CHILLI GARLIC RICE Ingredients 4 tsps red chilli powder 20-25 garlic cloves 3 cups leftover cooked rice Salt to taste 2 tbsps oil 1½ tsps cumin seeds 7-8 garlic cloves, unpeeled 3-4 dried red chillies 2 green chillies, chopped 2 medium onions, thinly sliced 20-25 curry leaves Method 1. Coarsely pound the garlic cloves in a mortar with the help of a pestle. 2. Add red chilli powder and salt and continue to pound to a coarse paste. Add this mixture to the rice and mix till well combined. 3. Heat oil in a non-stick pan. Add cumin seeds and let them change colour. Add the garlic cloves, dried red chillies, green chillies, and onion and mix well. Cook till the onion turns translucent. Add the curry leaves and mix. 4. Add rice, and toss till well combined. A refreshing, good looking, flavourful and simple salad made with Watermelon & Papaya is a must have. Enjoy with your friends and family. WATERMELON PAPAYA SALAD Ingredients 1 medium watermelon 1 cup papaya scoops ½ peeled raw mango 1 green chilli 15-20 fresh mint leaves + for garnishing 1 lemon Salt to taste 2 tsps lemon juice Method 1. Scoop out small balls from the watermelon using a Parisienne scoop. Remove all seeds and put them into a bowl. Add papaya scoops. 2. Cut raw mango into thin strips. 3. Finely chop together green chilli and mint leaves and add to the same bowl. Grate the rind of a lemon and add. Add raw mango strips reserving some for garnishing. Millet Appam | मिलेट अप्पम कैसे बनाते हैं | Kodo Millet | Family Food Tales | Sanjeev Kapoor Khazana
Millet ka asli maza millet appam mein hai, which makes it a must have recipe. Healthy aur tasty ka yeh perfect combo jaldi banao. MILLET APPAM Ingredients ¾ cup kodo millet, soaked for 3-4 hours and drained ½ cup cooked rice ½ cup grated fresh coconut 3 white bread slices, soaked Salt to taste 1 tsp oil + for drizzling ½ small onion Vegetable stew to serve Method 1. Put the soaked kodo millet in a grinder jar, add ¼ cup water and blend to a fine paste. Transfer into a large bowl. 2. Add cooked rice in the same blender jar, fresh coconut, bread, ¼ cup of the blended paste and ¼ cup water and blend to a fine paste. Transfer this into the same bowl and mix well. Cover and set aside to ferment for 6-8 hours. 3. Once fermented, add cup water and mix well. 4. Heat 1 tsp oil in an iron appam pan and spread it with the help of the onion. Pour a ladleful of the batter and swirl the pan. Cover and cook on medium heat for 1-2 minutes. Increase the heat to high and cook for 1 minute. 5. Serve hot with vegetable stew. Radhaballabhi | उड़द दाल भरी मसालेदार राधावल्लभी पूरी | Bengali Recipe | Sanjeev Kapoor Khazana
A puri filled with tasty mixture of chana dal. Try this simple yet yummy recipe from the Bengali cuisine at your snack time and enjoy. RADHABALLABHI Ingredients 1½ cups soaked split skinless black gram (dhuli urad dal) 2 cups refined flour (maida) Salt to taste 2 tsps sugar 2½ tsps fennel (saunf) powder 3½ tsps ginger-green chilli paste 2 tbsps oil + for greasing + for deep frying ½ tsp onion seeds (kalonji) ½ tsp asafoetida (hing) Method 1. Put the split skinless black gram in a mixer jar, add ¼ cup water and grind to a coarse paste. 2. Take refined flour in a parat. Add salt, 1 tsp sugar, 1 tsp fennel powder, 1½ tsps ginger-green chilli paste, ¼ of the ground paste, 1 tbsp oil and ¾ cup water and knead into a stiff dough. Cover with a damp muslin cloth and set aside for 30 minutes. 3. To make the stuffing, heat oil in a non-stick pan. Add asafoetida, remaining ginger-green chilli paste and sauté for 1 minute. Add remaining fennel powder, salt, remaining sugar and ¼ cup water and mix well. Add the remaining ground paste and mix well. Continuously stir and cook on low heat till the mixture comes together and leaves the sides of the pan. Take the pan off the heat and allow it to cool completely. 4. Take a small portion of the dough and shape it into a ball. Make a cavity in the centre and stuff it with a portion of the stuffing, bring the sides to the centre, press and seal. 5. Grease the worktop with some oil, place the stuffed dough on it and roll it into a disc. 6. Heat sufficient oil in a kadai. Gently slide in the discs one at a time and deep fry till golden brown and puffed up. Drain on an absorbent paper. 7. Serve hot. A healthy, easy and delicious masoor dal soup is here to impress one and all. Serve hot and enjoy a homely bowl of nourishment. MOONG AND COCONUT SOUP Ingredients 1 cup split green gram (moong dal), soaked 1 cup coconut milk 1 medium onion, roughly chopped 2 garlic cloves, chopped ½ tsp black pepper powder ½ tsp red chilli powder Salt to taste 2 large tomatoes, roughly chopped Method 1. Heat a pressure cooker, add onion and garlic and roast for 2 minutes. Drain and add the split green gram, 2 cups water, black pepper powder, red chilli powder, salt and mix. 2. Add tomatoes, cover and cook under pressure till 2-3 whistles are given out. 3. Cool and put into a mixer jar and grind till smooth. 4. Pour back into the cooker, add coconut milk mix and bring it to a boil. 5. Pour into bowls and serve. Mushroom Dum Biryani | मशरूम बिरियानी इस आसान तरीके से बनाएं | Sanjeev Kapoor Khazana
