Millet and Fig Salad | झटपट बनाये टेस्टी हेल्दी मिलेट सलाद | #MilletKhazana | Sanjeev Kapoor Khazana
A unique and power-packed salad to get a kick-start for your day. Loaded with the goodness of barnyard millet, fresh figs, tofu & a fabulous dressing! The millet is usually cooked and cooled before being mixed with the other ingredients. The figs and millet can add a sweet and nutty flavor to the dish. This dish is a healthy and delicious option that can be served as a side dish or a main course. MILLET AND FIG SALAD Ingredients 1½ cups cooked banyard millet 4-5 fresh figs 3 tbsps olive oil 1 tbsp + 1 tsp honey ½ lemon 1 tbsp peanut butter Salt to taste Crushed black peppercorns to taste 1 medium onion, roughly chopped ½ cup roughly chopped mixed bell peppers 100 grams tofu, cut into ½ cm cubes 1 tbsp chopped fresh parsley + for garnish 6-8 iceberg lettuce leaves, torn 6-8 lollo rosso lettuce leaves, torn Sliced black olives as require Method 1. Take olive oil in a jar. Add 1 tbsp honey. Squeeze lemon. Add peanut butter, salt, crushed black peppercorns and shake well. 2. Quarter the figs and transfer in a bowl. Drizzle remaining honey, add salt and mix well. 3. Take banyard millet in a bowl. Add onion, bell peppers, tofu, parsley and mix well. 4. Add 2 tsps of prepared dressing and mix well. 5. Arrange iceberg and lollo rosso lettuce leaves in a serving plate, arrange the millet mixture on top. 6. Arrange the figs and black olive slices on top. Drizzle remaining dressing over top. 7. Sprinkle parsley and serve. Roasted Carrot Hummus is a creamy smooth hummus that has red in the hummus, red in the garnish and red when serving. Expect a bit of sweetness and spice and of course wows. ROASTED CARROT HUMMUS Ingredients 4 medium carrots, peeled, and cut into 1 inch pieces 1 cup boiled chickpeas, with the cooking liquor reserved 5-6 garlic cloves 7-8 tbsps extra virgin olive oil + for drizzling Crushed black peppercorns to taste Sea salt flakes to taste 1 tsp cumin powder ½ tsp paprika powder + for sprinkling 3-4 sprigs of fresh thyme 2 tbsps tahini Pumpkin seeds for sprinkling Sunflower seeds for sprinkling To serve Lavash as required Halved cherry tomatoes as required English cucumber sticks as required Red radish slices as required Method 1. Preheat the oven at 200ºC. 2. Spread the carrot on a baking tray, add garlic, olive oil, crushed black peppercorns, sea salt, cumin powder, paprika powder, and pluck the sprigs of thyme and add over it. 3. Place the baking tray in the preheated oven and roast for 20-25 minutes. 4. Bring the tray out of the oven and allow the carrots to cool slightly. Transfer it in a food processor, add boiled chickpeas, tahini, remaining olive oil, and ¼ cup of the reserved liquor and process to a fine paste. 5. Transfer the hummus in a serving bowl, drizzle olive oil, sprinkle pumpkin seeds, sunflower seeds, paprika powder, and serve with lavash, cherry tomatoes, cucumber, and red radish. Lemongrass tofu stir fry is a dish that combines the flavors of lemongrass and tofu in a stir-fry. Lemongrass is a fragrant herb that is commonly used in Southeast Asian cuisine and gives the dish a unique citrusy and slightly spicy flavor. Tofu, also known as bean curd, is a versatile protein source that is often used in vegan and vegetarian dishes. This dish is a great option for vegetarians as well as anyone looking for a flavorful and healthy meal. LEMONGRASS TOFU STIR FRY Ingredients 2 tbsps finely chopped lemongrass 300 grams firm tofu, cut into 1 inch cubes 3-4 tbsps oil 1 tbsp finely chopped ginger 1½ tbsps finely chopped garlic 1-2 fresh red chillies, finely chopped 1 small onion, cut into thick strips 2 tsps soy sauce Salt to taste 1 tbsp castor sugar 2 tbsps fresh coriander leaves Method 1. Heat 2 tbsps oil in a non-stick pan. Place the tofu cubes and cook on high heat for 1-2 minutes. Flip the tofu cubes and cook the other side for 1-2 minutes as well. Take the pan off the heat. 2. Heat remaining oil in another non-stick shallow pan. Add ginger, garlic, and fresh red chillies and sauté for 1-2 minutes. 3. Add the lemongrass and onion and sauté for 1 minute. Add the tofu and mix till well combined. 4. Stir in the soy sauce and mix well. 5. Add salt, sugar, mix and cook for a few seconds. 6. Add coriander leaves and mix. Serve hot. Chicken in Hoisin Sauce | Chinese Recipe | चाइनीज रेसिपी घर पर कैसे बनाएं | Sanjeev Kapoor Khazana
