Tired of having the same potato curry each meal? Then this is a complete surprise- a base of mashed potatoes and cashewnuts in a goan style curry add a lovely creamy bite to each mouthful. Enjoy it along with steamed rice and it will comfort you even on the most stressful days. GOAN POTATO CASHEW CURRY Ingredients 4 medium potatoes, boiled, peeled and mashed 10-12 cashew nuts, soaked and halved 2-3 tbsps ghee 1 tsp cumin seeds ¼ tsp asafoetida (hing) 10-15 curry leaves 2-3 green chillies, finely chopped 2 medium onions, chopped ½ tsp turmeric powder Salt to taste ½ tsp sugar 2-3 tbsps chopped fresh coriander leaves + to sprinkle Chapatis for serving Method 1. Heat ghee in a nonstick pan. Add cumin seeds and once they start to change the colour, add asafoetida, curry leaves, green chillies and sauté for 30 seconds. 2. Add onions and sauté till light brown. 3. Add turmeric powder and mix well. Mash the potatoes and add to the pan. 4. Add 1½ cups water, cashew nuts and salt, sugar and mix well. 5. Add coriander leaves and mix well. Cook for 2-3 minutes on low heat. 6. Transfer in a serving bowl, sprinkle coriander and serve hot with chapatis.
