Kurkuri Bhindi | करकर भड कस बनय | Family Food Tales | Sanjeev Kapoor Khazana

Kurkuri bhindi kise nahi pasand. Make this quick and easy recipe of crunchy bhindis for your friends and family. KURKURI BHINDI Ingredients 300 grams lady’s finger (bhindi), ends trimmed and cut into thin strips ⅓ cup gram flour 1 tsp red chilli powder 2 tbsps rice flour Salt to taste A pinch of asafoetida A pinch of carom seeds ½ tsp dried mango powder (amchur) Salt to taste Oil for deep frying Method 1. Take lady’s fingers in a large bowl. Add gram flour, red chilli powder, rice flour, salt, asafoetida, carom seeds, dried mango powder, and mix well. Add salt and mix well. 2. Heat sufficient oil in a kadai. Gently slide in the lady fingers in batches and deep fry till golden brown and crisp. Drain on an absorbent paper. Sprinkle chaat masala and toss well. Try this ultimate healthy multigrain parantha stuffed with broccoli! Bacche aur bade dono ka favourite ban jaayega yeh parantha! MULTIGRAIN BROCCOLI PARANTHA Ingredients ½ cup whole wheat flour (gehun ka atta) + for dusting ¼ cup pearl millet flour (bajra ka atta) ¼ cup sorghum flour (jowar ka atta) ¼ cup finger millet flour (ragi ka atta) 300 grams broccoli, grated and squeezed ½ tsp carom seeds (ajwain) 1 tbsp white sesame seeds 1½ tbsps ghee Salt to taste ½ cup grated cottage cheese (paneer) 2 tbsps chopped fresh coriander leaves 1 medium onion, finely chopped ¼ tsp red chilli flakes ½ tsp cumin powder ¼ tsp garam masala powder ½ tsp red chilli powder ½ lemon Ghee for drizzling Yogurt to serve Butter to serve Method 1. To make the dough, take whole wheat flour in a large bowl. Add pearl millet flour, sorghum flour, finger millet flour, carom seeds, white sesame seeds, ghee, salt, and ¾ cup water and knead into a soft dough. Cover with a damp muslin cloth and set aside for 10-15 minutes. 2. To make the stuffing, take broccoli in another large bowl. Add cottage cheese, coriander leaves, onion, red chilli flakes, salt, cumin powder, garam masala powder, red chilli powder and squeeze the juice of lemon and mix till well combined. 3. Dust the worktop with some whole wheat flour. Take a portion of the dough and shape it into a ball. Make a cavity into the centre and stuff with a generous portion of the stuffing and bring the sides to the centre and press to seal. Roll it into a disc. 4. Heat a non-stick tawa. Place a disc on it and cook for 2-3 minutes on medium heat, flip and apply some ghee on top. Continue to cook for 2-3 minutes on the other side as well. Drizzle some ghee and cook till done. 5. Serve hot with yogurt and butter. Sausage Tortellini Soup | पसत सप | Monsoon ka Mazza | Episode 25 | Sanjeev Kapoor Khazana

Sausage tortellini soup is a delicious and hearty dish that combines chicken sausage, cheese tortellini, vegetables, and a flavorful broth. SAUSAGE TORTELLINI SOUP Ingredients Ready-made fresh pasta dough made using 1 cup refined flour, cut into 5 cm thin square sheets ½ cup cream cheese ½ cup grated mixed cheese ½ tsp dried mixed herbs ½ tsp red chilli flakes Crushed black peppercorns to taste Salt to taste 1 tbsp butter 1 tbsp olive oil 1 tbsp finely chopped garlic 2 inch celery stick, finely chopped 1 medium onion, finely chopped 1 tbsp refined flour (maida) 1 medium tomato, finely chopped 4-5 cups chicken stock 1 small carrot, peeled and cut into thin roundels 3-4 chicken sausages cut into ½ inch piece 1 tbsp Worcestershire sauce 7-8 baby spinach leaves 1-2 tbsps fresh cream Tabasco sauce Method 1. Put cream cheese in a bowl. Add mixed cheese, dried mixed herbs, red chilli flakes, crushed black peppercorns, and salt and mix till well combined. 2. Take a pasta square, add a portion of the cheese mixture in the centre, brush some water on the edges, and diagonally fold the pasta sheet to make triangle. Bring two corners to the centre and press to shape it like a tortellini. 3. Heat butter and olive oil in a non-stick deep pan. Add garlic and celery and mix well. Cook for 1-2 minutes. 4. Add onion, mix and cook till translucent. Add refined flour, mix and cook for 1 minute. 5. Add tomato and sauté till soft and pulpy. Add chicken stock and mix well. Add salt and mix well. 6. Add carrot, mix and cook till the mixture comes to a boil. Add the prepared tortellini, chicken sausages; and boil for 2-3 minutes or till the tortellini cooked well. 7. Add in the Worcestershire sauce, baby spinach leaves, and mix. And the add fresh cream and bring to a boil. 8. Transfer in a serving bowl, and serve hot with a dash of Tabasco sauce. Chef’s note- You can make the tortellini and keep them ready. Just dust some corn flour on them and freeze. You may use it as required. Try this simple Farali Paniyaram recipe at home. To make this quick and easy recipe, you just need a few ingredients in place and you are good to go! Enjoy with coconut chutney or as an accompaniment to tea. FARALI PANIYARAM Ingredients ½ cup rajgira flour ¼ cup potato, peeled and grated ¼ cup chopped coriander leaves ¼ cup yogurt ¼ cup green chilli-ginger paste ¼ cup roasted and coarsely crushed peanuts Rock salt to taste 1 tablespoon ghee + ¼ cup ghee Method 1. Add rajgira flour, potato, coriander, yogurt, green paste, rock salt and ghee in a bowl. Add water as required and form a lump-free batter. 2. Add 1 teaspoon ghee in each paniyaram mould and let it melt. Once the ghee has melted, pour in the batter. Cover and cook for 5-7 minutes. 3. Toss the paniyarams upside down in the moulds itself cover and cook for another 5-7 minutes. 4. Transfer to a serving plate, serve warm with coconut chutney. Doodhi Pakodi Chaat | दध पकड़ चट | Monsoon ka Mazza | Episode 24 | Sanjeev Kapoor Khazana