This tender, delicious, yummy chicken glazed with Hoisin sauce and quickly sauteed with vegetables is perfect for days meant for quick Chinese. CHICKEN IN HOISIN SAUCE Ingredients 600 grams chicken thigh boneless, cut into 1 inch pieces ¼ cup hoisin sauce 1 tbsp soy sauce 2 tbsps brown sugar 1 tbsp white vinegar 6-8 garlic cloves, chopped 2 tbsps + ¼ cup corn flour 1 tsp red chilli flakes Salt to taste Crushed black peppercorns to taste 3 tbsps sesame oil 1 tbsp finely chopped ginger 2 spring onion bulbs, finely chopped 1 small yellow capsicum, cut into 1 inch pieces 3 tbsps chopped spring onion greens + for garnish Toasted white sesame seeds for garnish Method 1. To make hoisin mixture, mix together hoisin sauce, soy sauce, brown sugar, white vinegar, garlic, 2 tbsps corn flour, red chilli flakes, salt, and crushed black peppercorns in a bowl. 2. Take chicken in another bowl. Add salt, crushed black peppercorns, 1 tbsp sesame oil, and remaining corn flour and mix well. 3. Heat remaining sesame oil in a non-stick wok. Add the chicken and sauté on high heat for 3-4 minutes. Drain the chicken pieces on an absorbent paper. 4. Heat the oil remaining in the pan, add ginger and sauté for a minute. Add spring onion bulbs and mix well. Add the hoisin mixture and mix, cook till the mixture thickens. 5. Add ½ cup water and mix till well combined. Add the chicken pieces and mix till well coated with the sauce and continue to cook for 4-5 minutes. 6. Add yellow capsicum and spring onion greens and sauté for a few seconds. 7. Serve hot garnished with spring onion greens and toasted white sesame seeds. Spinach Chilli Garlic Rice | स्पिनेच चिली गार्लिक राइस | Sanjeev Kapoor Khazana
The thing to love about this fusion rice preparation is the wonderful use of spinach with fried garlic and red chilli. SPINACH CHILLI GARLIC RICE Ingredients ¾ cup blanched spinach puree 1 tsp red chilli flakes + to sprinkle 2 tbsps chopped garlic 3 cups cooked rice 2 tbsps butter 1 tbsp oil ¼ tsp turmeric powder ¾ tsp garam masala powder Salt to taste Fried garlic to sprinkle Method 1. Heat butter and oil in a non-stick pan. Add chopped garlic and sauté for 30 seconds. 2. Add red chilli flakes and mix well. Add spinach puree and mix well. Cook on medium heat for 2-3 minutes. 3. Add turmeric powder, garam masala powder, salt and mix well. Cook for 1 minute. 4. Add cooked rice and mix well. Cook on medium heat for 3-4 minutes or till the rice is heated thoroughly. 5. It’s a family tradition to make Sarson ka Saag and Makai ki Roti at home in winters. A perfect recipe comes out best with fresh ingredients made by Mrs Alyona Kapoor. To get the country-side feel of having saag and roti, have white butter and a small piece of jaggery too. SARSON KA SAAG AND MAKKI KI ROTI Ingredients 2 medium bunches of mustard leaves (sarson), roughly chopped 1 medium bunch of spinach leaves, roughly chopped ½ medium bunch of bathua leaves, roughly chopped 1 medium turnip, peeled and cut into 1 inch pieces 1 medium carrot, peeled and cut into ½ inch pieces 1 tbsp finely chopped ginger 1½ tbsps finely chopped garlic 2-3 green chillies, finely chopped Salt to taste 1 tbsp cornmeal (makai ka atta) Roti 2 cups cornmeal (makai ka atta) + for dusting ¼ cup whole wheat flour 1 tbsp chopped fresh coriander leaves Salt to taste Ghee for applying Tempering 2 tbsps ghee ¼ tsp fenugreek seeds (methi dana) 1 medium onion, finely chopped ½ tbsp finely chopped ginger 1 tbsp finely chopped garlic ½ tsp red chilli powder To serve White butter as required Chopped jaggery as required Onion wedges as required Green chillies as required Method 1. Heat a pressure cooker. Add mustard leaves, spinach leaves, bathua leaves, turnip, carrot, ginger, garlic, green chillies, salt and 1 cup water and mix well. Cook on medium heat for 1 whistle. Reduce the heat to low and cook on low heat for 20-25 minutes. 2. Meanwhile, to make the dough, take cornmeal, whole wheat flour, coriander leaves, salt and 1 cup warm water and knead into a soft dough. Dust the worktop with some cornmeal, take a small portion of the dough and shape it into a ball. Press it and place it on the worktop, press it and spread it with your fingers and shape it into a disc. Dust off the excess flour. 5. Heat a non-stick tawa. Place the disc on it and cook on high heat for 1-2 minutes on each side. Apply some ghee and cook for a few seconds on both sides. 6. Bajra Khichdi is a traditional dish from India that is made with pearl millet (bajra), lentils, and various spices. It is a healthy and nutritious dish that is often served as a main course. BAJRE KI KHICHDI Ingredients 1½ cups millet (bajra), soaked overnight ½ cup split skinless green gram (dhuli moong dal), soaked 2 tbsps ghee 1½ tsps cumin seeds 2-3 green chillies, chopped 7-8 curry leaves ¼ tsp asafoetida 1 large onion, chopped 1 large potato, cut into small cubes 1 small carrot, peeled and cut into small cubes 4-5 French beans, chopped 1 tsp turmeric powder 2 tsps red chilli powder Salt to taste ¼ cup green peas 2 tbsps freshly chopped coriander leaves Method 1. Heat ghee in a pressure cooker, add cumin seeds and let the seeds change colour. Add green chillies, curry leaves, asafoetida and sauté for 30 seconds. 2. Add onion and sauté till translucent. Add potato, carrot, sauté well and cook for 2-3 minutes. Add French beans and sauté well for 1 minute. 3. Add turmeric powder, red chilli powder, salt and mix well. Add bajra, moong dal, green peas, chopped coriander and mix well. 4. Add 8 cups of water and mix well. Cover and cook till 5-6 whistles are released. Sarson ka Saag aur Makki ki Roti | सरसों का साग और मक्की की रोटी | Sanjeev Kapoor Khazana
