SANGAM VADA Ingredients 3 medium potatoes, boiled, peeled and mashed 4 pavs 3 green chillies, stemmed and broken 8 garlic cloves ½ inch ginger, roughly chopped 2 tbsps oil + to deep fry 8 curry leaves, shredded 1 tsp turmeric powder Salt to taste 2 tbsps chopped fresh coriander leaves + to sprinkle 1¼ cups gram flour ¼ cup rice flour 1 tsp red chilli powder ¼ tsp baking soda Date and tamarind chutney to drizzle Green chutney to drizzle Chopped onions to sprinkle Nylon sev to sprinkle Method 1. Transfer green chillies, garlic cloves and ginger in a mixer jar and grind coarsely without adding any water. 2. Heat oil in a non-stick pan. Add curry leaves and sauté for a few seconds. 3. Add the prepared paste and sauté for 2 minutes on medium heat. 4. Add ½ tsp turmeric powder, salt and mix well. Cook for 30 seconds. 5. Add the boiled potatoes and mix well. Sprinkle 2 tbsps water and cook for 2-3 minutes or till the mixture is heated thoroughly. 6. Add coriander leaves and mix well. Transfer in a bowl and set aside to cool down. 7. For the batter, take gram flour in a bowl. Add rice flour, red chilli powder, remaining turmeric powder, salt, baking soda and mix well. 8. Add 1¼ cups water and mix well to form a smooth batter. 9. Slit the pavs without cutting through. Apply a generous portion of the potato mixture on lower half and close it. 10. Heat sufficient oil in a kadai. Dip the pav pieces in the gram flour batter and slide into the hot oil. Deep fry till golden brown and crisp. Drain on absorbent paper. 11. Cut the fried pav sandwich into 4 pieces and transfer on a serving plate. 12. Drizzle date and tamarind chutney and green chutney on top. 13. Sprinkle chopped onion, sev and coriander leaves. टोमेटो अँड पेपर टार्ट | Tomato and Pepper Tart | Sanjeev Kapoor Khazana

TOMATO AND PEPPER TART Ingredients 3-4 yellow cherry tomatoes 3-4 red cherry tomatoes 1 small red capsicum (bell pepper), cut into thin strips 4 puff pastry squares (4 x 4 inches each) 4 tsps ready-made pesto 6-8 asparagus, blanched 40 grams mozzarella cheese 6-8 black olives, pitted and halved Salt to taste Crushed black peppercorns to taste Extra virgin olive oil for drizzling Method 1. Preheat the oven at 180ºC. 2. Halve the yellow cherry tomatoes and red cherry tomatoes. 3. Arrange the puff pastry squares on a baking tray. 4. Leaving ½ inch from each side of the puff pastry square, lightly press with your fingers to make an outline of a square. Apply a portion of the pesto on each square. Arrange red capsicum strips, yellow cherry tomato halves and red cherry tomato halves. Place a few asparagus pieces over each tart, tear small pieces of the mozzarella cheese and add on top of the tarts. Arrange black olives, sprinkle some salt and crushed black peppercorns. 5. Fold ½ inch of the edge from each side of the puff pastry square to make a tart. 6. Place the tarts in the preheated oven and bake for 20-25 minutes. 7. Prepare this fabulous and decadent brownie with roasted almonds and caramel. It's so good that you will definitely keep coming back for more. ROASTED ALMONDS AND CARAMEL BROWNIE Ingredients 8-10 roasted almonds, vertically halved + for arranging 15-20 caramel candies 1 cup chopped dark chocolate 1 cup butter ¾ cup castor sugar 2 eggs 1 tsp vanilla essence 1 cup refined flour (maida) ½ tsp baking powder ¼ cup cocoa powder 150 grams milk chocolate Method 1. Preheat the oven at 180ºC. 2. Melt chocolate and butter in a bowl over a double boiler till the chocolate melts completely. Set aside to cool slightly. 3. Take castor sugar in a large bowl, break in the eggs and whisk with the help of an electric beater till the mixture reaches ribbon consistency. 4. Add the melted chocolate-butter mixture and mix till well combined. Sift refined flour, baking powder and cocoa powder directly into the bowl and gently fold till a lump free batter is formed. 5. Roughly chop 8-10 caramel candy and add into the batter. Add roasted almonds and mix. 6. Roughly chop milk chocolate and halve remaining caramel candies. 7. Transfer the batter into a greased and lined 6” x 6” x 3” square cake tin. Tap a few times. Arrange the halved caramel candies, chopped milk chocolate and roasted almonds. 8. Bake in the preheated oven for 35-40 minutes. Take it out of the oven and allow to cool to room temperature. 9. Cut the brownie in squares and serve. मलाई बोटी पुलाव | Malai Boti Pulao | Sanjeev Kapoor Khazana