Flavourful mushroom Dum Biryani is a beautiful way to make your ordinary life fun and interesting. Try this classic one-pot rice dish today. MUSHROOM DUM BIRYANI Ingredients 10-12 button mushrooms, quartered 4-5 dried shitake mushrooms, soaked in warm water, drained and sliced 6-8 fresh oyster mushrooms, sliced 2 cups Basmati Rice 2 tbsps ghee + for drizzling 2 inch cinnamon stick 1 bay leaf 2 green cardamoms 3-4 cloves 5-6 black peppercorns 2 large onions, sliced 2 tsps garlic paste 1 tsp ginger paste Salt to taste Black pepper powder to taste 2 tbsps chopped fresh coriander leaves + for sprinkling 10-15 fresh mint leaves + for sprinkling 1 cup fresh tomato puree 2 tsps red chilli powder ½ tsp turmeric powder 1½ tsps coriander powder 2 tsps cumin powder 1 tsp garam masala powder 1 tbsp biryani masala ½ cup whisked yogurt 2 tsps rose water 2 tsps screw pine water (kewra) A large pinch of saffron, soaked in 2 tbsps warm milk Fried onions for sprinkling + for garnish Fresh coriander sprigs for garnish Pineapple raita to serve Method 1. Transfer Basmati Rice in a large bowl. Add water and wash it thoroughly for 2-3 times. Drain and ad sufficient water. Set aside to soak for 30 minutes. Drain. 2. Heat ghee in a non-stick deep pan. Add cinnamon stick, bay leaf, green cardamoms, cloves, and black peppercorns and mix well. Cook till fragrant. 3. Add onions, mix and cook till translucent. Add garlic paste and ginger paste, mix and cook for 1-2 minutes. 4. Add button mushrooms, shitake, mushrooms, oyster mushrooms and salt and sauté till golden brown. 5. Add black pepper powder, coriander leaves, mint leaves and tomato puree and mix well. 6. Add red chilli powder, turmeric powder, coriander powder, cumin powder, garam masala powder, biryani masala and mix well. Cook for 2-3 minutes. 7. Add yogurt, mix and cook till fat separates. Switch the heat off. 8. Heat sufficient water in another deep pan. Add salt and drizzle ghee and let the water come to a boil. 9. Add the drained rice and mix well. Cook for 6-8 minutes. Drain the rice and layer over the mushroom mixture. 10. Drizzle rose water, screw pine water, sprinkle coriander leaves, mint leaves, and black pepper powder. Drizzle ghee and sprinkle fried onions. Drizzle soaked saffron, cover the pan with aluminum foil, and place a lid on top. Cook on low heat for 15-20 minutes. 11. Switch the heat off and allow to rest for 10-15 minutes. 12. Open the lid, discard the aluminum foil and transfer the biryani on a serving plate. 13. Garnish with fried onions, coriander sprigs and serve hot with pineapple raita. A simple green chutney with a added twist of peanuts makes for an amazing condiment to go with your favourite snack. GREEN CHUTNEY PEANUTS Ingredients ½ cup green chutney 1 cup raw peanuts ½ cup gram flour 1½ tbsps rice flour 1 tsp yellow chilli powder ¼ tsp turmeric powder Salt to taste Oil for deep frying 1 tsp dried mint leaves ½ tsp chaat masala Method 1. Take raw peanuts in a large bowl. Add gram flour, rice flour, yellow chilli powder, turmeric powder, salt and mix well. Add green chutney and mix till each peanut is coated with the masala. Add ¼ cup water and mix well. 2. Heat sufficient oil in a kadai. Gently slide in the peanuts one by one into the hot oil and deep fry on medium heat till golden brown and crisp. Drain on an absorbent paper. 3. Sprinkle dried mint leaves and chaat masala and toss well. 4. Transfer into a bowl and serve. Chatpate snack time ko banao extra interesting with Kachori Chaat loaded with an array of toppings with contrasting flavours and textures for an ultimate experience. KACHORI CHAAT Ingredients 2 kachoris 1 tbsp oil 1 tsp fennel seeds (saunf) 1 tsp crushed coriander seeds 1 tsp dried pomegranate seeds (anardana) powder 4 tbsps chopped fresh coriander leaves + for garnish ½ tsp Tata Sampann Garam Masala Salt to taste Sweetened yogurt for drizzling Date and tamarind chutney for drizzling Green chutney for drizzling Sev for garnish Masala dal for garnish Masala peanuts for garnish Fresh pomegranate pearls Chaat masala for sprinkling Method 1. Heat oil in a non-stick pan, add fennel seeds, coriander seeds, dried pomegranate pearls powder and 2 tbsps chopped coriander leaves and mix. 2. Crush kachoris and add into the pan, sprinkle Tata Sampann Garam Masala and salt and sauté for 1-2 minutes. 3. Add remaining coriander leaves and take the pan off the heat. Transfer equal portions of this on to serving plates. 