Don’t be misled by the name. It does not have pav or bread in it. These are thick, soft pancakes served with coconut chutney. Guess, this is the daily bread. TANDUL PAV Ingredients 1 cup rice flour 1 tbsp crushed green chillies Salt to taste 2 tbsps chopped fresh coriander leaves ½ cup sour buttermilk 1 tsp fruit salt Oil for drizzling Method 1. Take rice flour in a large bowl. Add green chillies, salt, coriander leaves, buttermilk and whisk well. Add 1½ cups water and whisk till a smooth batter is formed. Add fruit salt and mix well. 2. Heat a non-stick shallow pan. Pour a ladleful of the batter and spread it lightly into a disc. Drizzle oil on the sides, cover and cook on medium heat for 2-3 minutes. Flip the disc and cook the other side for 1-2 minutes. 3. Serve hot with coconut chutney.