Naam aisa ke sun ke hi muh mein paani aa jaye, hai na? Presenting a special recipe - pakodis prepared with bottle gourd, topped with your favourite chaat condiments! DOODHI PAKODI CHAAT Ingredients 300 grams bottle gourd (doodhi) 1 small onion, roughly chopped Salt to taste ½ cup gram flour ¼ cup rice flour 2-3 green chillies, chopped 2 tbsps chopped fresh coriander leaves A pinch of baking soda ½ tsp turmeric powder ¼ tsp carom seeds Oil for deep frying Chaat ½ cup sweetened yogurt ¼ tsp asafoetida ¼ tsp black salt Chaat masala for sprinkling Red chilli powder for sprinkling 1 small onion, finely chopped 1 small tomato, finely chopped Green chutney for drizzling Garlic red chilli chutney for drizzling Date and tamarind chutney for drizzling Roasted cumin powder for sprinkling 3-4 papdis Sev for sprinkling Raw mango, chopped as required Fresh pomegranate pearls for garnish Mint sprig for garnish Method 1. Peel the doodhiand thickly grate it. Add roughly chopped onions and salt, mix well and set aside for 5-10 minutes. 2. Take sweetened yogurt, add asafoetida and black salt, mix and refrigerate it to chill. 3. Add gram flour to doodhi, then add rice flour, green chillies, coriander, baking soda, turmeric powder, mix well. Add carom seeds and mix well. 4. Heat sufficient oil and deep fry the doodhipakoditill crisp and golden brown in colour. Drain on an absorbent paper. 5. In a serving bowl, put a portion of the sweetened yogurt, then place the doodhipakodi, sprinkle chaat masala, red chilli powder, onions, tomatoes, drizzle green chutney, red chilli garlic chutney, date and tamarind chutney, sprinkle roasted cumin powder, crush papdis, sev on top, further add raw mango and pomegranate pearls. 6. Add a few more pakodi, drizzle some more sweetened yogurt and serve immediately garnished with mint sprig. Ragi and chicken cooked in a tasty and healthy broth. Whip up this delicious millet soup in no time! RAGI CHICKEN SHORBA Ingredients 2 tbsps finger millet (ragi) flour 200 grams boneless chicken breasts, cut into ½ inch pieces 2 tsps oil 1 tsp cumin seeds 6-8 black peppercorns 3 green cardamoms 1 inch cinnamon stick 1 bay leaf 1 tbsp chopped ginger 2 tsps chopped garlic 1 green chilli, slit 4 cups chicken stock 2 tsps chopped coriander stems Salt to taste 2 tbsps chopped fresh coriander leaves Masala breadsticks for serving Method 1. Heat oil in a pan. Add cumin seeds, black peppercorns, green cardamoms, cinnamon, bay leaf and sauté till fragrant. 2. Add ginger, garlic and sauté for 30 seconds. Add green chilli and mix well. 3. Add chicken stock, coriander stems and mix well. Cover and cook for 5-6 minutes. 4. Take ragi flour in a bowl. Add ½ cup water and mix well. 5. Add salt and chicken pieces to the stock mixture. Matar Shorba | मटर शरब | Green Pea Soup | Monsoon ka Mazza | Episode 23 | Sanjeev Kapoor Khazana

A warm and mildly spiced soup for a quick meal on a rainy day. A comforting soup that is full of nutrients and flavours, ready in 20 minutes. MATAR SHORBA Ingredients 2 cups fresh green peas (matar), shelled 1 tablespoon oil 1 medium onion, chopped 1 tablespoon chopped garlic 1-2 green chillies, chopped 8-10 fresh coriander roots, chopped Salt to taste Crushed black peppercorns to taste ½ teaspoon garam masala powder 2 tablespoons fresh cream + for drizzling 1 teaspoon lemon juice Fresh coriander leaves for garnish Method 1. Heat oil in a deep non-stick pan, add onion, garlic, green chillies and coriander roots, mix and sauté for 1-2 minutes. Add green peas, mix and sauté for 1 minute. 2. Add salt and mix. Add 2½ cups water and mix. Cook on medium heat for 8-10 minutes. Take the pan off the heat and allow the mixture to cool slightly. 3. Transfer into a grinder jar and grind to a smooth consistency. Pour this into the same pan and place the pan back on heat. 4. Add 1½ cups water, mix and cook for 1-2 minutes. Add crushed black peppercorns and garam masala powder and mix well. 5. Switch off the heat and add cream and mix. Add lemon juice, mix and pour into serving bowls. 6. Drizzle fresh cream, sprinkle crushed black peppercorns and garnish with coriander leaves. Serve hot. Patti Mirchi Vada | पटट मरच वड़ | Monsoon ka Mazza | Episode 22 | Sanjeev Kapoor Khazana

