Phalgam, is a gem of a place, full of fresh air. So, to appreciate the nature and relax from the daily hustle and bustle, I went on a stroll in the woods. There, I was reminded me of the sacred, exclusive and less known, Kashmiri morels Gucchi, a treasure, which can be found here in Kashmir’s wilderness. Its conical body, covered with pits and crumples like a honeycomb and of course a stem, makes it look just like a mushroom. Unlike Truffle, Morels are not so popular, one reason being it cannot be cultivated, it grows wild so people hunt for it and that explains why it is so expensive. I thought to myself, it’s not in season, so I won’t find one right now, but there is always a backup. I got my hands on the dried Gucchi at the ITC hotel and with it, I went down the memory lane. There is so much that can be done with it as it is so earthy and full of flavours. Gucchi Pulav, wow heaven on earth, just like Kashmir.
