps finely chopped onion 2 tbsps finely chopped carrot 2 tbsps finely chopped green capsicum 2 tbsps finely chopped red capsicum 2 tbsps finely chopped yellow squash Salt to taste Black pepper powder to taste Butter for applying Few pieces of lettuce leaves to serve Cherry tomato halves to serve 4-5 black olives, vertically halved Method 1. Combine cream cheese and mayonnaise in a bowl. Add onion, carrot, green capsicum, red capsicum, yellow squash, salt, black pepper powder and mix well till combined. 2. Trim the edges of the bread slices. Roll the bread slices with the help of rolling pin, Apply the butter on one side of the bread slices. Spread the mixture evenly over the buttered side. Place a cheese slice and tightly roll from one side to the other. Cover with a cling wrap and place it in the refrigerator for 1-2 hours. 3. Discard the cling wrap and cut the sandwich rolls in thick discs. Secure it with a toothpick attached with lettuce, cherry tomato halves and black olive halves. 4. Arrange the sandwich rolls on a serving plate and serve. Stir-fry cooking is considered healthy. The people of the East use this technique and this French beans preparation is simple and flavourful. GARLIC BEANS Ingredients 200 grams French beans, destringed Salt to taste 2 tbsps sesame oil 1 inch ginger, finely chopped 1½ tbsps finely chopped garlic 2-3 spring onion bulbs, diagonally sliced 1 tsp light soy sauce ½ tsp vinegar 2 tbsps crushed roasted peanuts 2 tsps toasted white sesame seeds Method 1. Heat sufficient water in a deep pan. Add salt and mix well. Bring it to a boil. 2. Add the French beans and cook for 5-6 minutes. Drain into ice cold water. 3. Heat sesame oil in a pan. Potato Pizza | पोटेटो पिज़्ज़ा | No Oven No Flour | Homemade Pizza | Sanjeev Kapoor Khazana
Call yourself a MasterChef with this masterpiece. A unique pizza with potatoes as the base and mushrooms and sweet corn with red capsicum slices. Rest of the story stays same. POTATO PIZZA Ingredients 8-10 medium potatoes, peeled 4 tbsps dried breadcrumbs 4 tbsps corn flour Crushed black peppercorns to taste Salt to taste 4 tbsps grated processed cheese 1 tsp sugar ½ tsp dried mixed herbs + to sprinkle ½ tsp red chilli flakes + to sprinkle Oil for greasing Pizza sauce as required Chopped mozzarella cheese as required Onion strips as required Sliced mushrooms as required Boiled sweet corn kernels as required Red capsicum slices as required Fresh basil leaves Crumbled feta cheese to sprinkle Method 1. Grate the potatoes thickly. Transfer in a muslin cloth and squeeze to remove excess moisture. 2. Transfer in another bowl. Add breadcrumbs, corn flour, crushed peppercorns, salt, processed cheese, sugar, dried mixed herbs, red chilli flakes and mix well. 3. Grease a shallow nonstick pan with sufficient oil and spread the potato mixture evenly. 4. Place the pan on heat, cover and cook on low heat for 6-8 minutes. 5. Flip, spread pizza sauce evenly. Sprinkle mozzarella cheese. 6. Sprinkle onions, mushrooms, corn kernels and red capsicum strips on top. 7. Sprinkle crushed peppercorns, dried herbs, red chilli flakes and salt on top. 8. Cover and cook on low heat for 4-5 minutes or till cheese melts and the base is crisp. 9. Place a few basil leaves on top and sprinkle feta cheese on top. 10. Cut into wedges and serve hot. Avocado Toast | अवोकाडो टोस्ट | Healthy Breakfast | Sanjeev Kapoor Khazana
If breakfasts be like this, definitely no one will skip. This lovely hued toast is a great start to your mornings. AVOCADO TOAST Ingredients 2 medium Avocados 4 eggs 4 sour dough bread slices Butter for applying ½ lemon Salt to taste Crushed black peppercorns to taste Assorted cherry tomato halves as required 1 tsp lemon juice Red chilli flakes for sprinkling Salad to serve Method 1. Apply some butter on one side of the bread slices. 2. Heat a non-stick pan. Place the bread slices with the butter side facing down. Apply some butter on top of the bread slices. 3. Vertically halve the avocado, discard the seed and scoop out the flesh into a large bowl. Squeeze the juice of lemon directly into it and mash with the help of a fork. Add salt and crushed black peppercorns and mix well. 4. Apply a portion of the avocado mixture on to each toasted bread slice. Arrange some assorted cherry tomato halves . 5. To make one poached egg, break in an egg in a small bowl. 6. Heat sufficient water in a deep pan. Bring it to a simmer and stir the water. 7. Add ¼ tsp lemon juice in the eggs and gently slide it in the simmering water. Cook on low heat for 2-3 minutes. 8. Gently collect the poached egg and drain on an absorbent paper and place it over one of the prepared avocado toasts. Sprinkle salt, crushed black peppercorns and red chilli flakes. Serve with salad. Green Chutney Pomfret | ग्रीन चटनी पॉम्फ्रेट | Pomfret Recipes | Sanjeev Kapoor Khazana