Patti Mirchi Vada is commonly served hot with a side of mint chutney or tamarind chutney, which adds a tangy and refreshing element to complement the spicy flavors. It is often enjoyed as a tea-time snack or as an appetizer during social gatherings. The combination of spicy chilies, savory potato filling, and crispy coating makes Patti Mirchi Vada a tantalizing treat for spice lovers. PATTI MIRCHI VADA Ingredients 6-8 long bhavnagri chillies 1½ cups refined flour (maida) Salt to taste ½ tsp carom seeds (ajwain) 2 tbsps melted ghee Stuffing 1 cup Bengal gram (chana dal) 2 tbsps oil 1 tsp mustard seeds 1 tsp cumin seeds ¼ tsp asafoetida (hing) 10-12 curry leaves 5-6 garlic cloves, vertically sliced 2-3 green chillies, slit and halved ¼ tsp turmeric powder ½ tsp red chilli powder Salt to taste 2 tbsps chopped fresh coriander leaves Corn flour slurry as required Oil for deep frying Tomato ketchup to serve Method 1. Take refined flour in a large bowl. Add salt, carom seeds and melted ghee, mix and rub between your fingertips till the mixture resembles breadcrumb consistency. Add ½ cup water, mix and knead to a stiff dough. Cover with a damp muslin cloth and set aside for 10-15 minutes. 2. To make the stuffing, dry roast Bengal gram in a non-stick pan till golden brown. Take the pan off the heat and allow to cool slightly. Transfer into a blender jar and blend to a coarse powder. 3. Heat oil in a non-stick pan. Add mustard seeds and cumin seeds and mix well. Add asafoetida, curry leaves, garlic, and green chillies and sauté for 1 minute. 4. Add turmeric powder and red chilli powder and mix well. Add the blended powder and mix well. Continuously stir till the mixture turns golden brown. 5. Add 3 cups water and mix. Stir in the salt, mix, cover and cook for 10-12 minutes while stirring in between every few minutes. 6. Add coriander leaves and mix well. Take the pan off the heat and transfer the mixture on to a plate and allow to cool. 7. Make a vertical slit on each chilli and discard the seeds. Generously stuff each chilli with the stuffing. 8. Dust the worktop with some refined flour, take a portion of the dough and shape it into a ball. Place it on the worktop and roll it into thin disc. Trim the sides to make a square and cut the square into strips. Wrap the green chillies with the strips and secure it with slurry. 9. Heat sufficient oil in a kadai. Gently slide in a few wrapped green chillies and deep fry on medium heat till golden brown and crisp. Drain on an absorbent paper. 10. Arrange on a sering plate and serve hot with tomato ketchup. "Ratalyache Kaap" is a delicious Maharashtrian dish that originates from the western region of India. It is a crispy and flavorful preparation made using sweet potatoes, which are known as "ratalu" or "ratali" in the local language. It is often enjoyed during festivals, gatherings, or as an evening snack with a cup of hot tea. Its unique blend of sweetness and spiciness makes it a popular choice among both children and adults, and it showcases the diverse culinary heritage of Maharashtra. SAMO RATALYACHE KAAP Ingredients 2 medium sweet potatoes (ratalu) 2 tbsps ginger-green chilli paste Black pepper powder to taste 1 tsp cumin powder 1 tbsp lemon juice 1 tbsp chopped fresh coriander leaves Rock salt (sendha namak) 1 cup barnyard millet (samo) flour Oil for shallow frying Chopped fresh coriander leaves for garnish Method 1. Peel the sweet potatoes and slice them into roundels. 2. Take ginger-green chilli paste in a large bowl, black pepper powder, cumin powder, lemon juice, coriander leaves, and rock salt and mix well. Add the sweet potato roundels and mix till each roundel is well coated with the masala. Set aside for 5 minutes. 3. Take the barnyard millet flour in a large plate. Coat each sweet potato roundel on both sides. 4. Heat sufficient oil in a non-stick tawa. Place the sweet potato roundels on it and shallow fry till golden brown and crisp on both sides. Drain on an absorbent paper. 5. Serve hot garnished with coriander leaves. Mirch Pakoda Chaat—a tantalizing street food sensation that will leave you craving for more. This mouthwatering chaat combines the crispiness of mirch pakodas (stuffed chili fritters) with an explosion of zesty and tangy toppings, creating a symphony of flavors that will awaken your taste buds. What sets this chaat apart is the medley of toppings and chutneys that adorn the pakodas. Tangy tamarind chutney, zesty green chutney, and creamy yogurt are generously drizzled over the pakodas, infusing them with layers of contrasting flavors. MIRCHI PAKODA CHAAT Ingredients 2-3 long Rajasthani green chillies 2 cups Tata Sampann Fine Besan 2 medium potatoes, boiled, peeled and mashed 1-2 green chillies, chopped 1 tbsp chopped fresh coriander leaves 1 tsp roasted cumin powder + for sprinkling ¾ tsp chaat masala + for sprinkling ¼ tsp asafoetida (hing) ¾ tsp fennel powder ½ tsp dried mango powder (amchur) + for sprinkling Salt to taste ½ tsp turmeric powder 1 tsp red chilli powder + for sprinkling Oil for deep frying Sweetened yogurt for drizzling Green chutney as required Date and tamarind chutney as required Sev for garnish Masala chana for garnish Pomegranate pearls for garnish Chopped fresh coriander leaves for garnish Method 1. Take potatoes in a bowl, add green chllies, chopped coriander, roasted cumin powder, chaat masala, asafoetida, fennel powder, dried mango powder and salt. Mix well and keep aside. 2. Slit Rajasthani green chillies in the centre lengthwise and stuff with a portion of the prepared mixture in each. Set aside. 3. For the batter, take Tata Sampann Fine Besan, add turmeric powder, red chilli powder, salt, and sufficient water. Whisk to form a smooth thick batter of coating consistency. 4. Heat sufficient oil in a kadai, dip each stuffed green chilli into the prepared batter and coat well. Drop into the hot oil and deep fry till golden and crisp. Drain on an absorbent paper. 5. Place the pakodas on a worktop and slice them into thick roundels. 6. For one serving, place 7-8 roundels of pakodas on a serving plate. Drizzle Sweetened yogurt on top. Add green chutney and drizzle date and tamarind chutney. 7. Sprinkle roasted cumin powder, chaat masala , amchur, and red chilli powder. 8. Garnish with sev, masala chana, and pomegranate pearls and chopped coriander. Serve immediately. RAJGIRA LADDOO Ingredients ¾ cup chopped jaggery 2 cups puffed amaranth (rajgira) ½ cup crushed roasted peanuts ¼ tsp green cardamom powder Method 1. Vada Pav Sliders | मबई क वड पव नए अवतर म | Family Food Tales | Sanjeev Kapoor Khazana

