Unlike other curries, Chicken Amsu offers a more balanced, earthy flavor that truly represents the essence of #NortheastKaSwaad. 😍😍 Try this recipe and experience a burst of unique flavors that not only taste amazing but also celebrate the rich culinary heritage of the North East. 😇😇 CHICKEN AMSU Ingredients 750 grams chicken on the bone with skin 1 inch ginger 8-10 garlic cloves 4-5 green chillies, stemmed 2–3-inch fermented bamboo shoots, sliced ½ cup soaked and drained sticky rice Salt to taste 3-4 oyster mushrooms, sliced 5-6 michinga leaves 6-7 Sichuan peppercorns (timur) Method 1. Roast the chicken on direct heat till charred. Cut into 8-10 pieces. 2. Crush ginger, garlic and green chillies coarsely. 3. Heat a kadai. Add chicken, bamboo shoots, crushed mixture and mix well. 4. Add 3 cups water and mix well. Cook for 8-10 minutes. 5. Meanwhile transfer the soaked sticky rice in a grinder jar. Add 1 cup water and grind to fine paste. 6. Add salt and oyster mushrooms. Chop michinga leaves roughly and add. Crush Sichuan peppercorns and add. Mix well. 7. Add the ground rice paste and mix well. Cook for 6-8 minutes. 8. Transfer in a bowl and serve hot.