A finger-licking good pulao with flavourful chicken, amazing medley of spices and some other condiments. The perfect way to comfort yourself during your lunch or dinner time. MALAI BOTI PULAO Ingredients 750 grams chicken thigh boneless, cut into 2 inch pieces ½ cup thick yogurt 1½ tbsps ginger-garlic paste 1 tsp green chilli paste Salt to taste ½ tsp green cardamom powder 1 tsp garam masala powder 2-3 tbsps fresh cream 2 tsps butter 1 tsp oil Pulao 1½ cups Basmati rice, soaked for 20 mins and drained 2 tbsps ghee 1 tsp caraway seeds (shah jeera) 1 bay leaf 1 inch cinnamon stick 8-10 black peppercorns 4-5 cloves 4-5 green cardamoms 1 star anise 2 medium onions, thinly sliced 1 tbsp ginger-garlic paste 2 tbsps thick yogurt 2 tsps coriander powder A pinch of garam masala powder Salt to taste 3 cups chicken stock 2 tbsps fresh cream 1-2 tbsps browned onion + for sprinkling 6-8 fresh mint leaves + for garnish Fresh mint sprigs for garnish Method 1. Take chicken in a large bowl, add yogurt, ginger-garlic paste, green chilli paste, salt, green cardamom powder, garam masala powder and fresh cream and mix well. Set aside to marinate for 1 hour. 2. Heat butter and oil in a non-stick pan. Place the chicken pieces and cook on high heat for 4-5 minutes. Flip each piece and cook the other side for 4-5 minutes as well. 3. To make the pulao, heat ghee in a deep pan. Add caraway seeds, bay leaf, cinnamon stick, black peppercorns, cloves, green cardamoms, and star anise and sauté till fragrant. 4. Add onions and sauté till translucent. Add ginger-garlic paste and mix well. Cook for 1 minute. 5. Add thick yogurt and mix well. Cook for 2-3 minutes. Add coriander powder and garam masala powder and mix. 6. Add rice and mix till well combined. Add salt and chicken stock and mix. Cook till it comes to a boil. Cover and cook on medium heat for 6-8 minutes or till the rice is ¾ cooked. 7. Arrange the cooked chicken pieces on top of the rice mixture. Drizzle some fresh cream, add browned onion and sprinkle some mint leaves. Cover and continue to cook on medium heat for 6-8 minutes. 8. Transfer the pulao on a serving plate. Garnish with mint sprigs and mint leaves. Sprinkle browned onions and serve hot. Steaming hot chicken momos served in a bed of flavour-packed Manchurian gravy is a winter-treat everybody is going to love. Try this super easy and yum recipe and serve it to your family! CHICKEN MANCHURIAN MOMOS Ingredients 200 grams chicken mince (keema) Ready-made momo dough made using 1 cup refined flour (maida) 1 small carrot, grated 100 grams finely shredded cabbage 2 spring onions, chopped with the greens 1 inch ginger, finely chopped 1-2 green chillies, finely chopped 1 tsp soy sauce Crushed black peppercorns to taste Salt to taste Oil for greasing Manchurian sauce 2 tbsps oil 1 tbsp finely chopped garlic ½ tbsp finely chopped ginger 1 spring onion bulb 1½ tbsps red chilli sauce 1 tsp soy sauce 2 tsps schezwan sauce Salt to taste Crushed black peppercorns to taste 1 cup chicken stock 2 tbsps corn flour slurry Diagonally sliced spring onion greens for garnish Method 1. Take chicken mince in a bowl. Add carrot, cabbage, spring onions, ginger, green chillies, soy sauce, crushed black peppercorns and salt and mix well. 2. Divide the dough into 16 equal portions and shape each portion into a ball. 3. To make a momo, slightly flatten each dough ball and roll it into a small thin disc. 4. Stuff each disc with a portion of the chicken mixture, apply some water on the edge. Pleat and press the edges. Bring it to the centre and pinch to seal. This is a momo. 5. Heat sufficient water in a steamer. Grease the steamer basket with some oil and arrange the momos on them. Cover and steam for 15-20 minutes. 6. To make the Manchurian sauce, heat oil in a non-stick wok. Add garlic, ginger and spring onion bulb and sauté for 1 minute on high heat. 7. Add red chilli sauce, soy sauce ad schezwan sauce and mix well. Add salt and crushed black peppercorns and mix well. 8. Add chicken stock and mix. Let the mixture come to a boil. 9. Add corn flour slurry, mix and cook till the mixture thickens. 