A fun take on the traditional Vada Pav. Try kare yeh fusion vada pav recipe - cheesy, spicy and full of flavour! Apni family ka dil jeet le with this delicious snack, aapki chai ka perfect partner. VADA PAV SLIDERS Ingredients 6-8 whole wheat slider buns Batter 1 cup gram flour (besan) ¼ tsp turmeric powder Salt to taste ¼ tsp baking soda ¼ tsp red chilli powder Vada 1 tbsp oil 1 tsp mustard seeds A pinch of asafoetida (hing) 12-15 curry leaves 1 small onion, finely chopped 1 tbsp garlic-green chilli paste ¼ tsp turmeric powder A pinch of red chilli powder Salt to taste 3-4 medium potatoes, boiled, peeled, and mashed 8-10 green chillies To apply Green chutney as required Red chilli-garlic chutney Method 1. Take gram flour in a large bowl, add turmeric powder, salt, baking soda, red chilli powder and 1/3 cup water and whisk till a smooth batter is formed. 2. Heat oil in a non-stick pan. Add mustard seeds and let them splutter. Add asafoetida, curry leaves, and onion and sauté till translucent. 3. Add garlic-green chilli paste and mix well. Cook for 1 minute. 4. Add turmeric powder, red chilli powder, salt and mix well. Transfer in a bowl and allow to cool slightly. 5. Add potatoes and mix well. 6. Heat sufficient oil in a kadai. 7. Take small portions of the potato mixture and shape each portion into a ball and slightly flatten it. This is a vada. Add this into the batter and gently slide them into the hot oil and deep fry till golden brown. Drain on an absorbent paper. 8. Make small slits on the green chillies and gently slide them into the hot oil and deep fry for a few seconds and drain on the absorbent paper. 9. To make the sliders, slit the pavs, apply some green chutney on the base half of the pav, sprinkle some red chilli-garlic chutney, place a vada on it and cover with the other half of the pav. Serve hot with fried green chillies. Varicha Dosa | Jowar Cheela | पषटक मलट नशत | #MilletKhazana | Sanjeev Kapoor Khazana

Each bite of our Varicha Dosa offers a delightful combination of textures and flavors. The crispy exterior gives way to a soft and spongy interior, creating a heavenly contrast that will tantalize your taste buds. Whereas, Jowar Cheela is a savory pancake made from a batter consisting of jowar flour that is cooked to perfection, resulting in a golden and crispy cheela that is both visually appealing and irresistibly delicious. Both these recipes are excellent choices for those seeking balanced and nutritious breakfast options. VARICHA DOSA Ingredients 1 cup barnyard millet (vari / samo), soaked for 4-5 hours and drained 1 cup yogurt 2 tbsps sago (sabudana), soaked for 4-5 hours and drained Rock salt (sendha namak) to taste Ghee for drizzling Coconut chutney to serve Method 1. Put soaked vari in a mixer jar. Add yogurt, sabudana and rock salt and grind to a smooth mixture. 2. Heat a non-stick tawa. 3. Pour a ladleful of the batter and spread it in a circular motion to make a thin disc. Drizzle ghee and cook for 1-2 minutes. Fold in half and serve hot with coconut chutney. JOWAR CHEELA Ingredients 1½ sorghum (jowar) flour 2 tbsps whole wheat flour (gehun ka atta) 2-3 tbsps gram flour (besan) 1 tsp coriander powder ½ tsp cumin powder ½ tsp red chilli powder ¼ tsp turmeric powder Salt to taste A pinch of baking soda 1 medium onion, chopped 1 small tomato, chopped 2 tbsps chopped fresh coriander leaves 1 green chilli, chopped ½ tsp sugar Oil for drizzling Tomato ketchup to serve Method 1. Take sorghum flour in a large bowl. Add whole wheat flour, gram flour, coriander powder, cumin powder, red chilli powder, turmeric powder, salt, baking soda, onion, tomato, coriander leaves, green chilli and sugar and mix well. Add 2 cups water and mix till a smooth batter is formed. 2. Heat a non-stick shallow pan. Pour a portion of the batter and spread in clockwise direction to make a disc. Drizzle oil on the sides, cover and cook on medium heat for 3-4 minutes. Flip and continue to cook for 3-4 minutes as well. 3. Serve hot with tomato ketchup. Imagine a steaming bowl filled with a fragrant broth, infused with umami flavors. SOUPY CHICKEN NOODLES Ingredients 1 boneless chicken breast, cut into small pieces 100 grams rice noodles 1 tbsp oil 1 inch ginger, chopped 1 tsp chopped garlic 1 green chilli, diagonally sliced 1-2 fresh red chillies, diagonally sliced 1 medium onion, finely chopped Salt to taste Black pepper powder to taste 4 cups chicken stock 2 tbsps chopped spring onion greens Method 1. Heat oil in a non-stick wok. Add ginger and garlic and sauté for 1 minute. 2. Add green chilli, fresh red chillies and onion and sauté till the onion turns translucent. 3. Add the chicken, salt and black pepper powder and sauté on high heat for 2-3 minutes. 4. Add chicken stock and mix well. Let the mixture come to a boil. 5. Add spring onion greens and mix. 6. Serve hot. CHICKEN GYOZA NOODLE SOUP Ingredients 8 ready-made uncooked chicken gyozas 100 grams rice noodles 2 tbsps sesame oil 1 tbsp finely chopped garlic ½ tbsp finely chopped ginger 2 spring onion bulbs, finely chopped with the greens 2-3 pok choi stems, sliced 1-2 fresh red chillies, diagonally sliced 3-4 fresh shitake mushrooms, sliced 3-4 oyster mushrooms, sliced 10-12 enoki mushrooms, cut into 1 inch pieces 4-5 cups chicken stock Salt to taste 2-3 pok choi leaves, finely shredded 1 tsp dark soy sauce Toasted white sesame seeds for garnish Method 1. Heat sesame oil in a wok. Add garlic, and ginger and sauté till golden brown. 2. Add spring onion bulbs, pok choi stems, fresh red chillies and sauté on high heat for 1-2 minutes. 3. Add shitake mushrooms, oyster mushrooms, enoki mushrooms and continue to sauté on high heat for 2-3 minutes. 4. Add chicken stock and mix well. Let the mixture come to a boil. 5. Add rice noodles and salt and mix well. Slide in the chicken gyozas and mix well. Continue to cook for 6-8 minutes. 6. Add pok choi leaves and most of the spring onion greens and mix well. Cook for 1-2 minutes. 7. Switch the heat off and transfer the soup into a serving bowl. Garnish with remaining spring onion greens an white sesame seeds. Sweet Potato Millet Cutlet | टसट हलद कटलट | #MilletKhazana | Sanjeev Kapoor Khazana

