Ragi Neer Dosa | #MilletKhazana | Sanjeev Kapoor Khazana
Ragi Neer Dosa offers a wholesome and gluten-free choice for those looking to incorporate millets into their diet. RAGI NEER DOSA Ingredients ½ cup finger millet (ragi) flour 1¼ cups short-grain rice ½ cup scraped fresh coconut Salt to taste Oil for greasing + for drizzling Chutney 1 cup scraped fresh coconut ¼ cup fresh coriander leaves 2 green chillies 2 garlic cloves Salt to taste Tempering 1 tbsp oil 1 tsp mustard seeds ½ tsp split skinless black gram (dhuli urad dal) A pinch of asafoetida (hing) 2 dried red chillies, broken 8-10 curry leaves Method 1. Wash rice with sufficient water for 1-2 times, add sufficient water and soak for 3-4 hours. 2. Drain the rice and put into a blender jar, add coconut, finger millet flour and 2 cups water and blend to a fine paste. 3. Transfer this paste into a large bowl, add 1 cup water, salt and mix well. 4. Heat a non-stick pan and grease it with oil. Pour a ladleful of batter, swirl if required to make a thin disc and discard the excess into an empty bowl. Drizzle oil on the sides, cover and cook from one side for 1-2 minutes. Fold into a triangle and arrange on a plate. 5. To make chutney, put coconut in a blender jar, add coriander leaves, green chillies, garlic, salt and ¼ cup water and blend to a smooth paste. 6. To make the tempering, heat oil in a non-stick pan, add mustard seeds and let them splutter. 7. Add split skinless black gram, asafoetida, dried red chillies and curry leaves and saute for a few seconds and take the pan off the heat. 8. Pour the tempering over chutney and mix. 9. Serve ragi neer dosa with prepared chutney. Mutton pickle offers a perfect balance of spice, tang and meaty goodness. It can be enjoyed as a side dish or accompaniment to meals, adding a burst of flavors to rice, roti, or bread. MUTTON PICKLE Ingredients 500 gms boneless mutton, cut into small pieces and pressure-cooked with salt 3-4 tbsps oil + for deep-frying 2-3 dried red chillies 2 tsps mustard seeds 18-20 curry leaves 5-6 cloves 2 inch ginger, sliced ½ tsp turmeric powder 1 tbsp cumin powder 1 tbsp mustard powder Salt to taste 1 tbsp + 2 tsps red chilli powder Juice of 1 lemon ¼ cup vinegar Method 1. Heat sufficient oil in a kadai. Heat 3-4 tbsps oil in a non-stick pan. 2. Roughly chop dried red chillies. Add mustard seeds, curry leaves, cloves and ginger to the pan and mix well. Add red chillies and mix well. Add turmeric powder and mix again. Switch off the heat, cool down the mixture to room temperature and add cumin powder, mustard powder, salt and 1 tbsp red chilli powder and mix well. 3. Deep-fry the mutton pieces in hot oil till crisp. 4. Drain and add the mutton pieces to the pan and mix well. Adjust salt and add remaining red chilli powder and mix well. 5. Take out 2-3 ladles full of hot oil from the kadai and add to the pan and mix well. Cool down the mixture to room temperature. Add lemon juice and vinegar and mix well. 6. Transfer the mutton pickle into a sterilized bottle and pour another 1-2 ladles full of hot oil from the kadai on top. Screw on the lid and store. 7. Serve as required. Varicha Dosa, also known as Samo Dosa or Vrat Dosa is a popular healthy version of Dosa made from Samo seeds, also called barnyard millet. It is a versatile and gluten-free dish commonly prepared during fasting periods or as a light and nutritious meal option VARICHA DOSA Ingredients 1 cup barnyard millet (vari / samo), soaked for 4-5 hours and drained 1 cup yogurt 2 tbsps sago (sabudana), soaked for 4-5 hours and drained Rock salt (sendha namak) to taste Ghee for drizzling Coconut chutney to serve Method 1. Put soaked vari in a mixer jar. Add yogurt, sabudana and rock salt and grind to a smooth mixture. 2. Heat a non-stick tawa. 3. Each slice of Mango Chocolate Marble Cake offers a harmonious blend of the fruity mango and decadent chocolate flavors, making it a delightful treat for mango and chocolate lovers alike. It can be enjoyed as a dessert or as a special treat for any occasion. MANGO CHOCOLATE MARBLE CAKE Ingredients 2 tbsps mango pulp 2-3 tbsps cocoa powder 2 cups refined flour 1 tsp baking powder ½ tsp baking soda A pinch of salt 1 cup yogurt 1 cup sugar ¾ cup oil 1½ cups milk ½ tsp vanilla essence Melted mango jam as required Method 1. Preheat the oven at 180°C. 2. Take refined flour in a bowl. Add baking powder, baking soda, salt, yogurt, sugar, oil, milk and whisk well. 3. Divide the batter into 2 equal portions. 4. Add cocoa powder and vanilla essence to 1 portion and mango pulp to other portion. 5. Take a silicon loaf mould and pour the mango batter at the base. Pour chocolate batter on top and swirl with a toothpick to give marbled effect. 6. Bake in preheated oven for 25-30 minutes. 7. Allow to cool and de-mould. Drizzle melted mango jam, slice and serve. RAJGIRA CHIKKI Ingredients 1½ tbsps coconut oil 1 cup chopped jaggery A pinch of senda namak 1 cup puffed rajgira A pinch of green cardamom powder ¼ cup slivered mixed nuts Method 1. Heat coconut oil in a non-stick pan, add jaggery and senda namak and mix till the jaggery melts. 