4. Drizzle sweetened yogurt, date and tamarind chutney, green chutney and garnish with sev, masala dal, masala peanuts, fresh pomegranate pearls and sprinkle chaat masala. Paneer marinated in freshly ground spicy and tasty pickle masala, then grilled to perfection is a wonderful party starter. So open up your man ke raaz with achari paneer tikka. ACHARI PANEER TIKKA Ingredients 2 teaspoons pickle gravy 250 grams cottage cheese (paneer) 1 teaspoon coriander seeds ¼ teaspoon fenugreek seeds (methi dana) ½ teaspoon onion seeds (kalonji) ¼ cup hung yogurt 1 teaspoon ginger-garlic paste Salt to taste ¼ teaspoon red chilli powder ¼ teaspoon garam masala powder ¼ teaspoon mustard powder A pinch of turmeric powder 2 tablespoons oil 1 cup coloured capcisum cubes A sprig of fresh mint Method 1. Dry roast coriander seeds, fenugreek seeds, onion seeds till fragrant. Set aside to cool. 2. Place hung yogurt in a bowl, add ginger-garlic paste, salt, red chilli powder, garam masala powder, mustard powder, pickle gravy, turmeric powder and mix well. 3. Crush the roasted spices in a mortar with the pestle. Add a little of the crushed spices to the yogurt and mix well. 4. Cut cottage cheese into 1 inch cubes and add to the yogurt mixture and mix well so that all the cottage pieces are well coated. Let them marinate for around 15 minutes. 5. Preheat the Wonderchef OTG/ air Fryer to 200°C. 6. Thread the paneer pieces and capsicum cubes alternately on the skewers and bake in preheated Wonderchef OTG/ air Fryer on air fryer mode for 10 minutes. 7. Arrange them on a serving plate, garnish with mint sprig and serve hot. Take chicken in a bowl. Add ginger-garlic paste, salt, red chilli powder, coriander powder, garam masala powder, cumin powder, turmeric powder and yogurt and mix well. Set aside to marinate for 10-15 minutes. 2. Heat ghee in a nonstick pan. Add cumin seeds and once they start to change colour, add green cardamoms, bay leaf, cloves, cinnamon and sauté till fragrant. 3. Add potatoes and sauté for 2-3 minutes. Add marinated chicken and sauté on high heat for 5-6 minutes. 4. Add tomato puree, salt and cook till ghee separates. 5. Add ½ cup fried onions, coriander, mint and mix well. 6. Add cooked Basmati rice, drizzle saffron water, sprinkle Pro V Jumbo Cranberries, remaining fried onions, fried Pro V Regal Cashew Nuts and mint leaves. Rasmalai | रसमलाई बनाने के सबसे आसान तरीका | All Time Favourite Recipe | Sanjeev Kapoor Khazana
Spongy soft cottage cheese balls dipped in a creamy thickened sweetened milk make for an out of this world delicacy - Rasmalai. Make this heavenly Bengali sweet dish at home now and enjoy. RASMALAI Ingredients 2.5 litres full fat milk 2 tbsps white vinegar 2 cups sugar A large pinch of saffron strands + for garnish Blanched, peeled, and slivered pistachios for garnish Almonds slivers for garnish Method 1. To make chenna, heat 1.5 litres of milk in a deep pan, bring it to a light boil. 2. Take vinegar in a bowl, add ¼ cup water and mix well. Add this mixture little by little into the milk and cook till the milk curdles. Switch the heat off. 3. Once curdled, add 1 cup water and mix well to reduce the temperature. Strain this mixture through a muslin cloth and a strainer. Collect the chenna in the strainer and gently squeeze out the excess water. Reserve the whey water and transfer the chenna into a large plate and knead till smooth. Divide the mixture into small portions and shape each portion into a ball. Slightly flatten each ball. Immerse them in the reserved whey water. 4. To make the sugar syrup, heat 1½ cups sugar and 4 cups water, mix and cook till sugar melts. 5. Combine the refined flour and ¼ cup whey water in a small bowl. 6. Remove 1 cup sugar syrup in a large bowl and set aside. Add the refined flour mixture in the sugar syrup remaining in the pan, cover and cook till it comes to a boil. 7. Gently slide in the prepared flattened chenna, cover and cook on low heat till it comes to a boil. Add ¼ cup of the whey water and gently mix. Cover again and cook on low heat for 8-10 minutes. Strain the cooked chenna and transfer into the reserved sugar syrup. 8. Heat remaining milk in a non-stick wide pan, cook on low heat till the milk reduces to half its original quantity while stirring in between. 9. Add saffron and remaining sugar and mix well. Cook till the sugar melts. Continue to cook for 2-3 minutes while stirring in between. Allow to cool completely. 10. Squeeze the cooked chenna to remove excess sugar syrup, soak it into the milk mixture and garnish with blanched pistachios, almond slivers, and saffron strands. Don't be surprised by the name, these Khelda Bhaji are vegetarian! Made by frying onions tossed in a tasty mixture. Make these crispy fritters today! KHEKDA BHAJI Ingredients 3-4 medium onions Salt to taste 1 tsp red chilli powder ½ tsp turmeric powder 2 green chillies, chopped 1 cup gram flour (besan) ¼ cup rice flour Oil for deep frying Green chutney to serve Method 1. Thinly slice the onions and transfer into a large bowl. Add salt and mix well. Set aside for 10-15 minutes. Add red chilli powder, turmeric powder, green chillies and mix well. Add gram flour, rice flour and mix till well combined. 2. Heat sufficient oil in a kadai. Add small portions of the mixture into the hot oil and deep fry till golden brown and crisp. Double Decker Modak | डबल डेकर उकड़िचे मोदक | #YumUtsav | Ganesh Chaturthi | Sanjeev Kapoor Khazana