It’s a family tradition to make Sarson ka Saag and Makai ki Roti at home in winters. A perfect recipe comes out best with fresh ingredients. To get the country-side feel of having saag and roti, have white butter and a small piece of jaggery too. SARSON KA SAAG AND MAKKI KI ROTI Ingredients 2 medium bunches of mustard leaves (sarson), roughly chopped 1 medium bunch of spinach leaves, roughly chopped ½ medium bunch of bathua leaves, roughly chopped 1 medium turnip, peeled and cut into 1 inch pieces 1 medium carrot, peeled and cut into ½ inch pieces 1 tbsp finely chopped ginger 1½ tbsps finely chopped garlic 2-3 green chillies, finely chopped Salt to taste 1 tbsp cornmeal (makai ka atta) Roti 2 cups cornmeal (makai ka atta) + for dusting ¼ cup whole wheat flour 1 tbsp chopped fresh coriander leaves Salt to taste Ghee for applying Tempering 2 tbsps ghee ¼ tsp fenugreek seeds (methi dana) 1 medium onion, finely chopped ½ tbsp finely chopped ginger 1 tbsp finely chopped garlic ½ tsp red chilli powder To serve White butter as required Chopped jaggery as required Onion wedges as required Green chillies as required Method 1. Heat a pressure cooker. Add mustard leaves, spinach leaves, bathua leaves, turnip, carrot, ginger, garlic, green chillies, salt and 1 cup water and mix well. Cook on medium heat for 1 whistle. Reduce the heat to low and cook on low heat for 20-25 minutes. 2. Meanwhile, to make the dough, take cornmeal, whole wheat flour, coriander leaves, salt and 1 cup warm water and knead into a soft dough. Now K-drama lovers can also make a yummy Korean roast chicken with a spicy, tangy and umami flavours of the Kimchi. KIMCHI ROAST CHICKEN Ingredients ½ cup ready-made kimchi 1 whole chicken, skinned, and cleaned 4-5 garlic cloves 1 inch ginger, roughly chopped 1 spring onion, cut into 2 inch pieces Salt to taste Crushed black peppercorns to taste Oil for drizzling Glaze ½ kimchi liquid 2 tbsps honey To serve Method 1. Finely grind kimchi, garlic, ginger, and spring onion. 2. Vertically cut the whole chicken in half without cutting it through. And trim the wings, 3. Sprinkle salt on both sides of the chicken, add crushed black peppercorns. Transfer the chicken into a large bowl. Add the ground paste and rub it well on all the sides of the chicken. Set aside to marinate for 1 hour. 4. Preheat the oven at 200ºC. 5. Transfer the chicken on a wire rack placed over a shallow baking tray. Drizzle oil and place it in the preheated oven for 15-20 minutes. 6. To make the glaze, mix kimchi liquid with honey in a bowl. 7. Remove chicken for oven and sprinkle white sesames seeds and cut into pieces 8. An ultimate healthy warm salad made up of cooked bajra (pearl millet), sautèed fresh veggies, and served over a bed of assorted lettuce leaves. WARM BAJRA SALAD Ingredients ½ cup pearl millet (bajra) Salt to taste 1½ tbsps oil 1 tbsp garlic, finely chopped 2 small onions, chopped 1 small carrot, grated 4 tbsps fresh green peas 2 green chillies, chopped 1 tsp ginger paste Salt to taste 1 tbsp sugar 1 small capsicum, chopped ¼ cup cabbage, chopped ¼ tsp soy sauce ¼ tsp vinegar 1/3 cup spring onion greens, chopped Assorted lettuce leaves, as required Toasted white sesame seeds, for garnish Method 1. Take bajra in a large bowl, add water and wash for 2-3 times. Add fresh water and soak for 8-10 hours. 2. Drain the water and add bajra into pressure cooker. Add salt to taste 2 ½ cups water mix well, cover and cook under pressure for 7-8 whistles on medium heat. 3. Open the lid once the pressure is reduces, mix well. 4. Heat oil in a non stick wok, add garlic and sauté till it turns golden brown, add the onions, and mix till golden brown. 5. Add the carrot, fresh green peas, green chillies and sauté for 2-3 mins, add ginger paste, salt to taste, sugar mix well, capsicum, cabbage sauté for 1-2 minutes on high heat. 6. Add the cooked bajra mix well, soy sauce, vinegar, spring onion green and mix well. 7. CHANGEZI OMELETTE Ingredients 6 eggs Salt to taste ½ tsp red chilli powder ½ tsp turmeric powder 4 tbsps chopped onions 4 tbsps chopped tomatoes 2 green chillies, chopped 4 tbsps chopped fresh coriander leaves 4 tsps butter 4 tsps oil 100 grams chicken tikka, shredded into pieces Buttered pavs to serve Method 1. Break the eggs in a large bowl. Whisk it well with a fork. 2. Add salt, red chilli powder, turmeric powder, onion, tomato, green chillies, and coriander leaves and whisk well. 3. To make one omelette, heat 1 tsp butter with 1 tsp oil in a shallow non-stick pan. Add a portion of the eggs mixture, sprinkle chicken tikka pieces and cook for 2-3 minutes. 