2. Add puffed rajgira and green cardamom powder and mixed nuts and mix till well combined. Take the pan off the heat. 3. Transfer the mixture into a greased burfi tray and spread it evenly. Keep aside for 5-10 minutes. Cut into squares and set aside to cool completely. 4. A drink that lives up to its name! Jigarthanda, which literally translates to "Cool Heart", is a refreshing and decadent drink from the South Indian city of Madurai. Try this delicious recipe to stay refreshed all summer long. JIGARTHANDA Ingredients 4-5 edible almond gum resin (badam pisin) 2 tbsps dried nannari roots 8-10 cups full fat milk 3½ cups sugar Method 1. Take ½ cup water in a bowl. Add edible almond gum resin and set aside to soak for 6-8 hours. 2. Coarsely crush dried nannari roots and discard the hard stem pieces. Transfer in a large bowl. Add 3-4 cups water, mix and set aside to soak for 6-8 hours. Strain the mixture through a muslin cloth. 3. Heat milk in a wide non-stick pan. Cook till it comes to a boil. 4. Meanwhile, to make caramel syrup, heat 2 cups sugar in a pan. Cook till the sugar melts and starts to caramelize. Once the sugar is completely melted and turns dark golden, add ½ cup hot water. Cook for 2-3 minutes. Allow to cool completely. 5. Once the milk has come to a boil, reduce the heat to low and continue to cook till the milk reduces to half while stirring in between. Scrape the sides of the pan. 6. Add ¾ of the cooled caramel syrup into the milk and mix well. 7. Switch the heat off, transfer 3-4 cups of the mixture into a bowl and allow to cool completely. Transfer the remaining mixture into an air tight container, cover with a lid and freeze for 6-8 hours. 8. To make nannari syrup, heat the strained nannari mixture in another pan. Cook till it comes to a boil. Add remaining sugar and mix well. Cook till the sugar melts and the mixture thickens. Switch the heat off and allow the mixture to cool completely. 9. To make a potion, add 1-2 tbsps of the soaked edible almond gum resin, add 1-2 tbsps nannari syrup, add a portion of the chilled reduced milk mixture, and top it up with 1 scoop of the ice cream. Drizzle some sugar syrup on top. Serve immediately. Jowar Soya Chaap Tacos are a unique twist on the traditional taco, combining the goodness of jowar (sorghum) flour and protein-rich soya chaap. These tacos are a delicious and nutritious alternative if you're looking for gluten-free or vegetarian options. JOWAR SOYA CHAAP TACOS Ingredients Kolhapuri Soya Chaap 200 grams soya chaap, cut into 1 inch pieces 4 tbsps oil 2 medium onions, sliced 5-6 garlic cloves 1 inch ginger, roughly chopped 6-8 black peppercorns 2-3 cloves 2 green cardamoms 1 tsp fennel seeds 1 ½ tbsps white sesame seeds 2 tbsps coriander seeds ½ inch cinnamon stick ½ cup grated dried coconut 2 medium onions, chopped 1 tsp red chilli powder ¼ tsp turmeric powder 1 tbsp kanda lasun masala Salt to taste 2 tbsps chopped fresh coriander leaves Bhakri 1 cup sorghum (jowar) flour + for dusting Salt to taste A few drops of oil To assemble Assorted lettuce leaves as required Thick yogurt as required Green chutney as required Green cucumber slices as required Red radish slices as required Method 1. For the soya chaap, heat 2 tbsps oil in a shallow nonstick pan. Add onions, garlic, ginger and sauté till onions are translucent. 2. Add black peppercorns, cloves, green cardamoms, fennel seeds, white sesame seeds, coriander seeds, cinnamon and coconut and sauté till the coconut turns golden brown. 3. Allow to cool and transfer in a blender jar. Add 1 cup water and grind to a fine paste. 4. Heat remaining oil in a nonstick pan. Add chopped onions and sauté till golden brown. 5. Add the ground paste and sauté for 3-4 minutes on medium heat. 6. Add red chilli powder, turmeric powder, kanda lasun masala and salt and mix well. Add ¼ cup water and mix well. Cook for 2-3 minutes on medium heat. 7. Add soya chaap, coriander leaves and mix well. Add ¼ cup water and mix well. Cover and cook for 2-3 minutes. 8. For bhakri, Heat a nonstick pan. Add 1 cup water, salt and oil and allow to come to a boil. Add sorghum flour and mix well. Cover and cook for 1-2 minutes. 9. Transfer in a parat and knead well. Divide the dough into equal portions and roll into balls. Dust some sorghum flour on the surface and roll out into thin disks. 10. Heat a nonstick tawa. Place the prepared bhakri and cook for a minute on medium heat. Flip, drizzle oil and cook on other side for a minute. 11. Place a bhakri on the serving plate, place some lettuce leaves and place a portion of the stuffing and pipe some thick yogurt on top. Nimboo Adrak Pani | नींबू अदरक पानी | #BeatTheHeat | Summer Coolers | Sanjeev Kapoor Khazana