A delicately crisp shallow-fried pomfret in green chutney that gives a wonderful minty and hot flavour. Great for special occasions. GREEN CHUTNEY POMFRET Ingredients 4 medium pomfrets Salt to taste ¾ tsp turmeric powder 4 tsps lemon juice ½ cup rice flour ½ cup semolina 3-4 tbsps oil Onion-tomato salad to serve Lemon wedges to serve Green chutney 1 medium bunch of fresh coriander leaves ½ medium bunch of fresh mint leaves 2 inch ginger, halved 8-10 garlic cloves 5-6 green chillies Salt to taste 2 tbsps lemon juice Method 1. Make a few slits on both sides of the pomfrets. Sprinkle salt, turmeric powder, and drizzle lemon juice and rub the mixture well on the fish. Set aside to marinate for 5-10 minutes. 2. To make the chutney, put the coriander leaves in a grinder jar. Add mint, ginger, garlic, green chillies, salt, lemon juice, and ¼ cup water and grind to a fine paste. Add this into the fish and apply it well on sides. Set aside for 10-15 minutes. 3. Take rice flour and semolina in a large plate. Add salt and mix well. 4. Coat the marinated fish on both sides with rice flour-semolina mixture. 5. Heat oil in a non-stick shallow pan. Place the fish on it and shallow fry on both sides till golden brown and crisp. Drain on an absorbent paper. 6. Serve hot with onion-tomato salad and lemon wedges. Gluten Free Pancakes | Breakfast Series 2.0 | Chef Afraz | Sanjeev Kapoor Khazana
The way Americans like their breakfast is pancakes with the use of cinnamon, berries and maple syrup. These amaranth flour pancakes are simply delicious. GLUTEN FREE PANCAKES Ingredients 1 cup amaranth flour (rajgire ka atta) ¼ cup castor sugar 2 eggs ½ tsp vanilla essence A pinch cinnamon powder ½ tsp baking powder 2 tbsps melted butter + greasing ½ cup butter milk Fresh blueberries for serving Fresh strawberries or serving Maple syrup for serving Fresh mint leaves for garnish Method 1. Take a large bowl, add castor sugar, break 2 eggs, vanilla essences and whisk till well combined. 2. Add amaranth flour, baking powder, cinnamon powder and mix well. Add melted butter, butter milk, and whisk well. 3. Heat a non-stick, grease with little melted butter and wipe little with the help of tissue paper. Pour one full ladle spoon of the batter and cook on a medium heat till the underside is golden brown. 4. Flip the pancake and cook for the other side till cooked completely. 5. Place the pancake on a serving plate, add blueberry, strawberry and drizzle some maple syrup on top and garnish with fresh mint leaves. 6. Serve. Bhajiya Curry | भजिया करी | Pakoda Curry | Sanjeev Kapoor Khazana
The multi-vegetable bhajiyas when simmered in a flavourful curry is a delicious main course. BHAJIYA CURRY Ingredients Bhajiya ½ cup shredded cabbage 1 medium onion, thinly sliced 1 medium carrot, peeled and grated 1 medium potato, grated ½ cup grated bottle gourd (lauki) Salt to taste ½ tsp red chilli powder ¼ tsp turmeric powder ½ tsp carom seeds (ajwain) 1 cup gram flour (besan) 3 tbsps rice flour A pinch of baking soda Oil for deep frying Curry 2-3 tbsps oil 1 tsp cumin seeds 2 medium onions, finely chopped 1½ tbsps ginger-garlic paste 2 medium tomatoes, finely chopped Salt to taste 1 tsp red chilli powder 1 tsp coriander powder ½ tsp cumin powder ½ tsp turmeric powder ½ tsp garam masala powder 1 tsp dried fenugreek leaves (kasuri methi) 1 tsp sugar 2 tbsps cashew nut paste 1 tbsp chopped fresh coriander leaves Fresh coriander sprig for garnish Method 1. Heat oil in a kadai. Add cumin seeds and let them change colour. Add onions, mix, and cook till golden brown. 2. Add ginger-garlic paste, mix, and cook for 1-2 minutes. 3. Add tomatoes, and salt and mix well. Cook till the tomatoes turn soft and pulpy. 4. Add red chilli powder, coriander powder, cumin powder, turmeric powder, garam masala powder, crush the dried fenugreek leaves and add into it. Mix well and cook for 1 minute. 5. Add sugar, and cashew nut paste and mix well. Add 3 cups water, mix, cover and cook for 8-10 minutes, stirring in between. 6. Meanwhile, to make bhajiyas, take cabbage in a large bowl. Add onion, carrot, potato, bottle gourd, salt, red chilli powder, turmeric powder, carom seeds, gram flour, rice flour, and baking soda. And mix till well combined. 7. Heat sufficient oil in a kadai. Gently slide in small portions of the mixture into the hot oil, deep fry till golden brown and crisp. Drain on an absorbent paper. 8. Add most of bhajiyas into the gravy and mix well. Add coriander leaves, mix and serve hot garnished with remaining bhajiyas and coriander sprig. Tortilla Baked Eggs | तॉर्तीया बेक्ड एग्स | Egg Recipes | Breakfast Recipe | Sanjeev Kapoor Khazana
A hint of Italian taste in these Tortilla Baked Eggs that’s colourful, nourishing and with loads of cheese. Exciting right? An amazing quick snack or a meal for a get-together with friends. TORTILLA BAKED EGGS Ingredients 6 eggs Butter for greasing 2 tortilla 4 tbsps pizza sauce 1 small green capsicum, cut into strips 1 small red capsicum, cut into strips 1 small yellow capsicum, cut into strips Salt to taste Crushed black peppercorns to taste ½ cup grated mozzarella cheese 4-5 black olive, pitted and sliced Fresh coriander leaves for garnish Method 1. Preheat the oven at 180ºC 2. To make 2 portions, grease a 4 inch shallow round cake tin with some butter. Arrange a tortilla. Apply 2 tbsps pizza sauce and spread it evenly. Add a few green capsicums, red capsicums, yellow capsicums, break in 3 eggs at a distance and sprinkle salt and crushed black peppercorns. Sprinkle ¼ cup mozzarella cheese and arrange black olive slices. Place it in the preheated oven and bake for 10-12 minutes. 3. Similarly, make another one using the remaining ingredients. 