A tasty multi-millet recipe jo tiffin mein bhi de sakte hai. Perfect healthy snacking option, bacche bhi enjoy karenge. A combination of Multi-millet and boiled sweet potatoes with a few spices makes for a perfect healthy snack! SWEET POTATO MIILLET CUTLET Ingredients 3 medium sweet potatoes, boiled, peeled and mashed ½ cup cooked kodo millet ½ cup cooked barnyard millet (samo) ½ cup cooked foxtail millet 2-3 green chillies, chopped 1 medium onion, finely chopped 1 tsp red chilli powder ½ tsp garam masala powder 1 tsp coriander powder ½ tsp cumin powder ¼ tsp turmeric powder Salt to taste ½ tsp chaat masala 1 tbsp chopped fresh coriander leaves 1 tbsp chopped fresh mint leaves 1 lemon wedge Semolina for coating Oil for shallow frying Green chutney to serve Method 1. Take sweet potatoes in a large bowl. Add kodo millet, baryard millet, foxtail millet, green chillies, onion, red chilli powder, garam masala powder, coriander powder, cumin powder, turmeric powder, salt, chaat masala, coriander leaves and mint leaves and mix well. Squeeze the juice of lemon and mix till well combined. 2. Take small portion of the mixture and shape it into a ball. Flatten it lightly to make a cutlet. 3. Take semolina in a large plate. Place the cutlet on it and coat it well with the semolina on all sides. 4. Heat sufficient oil in a non-stick pan. Place the cutlets and shallow fry till golden brown and crisp. Drain on an absorbent paper. 5. Serve hot with green chutney. Try this traditional Maharashtrian dosa recipe, made with nutritious millets, diabetic patients bhi kha sakte hai, full of carbohydrates, proteins, fibres. Ab breakfast menu expand kare with healthy millet recipes. DHIRDE Ingredients 1 cup sorghum (jowar) flour ¼ cup whole wheat flour (gehun ka atta) ½ cup gram flour (besan) 1½ tsps garlic-green chillies paste ½ tsp turmeric powder ¼ tsp red chilli powder Salt to taste Oil for drizzling Coconut chutney to serve Method 1. Take sorghum flour in a large bowl. Add whole wheat flour, gram flour, garlic-green chilli paste, turmeric powder, red chilli powder, salt and 1 cup water and mix well. Add 1 cup water and mix till well combined. Add ½ cup water and mix till a smooth batter is formed. 2. Heat a non-stick tawa. Drizzle a little oil and pour sufficient batter and swirl the pan to make a thin disc. Drizzle oil and cook for 1-2 minutes. Flip and cook the other side for 1-2 minutes as well. 3. Serve hot with coconut chutney. Chicken Fried Rice Bowl | चकन फरइड रइस | Monsoon ka Mazza | Episode 19 | Sanjeev Kapoor Khazana

A steamy chicken fried rice bowl, packed with veggies, sauces and succulent chicken! Ab chinese ghar par banana ho gaya hai bohot aasaan. CHICKEN FRIED RICE BOWL Ingredients Omelette 4 eggs Salt to taste Black pepper powder to taste 4 tsps sesame oil 2 tsps chopped garlic 1 tsp chopped ginger 200 grams chicken leg boneless, cut into ½ cm pieces 1½ cups chicken stock ½ tsp dark soy sauce 2 tbsps chopped spring onion greens Rice 1 tsp + 1 tbsp sesame oil 1 egg Salt to taste Black pepper powder to taste 1 tbsp chopped garlic ½ tbsp chopped ginger 2-3 tbsps chopped spring onion bulbs 2-3 tbsps chopped red capsicum 3 cups cooked rice 2-3 tbsps chopped spring onion greens 1 tsp vinegar Shrdded nori sheets for garnish Method 1. For omelette, break eggs in a bowl. Add salt, black pepper powder and whisk well. 2. Heat sesame oil in a small nonstick pan. Add garlic, ginger and sauté for 30 seconds. 3. Add chicken and sauté on high heat for 3-4 minutes. Add chicken stock and once the mixture comes to a boil, add dark soy sauce, salt, black pepper powder and mix well. Cook on medium heat for 5-6 minutes. 4. Add the egg mixture, cover and cook on medium heat for 3-4 minutes. Sprinkle spring onion greens on top. 5. For rice, heat 1 tsp sesame oil in a nonstick wok. Break egg, add salt, black pepper powder and scramble for 30 seconds. Transfer in a plate and set aside. 6. Heat remaining sesame oil in the same wok, add garlic, ginger, spring onion bulbs and sauté for a minute. 7. Add red capsicum and sauté for 30 seconds. 8. Add cooked rice, black pepper powder, salt and mix well. Cook for 2-3 minutes or till the rice is heated thoroughly. 9. Add scrambled eggs, spring onion greens, vinegar and mix well. 10. Transfer the prepared rice in a serving bowl, place the prepared omelette on top, garnish with nori sheets and serve hot. Jowar Dhani Ki Chikki | जवर धन क चकक | #MilletKhazana | Sanjeev Kapoor Khazana

A healthy treat for chikki fans! Fibre-rich and gluten-free chikki, if your family is craving something sweet you can whip this up quickly, make chikkis for the entire family. Chai ke saath enjoy kare yeh amazing jowar chikki. JOWAR DHANI KI CHIKKI Ingredients 4 cups puffed sorghum (jowar dhani) 2 tsps ghee 1 cup chopped jaggery ¼ cup roughly chopped, roasted almonds Method 1. Heat ghee in a pan add puffed sorghum and roast till crisp. Transfer on large plate and allow to cool. 2. Melt the jaggery in pan cook till it reaches to the hard-boiled consistency. 3. Add the roasted sorghum and almonds and mix well till combine. 4. Transfer into the greased and lined chikki tray. Spread the mixture evenly, sprinkle the almonds and pistachios. Gently press the mixture while still warm. 5. Level the top using a rolling pin. Immediately cut into required shape. And set it for 10-15 minutes. 6. Remove from the tray, arrange on a serving plate and serve. Millet and Fig Salad | टसट हलद मलट सलद | #MilletKhazana | Sanjeev Kapoor Khazana