Nimbu Adrak Pani, also known as Lemon Ginger Water, combines the zesty flavor of lemons with the warming essence of ginger. Often served chilled or with ice cubes, it is the perfect thirst-quencher for hot summer days. NIMBOO ADRAK PANI Ingredients 2 lemons 1 tbsp lemon juice 1 inch ginger piece 2 tbsps cumin seeds A few fresh mint leaves Salt to taste Black salt to taste Ice cubes as required Method 1. Dry roast cumin seeds till dark brown and fragrant. 2. Slice ginger. Halve 2 lemons and remove seeds and quarter each half. 3. Put ginger and fresh mint leaves in a mortar and crush with a pestle. Put this mixture into a cocktail shaker. 4. Similarly crush 3-4 lemon pieces and add to the shaker. Squeeze the juice of the remaining lemon pieces into the shaker. Add another 1 tbsp lemon juice, salt and black salt. 5. Cool cumin seeds and crush in a clear mortar and pestle. Add ¾ tsp of crushed cumin seeds into the shaker along with a few ice cubes and ¼ cup water and shake well. 6. Strain into serving glasses, add a few of the crushed lemon pieces. 7. Fill up the glasses with drinking soda, stir well and serve immediately. Mango Mint Raita is a refreshing and tangy yogurt-based side dish that combines the sweetness of mangoes with the coolness of mint. It pairs wonderfully with dishes like biryani, kebabs, or parathas. MANGO MINT RAITA Ingredients 1 ripe Alphanso mango, peeled ½ cup fresh mint leaves 1½ cups yogurt, chilled 1 green chilli Salt to taste Black salt to taste Crushed red chillies for sprinkling Method 1. Roughly chop green chilli and mint leaves. 2. Slice the mango and discard the seed. Roughly chop 2 mango slices and place in a blender jar with green chilli and mint leaves and blend well. Add 1 tbsp water and blend again into a fine paste. 3. Roughly chop remaining mango slices for garnishing. 4. Put yogurt in a bowl. Add ground paste, salt and black salt and mix well. 5. Transfer into individual serving bowls, top with chopped mangoes, sprinkle crushed red chillies and serve chilled. Looking for a healthier alternative to parathas? Try this wholesome and nutritious Rajgira Paratha made with rajgira (amaranth) flour. RAJGIRA PARATHA Ingredients 1 cup rajgira flour ½ cup whole wheat flour ½ tsp ginger-green chilli paste 1 tsp cumin seeds ½ tsp red chilli powder Salt to taste ½ tsp lemon juice 3½ tsps ghee 1 medium potatoboiled and peeled 1 tbsp chopped fresh coriander leaves Oil for applying Yogurt to serve Method 1. Take rajgira flour, whole wheat flour, ginger-green chilli paste, cumin seeds, red chilli powder, salt, lemon juice and 1½ tsps ghee. Mash and add potato. Mix well. Add sufficient water and knead to mediumsoft dough. Add coriander and mix well. Knead again. 2. Applyoil on both sides of a plastic sheet. 3. Divide the dough into medium equal portions. Place a portion on the sheet, cover with top sheet and flatten the portion to a thin disc. 4. Heat a non-stick tawa, place a rolled dough and cook on medium heat till brown specs appear on both the sides. 5. Apply 1 tsp ghee on one side, cook for a minute,turnover, apply remaining ghee and cook on medium heat for 1-2 minute. 6. Serve hot with yogurt. Eggless Mango Pudding | Mango Fudge | Sanjeev Kapoor Khazana
Dive into the creamy decadence of eggless Mango Pudding and Mango Fudge, desserts that capture the essence of summer in every spoonful. EGGLESS MANGO PUDDING Ingredients 2 ripe Alphanso mangoes ¼ cup sugar ¼ cup corn flour 1½ cups milk A pinch of salt 1 lemon wedge Chopped ripe mangoes for garnish Fresh mint sprigs for garnish Method 1. Peel the Alphanso mangoes. Roughly chop them and transfer in a blender jar. Add sugar and blend to a fine paste. 2. Take corn flour in a bowl, add ½ cup milk and mix till well combined. 3. Heat a deep pan, add the blended paste and remaining milk, mix and cook till the mixture comes to a boil. Add salt and the corn flour-milk mixture and continuously mix and cook for 2-3 minutes or till the mixture thickens. Switch the heat off. 4. Squeeze the juice of lemon and mix well. Transfer the mixture into individual moulds and allow the mixture to cool completely. 5. Place the moulds in the refrigerator for 5-6 hours or till set completely. 6. Gently de-mould the pudding on to individual serving plates. Garnish with chopped mangoes and mint sprigs. Serve immediately. MANGO FUDGE Ingredients ¾ cup fresh ripe mango pulp 3-4 tbsps unsalted butter 1 cup condensed milk ¾ cup grated khoya/mawa Ghee for greasing Large pinch of green cardamom powder Slivered almonds for garnish Slivered pistachios for garnish Method 1. Grease a barfi tray with some ghee. 2. Heat butter in a non-stick pan. Add mango pulp and cook for 5-6 minutes, stirring continuously. Add condensed milk and cook for 5-6 minutes, stirring continuously. 