4. Bring the cake tin out of the oven and gently place the tortilla baked eggs in a serving plate. Garnish with coriander leaves and serve hot. Ever heard of chickpeas as a spread and that has a drizzle of extra virgin olive oil? With avocado, mayo and seasoning of course. A delightful fusion sandwich. GUACAMOLE CHICKPEA SANDWICH Ingredients ½ avocado 1 cup boiled chickpeas 8 toasted sourdough bread slices 2-3 tbsps mayonnaise Salt to taste Black pepper powder to taste 2 green chillies, chopped ½ tsp red chilli flakes 2 tbsps chopped fresh parsley 1 small onion, chopped 1 small tomato, chopped 1 tbsp lemon juice 2-3 tbsps extra virgin olive oil + to drizzle ¼ cup grated carrot English cucumber slices as required Quartered cherry tomatoes as required Micro greens as required Method 1. Transfer the chickpeas in a food processor jar. Deseed avocado, remove pulp and add to the food processor jar. Add mayonnaise and process to a coarse paste. 2. Transfer in a bowl. Add salt, black pepper powder, green chillies, red chilli flakes, parsley, onion, tomato, lemon juice, extra virgin olive oil, carrot and mix well. 3. Spread the prepared chickpea mixture evenly on the toasted bread slices. 4. Arrange cucumber slices, cherry tomatoes and micro greens on top. 5. Drizzle extra virgin olive oil on top and serve. TARBUJ KE CHILKE KI SABZI Ingredients 1 medium watermelon 2-3 tbsps oil 1 tsp cumin seeds 2 tbsps chopped garlic 1 tbsp chopped ginger 2 green chilies, finely chopped 2 medium onions, finely chopped ½ tsp turmeric powder 1 tsp red chilli powder ½ tsp coriander powder ½ tsp cumin powder Salt to taste 1 tbsp lemon juice 1 tsp sugar 2-3 tbsps chopped fresh coriander leaves Method 1. Thickly peel the watermelon, remove the outer skin. And cut the white part into 1 inch pieces, wash them well. 2. Heat oil in a nonstick pan; add cumin seeds, garlic, ginger, chilies and sauté till garlic turns golden brown. Add onions and cook till translucent. 3. Add turmeric powder, red chilli powder, coriander powder, cumin powder, salt and sauté for a minute. 4. Add watermelon rind and mix well. Add ¼ cup water, cover and cook on medium heat for 10-15 minutes stirring in between. 5. Add lemon juice, sugar, coriander and mix well. Cook for a minute. 6. CHICKEN DAK BUNGALOW Ingredients 750 grams chicken, cut into 2 inch pieces on the bone ¾ cup yogurt 1½ tbsps ginger-garlic paste Salt to taste ½ tsp turmeric powder 1 tsp cumin powder 1½ tsps coriander powder 2 tsps red chilli powder 2 tbsps mustard oil Masala 5-6 dried Kashmiri red chillies, stemmed 2 tbsps coriander seeds 1½ tsps cumin seeds 10-15 black peppercorns ½ blade of mace 3-4 green cardamoms 3-4 cloves ½ inch cinnamon stick Gravy 3 tbsps mustard oil Salt to taste A pinch of turmeric powder 3 medium potatoes, boiled, peeled and halved 4 hard-boiled eggs 4 flat dried red chillies 2 bay leaves ½ inch cinnamon stick 3-4 cloves 4-5 black peppercorns 2 medium onions, thinly sliced 1 tbsp ginger-garlic paste 2 medium tomatoes, finely chopped 2 green chillies Fresh coriander sprig for garnish Steamed rice to serve Method 1. Take chicken in a large bowl. Add yogurt, ginger-garlic paste, salt, turmeric powder, cumin powder, coriander powder, red chilli powder, and mustard oil and mix till well combined. Set aside to marinate for 30 minutes. 2. To make the masala powder, dry roast Kashmiri red chillies, coriander seeds, cumin seeds, black peppercorns, mace, green cardamoms, cloves, and cinnamon stick till fragrant in a pan. Take the pan off the heat and allow to cool slightly. 3. Transfer the roasted spices in a blender jar and blend to fine powder. 4. To make the gravy, heat 1 tbsp mustard oil in a non-stick pan. Add salt, and a pinch of turmeric powder and mix well. Add the potatoes and sauté on high heat for 3-4 minutes. Transfer into a plate. 5. Add the eggs into the same pan and sauté on high heat for 3-4 minutes. 6. Heat remaining mustard oil in the same pan. Add dried red chillies, bay leaves, cinnamon stick, cloves, black peppercorns and onions and mix well. Cook on low heat till golden brown. 7. Add ginger-garlic paste and mix well. Cook for 1-2 minutes. Stir in the tomatoes and salt and mix well. Cover and cook for 5-6 minutes or till soft and pulpy. 8. Add the marinated chicken and 2 tbsps of the ground masala powder and sauté on high heat for 3-4 minutes. 9. Add green chillies and the potatoes and mix well. Continue to sauté for 2-3 minutes. 10. Pour 2 cups water, mix, cover and cook on medium heat for 10-12 minutes. 11. Add the eggs, mix, cover and continue to cook for 3-5 minutes. 12. Transfer in a serving bowl, garnish with coriander sprig and serve hot with steamed rice. Bagel Sandwich | बेगल सॅन्डविच | Sandwich Recipes | Sanjeev Kapoor Khazana
The Bagel Sandwich has a bit of smoky, raw and spicy-tangy flavours. You will love this symphony of various flavours. BAGEL SANDWICH Ingredients 4 bagels Smoked salmon slices as required 1 cup cream cheese Salt to taste Crushed black peppercorns to taste 10-12 fresh dill sprigs + for sprinkling Butter for applying 1 medium English cucumber 1 avocado, vertically halved and deseeded Pickled capers as required Alfa alfa sprouts as required Pickled onion as required Method 1. Take cream cheese in a bowl. Add salt, crushed black peppercorns, and tear the dill sprigs and add into the bowl and mix till well combined. 2. Horizontally slice the bagels in half. 3. Apply some butter on the inside of the bagel halves. 4. Vertically slice the English cucumber into thin strips. 5. Scoop out the avocado halves and thickly slice it. 6. Heat a non-stick grill pan. Place the bagel halves with the butter side facing down. Grill on high heat for 1-2 minutes. 7. To make the sandwich, place the bottom portion of a worktop, apply some of the cream cheese mixture on it and spread it evenly. Arrange avocado slices, place some smoked salmon slices, add a few pickled capers, place some alfa alfa sprouts, arrange a few cucumber slices and add some pickled onion slices. 8. Apply some cream cheese mixture on one side of the remaining bagel half and sprinkle some dill leaves, place this over the sandwich with the cream cheese side facing down. 9. Serve. Muhammara Dip | महम्मारा डीप | Roasted Red Pepper and Walnut Dip | Sanjeev Kapoor Khazana
