Subz Purda Pulao | सब्ज़ परदा पुलाव | Veg Pulao | #KesarKhazana | Sanjeev Kapoor Khazana

With every mouthful, you’ll experience a heartwarming blend of tradition, comfort, and the finest flavors India has to offer. 🧡🧡 SUBZ PARDA PULAO Ingredients 1 medium carrot 10-12 French beans 1 small cauliflower, separated into small florets ½ cup green peas ¾ cup refined flour (maida) 1½ cups basmati rice, soaked and drained ¼ cup ghee ½ tsp sugar Salt to taste 1 medium onion 4 tbsps oil 1 bay leaf 7-8 cloves 3 black cardamoms 1 tsp cumin seeds 8-10 black peppercorns A few strands of saffron ¼ cup milk ½ cup yogurt 2½ cups water ½ tsp green cardamom powder Method 1. In a large bowl mix together refined flour, ¼ cup ghee, sugar, salt and enough water and knead into a soft dough. 2. Chop onion roughly. Cut carrot into ¼ inch pieces. 3. Heat 4 tbsps oil in an ovenproof pan. Add bay leaf, cloves, black cardamoms, cumin seeds, black peppercorns and onion and sauté. 4. Cut French beans into ½ inch pieces. 5. Add carrot and cauliflower to the onion and mix well. Add rice and mix well. 6. Mix saffron with milk and warm it in the microwave oven for ½ minute. Preheat oven to 220°C/430°F. 7. Add salt to rice along with yogurt and 2½ cups of water and cook on high heat for 3-4 minutes. 8. Add French beans and cook till the moisture is almost absorbed. Add green peas and mix gently. 9. Grease your palms, take the dough and pat it into a round chapatti slightly bigger in diameter than of the pan. 10. Add green cardamom powder and saffron milk (keeping aside a little) to the rice. Place the chapatti over the rim of the pan and seal at the sides. Sprinkle the reserved saffron milk over it and place the pan in the oven. Bake till the chapatti gets cooked and lightly coloured. 11. Tear open the chapatti just before serving.