This delightful salad combines nutty millet grains, succulent figs, and a medley of vibrant ingredients, creating a wholesome dish that satisfies both your taste buds and your nutritional needs. MILLET AND FIG SALAD Ingredients 1½ cups cooked banyard millet 4-5 fresh figs 3 tbsps olive oil 1 tbsp + 1 tsp honey ½ lemon 1 tbsp peanut butter Salt to taste Crushed black peppercorns to taste 1 medium onion, roughly chopped ½ cup roughly chopped mixed bell peppers 100 grams tofu, cut into ½ cm cubes 1 tbsp chopped fresh parsley + for garnish 6-8 iceberg lettuce leaves, torn 6-8 lollo rosso lettuce leaves, torn Sliced black olives as require Method 1. Take olive oil in a jar. Add 1 tbsp honey. Squeeze lemon. Add peanut butter, salt, crushed black peppercorns and shake well. 2. Quarter the figs and transfer in a bowl. Drizzle remaining honey, add salt and mix well. 3. Take banyard millet in a bowl. Add onion, bell peppers, tofu, parsley and mix well. 4. Add 2 tsps of prepared dressing and mix well. 5. Arrange iceberg and lollo rosso lettuce leaves in a serving plate, arrange the millet mixture on top. 6. Arrange the figs and black olive slices on top. Drizzle remaining dressing over top. 7. Sprinkle parsley and serve. Combine together chicken mince, onion,black pepper powder, salt, spring onion greens, ginger, butter, and oil in a bowl. 2. Divide the dough into small portions and shape each portion into a ball. 3. Dust the worktop with some flour and place the dough ball on it and roll it into a small disc. 4. Stuff the disc with a portion with the chicken mixture and shape it into a Momo. 5. Heat sufficient water in a steamer. 6. Arrange the momos on the steamer basket. Cover and steam for 8-10 minutes. 7. Serve hot with schezwan sauce and mayonnaise. Bajra Halwa | Ragi Halwa | Millet Halwa | मलट हलव | #MIllet Khazana | Sanjeev Kapoor Khazana

Satisfy your sweeth-tooth with these 2 healthy halwa recipes. Winter aur monsoon dono mein enjoy kar sakte hai. BAJRE KA HALWA Ingredients 1½ cups pearl millet (bajra) flour ½ cup ghee 1 cup sugar 1 tbsp slivered almonds 1 tbsp slivered pistachios ½ tsp green cardamom powder Method 1. Heat ¼ cup ghee in still pan, add pearl millet flour, and sauté for 8-10 minutes or till fragrant. 2. Add 4 cups water and mix till well combined. Cover and cook for 4-5 minutes. 3. Add sugar, slivered almonds and slivered pistachios and green cardamom powder and mix well. 4. Add remaining ghee and mix well. Cook on medium heat for 2 minutes. 5. Transfer in serving bowl. Sprinkle almond and pistachios on top and serve warm. RAGI HALWA Ingredients 1 cup ragi rava ¾ cup ghee 2 cups milk 1 cup sugar 2 tbsps chopped almonds 2 tbsps chopped cashew nuts 2 tbsps chopped pistachios ½ tsp green cardamom powder 6-8 pistachios, blanched, peeled and slivered Method 1. Boil milk and 2 cups water in a deep pan. 2. Heat ghee in a non-stick pan. Add ragi rava and sauté till golden brown and fragrant. 3. Add the milk and water mixture into the pan and mix till well combined. Cover and cook for 6-8 minutes on low heat or till the moisture is evaporated. 4. Add sugar, mix and cook till the sugar melts. Add almonds, cashew nuts, pistachios and mix well. Cook for 1-2 minutes. 5. Add green cardamom powder, mix and cook for 1 minute. 6. Serve warm garnished with pistachios slivers. Tandoori Corn | तदर भटट | Monsoon ka Mazza | Episode 17 | Sanjeev Kapoor Khazana

Tandoori Corn is made by marinating fresh corn in a mixture of yogurt and various aromatic spices, then roasting or grilling them until they are cooked and slightly charred. The marinade gives the corn a tangy, spicy, and smoky flavor that is characteristic of tandoori-style cooking. Ab bhutta aur bhi mazzedar aur masaledar ho jaayega. This sizzling tandoori corn made in a spicy marinade and grilled to perfection is perfect for a quick sncak on a rainy evening. TANDOORI CORN Ingredients 4 corns on the cob ½ cup hung yogurt 1 tbsp ginger-garlic paste 4 tsps red chilli powder ½ tsp garam masala powder ½ tsp black salt Salt to taste ¼ tsp dried fenugreek leaves (kasuri methi) powder ½ lemon 1½ tbsps mustard oil 2 tsps oil + for drizzling 2 tsps butter Melted butter for brushing Chopped fresh coriander leaves for garnish Method 1. Peel the corns on the cob. 2. Bring sufficient water to a boil in a deep pan. 3. Add the corns and cook for 10-12 minutes. Drain and allow to cool completely. 4. To make the marinade, take hung yogurt in a bowl. Add ginger-garlic paste, red chilli powder, garam masala powder, black salt, salt, dried fenugreek leaves powder, squeeze the juice of lemon and add mustard oil and mix till well combined. 5. Brush the marinade over the boiled corns. Take a few hot pieces of charcoal in a small stainless steel bowl and place it over the corn. Drizzle a few drops of oil, immediately cover and let the flavour infuse for 1-2 minutes. Remove the bowl and let the corns marinate for 30-40 minutes. 6. Heat butter and oil in a non-stick grill pan. Place the corns over it and grill for 1-2 minutes on each side or till well grilled on all sides. 7. Place a wire rack over direct flame and place the corns over it and char for a few seconds on each side. 8. Brush some butter over the charred corns and garnish with coriander leaves. Serve hot. An important part of the Tibetan cuisine, this is one dish has spicy soup and dumplings making it one slurpy dish with momos to gobble down. Enjoy this double mazzedar recipe, which includes scrumptious momos in a steamy, spicy soup. Isme aap apni pasand ke veggies bhi add kar sakte hai to make it more wholesome and nutritious. MOKTHUK (TIBETAN MOMO SOUP) Ingredients Read-made momo dough made with 1 cup refined flour Crunchy chilli oil to serve Fresh coriander sprigs for garnish Stock 200 grams chicken bones 1 tbsp oil 1 medium onion, diced and layers separated 1 small carrot, peeled and roughly chopped 3 inch celery stick, roughly chopped ¼ cup chopped leeks 12-15 black peppercorns Stuffing 200 grams chicken mince (keema) ½ tbsp finely chopped ginger ½ tbsp finely chopped garlic 1-2 green chillies, finely chopped Salt to taste Crushed black peppercorns to taste ½ tsp dark soy sauce 1 spring onion, finely chopped with the greens Soup 1 tbsp oil 1½ tsps garlic 2 tbsps finely chopped spring onions 1 medium carrot, peeled, vertically halved and thinly sliced Salt to taste 10-12 pak choy, roughly torn Method 1. To make the stock, heat oil in a deep pan. Add onion, carrot, celery stick, and leeks and mix well. Cook on high heat for 1-2 minutes. 2. Add chicken bones and sauté on high heat for 2-3 minutes. Add black peppercorns and mix well. Add 5-6 cups water and mix well. Cook till the mixture comes to a boil. 3. Collect the scum that forms on top of the mixture and discard it. Reduce the heat to medium and continue to cook 30-35 minutes. 4. To make the stuffing, take chicken mince in a bowl. Add ginger, garlic, green chillies, salt, crushed black peppercorns, dark soy sauce and spring onions and mix till well combined. 5. Knead the momo dough once, divide into small equal portions and shape each portion into a ball. To make the momo, take a dough ball and roll it into a small thin disc. Stuff with a portion of the chicken mixture and apply some water on the edges, lightly fold to shape it like a half moon, pleat one side and press on to the edge to seal. 6. Heat oil in a non-stick pan. Add garlic and spring onions and mix well. Add carrot and mix, cook on high heat for 1-2 minutes. 7. Strain the stock directly into the pan and mix well. Add salt, mix and cook till the mixture comes to a boil. 8. Gently slide in the momos and cook for 8-10 minutes on medium heat. 9. Add pak choy, mix and cook for 2-3 minutes. Transfer into serving bowl, drizzle crunchy chilli oil and garnish with fresh coriander sprigs. Serve hot. Foxtail Upma | Jowar Upma | Millet Upma | Healthy Upma | #MilletKhazana | Sanjeev Kapoor Khazana

