STRAWBERRY WHIPPED CHEESE TOAST Ingredients 2 cups chopped strawberries 1 cup quartered strawberries 2 cups cream cheese 8 garlic loaf slices 1 cup sugar 4 fresh thyme sprigs 1 lemon Sea salt to taste Crushed black peppercorns to taste Fresh mint leaves for garnish Method 1. Heat a nonstick pan. Place the bread slices and toast till crisp. 2. Add strawberries to the same pan. Add sugar, thyme and cook for 4-5 minutes. 3. Squeeze half the lemon cook for 3-4 minutes. Take the pan off the heat and set aside. 4. Take cream cheese in a bowl. Add sea salt, crushed black peppercorns and whisk will light and fluffy. 5. Squeeze remaining lemon and whisk well. 6. Arrange toasted bread slices on worktop and spread the cream cheese mixture unevenly. 7. Top up with the strawberry mixture, garnish with mint leaves and serve.
