A delectable sweet-spicy Mango jam sandwich! MANGO CHEESE MELT Ingredients 2 medium mangoes, peeled and cut into ½ inch cubes 100 grams Emmental cheese block 100 grams mozzarella cheese block 8 sour dough bread slices 2-3 tbsps butter 1 tsp oil 1 tsp ginger, finely chopped 1 tsp garlic, finely chopped 1 small onion, finely chopped ½ tsp salt ¾ cup sugar ¼ tsp black pepper powder 1 tsp lemon juice 2-3 tbsps cream cheese 2 tbsps pickled red jalapenos Salad to serve Method 1. To make the mango jam, heat 1 tsp butter and oil in a nonstick pan; add ginger, garlic, and onion and sauté till translucent. 2. Add mangoes and sauté for 2 minutes. Add salt, sugar and mix. Cook till the sugar melts, and continue to cook till the mixture thickens. 3. Add black pepper powder and lemon juice and mix well. Switch the heat off and allow to cool completely. 4. Thinly slice the Emmental cheese along with the mozzarella cheese. 5. To make one sandwich, heat 1 tbsp butter in nonstick pan. Place two sour dough bread slices and cook till golden brown. Flip them and reduce the heat to low, spread a portion of cream cheese evenly on one side of the bread slices. Spread a portion of the mango jam over each slice. Place a few Emmental cheese slices, mozzarella cheese slices, and place some pickled red jalapenos slices on over one bread slice. Cover it with the remaining bread slice with the jam side facing down. Apply some butter and continue to cook on both sides till the cheese melts. 6. Cut the sandwich into half and arrange on a serving plate. Serve with salad.