3. Add khoya/mawa, mix and cook till it melts. Add cardamom powder and mix well. 4. Pour the mixture into the greased tray and top with slivered almonds and pistachios. Set aside till it cools down and sets.Serve. Experience the wholesome goodness of #MilletKhazana Multigrain Kadbole! This crunchy and nutritious snack combines various millets and spices, providing essential nutrients for an energizing guilt-free snacking experience. MULTIGRAIN KADBOLI Ingredients ½ cup finger millet flour (ragi ka atta) ½ cup amaranth flour (rajgira ka atta) ½ cup sorghum flour (jowar ka atta) ½ cup pearl millet flour (bajra ka atta) ¼ cup split skinless black gram flour (dhuli urad dal ka atta) ¼ cup split skinless green gram flour (dhuli moong dal ka atta) Salt to taste ½ tsp red chilli powder ½ tsp turmeric powder ¾ tsp asafoetida (hing) ¾ tsp carom seeds (ajwain) 2 tsps white sesame seeds 1 tbsp oil + for drizzling + for deep frying Method 1. Heat 2½ cups water in a deep pan. Add salt, red chilli powder, turmeric powder, asafoetida, carom seeds, white sesame seeds, and 1 tbsp oil. Mix and cook till the mixture comes to a boil. 2. Add finger millet flour, amaranth flour, sorghum flour, pearl millet flour, split skinless black gram flour, split skinless green gram flour and mix till a dough is formed. Switch the heat off, cover and set aside for 2-3 minutes. 3. Transfer the dough in a parat. Drizzle a little oil and knead with the help of the back of a bowl. Continue to knead while the dough is still hot. Once the dough cools down slightly, dip your palm in water and continue kneading till a soft and smooth dough is formed. Keep the dough covered with a damp muslin cloth. 4. Grease your fingers with some oil. Take small portions of the dough and shape each portion into a long log. Further fold the log into a spiral shaped kadbole. 5. Heat sufficient oil in a kadai. Gently slide in the kadbole a few at a time and deep fry on low to medium heat till golden brown and crisp. Drain on an absorbent paper. 6. Allow them to cool to room temperature. Serve or store in an air tight container. Blend together chopped mangoes, lemon juice, chilli powder and salt with some water to a smooth mixture. 2. Add castor sugar and some water and blend again. Add mango flesh and mix well. 3. MANGO CREAM Ingredients 1½ cups fresh ripe mango pulp 1 large ripe mango, peeled and chopped 4-5 tablespoons fresh cream 4-5 scoops vanilla ice cream 6-7 tablespoons powdered sugar A pinch green cardamom powder Whipped cream for topping Fresh mint sprigs for garnishing Method 1. Blend together mango pulp, cream, ice cream, powdered sugar and cardamom powder to a smooth mixture. 2. Pour this mixture equally into 4 serving glasses. 3. Take whipped cream in a piping bag fitted with a star nozzle and pipe the cream over the mango cream in each glass and put some chopped mango around the cream. 4. INSTANT BAJRA UTTAPPAM Ingredients ¾ cup pearl millet (bajra) flour ½ cup semolina (suji) 1 cup yogurt 1 medium onion, finely chopped 2 tablespoons finely chopped green capsicum 1 teaspoon finely chopped ginger 2 green chillies, finely chopped Salt to taste 1 teaspoon mustard seeds 1 teaspoon cumin seeds (jeera) 6-8 curry leaves 1 teaspoon baking soda Oil as required Method 1. Mix together pearl millet flour, semolina and yogurt in a bowl. 2. Add onion, capsicum, ginger, green chillies, salt, mustard seeds and cumin seeds with some water. Add curry leaves and baking soda, mix well and rest for 5 minutes. 3. Heat some oil on a non-stick tawa. Pour a ladleful of batter on it, spread into an uttappam and cook till evenly done from both the sides. 4. Serve hot with green coconut chutney. 🌞 Sip on this purple delight and let the summer breeze refresh your taste buds with with the tangy twist of Jamun Syrup. JAMUN SYRUP Ingredients 1 ½ cups Jawa plump (jamun), deseeded 2 cups water ½ cup sugar 1 lemon, halved Salt to taste Method 1. Heat a pan, add jamun, water and simmer for 7-10 minutes, gently mashing the jamuns. 2. Add sugar and continue to simmer, switch off the heat, add the juice of half a lemon, salt to taste and stir. 3. Set aside the mixture and allow to cool. 4. Pour the mixture into a blender jar and blend to a fine consistency. 5. Strain mixture through a fine strainer. 6. Store in an air tight container, use as required. 7. To make the jamun fizz, add to 2 tbsps of the prepaid syrup add black salt top up with chilled soda garnish with a few mint leaves and serve. Chill out with our refreshing Kesar Chandan Syrup and beat the heat in a cool way! KESAR CHANDAN SYRUP Ingredients 2 large pinches of saffron (kesar) ¼ cup edible sandalwood (chandan) powder 1 cup sugar 1 tbsp lemon juice ¼ tsp green cardamom powder Ice cubes as required Method 1. Combine together edible sandalwood powder and ¼ cup water in a bowl. 2. Heat a non-stick pan. Add saffron strands and dry roast for 30 seconds. 3. Add 2 cups water, and mix well. Cook ill the mixture has reduced to half. 4. Take the pan off the heat. 5. Heat another non-stick pan. Add sugar and 1 cup water and mix well. Cook till the sugar melts. 6. Add lemon juice, mix and cook for 1-2 minutes. 7. Discard the scum that forms on the surface of the mixture. Cook till the mixture reaches soft ball consistency. 