Indulge in the exquisite flavors of our Roasted Green Tomato and Green Garlic Soup! 🍅✨ Join us in the kitchen as we create this aromatic masterpiece—perfect for a cozy night in. 🌿🥣 ROASTED GREEN TOMATO AND GREEN GARLIC SOUP Ingredients 8-10 medium green tomatoes, roughly chopped 2 tbsps oil 4 tbsps butter 20-30 green garlic bulbs, roughly chopped 8-10 tbsps roughly chopped green garlic stalks Salt to taste 4 tsps Madras curry powder Crushed black peppercorns to taste 1 cup coconut cream + to drizzle Chopped green garlic stalks to sprinkle Toasted garlic bread for serving Method 1. Heat oil and butter in a nonstick pan. Add green garlic bulbs and sauté for 30 seconds. 2. Add green tomatoes, green garlic stalks, salt and sauté for 8-10 minutes. 3. Add Madras curry powder, crushed black peppercorns and mix well. 4. Add 6 cups water and mix well. Cook for 8-10 minutes or till the tomatoes are pulpy. 5. Grind to a smooth mixture with the help of a hand blender. 6. Strain the mixture in another nonstick pan. Add coconut cream and mix well. Cook for 1 minute. 7. Pour in serving bowls, drizzle coconut cream, sprinkle crushed black peppercorns, green garlic stalks and serve hot with toasted garlic bread.
