Pinacolada Ice Cream | Sugar Free Sundays with Sanjeev Kapoor | Episode 18 | Sanjeev Kapoor Khazana

PINACOLADA ICE CREAM Ingredients 1½ cups chopped fresh pineapple 1 cup apple juice 14 measures Sugar Free Green 2 cups thick coconut milk ½ cup coconut milk powder Toasted coconut slices for garnish Method 1. Heat a nonstick pan. Add pineapple, apple juice, 7 measures Sugar Free Green and cook on medium heat for 10-15 minutes. 2. Take coconut milk in an air tight container, add coconut milk powder, remaining Sugar Free Green and whisk well. 3. Allow the pineapple mixture to cool slightly and add in the coconut milk mixture and mix lightly. 4. Freeze for 8-10 hours. 5. Scoop, garnish with toasted coconut slices and serve chilled.