8. Strain the sugar syrup in the saffron mixture and place the pan back on heat and cook for 4-5 minutes. Add green cardamom powder and mix well. 9. Continue to cook till the mixture thickens slightly. Take the pan off the heat and allow the mixture to cool completely. 10. Add the sandalwood mixture and mix well. Transfer this into a glass bottle or an air tight container. This is the kesar chandan syrup. 11. To serve, add 2-3 tbsps of the syrup into a serving glass. Add ice cubes, and top it up with water and mix till well combined. Indulge in the tangy explosion of flavors with Mixed Vegetable Pickle 🥕 MIXED VEGETABLE PICKLE Ingredients 1 medium cauliflower, cut into small florets ⅔ cup green peas 18-20 French beans, stringed and cut into 1 inch pieces 4 medium carrots, peeled and cut into small pieces 1 cup mustard oil 2 teaspoons mustard seeds 3 tablespoons split mustard seeds (rai ka dal) 1 teaspoon asafoetida 1 teaspoon turmeric powder 5 teaspoons red chilli powder 3½ teaspoons salt ¼ teaspoon fenugreek seeds (methi dana) 2½ tablespoons vinegar Method 1. Heat mustard oil in a non-stick pan till it smokes. Add mustard seeds and sauté till they splutter. 2. Add split mustard seeds and switch off the heat. Add asafoetida, turmeric powder, chilli powder and salt and mix well. Remove from heat and set aside to cool. 3. Dry roast fenugreek seeds till fragrant and crush coarsely in a mortar with a pestle. 4. Put vegetables in a bowl. Add crushed fenugreek seeds, spiced oil and vinegar. Mix well, cover tightly with a muslin cloth and set aside for 2 days to mature. 5. Serve or store in airtight container. Spice up your taste buds with the irresistible Mangolicious Mango Chilli Sauce🌶️ MANGO CHILLI SAUCE Ingredients 1¼ cups mango puree 1 fresh red chilli, finely chopped 1 green chilli, finely chopped ½ tsp red chilli flakes 1 tbsp oil ½ tbsp finely chopped garlic 1 tsp finely chopped celery 2 tbsps castor sugar Salt to taste Method 1. Heat oil in a non-stick pan. Add garlic and celery and mix well. Cook for 1 minute. 2. Add red chilli and green chilli and mix well. Cook for 30 seconds. 3. Add mango puree and mix. Add the red chilli flakes and castor sugar and mix well. Cook for 1-2 minutes. 4. Add salt and mix. Cook for 2-3 minutes. Switch the heat off, add vinegar and mix. 5. Transfer the mixture into a serving jar. Allow to cool completely. Serve. COLD MANGO SOUP Ingredients 1 ripe mango, peeled 2 large cucumbers, peeled 1 garlic clove 4-5 fresh basil leaves 2 pickled jalapenos Salt to taste 1 cup orange juice 1 roasted red capsicum, peeled 1 roasted yellow capsicum, peeled 2 tsps drained sweet corn kernels Few sprigs of fresh coriander leaves ½ lemon Method 1. Quarter the cucumbers vertically, remove seeds and cut into large pieces. 2. Cut mango roughly and put into a mixer jar. Add cucumber, garlic, 4 torn basil leaves, pickled jalapenos, salt and orange juice and grind till smooth. 3. Chop roasted capsicum and put into a bowl. Add drained corn. Chop fresh coriander leaves and add to the bowl and mix. 4. Add juice of ½ lemon to the mango mixture and mix well. Transfer into a bowl and chill. 5. Arrange a large basil leaf and sweet corn-capsicum mixture on one side of the soup bowl, pour the soup around and serve chilled. Saunf ka Sherbat | Basil Iced Tea | Summer Coolers | #BeatTheHeat | Sanjeev Kapoor Khazana
Saunf ka Sherbat, Basil Iced Tea - Refreshes and revitalises with every sip. SAUNF KA SHERBAT Ingredients ½ cup fennel seeds (saunf) 2 green cardamoms 2 cloves 6- 8 black peppercorns ½ inch cinnamon stick 1 tbsp poppy seeds (khas khas) 1 tbsp cumin seeds 10-15 fresh mint leaves 2 tbsps sugar ½ tsp black salt ½ tsp salt Ice cubes as required Method 1. Dry roast fennel seeds, green cardamoms, cloves, black peppercorns, cinnamon stick, poppy seeds and mint leaves in a non-stick pan till fragrant. Transfer in a bowl and allow to cool. 2. Dry roast the mint leaves in the same pan on low heat for 1-2 minutes. Transfer into the same bowl and allow to cool. 3. Add sugar, black salt and salt and mix till well combined. Put this mixture into a blender jar and blend to a fine powder. 4. To serve, add 1-2 tbsps of the blended powder in serving glasses. Add ice cubes and pour sufficient water. Mix and serve immediately. BASIL ICED TEA Ingredients 5-6 fresh basil leaves + to serve 1½ tsps tea leaves 4 tbsps castor sugar 1-2 tbsps lemon juice 1 lemon Ice cubes as required Method 1. Heat water in a deep pan. Add castor sugar and let it melt. 2. Add tea leaves and let it come to a boil. Strain the mixture into a large jar. Add lemon juice and tear a few basil leaves and add into the tea. Mix well and set aside to cool. 3. Cut the lemon into medium slices. 