A spicy, nutty and a vibrant-looking Middle Eastern dip. Needless to say, serve with pita bread or lavash and some salad. Sounds amazing right? MUHAMMARA DIP Ingredients 3 medium red capsicums 3 tbsps olive oil + for brushing + for drizzling 1 tbsp finely chopped garlic 1 tsp cumin seeds 1 medium onion, finely chopped ½ tsp red chilli powder ½ cup fresh breadcrumbs 2 tbsps walnuts, toasted and chopped 2-3 tsps lemon juice Salt to taste Grilled pita breads to serve Salad to serve Toasted walnuts for garnish Fresh coriander sprig for garnish Method 1. Preheat the oven at 200°C. 2. Brush some olive oil on the red capsicums and place on a baking tray. Keep this in the preheated oven and roast for 30-35 minutes. 3. Bring the baking tray out of the oven. Allow to cool slightly. 4. Peel the roasted red capsicums, discard the seeds and roughly chop them. Allow to cool completely. 5. Heat olive oil in a non-stick pan. Add garlic and cumin seeds and mix well. Cook for 1-2 minutes. 6. Add onion, mix and cook till translucent. Add red chilli powder and sauté for 1 minute. Switch the heat off and allow the mixture to cool slightly. 7. Put the chopped roasted red capsicums and the sautéed onions in a blender jar. Add fresh breadcrumbs, walnuts, lemon juice and salt and blend to a semi-fine paste. 8. Transfer the mixture into a serving bowl. Drizzle a little olive oil and garnish with toasted walnuts and coriander sprig. Serve with grilled pita breads and salad. No no, this sabzi does not have any meat. This is finely minced cauliflower sabzi with spices that has a slight gravy-like consistency. To be had with pav. GOBHI KEEMA MATAR Ingredients 1 medium cauliflower (gobhi), separated into florets ¾ cup green peas (matar) 4 tbsps oil 1½ tsps cumin seeds 3-4 green cardamoms 4-5 black peppercorns 2-3 cloves 1 inch cinnamon stick 2 medium onions, chopped 1½ tbsps ginger-garlic paste 2 medium tomatoes, chopped 2 tsps red chilli powder ½ tsp turmeric powder 2½ tsps coriander powder 1 cup fresh tomato puree Salt to taste 2-3 green chillies, slit 1 tsp garam masala powder ½ lemon Lemon wedges for garnish and to serve Chopped fresh coriander leaves for garnish Pavs to serve Onion rings to serve Method 1. Put the cauliflower florets in a food processor and process to a coarse mixture. 2. Heat oil in a pan. Add cumin seeds and let them change colour. Add green cardamoms, black peppercorns, cloves, and cinnamon stick and cook till fragrant. 3. Add onions, mix and cook till light golden. Add ginger-garlic paste and mix well. Cook for 1-2 minutes. 4. Add tomatoes, mix and cook till soft and pulpy. Add red chilli powder, turmeric powder, coriander powder, and mix well. Cook for 1-2 minutes. 5. Add tomato puree, mix and cook till oil separates. Add salt and ½ cup water and mix well. Cook for 1-2 minutes. 6. Add the cauliflower mixture, and mix well. Cook for 3-4 minutes. 7. Add green peas and mix. Add 1 cup water and mix well. Cook on medium heat for 5-6 minutes while stirring in between. Add green chillies, mix, cover and continue to cook for 5-6 minutes. 8. Add garam masala powder and squeeze the juice of lemon and mix well. Cook for 1-2 minutes. 9. Switch the heat off and transfer into a serving bowl. Garnish with lemon wedge, coriander leaves and serve hot with pavs, lemon wedges and onion rings. Dum Ka Jhinga | दम का झींगा | Prawns Curry | Sanjeev Kapoor Khazana
With prawns marinated twice, grilled and then simmered in a flavourful (coconut) and rich gravy, (read cashew paste and saffron) this prawn preparation is supremely delicious. DUM KA JHINGA Ingredients 20-25 medium prawns, peeled, cleaned and deveined Melted butter for brushing First marination Salt to taste ½ tsp turmeric powder ½ lemon Second marination ¾ cup hung yogurt 1½ tbsps ginger-garlic paste 1 tsp green chilli paste ½ cup grated processed cheese 1 tsp lemon juice Salt to taste White pepper powder to taste ½ tsp garam masala powder ¼ tsp turmeric powder ¼ cup mayonnaise Gravy 2 tbsps oil 3-4 green cardamoms 1 bay leaf 1 black cardamom 4-5 cloves + for sprinkling 4-5 black peppercorns 1 cup onion paste 1 tbsp ginger-garlic paste 1 tsp green chilli paste A large pinch of saffron + for garnish Salt to taste ¼ tsp turmeric powder ½ tsp garam masala powder ½ tsp yellow chilli powder 1 tbsp cashew nut paste 1 cup coconut milk Fresh coriander sprigs for garnish Method 1. Take prawns in a large bowl. Add salt, turmeric powder and squeeze the juice of lemon into it and mix well. Set aside to marinate for 5-10 minutes. 