Festival hai, toh sab kuch grand chahiye, so double up the fun with this Double Decker Modak. Have a big celebration 🎉 DOUBLE DECKER MODAK Ingredients ½ fresh coconut ½ cup chopped jaggery ½ tbsp poppy seeds (khas khas) ½ tsp green cardamom powder A pinch of nutmeg (jaiphal) powder 1 tsp ghee + to serve ¼ tsp oil + for applying + for greasing A pinch of salt 1 cup Basmati rice flour (modak flour) Method 1. To make the stuffing, scrape only the white part of the coconut with the help of a scraper. Measure 1 cup of the scraped coconut and transfer it into a pan. Add jaggery, poppy seeds, green cardamom powder, nutmeg powder and ghee. 2. Place the pan on heat and mix the mixture till well combined. Cook on medium heat till the jaggery melts. 3. Switch the heat off and transfer the mixture into a shallow bowl. Set aside to cool to room temperature. 4. Meanwhile, heat 1 cup water in a deep pan. Add oil and salt and mix. Let it come to a boil. 5. Add the rice flour and mix immediately till the mixture comes together. Keep mixing till a smooth dough is formed. Sprinkle 2 tbsps water, cover and cook on low heat for 1 minute. Mix the dough again and transfer it on to a large plate. 6. Apply some oil on the back of a small stainless steel bowl and use it to knead the dough while it is still hot. 7. Apply some oil and water to the dough and now use your hand to knead till it is soft and smooth. Cover with a damp muslin cloth to avoid drying of the dough. 8. Apply some water and oil on your fingers and divide the dough into 4 equal portions. 9. Take one portion of the dough and cover the rest with the damp muslin cloth. Shape the dough portion into a ball. Press and spread it into a thin disc or till it becomes semi-transparent. Shape it into a cup and stuff it with a portion of the stuffing. Pinch the sides till the bottom and pleat them while dipping your fingers in water in between to avoid the dough from sticking to your fingers. Bring the edges to the centre and pinch to seal. This is a modak. 10. Now to make the double decker modak, gently press the top of the prepared modak and make a cavity in the centre. Spread the edges lightly and stuff the cavity with a small portion of the stuffing, pinch the sides and pleat them. Bring the sides to the centre and press to seal. Lightly dip the bottom of this with some water. 11. Heat sufficient water in a steamer. 12. Grease the steamer basket with some oil. Arrange the double decker modaks on it. Cover and steam for 12-15 minutes. 13. Switch the heat off and sprinkle 2-3 tbsps water. 14. Dip your fingers in water and lift up the double decker modaks and place them on a serving plate. Add a little ghee over each and serve. Note – To check the consistency the dough, take a small portion of the dough. Apply some oil on your fingers in case the dough is sticky. Apply some oil and water again and shape the portion into a ball. Press and spread the dough ball and make a cavity in the centre. If the edges are smooth then it means the dough is ready to be used. In case there are cracks on the edges then it means you need to knead the dough again till smooth. Hot puffed sweet pumpkin pooris or bhoplyache gharge is a popular Maharashtrian recipe which is not only easy to make but also a crowd pleaser. Stays fresh for a long time, but will finish in one sitting because it's that amazing. BHOPLYACHE GHARGE Ingredients 1 cup grated pumpkin ¾ cup chopped jaggery 1½ cups whole wheat flour (atta) ¼ cup rice flour ½ tsp green cardamom powder ¼ tsp nutmeg powder Salt to taste Banana leaves as required Ghee as required Oil for deep frying Tea for serving Method 1. Take pumpkin in a parat. Add jaggery and mix well till jaggery melts. Add whole wheat flour, rice flour, green cardamom powder, nutmeg powder and mix well. 2. Dreaming of a cake but adamant on the idea of using millets? This foxtail mawa cake recipe is just perfect for you. The same fluffy and spongy cake but with added millet surprise makes it just out of the box! FOXTAIL MAWA CAKE Ingredients 1 cup foxtail millet flour ¼ cup grated mawa 3 eggs 1 cup butter 1⅛ cups castor sugar ½ tsp baking powder ¾ tsp green cardamom powder ¼ cup milk 1 tsp vanilla essence Method 1. Preheat the oven at 180℃. 