4. To serve, add a few basil leaves into serving glasses. Add a few lemon slices. Add ice cubes, add a few lemon slices and a few basil leaves. Add a few more ice cubes and strain the prepared iced tea into it. Serve immediately. Keep your stomach light during sultry days with this flavourful Smashed Cucumber Salad and the refreshing Cucumber Lemon Cooler combo. SMASHED CUCUMBER SALAD Ingredients 2-3 medium English cucumbers Salt to taste 1 tbsp dark soy sauce 1 tsp garlic paste 1 tsp castor sugar 2 tsps red chilli oil 1 tbsp rice wine vinegar 1 tbsp sesame oil 1 tbsp toasted white sesame seeds Method 1. Smash the English cucumbers with the back of a knife and diagonally slice them. Transfer in a large bowl, add salt and mix well. Set aside for 5-10 minutes. 2. To make the dressing, combine together dark soy sauce, garlic paste, castor sugar, red chilli oil, and rice wine vinegar in a bowl. 3. Add the dressing into the cucumber mixture and mix well. Add sesame oil and toasted white sesame seeds and mix well. 4. Transfer on a serving plate. Serve. CUCUMBER LEMON COOLER Ingredients 4 medium green cucumbers 2 lemons 2 inch ginger 3 green chillies Black salt to taste Ice cubes as required Mint leaves as required Fizzy lemon drink as required Method 1. Slice ½ green cucumber thinly. Chop the rest and add to the blender jar. 2. Add ginger, green chillies and squeeze lemon. Add black salt and blend finely. 3. Add the sliced cucumbers in individual glasses, add ice cubes and some more ice cubes. 4. Add mint leaves, some more ice cubes and some more cucumber slices. 5. Pour the prepared drink over and top up with fizzy lemon drink. 6. Serve chilled. AAM RAS Ingredients 4 medium mangoes 2 tablespoons powdered sugar ½ teaspoon green cardamom powder ¼ teaspoon nutmeg powder Puris for serving Method 1. Roll the mangoes on the worktop and press to loosen the flesh inside. 2. Remove the eye of each mango, squeeze out the pulp in a bowl and discard the skin and the seed. 3. Add powdered sugar, cardamom powder and nutmeg powder to the mango pulp and whisk till smooth. 4. Serve with hot puris. MANGO ICED TEA Ingredients 1½ tablespoons concentrated mango powder 1 large ripe mango, peeled and finely chopped 4 teaspoons tea powder 2-3 tablespoons castor sugar ½ teaspoon cinnamon powder Ice cubes as required 2 lemons, thinly sliced Method 1. Heat 4 cups water in a deep non-stick pan. Add tea powder and castor sugar, mix well and let the tea brew. 2. Strain the tea in a glass jug. Add some water, mango powder and cinnamon powder and mix well. 3. Put some chopped mangoes into individual mason jars. Add some ice cubes, 2-3 lemon slices and pour the tea mixture. Add some more chopped mangoes. 4. Garnish with a lemon slice and serve chilled. MANGO JUICE Ingredients 2 ripe mangoes, peeled and chopped 1 raw mango, peeled and chopped ½ cup sugar Method 1. Heat a nonstick pan, add sugar, 1 cup water and cook until the sugar is dissolved 2. In a pressure cooker, add ripe mangoes, raw mangoes, 2 cups water and mix well. Cover and pressure cook until 4-5 whistles. Release the pressure and open the lid. 3. Blend the mixture using a hand blender till smooth. 4. Add sugar syrup and mix well, add 2 cups chilled water and mix well. 5. Serve chilled. Want to get kids to eat millets? Then the healthy, gluten-free Jowar and Almond Cupcakes is sure to win hearts. JOWAR AND ALMOND CHOCOLATE CUPCAKES Ingredients ½ cup sorghum (jowar) flour ¼ cup almond flour ¼ + ⅛ cup cocoa powder ¼ + ⅛ cup butter ¾ cup fine brown sugar ¼ cup yogurt ¼ tsp baking soda ½ tsp baking powder A pinch of salt ¼ tsp vanilla essence 3 tbsps milk Buttercream frosting as required Fresh strawberry wedges for garnish Method 1. Preheat the oven at 180ºC. 2. Take butter in a large bowl. Beat with an electric beater till smooth. 3. Add fine brown sugar and continue to beat till the mixture turns light and fluffy. Add yogurt and beat till the sugar dissolves. 4. Sift sorghum flour, flour, cocoa powder, baking powder, baking soda, salt directly into the bowl. Add vanilla essence and gently fold till a smooth batter is formed. 5. Stir in the milk to adjust consistency. 6. Transfer the mixture into individual cupcake liners lined in a cupcake mould. Place it in the preheated oven and bake for 15-20 minutes. 7. Bring the cupcakes out of the oven and allow to cool completely. 8. Arrange the cupcakes on a serving plate, pipe out the buttercream frosting on each cupcake and serve garnished with strawberry wedges. Gazpacho, anyone? This classic Spanish preparation is the perfect summer soup that I urge you all to try. CLASSIC GAZPACHO Ingredients 3-4 medium tomatoes, quartered 3 white bread slices 1 medium red capsicum 1 medium green capsicum 1 medium cucumber 4-5 fresh basil leaves 3-4 garlic cloves Salt to taste 2 tbsps white wine vinegar ¼ cup extra virgin olive oil + for drizzling 8-10 ice cubes Topping Fried croutons as required Cherry tomato halves ½ small green capsicum, chopped 1 small onion, chopped ½ small English cucumber, chopped Fresh basil leaves as rwuired Crushed black peppercorns to sprinkle Method 1. Cut the white bread slices into 1 inch pieces. Transfer into a bowl. 2. Cut the red capsicum in halve, deseed and roughly chop. Similarly, repeat the same with green capsicum. Transfer into the same bowl. 3. Peel the cucumber and roughly slice them. Transfer into the same bowl. 4. Add the tomatoes into the same bowl. Add the mixture into a grinder jar, add basil leaves, garlic cloves, salt, white wine vinegar, extra virgin olive oil, and ice cubes. Pour ¾ cup chilled water and grind into a fine mixture. 5. Transfer the mixture into serving bowls, garnish with fried croutons, cherry tomato halves, chopped green capsicum, chopped onion, chopped cucumber, and arrange some basil leaves. Drizzle olive oil and sprinkle crushed black peppercorns. Aam Shrikhand Cannoli | Mango Baked Yogurt | आसान आम रेसिपी | Mango Recipes | Sanjeev Kapoor Khazana
