लेमन ब्राउन राइस | Lemon Brown Rice | Sanjeev Kapoor Khazana

A traditional south Indian recipe made using brown rice. The unique texture of this recipe and the flavours make it a crowd-pleaser. LEMON BROWN RICE Ingredients 1 tbsp lemon juice 1½ cups Daawat Quick Cooking Brown Basmati Rice Salt to taste ½ tsp turmeric powder 2 tbsps coconut oil 1½ tsps split Bengal gram (chana dal) 1 tsp split skinless black gram (dhuli urad dal) ½ tsp asafoetida (hing) 1 tsp mustard seeds 4 dried red chilllies, stemmed ½ cup raw peanuts 2 sprigs of curry leaves Salt to taste Chopped fresh coriander leaves to sprinkle Fried popdums for serving Method 1. Take Daawat Quick Cooking Brown Basmati Rice in a bowl and wash thoroughly2-3 times. Add sufficient water and soak for 30 minutes. Drain the water. 2. Heat sufficient water in a deep nonstick pan. Add salt, turmeric powder, drained rice and cook for 15 minutes. Drain the water and set aside. 3. Heat coconut oil in a nonstick pan. Add chana dal and sauté for a few seconds. 4. Add urad dal, hing, mustard seeds and once they start to splutter, add dried red chillies, peanuts, curry leaves and sauté for 1 minute. 5. Add the cooked rice, salt and mix well. Cook for 2-3 minutes. 6. Switch off the heat, sprinkle lemon juice and mix well. 7. Transfer in a serving plate, sprinkle coriander and serve hot with fried popdums.