2. Break in the eggs in a large bowl and whisk it lightly with a fork. 3. Take butter in another large bowl, add castor sugar and beat with the help of an electric hand beater till the mixture turns light and fluffy. 4. Add the grated mawa and continue to beat till well combined. Add the eggs mixture in batches and beat well after each addition. 5. Sift the foxtail millet flour, baking powder, and green cardamom powder directly into the bowl and gently fold in till well combined. 6. Stir in the milk and vanilla essence and gently mix till a smooth batter is formed. 7. Pour the batter into silicon loaf mould and place it in the preheated oven and bake for 40-45 minutes. 8. Bring the cake out of the oven and allow to cool completely. 9. De-mould the cake and cut into slices. Arrange the slices on a serving plate and serve. A uncommon modak for this Ganesh Chaturthi - almond katli modak! Almonds or badam & mithais, go hand in hand, so try making these and bring joy. ALMOND KATLI MODAK Ingredients 1¾ cups almond flour 1 cup sugar 2 tsps milk 1 tbsp liquid glucose ¾ tbsps ghee + for greasing ¼ tsp green cardamom powder Method 1. Add 1 cup water in a deep nonstick pan. Add sugar and mix well. 2. Add milk and stir well. Collect the scum that rises on the surface and discard it. Wipe the sides of the pan with a moist muslin cloth to avoid crystallization. 3. Cook till sugar reaches 3 string consistency. 4. Wet your fingers and add liquid glucose to sugar and mix well. 5. Add almond flour and mix well. Add ghee and mix well. 6. Transfer the mixture in a parat and mash well with the help of a wooden masher and spread it evenly. Allow to cool down. 7. Grease your palms with ghee, add green cardamom powder to the mixture and mix well. 8. Stuff small portions of the mixture in modak mould and press it gently. Level the surface with the help of a butter knife. Set aside for 10 minutes 9. Open the mould and remove the prepared modaks carefully. 10. Arrange on a serving plate and serve. Chatakdaar limbachi chutney will bring that chatpata blast of flavour to your meal. Made with lemons and a few other chatpate ingredients this chutney is sweet, sour and spicy all at the same time, so try now. LIMBACHI CHUTNEY Ingredients 12-15 lemons 1 tsp red chilli powder Black salt to taste 1 cup chopped jaggery Method 1. Cut the lemons in half and further cut each half into quarters. Remove the seeds. 2. Transfer the lemons in a mixer jar and grind to a coarse mixture. 3. Heat a pan, add the ground mixture, red chilli powder, black salt, and mix well. Add jaggery, mix and cook for 10-12 minutes or till the jaggery melts and the mixture thickens. 4. Switch the heat off and allow to cool completely. 5. Serve as required. A healthy sweet treat passed on from one geneartion to another, Besan ka Halwa is an easy to make dessert recipe. Make it today and pass on the tradition. BESAN KA HALWA Ingredients ¾ cup ghee 1½ cups coarse gram flour A large pinch of saffron strands 1 cup grated jaggery 2 tbsps almond powder 2 tbsps cashew nuts powder 1½ tbsps pistachios powder 2 tbsps raisins ½ tsp green cardamom powder Slivered almonds for garnish Blanched, peeled, and slivered pistachios for garnish Method 1. Heat ghee in a non-stick wide pan. Add gram flour, mix and continuously sauté till golden brown. 2. Add 1½ cups hot water and continuously mix till well combined. Add 1 cup hot water, mix and continue to cook for 1-2 minutes. Add saffron and mix well. 3. Add jaggery, mix and cook till jaggery melts. Add almond powder, cashew nuts powder, pistachios powder, raisins and mix well. 4. Add green cardamom powder and mix. Cook for 2-3 minutes. 5. Transfer the halwa into a serving bowl, garnish with almond slivers and pistachios slivers. Serve warm. A chocolaty sweet treat that Bappa and you, both love. An easy to make and excellent treat to share during the festive season. CHOCOLATE MODAK Ingredients 1 cup chopped dark chocolate 4 tbsps butter ⅓ cup condensed milk 1 tsp vanilla essence 1 cup grated khoya/mawa 2 tbsps finely chopped walnuts + for garnish ½ cup desiccated coconut Method 1. Heat butter in a non-stick pan, let it melt. 2. Add chocolate and mix till it melts completely. Add condensed milk, mix and cook for a minute on low heat. 3. Add vanilla essence and mix well. 4. Add khoya and walnuts and mix. Add desiccated coconut, mix and cook till the mixture starts to leave the side of the pan. 5. Take the pan off the heat and transfer into a bowl and allow the mixture to cool completely. 6. Garnish the chocolate modaks with walnuts and serve. Tawa Samosa Chaat | तवा समोसा चाट | Monsoon ka Mazza | Episode 61 | Sanjeev Kapoor Khazana