Take Aam Shrikhand to the next level with this crunchy, creamy Amrakhand Cannoli, a fabulous Indo-Italian dessert that has Cannoli, a traditional Italian dessert and the desi Aam Shrikhand. There is the Baked Mango Yogurt too! A tough choice right? AAMRAKHAND CANNOLI Ingredients 1 ripe mango, peeled and roughly chopped 1 cup hung yogurt 4 spring roll sheets (6’ x 6”) ½ cup powdered sugar ½ tsp green cardamom powder A pinch of saffron strands Oil for deep frying Melted dark chocolate as required Finely chopped pistachioss Method 1. Put the mango into a blender jar and blend to a fine paste. Transfer into a bowl. Add hung yogurt, powdered sugar and green cardamom powder and mix till well combined. Add saffron strands and mix well. Refrigerate for 1-2 hours. 2. Take 2 spring roll sheets and cut them into 4 equal squares. Similar repeat the same with remaining spring roll sheets as well. 3. To make cannoli, take a spring roll quarter and roll it over a cannoli mould and seal with water. 4. Heat sufficient oil in a kadai. Add the cannolis along with the mould and deep fry on medium heat till light golden and crisp. Drain on an absorbent paper. Allow to cool slightly, carefully demould the cannoli. 5. Dip both the corners into melted dark chocolate and dip in chopped pistachios. Keep aside to set completely. 6. Take the aamrakhand in a piping bag fitted with star nozzle. Pipe out the mixture into the prepared cannoli. Arrange on a serving plate. Serve. MANGO BAKED YOGURT Ingredients ½ cup mango puree + as required 1 cup yogurt ¼ cup condensed milk ¾ cup fresh cream Fresh mint sprigs for garnishing Method 1. Preheat oven to 180˚ C. 2. Mix together yogurt, condensed milk, cream and mango puree. 3. Pour the prepared mixture into individual earthenware bowls and place them in a shallow baking tray. Fill in water. 4. Put the tray in the preheated oven and bake for 8-10 minutes. Remove from heat, cool and refrigerate to chill. 5. Add some puree in the centre of each bowl, garnish with mint sprigs and serve. A sweet step in the direction of making Millets a staple. RAGI KHEER Ingredients 2 tbsps finger millet (ragi) 4 cups milk ½ cup sugar ¼ tsp green cardamom powder 2 tbsps chopped mixed nuts + for garnish Dried rose petals for garnish Method 1. Take ragi in a bowl, add water and wash it once, add ½ cup water and let it soak for 6-8 hours. 2. Drain the ragi and put into a blender jar and blend to a coarse paste. 3. Bring milk to a boil in a deep pan. 4. Add the blended paste, mix and cook for 16-20 minutes or till the ragi is cooked completely. Stirring the mixture occasionally. 5. Kerala Mango Curry | केरला मैंगो करी | Mango Recipes | Easy Mango Curry | Sanjeev Kapoor Khazana
There is so much more to a Mango. A yummy Kerala Mango Curry is a traditional recipe, one that brings comfort and revives sweet-spicy memories! KERALA MANGO CURRY Ingredients 2 large badami mangoes ¾ cup scraped fresh coconut 10-12 madras onions, peeled 2-3 green chillies ¼ tsp turmeric powder ½ tsp red chilli powder ½ cup coconut milk Salt to taste 2 tbsps coconut oil 1 tsp mustard seeds 1 tsp cumin seeds 1 tsp dried fenugreek seeds (methi dana) 7-8 curry leaves 2 dried red chillies Method 1. Cut each mango in half avoiding the pit. Cut around the pit and discard the pit. 2. Make cross marks on the halves to divide into 4 pieces. Scoop out the flesh using a spoon. Similarly, scoop out the flesh from the side pieces as well. Set aside. 3. In a blender jar, add scraped fresh coconut, madras onion, green chillies and ½ cup water. Blend to a fine paste. 4. Heat a deep pan, add the mangoes, turmeric powder, red chilli powder, and 2 cups water. Mix well and let the mixture come to a boil. 5. Add the prepared paste and mix well. Cook for 1-2 minutes. Add coconut milk and salt. Mix well and cook for 2-3 minutes. Take it off the heat. 6. Heat coconut oil in a tempering pan, add mustard seeds, let them splutter. Add cumin seeds, methi dana and curry leaves. Let the seeds change colour. 7. Add dried red chillies and mix well. Take it off the heat. Add the tempering in the prepared curry and mix well. 8. Transfer into serving bowl. Serve hot. Ragi Oats Dhokla | रागी ओट्स ढोकला | Healthy Breakfast | #MilletKhazana | Sanjeev Kapoor Khazana