10. Transfer the prepared sauce in a shallow serving bowl. Arrange the momos over it and garnish with spring onion greens. PHYLLO APPLE PIE Ingredients 12 phyllo sheets 2 medium apples ½ lemon ¼ cup roasted and crushed walnuts ¼ cup raisins 6 tbsps castor sugar ¼ tsp cinnamon powder Butter for greasing + as required 2 eggs 2 tbsps corn flour ¾ cup milk Toffee sauce to drizzle Vanilla ice cream to serve Method 1. Core the apples, peel and chop them. Transfer in a bowl. Squeeze lemon, add walnuts, raisins, 3 tbsps castor sugar, cinnamon powder and mix well. 2. Line a baking tray with parchment paper grease with butter. 3. Preheat the oven at 180ºC. 4. Place 2 phyllo sheets on worktop and apply butter evenly. Top up with 2 more phyllo sheets and apply some more butter on top. 5. Spread a portion of apple stuffing, gather the edges so as to create pleats. 6. Place the tray in preheated oven and bake for 15 minutes. 7. For the custard, break eggs in a bowl. Add remaining castor sugar, corn flour and mix well. Add milk and mix. 8. Strain the custard directly on the baked pies and bake for another 20 minutes. 9. Cut into pieces, drizzle toffee sauce and serve with vanilla ice cream. फ़्लॅक्स सीड्स पोड़ी | Flax Seeds Podi | Sanjeev Kapoor Khazana

FLAX SEEDS PODI Ingredients ¼ cup flax seeds (alsi) ¼ cup split skinless black gram (dhuli urad dal) ¼ cup Bengal gram (chana dal) 1 tbsp white sesame seeds (safed til) 1 tsp cumin seeds ¼ tsp fenugreek seeds (methi dana) 2 tsps oil 6-8 dried red chillies (kashmiri and pandi) 8-10 garlic cloves 6-8 curry leaves Sea salt to taste A small piece of rock asafoetida (hing) Idli to serve Sesame oil to drizzle Method 1. Dry roast flax seeds till they start to pop in a non-stick pan. Transfer on a plate and allow to cool. 2. Dry roast the split skinless black gram and Bengal gram individually till they turn golden brown in the same non-stick pan. Transfer on to the same plate and allow to cool. 3. Similarly, dry roast white sesame till they pop in the same pan. Transfer on the same plate and allow to cool. 4. Dry roast cumin seeds and fenugreek seeds for 1 minute in the same non-stick pan. Transfer on the same plate and allow to cool. 5. Heat oil in the same non-stick pan. Add dried red chillies and sauté for a minute. Add garlic cloves and curry leaves and continue to sauté for 1-2 minutes. Transfer on the same plate and allow to cool. 6. Transfer the roasted spices in a mixer jar. Add sea salt and rock asafoetida and grind to a coarse powder. This is podi. 7. Transfer the podi into an air tight container. Allow it to cool to room temperature before covering it with a lid. 8. Serve with idli and sesame oil. BIHARI MALPUA Ingredients 1 cup refined flour (maida) 2 tbsps semolina 1½ tbsps + ¾ cup sugar 1 tsp coarsely crushed fennel seeds ¼ tsp green cardamom powder ¼ cup full fat milk 2 tbsps grated dried coconut Ghee for shallow frying Slivered almonds for garnish Blanched and slivered pistachios for garnish Method 1. Take refined flour in a bowl. Add semolina, 1½ tbsps sugar, fennel seeds, green cardamom powder, milk and mix well. 2. Add ¾ cup water and mix well. Add dried coconut and mix. Set aside for 30 minutes. 3. For syrup, heat a nonstick pan, add sugar, ½ cup water and mix well. Cook till the syrup reaches 1 string consistency. Set aside. 4. Heat sufficient ghee in shallow wide pan. Pour small ladleful of batter at distance and shallow fry till golden brown and crisp. 5. Drain and soak in warm sugar syrup for 15-20 minutes. 6. Drain and transfer on serving plate, sprinkle almonds, pistachios and serve. CARROTS AND BEANS PORIYAL Ingredients 2 small carrots, cut into ½ inch cubes 10-12 Frenchbeans, cut into ½ inch cube Salt to taste ¼ tsp turmeric powder 2 tbsps coconut oil 1 tsp Bengal gram (chana dal) 1 tsp spilt skinless black gram (dhuli urad dal) 1 tsp mustard seeds 10-12 curry leaves 2 dried red chillies, broken ¼ tsp asafoetida (hing) 1 medium onion, chopped ¼ cup scraped fresh coconut Method 1. Bring 1 cup water to a boil in a non-stick shallow pan. Add salt and turmeric powder and mix well. Add French beans, carrots, mix, and cook for 8-10 minutes on a medium heat. 2. Heat coconut oil in another non-stick pan, add Bengal gram, spilt skinless black gram and roast for a minute. Add mustard seeds and let them splutter. 3. Add curry leaves, dried red chillies, and asafoetida and sauté for a few seconds. 4. Add onion and sauté till translucent. Add the cooked carrot and beans and mix well. 5. Add fresh coconut, salt and mix well .Transfer in a serving bowl and serve hot. पालक कटलेट | Palak Cutlet | Sanjeev Kapoor Khazana