4. Flip and cook for 2-3 more on medium heat. 5. LAL MATHACHI BHAJI Ingredients 1 large bunch of red amaranth (laal math), leaves separated and shredded 2-3 tbsps oil 1 tsp cumin seeds 10-12 garlic cloves, crushed 2 medium onions, chopped Salt to taste ½ tsp turmeric powder 2 green chillies, slit 2-3 tbsps scraped fresh coconut Jowar bhakri for serving Method 1. Flavours, colours and textures so interesting in this fusion salad that has a unique, spicy non-oil dressing. There you go, the salad is ready in the blink of an eye. EASY LENTIL SALAD Ingredients 2 cups boiled whole red lentils (akkha masoor) 3 tbsps olive oil 2 tsps finely chopped garlic 1 tsp chopped ginger 2 green chillies, chopped 1 medium onion, finely chopped Sal to taste Black pepper powder to taste ½ tsp cumin powder ½ tsp red chilli powder 1 tbsp lemon juice 1 medium carrot, peeled ½ medium red capsicum ½ medium yellow capsicum ½ small English cucumber 20-25 fresh mint leaves 2 tsps honey A large pinch of chaat masala Roasted peanuts for garnish Fresh mint sprigs for garnish Method 1. Heat olive oil in pan. Add garlic, ginger, green chillies and onion and sauté till translucent. 2. Add salt, black pepper powder, cumin powder and red chilli powder and sauté for 1 minute. Add ¼ cup water and bring to a boil. 3. Switch the heat off, add the lemon juice, mix and set aside to cool completely. 4. Cut the carrot into ½ in cubes, cut the red capsicum and yellow capsicum into ½ inch cubes as well. And cut the cucumber into ½ inch pieces. 5. Transfer the chopped vegetables into a large bowl, add the boiled lentils, mint leaves and cooled onion mixture. Stir in the honey and add chaat masala and mix well till combined. 6. Garnish with roasted peanuts and mint sprigs and serve. Bharwa Parwal ki Sabzi | भरवां परवल की सब्जी बनाने की विधि | Sanjeev Kapoor Khazana
There are two exciting things about this recipe. One, a flavourful stuffing and second, a gravy to cook the stuffed pointed gourds. So, double deliciousness. BHARWAN PARWAL KI SABZI Ingredients 8 pointed gourds (parwal), peeled Stuffing 2 tbsps oil 1 tsp cumin seeds 2 medium onions, chopped 2 green chillies, chopped 1 tbsp chopped garlic ½ tbsp chopped ginger Salt to taste ¾ tsp cumin powder ¼ tsp turmeric powder 1 tsp coriander powder ½ tsp red chilli powder ½ tsp garam masala powder ¼ cup gram flour (besan) 1½ tsps tamarind pulp 1 tbsp chopped jaggery 1 tbsp chopped fresh coriander leaves + for garnish Gravy 3 tbsps ghee 1 bay leaf 1 inch cinnamon stick 1 cup onion paste 1 tbsp ginger-garlic paste Salt to taste ½ tsp turmeric powder 1 tsp red chilli powder 1½ cups fresh tomato puree ½ tsp garam masala powder ¼ tsp dried fenugreek leaves (kasuri methi) powder ½ tsp sugar Method 1. Trim the pointed gourds and scoop out the flesh. 2. Heat oil in pan. Add cumin seeds and once they start to change the colour, add onions, green chillies and sauté till translucent. 3. Add garlic, ginger and sauté till onions turn golden brown. 4. Add salt, cumin powder, turmeric powder, coriander powder, red chilli powder, garam masala powder and mix well. 5. Add gram flour and mix well. Sauté for 2-3 minutes. 6. Add tamarind pulp, jaggery and mix well. Add coriander and mix well. Take the pan off the heat and allow to cool. 7. Stuff this mixture in slit pointed gourds. 8. For the gravy, heat 2 tbsps ghee in a nonstick pan. Add stuffed pointed gourds and sauté for 3-4 minutes. Drain and set aside. 9. Heat remaining ghee in the same nonstick pan. Add bay leaf, cinnamon and sauté till fragrant. 10. Add onion paste and cook on medium heat till golden in colour. Add the ginger-garlic paste, mix and cook till the mixture turns golden brown. 11. Add salt, turmeric powder, red chilli powder and mix well. 12. Add tomato puree and mix well. Once the mixture comes to a boil, lower the heat, cover and cook till fat separates. 13. Add cooked parwal, 1 cup water and mix well. 14. Add garam masala powder, kasuri methi powder, sugar and mix well. 15. Lowe the heat, cover and cook for 8-10 minutes. 16. Transfer in a serving bowl, garnish with coriander and serve hot. Burrito is a popular Mexican-inspired dish that can be found at many Mexican restaurants and fast food chains. It’s rice, chicken and veggies rolled into one. The classic Mexican Burrito has a yummy chicken fajita that fills you up with beans, salsa, and Mexican rice. BURRITO Tortilla 2 cups refined flour + for dusting 1 tsp dry yest 1 tsp castor sugar Salt to taste 1 tbsp butter Fajita 2 chicken breasts boneless Salt to taste Black pepper powder to taste 1 tsp red chilli flakes ½ tsp red chilli powder ½ tsp cinnamon powder 1 tsp cumin powder 1 tsp dried oregano Juice of half lemon ½ tsp sugar 1 tbsp finely chopped, garlic 4 tbsp oil 1 medium yellow bell pepper, cut into thick strips 1 medium green bell pepper, cut into thick