2. Take hung yogurt in another large bowl. Add ginger-garlic paste, green chilli paste, processed cheese, lemon juice, salt, white pepper powder, garam masala powder, turmeric powder and mayonnaise and whisk well. Add the marinated prawns into it and mix well. Set aside for 1 hour. 3. To make the gravy, heat oil in a pan. Add green cardamoms, bay leaf, black cardamom, cloves and black peppercorns and cook till fragrant. 4. Add onion paste, mix and cook till light golden. 5. Add ginger-garlic paste, and green chilli paste and mix well. Cook for 1-2 minutes. 6. Add saffron, salt, turmeric powder, and garam masala powder and mix well. Add yellow chilli powder and mix well. 7. Add ½ cup water, mix and cook for 2-3 minutes. Take the pan off the heat. 8. Thread the prawns on to skewers. 9. Brush some melted butter in a non-stick electric grill pan. Place the prawns skewers on them and cook on high heat for 2-3 minutes. Flip and cook the other side for 2-3 minutes as well. Brush some melted butter. 10. Place the gravy back on heat. Add cashew nut paste and mix well. Add coconut milk and mix well. 11. Add the prawns and mix well. Add ½ cup water, and mix. 12. Take some hot charcoal pieces in a stainless steel bowl and place it in the middle of the gravy, sprinkle cloves and drizzle melted butter. Cover and let the smoke infuse for 1-2 minutes. Remove the bowl and switch the heat off. 13. Transfer into a serving bowl, garnish with coriander sprigs and saffron strands. Sausage Rolls | सॉसेज रोल्स | Snack Recipes | Sanjeev Kapoor Khazana
This fusion version of sausages seared in mixed herbs and wrapped in a dough is a wonderful way of snacking. SAUSAGE ROLLS Ingredients 6 chicken sausages 1 cup warm milk 1 tsp activated dried yeast 2 tbsps sugar Salt to taste 2 cups refined flour + for dusting 1 tbsp oil + for brushing 1 tsp onion powder 1 tsp garlic powder 1 tsp dried mixed herbs Butter for brushing Method 1. Pour milk in a bowl. Add dried yeast, sugar, salt and mix well 2. Add refined flour and knead to soft dough. Brush with oil, cover with a moist muslin cloth and set aside for 15-20 minutes. 3. Give slits on both the sides of chicken sausages without cutting through. 4. Heat oil in a nonstick pan. Add onion powder, garlic powder, dried mixed herbs and sauté for a few seconds. Add the sausages and sear for 2-3 minutes on medium heat. Add salt and mix well. Set aside to cool down. 5. Divide the dough into equal portions. Dust some refined flour on the surface and roll it into oval shape. 6. Preheat the oven at 180°C. 7. Brush some butter and roll to form cylinders. 8. Roll around the sausages and transfer on a baking tray. Brush butter and set aside for 15-20 minutes. 9. Bake for 15-20 minutes. 10. Serve hot with tomato ketchup. The people of the Orient know okra too. This preparation is the stir-fry version of this tropical veggie. STIR FRY OKRA (BHINDI) Ingredients 300 grams lady fingers (bhindi) 2 tbsp sesame oil 2 tsp finely chopped garlic 1 inch finely chopped ginger 2 spring onion bulbs, finely chopped 1-2 fresh red chillies, diagonally sliced Salt to taste Crushed black peppercorns to taste ½ tsp soy sauce ½ tsp red chilli sauce 2 tbsps chopped spring onion greens ½ tsp vinegar Toasted white sesame seeds for garnish Method 1. Trim the top of the lady figures and vertically slice into half. 2. Heat sufficient water in a steamer, add the lady fingers in the steamer basket and steam cook for 6-8 minutes. 3. Heat sesame oil in a wok, add garlic, ginger, spring onion bulbs and sauté on high heat for 1-2 minutes. 4. Add in the steamed lady fingers, red chillies, and sauté on high heat for 3 minutes. Add salt and crushed black peppercorns and sauté for 1-2 minutes. Add soy sauce, red chilli sauce and mix well. 5. Add spring onion greens and mix. Add vinegar and mix till well combined. Switch the heat off and transfer on a serving plate. Garnish with toasted sesame seeds and serve hot. Because this Sri Lankan rice when made in earthen cookware, is a fabulous rice preparation with the subtle flavours of the curry leaves, pandan leaves and lemongrass. SRI LANKAN RICE Ingredients 1½ cups Basmati rice, soaked for 30 minutes and drained 2-3 tbsps ghee 3-4 green cardamoms 6-8 black peppercorns 2-3 cloves 2 medium onions, sliced 10-15 curry leaves 1 inch lemongrass stalk, roughly chopped 2 pandan leaves, roughly chopped ½ tsp turmeric powder Salt to taste 3 cups thin coconut milk Fried onions for garnish Method 1. Nagpuri Gola Bhaat | नागपूरी गोळा भात | Rice Recipes | Sanjeev Kapoor Khazana
A unique rice preparation. Savoury gram flour dumplings added to flavoured rice. NAGPURI GOLA BHAAT Ingredients 1½ cups coarse gram flour (jada besan) 1½ cups long grain rice, soaked for 30 minutes and drained 2 tbsps yogurt ½ tsp red chilli powder ¾ tsp turmeric powder ½ tsp coriander powder ½ tsp cumin powder Salt to taste 2 tbsps chopped fresh coriander leaves 1 tsp ginger-green chilli paste 3 tbsps oil ½ tsp mustard seeds 1 tsp cumin seeds 4-5 dried red chillies, stemmed 8-10 curry leaves 2 tbsps chopped fresh coriander leaves Method 1. Take coarse gram flour in a bowl. Add yogurt, red chilli powder, ¼ tsp turmeric powder, coriander powder, cumin powder, salt ,coriander leaves, ginger-green chilli paste and mix well. Add ¾ cup water and mix well. 2. Add 1 tbsp oil and mix well. Divide the mixture into equal portions. 3. Heat remaining oil in a pan. Add mustard seeds and once they start to splutter, add cumin seeds, dried red chillies, curry leaves and mix well. 4. Add remaining turmeric powder and mix well. Add rice and mix well. 5. Add 3 cups water, salt and mix well. Once the mixture comes to a boil, add the prepared pieces of the dough and mix well with light hands. 