Making of traditional Stone Mortars | Sanjeev Kapoor Khazana

On my way to Pahalgam, exploring and getting to know new people, recipes and traditions, I thought to myself, in the world full of technology, every other day we use electronic appliances, but personally, being a chef, I have always preferred our traditional, organic appliances like Sil batta or stone Mortars to make chutneys, masalas etc. Indian cooking includes a lot of grinding and the flavour profile that you can derive by using stone mortars is just next level. In my mind I recollected the mint chutney that I made the other day, beautiful textures, aroma, the fresh colours, just so pure and perfect. And suddenly, my driver interrupted me, to show me a place full of stones. To my delight it was the place where stone masons were working to precision, carving out and shaping the hard stone into essential kitchen tools for us chefs to use. Was my driver able to read my mind? I don’t know, I immediately asked him to park the car aside, so that I could experience it all. The rhythm of striking stone was music to my ears, so I went on for a stroll, only to be amazed. With every stroke of the chisel and hammer, it felt like those artists were literally converting stones into gems. The thought of such traditional tools becoming a part of mere history worried me. But I strongly believe this tradition needs to be preserved and so I will always continue to support and promote it.