strips 1 large onion, cut into thick strips Sour cream ¾ cup fresh cream Juice of 1 lemon Salt to taste Rice 1 ½ cups cooked short grain rice 2-3 tbsps butter 1 tbsp finely chopped garlic 1 cup boiled kidney beans 1 tsp red chilli flakes 1-2 tbsps chopped fresh coriander leaves 1-2 tbsps chopped fresh mint leaves 50 grams processed cheese 1 cup readymade salsa Method: - 1. To make the tortilla, dissolve the dry yeast and castor sugar into 2-3 tbsps of warm wate. Mix well and set aside to activate sift together refined flour and salt to taste in a bowl. 2. Meanwhile slice the chicken breast into half and cut it into a thin strip, transfer the chicken into a bowl. Add in the salt to taste, black pepper powder, red chilli flakes, red chilli powder, cinnamon powder, cumin powder, dried oregano, and lemon juice, mix well till combined. Add the sugar, garlic and 1 tbsp oil and mix well. Set aside to marinade for 15-20 minutes. 3. Sift refined flour in a bowl, add salt to taste and mix. Add in the activated yeast mixture and lukewarm water and mix well, add butter, and continue to knead to form a soft dough. 4. Cover the dough with damp muslin cloth and set aside for 20 minutes 5. For the sour cream take fresh cream in a bowl add in the lemon juice and salt to taste and mix well with the help of whisk, till mixture becomes thick and creamy. 6. Heat remaining oil in shallow pan add in the marinated chicken, and sauté on high heat for 3-4 minute. 7. Reduce the heat to a medium, add the yellow bell pepper, and onion mix well. Cook on high heat for 1-2 minutes and add in fresh coriander and mix. Switch of the heat and set aside. 8. For the rice heat butter in a non-stick wok, add garlic and mix, cook for 1-2 minutes. Add boiled kidney beans and red chilli flakes and mix well till combine, add the cooked rice, coriander, and mint leaves, and mix well. Switch of the heat and set aside. 9. To make the tortilla wraps divide the dough into equal portions and roll into a ball. Dust some refined flour on a work top, flatten the dough and roll out into medium thick discs dusting with refined flour. These are tortillas wraps. 10. Heat a non-stick tawa. Place the tortillas on it and roast till it cooked and golden from both sides. 11. To make the Burrito place a tortilla wrap on work top, apply some sour cream, and spread evenly. Arrange the prepared chicken mixture and rice mixture in centre and top up with the salsa and sour cream on it, great the processed cheese over it. 12. Fold the sides and tightly roll it into a burrito. 13. Heat some oil in a non-stick grill pan. Place the burrito on it and drizzle some oil on it and grill on high heat for a few seconds on each side or till grill marks appear on the surface of the burrito. 14. Diagonally halve the burrito and transfer on a serving plate. Serve with Nachos and remaining salsa. It’s all in the curry. It is a broth made with peanuts, yellow Thai curry paste, the fiery Bird’s Eye Chillies and slight sweetness of the palm sugar served with quinoa. PEANUT CURRY WITH QUINOA Ingredients ¾ cup roasted unsalted peanuts 2 tbsps yellow Thai curry paste Cooked quinoa to serve 2 tbsps oil ½ medium green zucchini, cut into triangles ½ medium yellow squash, cut into triangles 1 small carrot, peeled and cut into triangles 6-8 baby corns, diagonally cut into 1 inch pieces Salt to taste 2-3 bird’s eye chillies, diagonally sliced 1 tbsp palm sugar 1 cup coconut milk Fresh coriander sprigs for garnish Method 1. Heat oil in a deep pan. Add yellow Thai curry paste, and sauté for 1-2 minutes. 2. Add green zucchini, yellow squash, carrot, baby corns, and sauté for 2-3 minutes. Add peanuts and mix well. Add 1½ cups water, mix and cook till it comes to a boil. Continue to cook for 2-3 minutes. 3. Add salt and mix well. Cover and cook for 6-8 minutes. 4. Add bird’s eye chillies, palm sugar and mix. Stir in the coconut milk and cook for 4-5 minutes. 5. Transfer into a serving bowl, garnish with coriander sprigs and serve hot with cooked quinoa. Shakshuka | Breakfast Series 2.0 | Chef Afraz | शाकशुका | Sanjeev Kapoor Khazana
A classic breakfast from North Africa. The Tunisian Shakshuka has runny eggs cooked in a savoury tomato gravy. It is mandatory to serve it in a cast iron skillet. SHAKSHUKA Ingredient 3 brown eggs 2 tbsps olive oil 1 medium onion, chopped 6-7 garlic cloves, chopped 2 medium tomatoes, chopped Salt to taste 1 medium red bell pepper ½ tsp cumin powder ½ tsp paprika Crushed black peppercorn to taste 5-6 fresh coriander sprigs ¼ tsp Castor sugar Coriander leaves for garnish Sourdough bread for serving Method 1. Heat olive oil in a non-stick pan, add onion and sauté till golden brown on a medium heat. add garlic and cook for 1-2 minutes or till golden colour. 2. Add tomatoes, salt and sauté for a minute and cook till tomato get pulpy or till oil sperate. 