6. Cover and cook on medium heat for 10-15 minutes. Add coriander leaves and mix well. 7. Transfer into a serving plate and serve hot. Cutlets made from Banana Flower Blossoms are a popular Bengali snack. A great street food too. MOCHAR CHOP Ingredients 1 medium banana flower (kelphul/mochar), separated and cleaned Salt to taste ½ tsp turmeric powder 1 medium onion, roughly chopped 2-3 green chillies 1 inch ginger, roughly chopped 4-5 garlic cloves 3 tbsps mustard oil 1 tsp cumin seeds ¼ tsp turmeric powder ½ tsp coriander powder ½ tsp red chilli powder ¼ tsp cumin powder 4 medium potatoes, boiled, peeled and mashed ¼ cup fried peanuts 2 tbsps chopped fresh coconut, fried A pinch of sugar 2 tbsps chopped fresh coriander leaves 2 tsps bhaja masala 1 cup dried bread crumbs + for coating 2 tbsps corn flour 2 tbsps refined flour (maida) Oil for deep frying Kasundi mustard to serve Tomato ketchup to serve Onion rings to serve Method 1. Finely chop the banana flowers and transfer into a pressure cooker. Add 1½ cups water, salt and turmeric powder and mix well. Cover and cook under pressure for 2-3 whistles. 2. Open the cooker once the pressure has reduced completely. 3. Put the onion in a blender jar. Add green chillies, ginger, garlic, and ½ cup water and blend to a fine paste. 4. Heat mustard oil in a non-stick pan. Add cumin seeds and let them change colour. Add the blended paste and mix well. Cook for 3-4 minutes. 5. Add turmeric powder, coriander powder, red chilli powder and mix well. Cook for 1-2 minutes. Add cumin powder and mix well. Cook for 1-2 minutes. Take the pan off the heat and allow to cool slightly. 6. Take potatoes in a large bowl, add the cooled mixture, fried peanuts, fried coconut, sugar, salt, coriander leaves, bhaja masala, and mix well. Add dried bread crumbs and mix till well combined. 7. Take a portion of the mixture and shape it into an oval cutlet. This is a chop. 8. Take some breadcrumbs on a plate for coating. 9. To make the slurry, take corn flour and refined flour in a bowl. Add salt and ½ cup water and whisk till well combined. 10. Dip each chop into the slurry and coat with the bread crumbs. Place this in the refrigerator for 30 minutes. 11. Heat sufficient oil in a kadai. 12. Gently slide in the chops a few at a time and deep fry till golden brown and crisp. Drain on an absorbent paper. 13. Arrange the chops on a serving plate, serve hot with kasundi mustard, tomato ketchup and onion rings. Chana Dal Stuffed Karela | चना दाल स्टफ्ड करेला | Sanjeev Kapoor Khazana
A bit of childhood memories and loads of excitement. For those who love karela with an awesome stuffing, then this recipe is definitely a must try. CHANA DAL STUFFED KARELA Ingredients 4 medium bitter gourds (karela) 2 cups soaked Bengal gram (chana dal) ½ tsp turmeric powder Salt to taste ¼ tsp asafoetida (hing) 2 tbsps oil Stuffing 2 tbsps oil 1 tsp cumin seeds 1 tsp finely chopped garlic 1 tsp finely chopped ginger 2 green chillies, finely chopped 1 medium onion, finely chopped ½ tsp turmeric powder 1 tsp red chilli powder ½ tsp cumin powder 1 tsp coriander powder ½ tsp garam masala powder Salt to taste 1 tbsp chopped fresh coriander leaves 1 tsp sugar 1 tsp lemon juice Fresh coriander sprigs for garnish Method 1. Put the soaked Bengal gram in a cooker. Add 2 cups water, ¼ tsp turmeric powder, salt, asafoetida and mix well. Cover and cook under pressure for 1-2 whistles. 2. Meanwhile, peel the bitter gourds, trim the ends and make a vertical slit in the centre without cutting it through completely. Remove the seeds and discard them. 3. Wash the bitter gourds thoroughly. Gently squeeze the excess water, transfer them in a large bowl, add salt, and remaining turmeric powder and rub this mixture well on each bitter gourd. 4. To make the stuffing, heat oil in a non-stick pan. Add cumin seeds and let them change colour. Add garlic, ginger, green chilies and mix well. Cook for 1-2 minutes. 5. Add onions, mix and cook till translucent. 6. Add turmeric powder, red chilli powder, cumin powder, coriander powder, and garam masala powder and mix well. Cook for 1-2 minutes. 7. Add ¼ cup water, mix and cook for 1 minute. Stir in the salt and cook for 1 minute. 8. Open the cooker once the pressure has reduced completely, and mix the cooked gram mixture. Transfer the mixture into the stuffing mixture, add coriander leaves and sugar and mix well. Cook for 2-3 minutes. Lightly mash the mixture with the back of a spoon. 9. Switch the heat off and add lemon juice and mix well. Transfer on a plate and allow the mixture to cool. 10. Meanwhile, wash the prepared bitter gourds with sufficient water and drain. Generously stuff each bitter gourd with the prepared stuffing. Tie each stuffed bitter gourd with a thread. 11. Heat oil in a non-stick pan. Place the stuffed bitter gourds on it and cook on high heat till golden brown on all sides, reduce the heat to medium, sprinkle 2-3 tbsps water, cover and cook for 6-8 minutes. 12. Switch the heat off, transfer the stuffed karela on a plate and remove the threads and transfer the karela on serving plate. 