Try this fluffy, home-made Ragi Oats Dhokla recipe and see how millets can be made into popular dishes. RAGI OATS DHOKLA Ingredients 1 cup finger millet (ragi) flour ½ cup oats, powdered ½ cup split skinless black gram (dhuli urad dal) flour ⅓ cup yogurt (dahi) Salt to taste ½ tsp cumin powder ½ tsp red chilli powder 1 tsp ginger-green chilli paste ½ tsp baking soda 1 tbsp oil + for greasing Green chutney to serve Tempering 2 tbsps oil 1 tsp mustard seeds 2 tsps white sesame seeds 1-2 green chllies, slit 6-8 curry leaves 1 tsp sugar Chopped fresh coriander leaves for garnish Method 1. Combine together finger millet flour, oats powder, split skinless black gram flour, yogurt and 1¼ cups water and whisk till a smooth batter is formed. Cover and set aside to ferment for 6-8 hours. 2. Add salt, cumin powder, red chilli powder, ginger-green chilli paste and baking soda and mix well. 3. Brush a dhokla thali with some oil. 4. Add 1 tbsp oil into the batter and mix well. Pour this into the greased thali. 5. Heat sufficient water in a steamer. Place the thali into the steamer basket. Cover and steam for 12-15 minutes. 6. Remove the thali and allow to cool slightly. 7. Scrape the sides of the thali and cut into squares. 8. To make the tempering, heat oil in a pan. Add mustard seeds and let them splutter. Add white sesame seeds, green chillies, curry leaves and sugar and mix well. Add ¼ cup water and mix well. Pour this onto the dhokla. 9. Garnish with coriander leaves. Serve with green chutney. Make this tasty refreshing jeera drink at home. Check out my easy recipe here. MASALA JEERU Ingredients ¼ cup cumin seeds (jeera) 10-12 black peppercorns, coarsely crushed 3-4 cloves ¾ cup + 1 tsp sugar ½ inch ginger, roughly chopped Black salt to taste Salt to taste ¼ tsp + 4 pinches of chaat masala A pinch of red chilli powder 2 lemon wedges 2 small lemons Ice cubes as required Drinking soda as required Method 1. Heat a nonstick pan. Add cumin seeds and roast on medium heat till they turn dark brown. 2. Remove 1 tbsp cumin seeds and add black peppercorns, cloves and roast for a minute. 3. Add ¾ cup sugar, 1 cup water, ginger and cook till sugar melts and the mixture thickens. 4. Transfer the roasted cumin seeds in a mortar. Add black salt, salt, ¼ tsp chaat masala, red chilli powder and remaining sugar and crush coarsely. 5. Strain the prepared jeera syrup. 6. Apply lemon on the rim of the glass and press onto the prepared spice mix. 7. Add a portion of the prepared syrup in each glass. Add black salt, salt and a pinch of chaat masala in each glass. Squeeze ½ lemon in each glass. Mix well. 8. Add ice and top up with the soda and stir. 9. Serve chilled. Mango Milkshake | Cold Mango Souffle | Mango Recipes | आसान आम की रेसिपी | Sanjeev Kapoor Khazana
Two amazing mango recipes that you can easily make at home. One, a luscious Cold Mango Souffle and other, a quick go-to Mango Milkshake. MANGO MILKSHAKE Ingredients 2 cups fresh mango pulp 4 tbsps sugar 3 tbsps milk powder 1½ cups milk 6 scoops of vanilla ice cream Mango pieces for garnish Fresh mint sprigs for garnish Method 1. Put the mango pulp in a blender jar. Add sugar, milk powder, milk, and vanilla ice cream and blend to a smooth mixture. 2. Transfer into individual serving glasses and garnish with mango pieces and mint sprigs and serve. COLD MANGO SOUFFLE Ingredients ¾ cup mango puree Chopped mangoes for garnishing 2 eggs ½ cup castor sugar 1 tablespoon vanilla essence 1 tablespoon gelatin Juice of ¼ lemon Icing sugar for dusting Fresh mint sprigs for garnishing Method 1. Separate egg yolks from whites into 2 separate bowls. 2. Cook egg yolks with ¼ cup castor sugar and vanilla essence in a double boiler till smooth. 3. Add gelatin and whisk well. Remove from heat and set aside. 4. Whisk together egg whites and lemon juice. Add remaining castor sugar and whisk till fluffy. 5. Add mango puree to egg yolk mixture and whisk well. Fold in egg white mixture till well incorporated. 6. Cover individual ramekin moulds with parchment paper and pour soufflé mixture into each. Refrigerate overnight. 7. Dust icing sugar on top, garnish with chopped mangoes and mint sprigs and serve immediately. I could go on about the versatility and health benefits of millets. But for now, here's an easy Ragi Dosa recipe. RAGI DOSA Ingredients 1 cup finger millet (ragi) flour ½ cup rice flour ¼ cup split black gram (dhuli urad dal) flour 2 dried red chillies ½ teaspoon coriander seeds ½ teaspoon fenugreek seeds (methi dana) 1 cup yogurt Salt to taste Oil as required Method 1. Blend together red chillies, coriander seeds and fenugreek seeds with water as required to a coarse paste. 2. Mix together finger millet flour, rice flour, black gram flour, prepared paste, yogurt and water as required to a batter of pouring consistency. Set aside to ferment for 3-4 hours. 3. Heat some oil on a non-stick tawa. Pour a ladleful of batter on it, spread into dosa and cook till evenly done. 4. Serve hot with green coconut chutney.