3. Chop red bell pepper and add into a mixture, add cumin powder, paprika, crushed black peppercorn, adjust the salt, add ½ cup water and mix well. 4. Chop fresh coriander leaves and add into the mixture, add castor sugar and mix well. 5. Heat cast iron pan, transfer the tomato onion mixture and make cavities with the help of spoon. 6. Break the one egg in a small cup and pour into a prepared cavity and repeat the process twice. Cover and cook for 4-5 minutes. 7. Sprinkle salt crushed black peppercorn and garnish with coriander leaves. Serve hot with sourdough bread slices. Bajra halwa is a sweet dish made from pearl millet (bajra) flour, ghee and sugar. It is a traditional dessert that is popular in the Indian state of Rajasthan. It is typically served during festivals and special occasions. BAJRE KA HALWA Ingredients 1½ cups pearl millet (bajra) flour ½ cup ghee 1 cup sugar 1 tbsp slivered almonds 1 tbsp slivered pistachios ½ tsp green cardamom powder Method 1. Heat ¼ cup ghee in still pan, add pearl millet flour, and sauté for 8-10 minutes or till fragrant. 2. Add 4 cups water and mix till well combined. Cover and cook for 4-5 minutes. 3. Add sugar, slivered almonds and slivered pistachios and green cardamom powder and mix well. 4. Add remaining ghee and mix well. Cook on medium heat for 2 minutes. 5. Transfer in serving bowl. Sprinkle almond and pistachios on top and serve warm. Pickled Onion Focaccia | घर पर बनाएं स्वादिष्ट फ़ोकासिया ब्रेड | Sanjeev Kapoor Khazana
A freshly-baked, deliciously warm focaccia is the perfect breakfast option to the usual toast. PICKLED ONION FOCACCIA Ingredients 1 cup vinegar 2 tsps castor sugar Sea salt to taste 2-3 medium onions peeled 3-4 sprigs of fresh oregano 2 tsps active dry yeast 2 ½ cups refined flour (maida) 1½ tsp salt ½ cup olive oil + for drizzling + for greasing + for serving Crushed black peppercorns for sprinkling Method 1. Heat vinegar in a pan. Add 1 tsp castor sugar and sea salt and mix. Cook on low heat till the sugar melts. 2. Switch the heat off and allow to cool slightly. 3. Cut the onion in half and vertically slice each half. Transfer this into an air-tight jar. 4. Pluck the leaves of oregano and add into the jar. Pour the vinegar mixture and mix well. Cover with a lid and refrigerate for 1-2 hours. 5. To make the dough, take yeast in bowl, add the remaining castor sugar and ¼ cup water and mix well. 6. Sift refined flour and salt in a large bowl, mix well and add activated yeast and mix till well combined. Gradually add ¾ cup water and knead well, add in the ¼ cup olive oil and continue to knead till a soft dough is formed. 7. Drizzle some olive oil, cover with the cling wrap and set aside for 20-25 minutes. 8. Knock back the dough and knead for 30 seconds. 9. Generously grease a 5-inch square cake tin with olive oil and place the prepared dough in it and spread evenly, set aside for proving for 30 minutes. 10. Preheat the oven at 220°C. 11. Mix together the remaining olive oil and ¼ cup water in bowl. 12. Make holes on the proved dough. And add the pickled onions. Drizzle the olive oil-water mixture, sprinkle some crushed black peppercorns. 13. Bake in the preheated oven for 30-35 minutes. Bring the baking tray out of the oven and allow the bread to cool slightly, demold and cut into squares. 14. Arrange on serving plate and serve with prepared pickled onions and olive oil. Chickpea salad toast is a dish that combines a healthy creamy chickpea salad with toast. CHICKPEA SALAD TOAST Ingredients 1½ cups boiled chickpeas 4 toasted sourdough bread slices 2 tbsps tahini 5-6 garlic cloves Salt to taste Crushed black peppercorns to taste 2-3 tbsps extra virgin olive oil 2-3 tbsps chopped onions 2-3 tbsps chopped tomatoes 2 green chillies, chopped 2 tbsps chopped fresh coriander leaves 2-3 tbsps chopped assorted bell peppers 1 tbsp lemon juice Assorted lettuce leaves as required Micro greens for garnish Method 1. Transfer chickpeas in a grinder jar. Add tahini, garlic cloves, salt, crushed black peppercorns, extra virgin olive oil and grind to a coarse paste. 2. Transfer in a bowl, add onions, tomatoes, green chillies, coriander, bell peppers, lemon juice and mix well. 3. Broken wheat porridge, also known as dalia or daliya, is a type of porridge made from broken wheat, which is a type of whole wheat that has been broken into small pieces. It is a popular dish in many countries, particularly in India. The porridge is made by cooking the broken wheat in milk until it becomes soft and mushy. It can be sweetened with jaggery, and flavored with cinnamon, cardamom, and other spices. The porridge can be served with fruits or nuts for added nutrition and flavor. BROKEN WHEAT PORRIDGE Ingredients 1½ cups broken wheat (lapsi) 4-5 cups boiled milk ½ tsp cinnamon powder ½ tsp green cardamom powder ¼ cup jaggery powder Fresh blueberries as required Banana slices as required Fresh raspberry halves as required Dragon fruit cubes as required Almond slivers as required Blanched and peeled pistachios as required Honey for drizzling Method 1. Dry roast the broken wheat in a non-stick deep pan till fragrant. Transfer into a large bowl, add water and wash it well. Add water and soak for 20 minutes. Drain. 