13. Garnish with fresh coriander sprigs and serve hot. Two sharp flavours, from the mustard oil and garlic. This methi sabji is cooked in spices and a nutty paste. LASOONI METHI SABZI Ingredients 3-4 garlic cloves (lasoon) 4 tbsps chopped garlic (lasoon) 1 medium bunch of fenugreek leaves (methi) 2-3 tbsps roasted peanuts 2 tbsps gram flour 2 tbsps white sesame seeds 1 tsp poppy seeds, soaked in 2 tbsps water 4 tbsps mustard oil 1 tsp cumin seeds 2 medium onions, chopped 1 medium tomato, chopped ½ tsp turmeric powder 1 tsp coriander powder ½ tsp red chilli powder 1 tsp garam masala powder 2 green chillies, slit 2 tbsps chopped fresh coriander leaves Sliced fried garlic for garnish Paranthas for serving Method 1. Transfer roasted peanuts in a grinder jar. Add garlic, gram flour, white sesame seeds, poppy seeds along with water. Add ¼ cup water and grind to fine paste. 2. Heat 2 tbsps mustard oil in a pan. Once it smokes, add 1 tbsp garlic and sauté for 30 seconds. 3. Add fenugreek leaves and sauté for 2-3 minutes. Transfer in a plate and set aside. 4. Heat remaining mustard oil in the same pan. Once it smokes, add cumin seeds and once they start to change the colour, add remaining garlic and sauté for 30 seconds. 5. Add onions and sauté till golden brown. Add tomato and cook on medium heat or 4-5 minutes or till the tomatoes are soft and pulpy. 6. Add the prepared paste and cook for 2-3 minutes on medium heat. 7. Add ¾ cup water and mix well. Cook for 2-3 minutes. 8. Add turmeric powder, coriander powder, red chilli powder, garam masala powder and mix well. 9. Add cooked fenugreek leaves, salt and mix well. Add green chillies and mix well. 10. Add coriander and mix well. 11. Transfer into a serving bowl, garnish fried garlic with and serve hot with paranthas. Aval Shake | अवल शेक | Healthy Shake | Kerala Recipe | Sanjeev Kapoor Khazana
Brown flattened rice gets a sassy makeover, as a shake. It is nutty and filling with peanuts adding a light crunch. AVAL SHAKE Ingredients ½ cup pressed brown rice (poha) 4 ripe yellow bananas 3 tbsps sugar 8 tsps roasted and peeled peanuts + for garnish Ice cubes as required 2 cups milk Method 1. Dry roast the pressed brown rice till crisp in a non-stick pan. Transfer on a plate and allow to cool. Reserve some for garnish. 2. Peel the bananas, break them into pieces and add into a jar. Add sugar and muddle with a wooden muddler till well mashed. 3. Add 2-3 tbsps mixture into individual serving glasses. Add 2 tsps roasted peanuts into each glass along with a portion of roasted pressed brown rice. And mix well. 4. Add ice cubes and top with ½ cup milk in each glass, mix well and garnish with roasted peanuts and roasted pressed brown rice. A Bengali spice mix that is widely used in Bengali preparations right from panchmishali torkari to street-foods such as puchka, churmur, and ghugni. BHAJA MASALA Ingredients 4 tbsps cumin seeds 2 tsps coriander seeds 2 bay leaves 4 tbsps fennel seeds (saunf) 6-8 green cardamoms 3 dried red chillies Method 1. Dry roast cumin seeds, coriander seeds and bay leaves in a pan till they turn fragrant. Transfer in a plate and allow to cool. 2. Add fennel seeds, green cardamoms and dried red chillies in the same pan and roast till fragrant. Transfer in the same plate and allow to cool. 3. Put the roasted spices in a mixer jar and grind to a fine powder. 4. Transfer the masala into a jar. Use as required. Kunukku | कुनुक्कू | Lentil Fritters | South Indian Recipe | Sanjeev Kapoor Khazana
These deep-fried crispy, savoury, rice and lentil dumplings are a great snack or a side dish. KUNUKKU Ingredients ½ cup Bengal gram (chana dal), washed, soaked for 1 hour and drained ½ cup split skinless green gram (dhuli moong dal), washed, soaked for 1 hour and drained ½ cup split skinless red lentils (dhuli masoor dal), washed, soaked for 1 hour and drained ½ cup parboiled rice, washed, soaked for 1 hour and drained ½ cup split skinless black gram (dhuli urad dal), washed, soaked for 1 hour and drained ½ cup short grain rice, washed, soaked for 1 hour and drained 2-3 green chillies 2-3 dried red chillies ¼ cup scraped fresh coconut 2 tbsps chopped fresh coriander leaves ¼ tsp asafoetida Salt to taste 2 medium onions, chopped 10-12 curry leaves, chopped Oil for deep frying Coconut chutney to serve Method 1. Put the Bengal gram in a mixer jar, add split skinless green gram, split skinless red lentils, parboiled rice, split skinless black gram, short grain rice, green chillies and dried red chillies and grind well. Add ½ cup water and grind to a coarse paste. 2. Put the ground paste in a large bowl, add coconut, coriander leaves, asafoetida, salt, onions and mix well. 3. Add curry leaves and mix till well combined. 4. Heat oil in a kadai. Slide in small portions of the mixture into the hot oil. Deep fry till golden brown and crisp. Drain on an absorbent paper. 5. Arrange the kunukku into a serving bowl, serve hot with coconut chutney. Clear Lamb Soup | क्लियर लॅम्ब सूप | Soup Recipes | Sanjeev Kapoor Khazana
The Oriental way of having lamb soup is with veggies thrown in and just the bare minimum few spices. CLEAR LAMB SOUP Ingredients 150 grams boneless lamb, thinly sliced 2 tsps sesame oil 1 tsp chopped ginger 2 tsps chopped garlic 3-4 spring onion bulbs, sliced 3-4 button mushrooms, sliced 1 medium carrot, peeled and sliced 2 pak choy, sliced Salt to taste Crushed black peppercorns to taste 3 cups lamb stock A few drops of dark soy sauce Boiled rice noodles to serve Chilli garlic oil to drizzle Method 1. Heat oil in a nonstick wok. Add ginger, garlic and sauté for 30 seconds. 2. Add spring onion bulbs, lamb and sauté on high heat for 2-3 minutes. 3. Add mushrooms, carrot, pak choy, salt, crushed black peppercorns and mix well. 4. Add lamb stock and allow to boil. 5. Add dark soy sauce and mix well. 6. Add some rice noodles in serving bowl. Pour the soup over, drizzle chilli-garlic oil and serve hot. Kaddu ka Parantha | कद्दू का परांठा | Parantha Recipes | Sanjeev Kapoor Khazana