Start your day with a healthy twist! Our Millet to Meal Recipe presents 2 Types of Millet Upma - Foxtail & Jowar. Enjoy the wholesome goodness and the delightful flavors of these nutritious and flavorful bowls of upma. FOXTAIL UPMA Ingredients 1½ cups foxtail millet 2 tbsps coconut oil 1 tbsp Bengal gram (chana dal) 1 tbsp split skinless black gram (dhuli urad dal) 1 tsp mustard seeds ¼ tsp cumin seeds 3-4 green chillies, chopped 7-8 curry leaves 1 medium onion, finely chopped 1 large tomato, finely chopped 1 medium carrot, cut into small cubes Salt to taste ¼ cup boiled green peas 2 tbsps chopped fresh coriander leaves Fresh coriander sprig for garnish Coconut chutney to serve Method 1. Dry roast foxtail millet in a non-stick pan till golden brown. Transfer this into a bowl. 2. Heat coconut oil in the same pan. Add Bengal gram and split skinless black gram and sauté till they turn golden brown. 3. Ad mustard seeds and cumin seeds and cook for a few seconds. Add green chillies, curry leaves and onion and mix well. Cook till the onion turns translucent. 4. Add tomato, carrot and salt and mix well. Cover and cook for 2-3 minutes. 5. Add the roasted foxtail millet, mix and cook for 1-2 minutes. Add 3 cups hot water, mix, cover and cook on high heat till the water evaporates. Reduce the heat to low and continue to cook for 8-10 minutes. 6. Add green peas and coriander leaves, mix, cover and cook for 1 minute. 7. Take the pan off the heat and garnish with coriander sprig. Serve hot with coconut chutney. JOWAR UPMA Ingredients 1 cup sorghum (jowar) Salt to taste 2 tbsps ghee 1 tsp cumin seeds A pinch of asafoetida (hing) 1 sprig of curry leaves 2-3 green chillies, slit ½ tsp sugar 2 tbsps roasted and crushed peanuts 2 tbsps chopped fresh coriander Lemon wedges for serving Coriander sprig for garnish Method 1. Wash and soak jowar in sufficient water for 8-10 hours. 2. Drain the water, transfer in a pressure cooker. Add 2½ cups water, salt and close the lid. 3. Cook on medium heat till the pressure is released 4-5 times. 4. Heat ghee in a nonstick pan. Add cumin seeds and once they start to change the colour, add, add asafoetida, curry leaves and chillies and sauté for 30-40 seconds. 5. Open the pressure cooker once the pressure settles completely. 6. Add cooked jowar and mix well. Add sugar, adjust salt, peanuts, coriander and mix well. 7. Transfer in a serving bowl, garnish with lemon wedge, coriander sprig and serve hot. Combine tasty paneer with nutritious foxtail millet, ab paneer tikki ko de ek healthy twist with this new recipe. These nutritious and flavorful tikkis are a wholesome delight to satisfy your cravings anytime. PANEER FOXTAIL TIKKI Ingredients ¼ cup grated paneer 2 medium potatoes, boiled and mashed ½ cup fox tail millets, boiled 1 medium onion, chopped 1½ tsp coriander powder ¾ tsp garam masala powder ½ tsp cumin powder ¼ tsp turmeric powder ½ tsp red chilli powder Salt to taste 2-3 green chillies, chopped 1 -2 tbsps chopped fresh coriander leaves 1½ tsp dried mango powder (aamchur powder) samo flour (vari atta) for coating Oil for shallow frying Green chutney for serving Method 1. Take paneer in a bowl, add potatoes, fox tail millets, onion, coriander powder, garam masala powder, cumin powder, turmeric powder, red chilli powder, salt, green chillies, coriander and mix well. Add dried mango powder and mix. 2. Divide the mixture into equal portion and shape it into balls and slightly flatted to make a Tikki. Coat each Tikki with samo flour 3. Heat oil in a non-stick pan. Place the tikki in a hot oil and shallow fry from both sides till golden brown. Drain on an absorbent paper. 4. Tom Yum Soup | टम यम सप | Soup Recipe | Monsoon ka Mazza | Episode 15 | Sanjeev Kapoor Khazana