2. Heat milk in the same pan. Add the broken wheat and mix well. Cook for 15-20 minutes or till done while stirring in between. 3. Add cinnamon powder, green cardamom powder and mix well. Add jaggery and mix and cook till the mixture thickens slightly. Switch the heat off and transfer the mixture into individual serving bowls. Arrange blueberries, banana slices, raspberry halves, dragon fruit cubes, sprinkle almond slivers and garnish with pistachios. Drizzle honey and serve. Caramel filled cookies are a type of cookie that have a gooey caramel filling inside. The caramel filling is then placed in the center of the dough and the cookies are baked until golden brown. These cookies are known for their sweet and chewy texture, and the contrast of the soft caramel filling inside the crispy cookie. CARAMEL FILLED COOKIES Ingredients Thick caramel sauce as required ¾ cup butter ½ cup brown sugar 3 tbsps castor sugar 1 tsp vanilla essence 1¾ cups refined flour (maida) 1 tsp baking powder ½ tsp baking soda 3-4 tbsps milk Method 1. Preheat the oven to 180ºC. 2. Take butter in a bowl. Add brown sugar, castor sugar and beat well till the mixture is light and fluffy. 3. Add vanilla essence and mix well. Sift refined flour, baking powder and baking soda directly in the bowl. Mix well. 4. Add milk and mix well till the mixture is formed into soft dough. 5. Divide the dough into equal portions and roll into balls. Make a dent in the centre and stuff the caramel sauce. Cover with a small portion of the dough, gather the edges and seal well. 6. Arrange on a baking tray lined with parchment paper and bake for 10-15 minutes. 7. Allow to cool and serve. Shrimp Burger | रेस्टोरेंट जैसा प्रॉन बर्गर बनाने की विधि | Prawn Burger | Sanjeev Kapoor Khazana
A wonderful shrimp patty burger flavoured with Oriental seasonings, tartar sauce and cheese is a superb snack. SHRIMP BURGER Ingredients 250 grams shrimps, cleaned, peeled, and deveined 4 burger buns, halved Salt to taste Crushed black peppercorns to taste 2-3 tbsps chopped spring onion greens 1 tsp light soy sauce 2 spring onion bulbs 1 tbsp refined flour (maida) 2 eggs, beaten Panko breadcrumbs for coating Oil for shallow frying Butter for applying Lettuce leaves as required Tartar sauce as required 4 cheese slices 1 small tomato, cut into thin roundels Assorted chips to serve Method 1. Put the shrimps in a food processor jar, add shrimps, salt, crushed black peppercorns, spring onion greens and process to a coarse mixture. 2. Transfer the mixture into a large bowl; add light soy sauce, spring onion bulbs and refined flour and mix well till combined. 3. Dip your palm in water and divide the mixture into equal portions and shape each portion it into a patty. 4. Dip each patty in eggs mixture and coat with panko breadcrumbs on both sides. 1. Heat a non-stick pan, toast the burger buns till golden brown and lightly crisp. Flip them and toast the other side for 30 seconds. Transfer on a worktop. 5. Heat sufficient oil in the same pan, place the patties and shallow fry till golden brown and crisp. Drain on an absorbent paper. 6. To make one burger, apply some butter on the base half of the burger bun, place a few lettuce leaves, spread a portion of tartar sauce over it, place a fried patty, top it up with a cheese slice, place a few tomato roundels and apply some butter on the base of the remaining burger bun half. Place it over the burger with the butter side facing down. Arrange the burger on a serving plate and serve with assorted chips. Samo, also known as Samvat, Samvat rice, or Samak rice, is a type of millet that is commonly consumed in India. It is a small, round grain that is high in protein and gluten-free. Samo is often used in a variety of traditional dishes such as Khichdi, Idli, and Dosa. It is considered to be a healthy alternative to rice and wheat as it is easy to digest and is a good source of minerals and vitamins. This version of healthy poha with this wonder millet is a must try ! MILLET POHA Ingredients 1 cup banyard millet (samo) 2 tbsps oil 2-3 tbsps raw peanuts 1 tsp mustard seeds ½ tsp cumin seeds 2 green chillies, chopped 10-15 curry leaves 2 medium onions, chopped Salt to taste ¼ tsp turmeric powder ½ tsp sugar 1 lemon wedge 2 tbsps chopped fresh coriander Fresh coriander sprig for garnish Method 1. Heat a nonstick pan. Add banyard millet and roast on medium heat for 4-5 minutes. 2. Add 2 cups water, cover and cook on high heat till water is absorbed. 3. Lower the heat and cook for 5 minutes. 4. Heat oil in a nonstick pan. Add peanuts and sauté till golden brown. Drain and set aside. 5. Add mustard seeds and once they begin to splutter, add cumin seeds, green chillies, curry leaves and mix well. 6. Add onions and mix well. Add salt, turmeric powder and mix well. Sauté on medium heat for 2-3 minutes. 7. Add sugar and mix. Add cooked banyard millet and mix. 8. Sprinkle 2 tbsps water, cover and cook for 2-3 minutes. 9. Squeeze lemon, add the peanuts, coriander and mix well. 10. Transfer into a serving bowl, garnish with coriander sprig and serve hot. Tandul Pav | तांदुळ पाव कशी बनवायची | Nashik Special | नाशिक तांदुळ पाव | Sanjeev Kapoor Khazana