Simple and filling, the Kaddu ka Parantha is a wonderful way to have pumpkin. KADDU KA PARANTHA Ingredients 1 cup boiled pumpkin puree (kaddu) 1½ cups whole wheat flour (gehun ka atta) 1 tbsp ginger-green chilli paste 2-3 tbsps chopped fresh coriander leaves Salt to taste ½ tsp turmeric powder 2 tsps toasted white sesame seeds 1 tbsp oil Method 1. Take whole wheat flour in a large parat, add ginger-green chilli paste, coriander leaves, salt, turmeric powder and toasted white sesame seeds. Add pumpkin puree and mix and knead to soft dough. Add oil and continue to knead for 2-3 minutes. Cover with a damp muslin cloth and set aside for 10-15 minutes. 2. Divide dough into equal portions and roll into ball, dust some flour on the work top; flatten the balls and roll into a thick disc. 3. Heat a nonstick tawa, place the prepared paratha on tawa cook on medium heat for 2-3 minutes on medium heat, flip drizzle some oil and cook for 2 more minutes, flip and drizzle some more oil. 4. Place on serving platter and serve hot with pickle and yogurt. Chana Dal Stuffed Karela | चना दाल स्टफ्ड करेला | Sanjeev Kapoor Khazana
A bit of childhood memories and loads of excitement. For those who love karela with an awesome stuffing, then this recipe is definitely a must try. CHANA DAL STUFFED KARELA Ingredients 4 medium bitter gourds (karela) 2 cups soaked Bengal gram (chana dal) ½ tsp turmeric powder Salt to taste ¼ tsp asafoetida (hing) 2 tbsps oil Stuffing 2 tbsps oil 1 tsp cumin seeds 1 tsp finely chopped garlic 1 tsp finely chopped ginger 2 green chillies, finely chopped 1 medium onion, finely chopped ½ tsp turmeric powder 1 tsp red chilli powder ½ tsp cumin powder 1 tsp coriander powder ½ tsp garam masala powder Salt to taste 1 tbsp chopped fresh coriander leaves 1 tsp sugar 1 tsp lemon juice Fresh coriander sprigs for garnish Method 1. Put the soaked Bengal gram in a cooker. Add 2 cups water, ¼ tsp turmeric powder, salt, asafoetida and mix well. Cover and cook under pressure for 1-2 whistles. 2. Meanwhile, peel the bitter gourds, trim the ends and make a vertical slit in the centre without cutting it through completely. Remove the seeds and discard them. 3. Wash the bitter gourds thoroughly. Gently squeeze the excess water, transfer them in a large bowl, add salt, and remaining turmeric powder and rub this mixture well on each bitter gourd. 4. To make the stuffing, heat oil in a non-stick pan. Add cumin seeds and let them change colour. Add garlic, ginger, green chilies and mix well. Cook for 1-2 minutes. 5. Add onions, mix and cook till translucent. 6. Add turmeric powder, red chilli powder, cumin powder, coriander powder, and garam masala powder and mix well. Cook for 1-2 minutes. 7. Add ¼ cup water, mix and cook for 1 minute. Stir in the salt and cook for 1 minute. 8. Open the cooker once the pressure has reduced completely, and mix the cooked gram mixture. Transfer the mixture into the stuffing mixture, add coriander leaves and sugar and mix well. Cook for 2-3 minutes. Lightly mash the mixture with the back of a spoon. 9. Switch the heat off and add lemon juice and mix well. Transfer on a plate and allow the mixture to cool. 10. Meanwhile, wash the prepared bitter gourds with sufficient water and drain. Generously stuff each bitter gourd with the prepared stuffing. Tie each stuffed bitter gourd with a thread. 11. Heat oil in a non-stick pan. Place the stuffed bitter gourds on it and cook on high heat till golden brown on all sides, reduce the heat to medium, sprinkle 2-3 tbsps water, cover and cook for 6-8 minutes. 12. Switch the heat off, transfer the stuffed karela on a plate and remove the threads and transfer the karela on serving plate. 13. Garnish with fresh coriander sprigs and serve hot. Crispy Coconut Prawns | क्रिस्पी कोकोनट प्रॉन्स | Sanjeev Kapoor Khazana
Just as unique is its preparation, so is the way it is served. Prawns coated in coconut and battered in coconut milk, is served with an interesting pineapple-chili sauce. CRISPY COCONUT PRAWNS Ingredients ¾ cup coconut milk ½ cup desiccated coconut 12-16 medium prawns 2 tbsps refined flour (maida) Crushed black peppercorns to taste Salt to taste ½ tsp garlic powder ½ tsp onion powder ¼ tsp smoked paprika powder ½ cup panko breadcrumbs Oil for deep frying Lemon wedges for serving Fresh basil sprigs for garnish Pineapple chilli sauce for serving Method 1. Take coconut milk in a bowl. Add refined flour, crushed peppercorns, salt and whisk well. 2. Take desiccated coconut in a bowl. Add salt, garlic powder, onion powder, smoked paprika powder, panko breadcrumbs and mix well. 3. Dip the prawns in coconut milk mixture and roll in desiccated coconut. 4. Heat sufficient oil in a kadai. Slide the prawns and deep fry till golden brown and crisp. Drain on absorbent paper. 5. Transfer into serving plate, garnish with lemon wedges, basil sprigs and serve hot with pineapple chilli sauce.