Chatpate samosa chaat ka anokha version- tawa samosa chaat! Samosas cooked in along with some ragda, pices and tangy flavours on a tawa, taste delicious. TAWA SAMOSA CHAAT Ingredients 6-8 samosas 2 cups cooked ragda 1 large onion, chopped + for sprinkling 1 large tomato, chopped + for sprinkling 1-2 tbsps butter + for toasting 1-2 green chillies, chopped Salt to taste 1 tsp red chilli powder 1-2 tsps coriander powder 1 tsp cumin powder 1 tbsp red chilli-garlic chutney 2 tbsps chopped fresh coriander leaves + for garnish 1-2 tbsps date and tamarind chutney + for drizzling 2-3 tbsps green chutney + for drizzling Roasted cumin powder for sprinkling Chaat masala for sprinkling Sev for sprinkling Chopped raw mango for sprinkling Fresh pomegranate pearls for sprinkling Method 1. Heat a non-stick tawa. Add onion, tomato, and butter and sauté for 2-3 minutes. 2. Add green chillies, salt, red chilli powder, coriander powder, cumin powder, red chilli-garlic chutney, and sauté for 2-3 minutes. 3. Add ¼ cup water, mix and cook for 1-2 minutes. Bring the mixture to the centre and add cooked ragda and mix till well combined. 4. Add 1 tbsp coriander leaves, date and tamarind chutney and mix well. Cook for 1-2 minutes. 5. Push the ragda mixture on to the sides of the tawa and make some space in the centre. Add butter and place the samosas on it and press it lightly. 6. Toast the samosas for 1-2 minutes on each side. Break them into small pieces. Add some more butter and let it melt. 7. Transfer the roasted samosas on a plate. 8. Add ½ cup water and green chutney and mix well. 9. Add ½ cup water and remaining coriander leaves and mix well. 10. To serve, arrange a few pieces of the toasted samosas in a serving bowl, pour the ragda over it. Sprinkle onion, roasted cumin powder, red chilli powder, drizzle green chutney, date and tamarind chutney, sprinkle chaat masala, sev, raw mango and arrange a few pieces of the samosa on top. Sprinkle pomegranate pearls and coriander leaves. 11. Serve immediately. A special recipe from the coastal region, made especially for festive times- Patoli. A flavourful sweet mixture of coconut and jaggery is gently sandwiched into rice flour batter and steamed in fresh turmeric leaves, which tastes heavenly. PATOLI Ingredients 2-3 fresh turmeric leaves 1 cup scraped fresh coconut ½ cup chopped jaggery ½ tsp green cardamom powder A pinch of nutmeg powder 1 cup rice flour A pinch of salt Oil for greasing Ghee to serve Method 1. Heat a non-stick shallow pan. Add the coconut and jaggery and mix well. Cook till the jaggery melts. 2. Add green cardamom powder and nutmeg powder and mix well. Continue to cook till the mixture thickens. 3. Add ¾ cup water little by little, and whisk till a smooth and thick batter is formed. 4. Sprinkle some water over the turmeric leaves and gently wipe them with a damp muslin cloth. Cut the leaves into 3 inch pieces. 5. Grease each turmeric leaf with some oil, spread a portion of the batter over it. Place a portion of the stuffing on one side, and fold the leaf in half. 6. Heat sufficient water in a steamer. Place the prepared leaves in the steamer basket, cover, and steam for 10 minutes. 7. Transfer the prepared patolis on a serving plate, remove the leaves and drizzle ghee. Serve hot. Quick and easy to make modak chahiye toh why not make oats jaggery modak. Treat bappa and your loved ones with this modak made with an amazing combo of oats and jaggery. OATS JAGGERY MODAK Ingredients 1½ cups powdered oats 1 cup jaggery powder 2 tbsps ghee + to grease ¼ tsp green cardamom powder 2-3 tbsps chopped mixed nuts 3-4 tbsps milk Method 1. Heat ghee in a nonstick pan. Add oats powder and sauté for 3-4 minutes on medium heat. 2. Add jaggery powder, green cardamom powder and mix well. Add chopped nuts and mix well. Cook for 1-2 minutes on medium heat. 3. Transfer in a bowl, add milk and combine well to form dough. 4. Grease modak mould with some ghee and transfer a small portion in it. Press well. 5. Demould and serve. POWER PACKED SALAD Ingredients 2 tbsps boiled quinoa ½ cup grated carrot 10-15 cherry tomatoes, halved ½ medium green capsicum ¼ large red capsicum ¼ large yellow capsicum 15-20 blanched broccoli florets 4-5 button mushrooms 50 gms cottage cheese (paneer) 2 tsps toasted sesame seeds 2 tsps toasted flax seeds 15-20 fresh basil leaves 2 tbsps extra virgin olive oil Rock salt to taste Juice of ½ lemon Method 1. A rustic festive recipe - Tondli bhaat. TONDLI BHAAT Ingredients 100 grams ivy gourd (tondli/tendli) 1½ cups soaked ambe mohar rice (bhaat) 1 inch ginger, roughly chopped 2-3 green chillies ½ small bunch coriander leaves 3 tbsps ghee ¼ tsp asafoetida (hing) ½ tsp turmeric powder 2½ tsps goda masala ¼ cup cashew nuts, soaked for 20 minutes and drained Salt to taste 2 tsps chopped jaggery 2 tsps lemon juice 2 tbsps scraped fresh coconut 2 tbsps chopped fresh coriander leaves Method 1. Trim the eye of the ivy gourd and cut them into strips. Transfer them in a bowl of water. 