Don’t be misled by the name. It does not have pav or bread in it. These are thick, soft pancakes served with coconut chutney. Guess, this is the daily bread. TANDUL PAV Ingredients 1 cup rice flour 1 tbsp crushed green chillies Salt to taste 2 tbsps chopped fresh coriander leaves ½ cup sour buttermilk 1 tsp fruit salt Oil for drizzling Method 1. Take rice flour in a large bowl. Add green chillies, salt, coriander leaves, buttermilk and whisk well. Add 1½ cups water and whisk till a smooth batter is formed. Add fruit salt and mix well. 2. Heat a non-stick shallow pan. Pour a ladleful of the batter and spread it lightly into a disc. Drizzle oil on the sides, cover and cook on medium heat for 2-3 minutes. Flip the disc and cook the other side for 1-2 minutes. 3. Serve hot with coconut chutney. Chinchechi Kadhi | चिंचेची कढ़ी कशी बनवायची | Tamarind Curry | Sanjeev Kapoor Khazana
A Maharashtrian preparation, the Chinchechi Kadhi is an aromatic, sweet and tangy kadhi made with tamarind pulp. Are you already visualising steamed rice with it? You are on the right track. CHINCHECHI KADHI Ingredients 1 cup tamarind (chincha), soaked in 3 cups water Salt to taste ½ tsp turmeric powder 2 tbsps gram flour( besan) 2 tbsps oil 1 tsp mustard seeds ¼ tsp asafoetida (hing) 8-10 curry leaves 1 tbsp crushed ginger-garlic-green chillies 1 tbsp chopped jaggery 2 tbsps chopped fresh coriander leaves + to sprinkle Steamed rice for serving Method 1. Squeeze the soaked tamarind and extract the pulp. Strain through a fine sieve. 2. Add salt, turmeric powder, gram flour and mix well. 3. For the tempering, heat oil in a pan. Add mustard seeds and once they start to splutter, add asafoetida, curry leaves, crushed ginger-garlic –green chillies and sauté for 30 seconds. 4. Add the tamarind mixture and cook on medium heat for 10-12 minutes. 5. Add jaggery and cook till it dissolves. Add coriander and mix well. 6. Transfer in a serving bowl, sprinkle coriander and serve hot with steamed rice. Coconut Chickpeas Bowl | हेल्दी बाउल | Healthy Bowl | Vegan Bowl | Sanjeev Kapoor Khazana
An ultimate exciting fusion recipe. Brings together foods of so many regions. A mildly flavourful, vibrant Buddha bowl made with chickpeas and coconut milk gravy. COCONUT CHICKPEA BOWL Ingredients 2 cups coconut milk 1½ tbsps coconut oil 1 tsp cumin seeds 1 ½ tbsps finely chopped garlic 1 inch ginger, finely chopped 3-4 finely chopped spring onion bubs 1 medium carrot, peeled and cut into triangles 10-12 French beans, diagonally sliced Salt to taste 2 tbsps curry powder ½ tbsp paprika powder 1 small yellow squash, cut into triangles 1 small red capsicum, cut into triangles 1 small green capsicum, cut into triangles 1-2 red chillies Black pepper powder to taste 1 tsp sugar 2-3 tbsp chopped fresh coriander Fresh coriander sprigs for garnish Steamed rice to serve Lemon wedges to serve Chickpeas mixture 2 cups boiled chickpeas 1 tsp coconut oil 1 tsp chopped garlic 1 green chilli, finely chopped 3 tsps paprika powder ½ tsp roasted cumin powder Crashed black peppercorns to taste Salt to taste ½ lemon Method 1. Heat coconut oil in a pan, add cumin seeds and let them change the colour. Add garlic, ginger, and spring onion bulbs and sauté on high heat for 2-3 minutes. 2. Add carrot, French beans, salt, curry powder, paprika powder and mix well. Cook for 1 minute. 3. Stir in 1 cup water, cover and cook for 4-5 minutes. 4. Meanwhile, to make the chickpea mixture, heat coconut oil in a shallow pan. Add garlic, green chilli and sauté for 1 minute. Add the boiled chickpeas and toss till well combined. 5. Add paprika powder, roasted cumin powder, crushed black peppercorns, salt and mix well. Squeeze the juice of the lemon directly into the pan and mix well. Take the pan off the heat. 6. Add the yellow squash to the vegetable mixture and cook for 2 minutes. 7. Pour coconut milk, mix and bring it to a boil. Add the red capsicum, green capsicum, red chillies, black pepper powder, sugar and mix well. Continue to cook for 2 minutes. 8. Add coriander leaves and mix well. Switch the heat off. 9. To serve, take a portion of the steamed rice in a serving bowl. Pour some of the coconut mixture over it, add a portion of the chickpeas mixture, and garnish with coriander sprig and lemon wedge. Serve hot.