PALAK CUTLET Ingredients 1 medium bunch of spinach (palak), blanched and drained 2 green chillies, stemmed and broken ½ inch ginger 3 medium potatoes, boiled, peeled and mashed ½ tsp garam masala powder Salt to taste 1 cup fresh breadcrumbs Oil for greasing + for shallow frying Tomato ketchup to serve Method 1. Coarsely grind together blanched spinach, green chillies and ginger in a mixer without using any water. Transfer this into a large bowl. 2. Add potatoes, garam masala powder and salt and mix till well combined. Add fresh breadcrumbs and mix well. 3. Grease your hands with some oil and take a small portion of the mixture and shape it like a ball. Slightly flatten to shape it like a cutlet. 4. Heat sufficient oil in a non-stick shallow pan. Slide in the cutlets and shallow fry till golden brown and crisp. Drain on an absorbent paper. 5. Serve hot with tomato ketchup. LACHCHA ALOO PAKODA Ingredients 4 medium wafer potatoes, peeled 2 tbsps rice flour 1½ tbsps corn flour 1 tsp red chilli powder ½ tsp turmeric powder Salt to taste ½ tsp carom seeds (ajwain) 1 cup gram flour (besan) Oil for deep frying Green chutney to serve Tomato ketchup to serve Method 1. Thickly grate the wafer potatoes and transfer it into a large bowl filled with water. Rinse it thoroughly. Drain the grated potatoes and add into another large bowl. 2. Add rice flour, corn flour, red chili powder, turmeric powder, salt, carom seeds and gram flour and mix till well combined. 3. Heat sufficient oil in a kadai. Gently slide in small portions of the mixture into the hot oil and deep fry on medium heat till golden brown and crisp. Drain on an absorbent paper. 4. Serve hot with green chutney and tomato ketchup. CHATPATA MAKHANA Ingredients 4 cups puffed lotus seeds (makhana) 3 tsps ghee ½ tsp red chilli powder ½ tsp chaat masala Salt to taste Method 1. Dry roast makhana for 6-8 minutes or till they turn crisp in a non-stick kadai. Transfer it in a bowl. 2. Heat ghee on low heat in the same non-stick kadai. Add red chilli powder, chaat masala and salt and sauté for 30 seconds. 3. Add the roasted makhana and mix well. Continue to sauté on low heat for 5-6 minutes. 4. Take the kadai off the heat and allow the makhana to cool to room temperature. Store in an air tight container and use as required. EGGLESS GULKAND PAAN TEACAKE Ingredients 2 small betel leaves (paan) ½ cup whisked yogurt ½ cup castor sugar 6 tbsps oil ¼ cup gulkand ¼ cup scraped fresh coconut ¼ tsp green cardamom powder ¼ tsp sugar coated fennel seeds powder 2-3 shredded betel leaves 2 tbsps dried rose petals + for garnish ¾ cup refined flour (maida) + for dusting ½ tsp baking powder ½ tsp baking soda A pinch of salt 1 tbsp chopped mixed colored (green and orange) tutti fruity + for garnish 1 tbsp rose water Ready-made sugar green cardamom glaze as required Method 1. Preheat the oven at 180ºC. 2. Lightly roast the betel leaves on direct flame for a few seconds on each side. 3. Roll the roasted betel leaves and finely shred them. 4. Take whisked yogurt in a large bowl, add castor sugar, and whisk till well combined. 5. Add half of the oil and whisk well. Add the remaining oil and whisk again till the mixture is well combined. 6. Add gulkand, fresh coconut, green cardamom powder, sugar coated fennel seed powder, shredded betel leaves, and dried rose petals and whisk well. 7. Sift the refined flour, baking powder, baking soda, and a pinch of salt directly into the bowl. Gently fold the mixture till it forms a lump free batter. 8. Add chopped tutti fruity and rose water and fold again. 9. Grease a 4 inch round cake tin with butter and dust with some refined flour all sides. 10. Transfer the batter into the greased cake tin till it is ¾ filled. Gently tap a couple of times, and place it in the preheated oven; and bake for 40-45 minutes. 11. Remove the cake from the oven and allow to cool completely. De-mould the cake and place it on a plate. Pour the sugar glaze over it and let it set. 12. Garnish with chopped tutti fruity and dried rose petals. Cut into wedges and serve.