2. Grind together ginger, green chillies and coriander leaves to a coarse paste. 3. Heat 2 tbsps ghee in a deep pan, add asafoetida, turmeric powder and mix well. Add rice and sauté for a minute. 4. Add ground paste, goda masala, cashew nuts and salt and mix and continue to sauté for 1-2 minutes. Add 3½ cups hot water, mix, add jaggery, mix and cook till the mixture comes to a boil. 5. Cover and cook for 5-6 minutes. Add remaining ghee and ½ cup hot water, cover, place the pan on a tawa and cook on low heat for 8-10 minutes. Switch the heat off. 6. Add lemon juice, mix and add coconut and coriander leaves. 7. Transfer into a serving plate and serve hot. Upgrade the level of richness of the Modak with dates and anjeer. Loaded with the goodness of such dried fruits, this Modak is as special as Ganesha. DATES AND ANJEER MODAK Ingredients 1 cup chopped dates ¾ cup chopped dried figs (anjeer) 2 tbsps pistachios 2 tbsps raisins ¼ cup almonds 2 tbsps grated dried coconut 2 tbsps poppy seeds (khaskhas) ½ tsp green cardamom powder Method 1. Put pistachios, raisins, and almonds in a food processor and process to a coarse powder. Add dried coconut, poppy seeds and green cardamom powder and process to a coarse paste. 2. Transfer the coarse paste into a large bowl and mix. Take a portion of the mixture and stuff into a modak mould, gently press and demould. 3. Arrange the dates and anjeer modaks on a serving plate. Batatayachi Bhaji | बटाट्याची भाजी | Maharashtrian Recipe | #YumUtsav | Sanjeev Kapoor Khazana
Going back to basics with a super simple festive batatyachi bhaji, which can be made in no time with only a handful of ingredients. This quick recipe is a must have on the YUMUtsav list. BATATYACHI BHAJI Ingredients 4 medium potatoes, boiled, peeled and cut into 1 inch pieces 1 tbsp oil 1 tsp mustard seeds ¼ tspasafoetida (hing) 2-3 green chillies, broken ¼ tsp turmeric powder 1 tsp split skinless black gram Salt to taste ¼ tsp sugar 1 tbsp chopped fresh coriander leaves + for garnish 1 tsp lemon juice Method 1. Heat oil in a non-stick kadai, add mustard seeds and let them splutter. Add asafoetida, green chillies, and turmeric powder. Add split skinless black gram and sauté for a few seconds. 2. Add potatoes, salt and sugar and mix well. Add coriander leaves, switch off the heat and add lemon juice and mix. 3. Transfer the bhaji into a serving bowl, garnish with coriander leaves and serve hot. Ever imagined having millet in a Seekh Kebab? We did! Unbelievably amazing recipe ko try karna na bhule. SAMO SEEKH KEBAB Ingredients 1 cup barnyard millet (samo) 2-3 tbsps boiled green peas 2 tbsps finely chopped French beans 2-3 tbsps finely chopped cabbage 2-3 tbsps finely chopped carrot 2-3 tbsps finely chopped cauliflower 2 tsps ginger-green chilli paste ¾ tsp garam masala powder ½ tsp red chilli powder Salt to taste ½ tsp chaat masala 2 tbsps roasted gram flour 2 tbsps chopped fresh coriander leaves Oil for shallow frying Green chutney to serve Onion rings to serve Lemon wedges to serve Fresh mint leaves to serve Method 1. Heat 1½ cups water in a deep pan. Add the barnyard millet and mix well. Cover and cook for 6-8 minutes. Switch the heat off and allow to cool completely. 2. Transfer 1 cup of the cooked barnyard millet in large bowl, add green peas, French beans, cabbage, carrot, cauliflower, ginger-green chilli paste, garam masala powder, red chilli powder, salt, chaat masala, roasted gram flour, and coriander leaves and mix till well combined. 3. Dip your fingers in some water and take a portion of the mixture. Apply it onto individual satay sticks and shape it into a seekh kebab. 4. Heat sufficient oil in a non-stick tawa, place the kebabs on it and cook on all sides till golden brown. 5. Arrange on a serving plate and serve hot with green chutney, onion rings, lemon wedges, and mint leaves. Tandoori Paneer Momos | तंदूरी पनीर मोमोज़ | Episode 60 | Monsoon ka Mazza | Sanjeev Kapoor Khazana
Our favourite momos generously filled with spicy tandoori paneer! Tastes a lot more delicious than it sounds, so enhance your monsoon with these momos soon! TANDOORI PANEER MOMOS Ingredients 150 grams cottage cheese (paneer), cut into cubed 250 grams refined flour (maida) dough Melted butter for greasing and drizzling ¼ cup hung yogurt 1 teaspoon red chilli powder ½ teaspoon dried fenugreek leaves (kasuri methi) powder 1 teaspoon garam masala powder Salt to taste 1 tablespoon ginger-garlic paste 2 tablespoons red chilli paste 1 tablespoon lemon juice 1 tablespoon mustard oil 1 medium onion, cut into cubes and layers separated 1 medium green capsicum, cut into cubes Oil for greasing Method 1. Preheat oven to 180º C. Line a baking tray with aluminium foil and grease with some butter. 