Embark on a culinary journey with our Monsoon Ka Mazza Episode 15! Indulge in the tangy and spicy flavors of Tom Yum Soup, a traditional Thai soup that will warm your soul during the rainy season. TOM YUM SOUP Ingredients 12-15 medium prawns 2 fresh lemon grass steams 15-20 fresh coriander stems 3-4 garlic cloves 2 inch galangal roughly chopped 3-4 kaffir lime leaves 1 tbsp oil 1 tbsp red Thai curry paste 3 inch lemongrass stalk, diagonally sliced 5-6 kaffir lime leaves 1 inch galangal, sliced 1 tsp fish sauce 7-8 button mushrooms, sliced ¼ cup coconut milk 1 tsp lemon juice Lemon slices for garnish Method 1. Snip the head of the prawns, peel the shell and keep the tail intact. Clean and devein the prawns. Wash it thoroughly. Reserve the shell and the heads. 2. Take 2 stems of lemon grass and crush the stem with hammer, repeat the same process for coriander stems and garlic cloves and keep aside 3. For the stock heat a deep cast iron pan, add the prawns shells and heads, lemon grass, coriander stems and garlic cloves, and add the 7-8 cups of water, galangal, torn the kaffir lime leaves and add into the stock. 4. Bring it to boil, lower the heat and remove the scrum, simmer for 20 minutes. 5. Switch of the heat and stain the stock through muslin cloth. 6. For the soup, heat oil in a wok. Add red Thai curry paste and mix well. Cook for 1-2 minutes. Add the stock and mix well. Cook till the mixture comes to a boil. 7. Add lemongrass, kaffir lime leaves, and galangal and mix well. Continue to cook for 1-2 minutes. 8. Add the fish sauce and mushroom and mix. Stir in the prawns and add salt and mix. Cook for 3-4 minutes. 9. Add coconut milk, mix and cook for 1-2 minutes. Add lemon juice, mix and switch the heat off. 10. Transfer into a serving bowl, garnish with lemon slices. Serve hot. RAGI DOSA Ingredients 1 cup finger millet (ragi) flour ½ cup rice flour ¼ cup split black gram (dhuli urad dal) flour 2 dried red chillies ½ teaspoon coriander seeds ½ teaspoon fenugreek seeds (methi dana) 1 cup yogurt Salt to taste Oil as required Method 1. Blend together red chillies, coriander seeds and fenugreek seeds with water as required to a coarse paste. 2. Mix together finger millet flour, rice flour, black gram flour, prepared paste, yogurt and water as required to a batter of pouring consistency. Set aside to ferment for 3-4 hours. 3. Heat some oil on a non-stick tawa. Pour a ladleful of batter on it, spread into dosa and cook till evenly done. 4. Serve hot with green coconut chutney. PISTA PESTO CROSTINI Ingredients ½ cup Pro V Select California Roasted and Salted Pistachios 4 toasted sourdough bread slices 1½ cups fresh basil leaves 3-4 garlic cloves ¼ cup extra virgin olive oil 2 tbsps grated parmesan cheese Halved cherry tomatoes as required Halved yellow baby tomatoes as required Halved bocconcini roundels as required Fresh basil sprigs for garnish Method 1. Stuffed Egg Pakoda | Fish Pakoda | Monsoon ka Mazza | Episode 14 | Sanjeev Kapoor Khazana

STUFFED EGG PAKODA Ingredients 4 hard boil eggs Stuffing 1 small onion 1 tbsp chopped fresh coriander leaves 2 green chillies, chopped Crushed black peppercorns to taste Salt to taste ¼ tsp chaat masala + for sprinkling 1 tbsp schezwan sauce Batter 1½ cups gram flour ¼ tsp red chilli powder ¼ tsp turmeric powder Salt to taste ¼ tsp carom seeds A pinch of baking soda 1 tsp coriander leaves Oil for deep frying Tomato ketchup to serve Green chutney to serve Method 1. To make the stuffing, cut hard-boiled eggs into half and transfer the yolks in a bowl ,add onion, fresh coriander, green chillies, salt, crushed black peppercorns, and chaat masala and mix. Mash with the back of the spoon. 2. Add schezwan sauce and mix. 3. Fill the yolk mixture into egg white shells. 4. To make the batter, take gram flour in a bowl, add red chilli powder, turmeric powder, salt, carom seeds, baking soda, coriander leaves and ½ cup water and whisk till a smooth batter is formed. 5. Heat sufficient oil in a kadai. 6. Dip the each stuffed egg into the batter and gently slide into the hot oil. Deep fry till they turn golden brown and crisp. Drain on an absorbent paper. 7. Arrange the pakodas into a serving plate, sprinkle chaat masala and serve hot with tomato ketchup and green chutney. FISH PAKODA Ingredients 300 grams fish fillets, cut into 1 inch pieces ¼ teaspoon turmeric powder Salt to taste 1 tablespoon fresh garlic paste 1 tablespoon lemon juice 1½ cups gram flour (besan) 1½ tablespoons red chilli paste 8-10 curry leaves, chopped 2-3 green chillies, chopped 2 tablespoons chopped fresh coriander leaves 1 tablespoon white sesame seeds 1 teaspoon carom seeds (ajwain) ¼ cup yogurt ¾ cup rice flour Oil for deep-frying Method 1. Put fish pieces in a bowl. Add turmeric powder, salt, garlic paste and lemon juice, mix well and set aside to marinate for 25-30 minutes. 2. Mix together gram flour, chilli paste, curry leaves, green chillies, coriander leaves, sesame seeds, carom seeds, yogurt, salt, 1 cup water and rice flour, mix well to make a thick batter. 3. Heat sufficient oil in a kadai. 4. Dip the marinated fish pieces in the batter till well coated, slide them into hot oil and deep-fry till golden brown. Drain on absorbent paper. 5. Serve hot with green chutney.