2. Mix together hung yogurt, chilli powder, dried fenugreek leaves powder, garam masala powder, salt, ginger-garlic paste, chilli paste, lemon juice and mustard oil in a bowl. 3. Add cottage cheese and mix well. Add onions and capsicum, mix well and set aside to marinate for 10-15 minutes. 4. Place the cottage cheese mixture on lined tray, drizzle some butter on top, put the tray in the preheated oven and bake for 6-8 minutes. 5. Chop baked cottage cheese, onion and capsicums. 6. Roll out dough into large thin disc. Using a medium size cookie cutter, cut out discs from it. 7. Place a spoonful of cottage cheese mixture in the centre, apply water on the edges and shape into momos. 8. Heat sufficient water in a non-stick pan and place a cane basket in it. Line the basket with parchment paper, grease with some oil and place the stuffed momos on it. Cover and steam for 6-8 minutes. 9. Serve hot with Schezwan chutney. Happiness comes in moulds, just like the sandesh modak which is made with fresh chenna. So delicate and delicious that you just cannot stop eating them. SANDESH MODAK Ingredients 2 litres full fat milk 2 tbsps yogurt ¾ cup castor sugar ½ cup grated khoya ½ tsp green cardamom powder 2 tsps dried rose petals 8-10 pistachios, blanched, peeled and slivered Method 1. Boil milk in nonstick pan. Add yogurt and mix well. Once the milk curdles, strain the mixture in a bowl through a muslin cloth. 2. Gather the edges and immediately refresh in chilled water to avoid carry over cooking. 3. Transfer the mixture in a parat, add sugar and mix well. Add khoya and green cardamom powder and mix well. 4. Transfer this mixture in a nonstick pan and cook for 3-4 minutes. 5. Add dried rose petals and pistachios, mix and continue to cook for 2-3 minutes. Transfer the mixture on a plate and allow to cool. 6. Transfer the mixture into modak moulds and press lightly. Demould and arrange on a serving plate and serve. Shrikhand | श्रीखण्ड बनाने का सबसे आसान तरीका | Indian Dessert | #YumUtsav | Sanjeev Kapoor Khazana
Creamy thick traditional shrikhand made with hung curd, soothing flavour of cardamom and topped with dry fruits tastes incredibly divine and festive. SHRIKHAND Ingredients 1½ cups hung yogurt (chaka) ½ cup sugar ¼ tsp nutmeg powder ½ tsp green cardamom powder A large pinch of saffron, soaked in milk + for garnish 5-6 almonds, blanched, peeled and slivered + for garnish 1½ tbsps charoli + for garnish Method 1. Take hung yogurt in a large bowl, add sugar, mix and set aside for 10-15 minutes. 2. Add nutmeg powder and green cardamom powder and mix well. Strain the mixture into another bowl. 3. Add saffron, almonds, charoli and mix well. Transfer into an air tight container, add saffron, almonds and charoli. Cover and refrigerate till chilled. 4. Transfer the chilled shrikhand into a serving bowl, and garnish with saffron, almonds, and charoli. Chana Dal Modak | चना दाल मोदक | Ganesh Chaturthi Special | #YumUtsav | Sanjeev Kapoor Khazana
This festive season, try the chana dal modak and spread happiness. Yummy protein se bharpur, this modak comes with a surprise on the inside. Try now! CHANA DAL MODAK Ingredients 1 cup Bengal gram (chana dal), soaked and boiled till ¾ done 2 cups rice flour 1½ tbsps + ¼ tsp ghee 1 cup chopped jaggery ¾ cup scrapped fresh coconut ½ tsp green cardamom powder A pinch of salt Oil for greasing A few saffron strands for garnish Method 1. Put the boiled chana dal in a chopper and coarsely crush it. 2. Heat 1½ tbsps ghee in a non-stick pan, add the crushed chana dal and sauté for 2-3 minutes. 3. Add jaggery, mix and cook on medium heat till the mixture leaves the sides of the pan and thickens slightly. 4. Add coconut and green cardamom powder, mix and cook for 1-2 minutes. Transfer the mixture into a bowl and set aside to cool completely. 5. Meanwhile to make the dough, boil 2 cups water in a deep non-stick pan. Add salt and remaining ghee. 6. Add rice flour, mix and switch the heat off. Cover with a lid and set aside for 1-2 minutes. 7. Transfer the dough into a large plate and slightly knead with a cup while the dough is still warm. Continue to knead till a soft dough is formed and cover with a damp muslin cloth. 8. To make the modaks, grease your palm with a little oil, take a portion of the dough and shape into a ball. Place the dough ball on a worktop and roll into a medium disc. 9. Grease a modak mould with some oil, place a portion of the dough and press it well against the sides of the mould. Now place apportion of the chana dal mixture and cover the bottom with some more dough and gently demould. 10. Heat sufficient water in a steamer, place the modaks in it and steam for 8-10 minutes. 11. Transfer them on a serving plate, garnish with saffron strands and serve warm.
