This authentic recipe of bhakri coming all the way from Solapur. This is served with a delicious and spicy red chilli chutney. SOLAPURI KADAK BHAKRI Ingredients 1 cup sorghum (jowar) flour + for dusting ¼ cup rice flour Salt to taste Kharda 15-20 fresh red chillies 3 tbsps oil 2 tbsps roasted peanuts, crushed 10-12 garlic cloves Sea salt to taste Onion wedges to serve Method 1. Take sorghum flour in a large plate, add rice flour, salt and make a well in the centre, pour 1 cup warm water and knead to a semi-soft dough. Cover with a damp muslin cloth and set aside for 5-10 minutes. 2. To make kharda, heat oil in a tawa, break the red chillies and add, sauté on high heat for 3-4 minutes. 3. Add peanuts and sauté for 1 minute. Add garlic cloves and sauté for 1-2 minutes. Coarsely mash with a wooden masher. 4. Add sea salt, mix and take the tawa off the heat. 5. Divide the dough into equal portions, shape each portion into a ball. 6. Dust the worktop with a little sorghum flour, place each ball, flatten it and gently tap and spread into a thin round disc. 7. Heat a tawa, carefully place the round disc on it, take a muslin cloth and dip in water and apply on top. Cook for 1 minute, flip and cook further for 1-2 minutes, while keep pressing using a cloth till crisp (kadak). 8. Serve the kadak bhakris with kharda along with onion wedges. Feta & Spinach Grilled Cheese | कैफे वाली ग्रिल सैंडविच रेसिपी | Sanjeev Kapoor Khazana
No onions and no tomatoes. A simple and easy-to-put-together sourdough bread sandwich for a quick bite before heading out. FETA & SPINACH GRILLED CHEESE Ingredients 100 grams feta cheese 20-25 baby spinach leaves 8 slices of sourdough bread 1 tbsp olive oil + for brushing 8-10 garlic cloves 2 tbsps butter Salt to taste Crushed black peppercorns to taste 1 tsp red chilli flakes 1 tsp chopped fresh parsley leaves 1 tsp chopped garlic Grated mixed cheese as required Wafers to serve Method 1. Preheat the oven at 180ºC. 2. Arrange the sourdough bread slices on the baking tray and brush olive oil on each slice. Bake in the preheated oven for 8-10 minutes. 3. Heat olive oil in a non-stick pan. Add garlic cloves and sauté till golden brown. Transfer the garlic cloves in a mortar, and coarsely pound with the help of a pestle. 4. Heat the oil remaining in the pan. Add chopped garlic and mix well. Cook for 1 minute. 5. Add baby spinach leaves, salt, and crushed black peppercorns and mix well. Sauté for 1-2 minutes. Take the pan off the heat. 6. Bring the toasted bread slices out of the oven. Spread the prepared butter over one side of each toasted bread slice. 7. Add a portion of the spinach mixture over half of the bread slices. Sprinkle a portion of feta cheese, add a portion of mixed cheese, and cover with the remaining bread slices with the buttered side facing down. Place the sandwiches back in the preheated oven and bake for 5-6 minutes or till cheese melts. 8. Cut the sandwiches in half and serve with wafers. Nothing as comforting and delicious as a light Neer Dosa and Prawn Sukke, one of Mangalore’s most popular recipes. Bet, this will become one of your favourite combo now onwards. NEER DOSA AND PRAWN SUKKE Ingredients Neer dosa 2½ short-grain rice, soaked for 3-4 hours and drained 1 cup scraped fresh coconut Salt to taste Oil for brushing Prawns 15-20 medium prawns, peeled, cleaned, and deveined 2 tbsps oil 1 tbsp finely chopped ginger 1 tbsp finely chopped garlic 15-20 curry leaves 2-3 green chillies, slit 1 medium onion, finely chopped 1 medium tomato, finely chopped Salt to taste 1 tsp fennel powder ½ tsp black pepper powder 1 tsp coriander powder ¼ tsp turmeric powder ½ tsp red chilli powder ¼ cup scraped fresh coconut + for garnish Fried curry leaves for garnish Method 1. Put the rice in a grinder jar, add coconut and 1 cup water and grind to a fine paste. Transfer in a large bowl. Add 1½ cups water and mix well. Add salt and 1½ cups water and mix till well combined. 2. To make the prawns, heat oil in a kadai. Add ginger, garlic, curry leaves and green chillies and sauté for 1-2 minutes. 3. Add onion and sauté till translucent. Add tomato and mix. Add the salt, mix well and cook till soft and pulpy. 4. Add fennel powder, black pepper powder, coriander powder, turmeric powder, and red chilli powder and mix well. Cook for 1-2 minutes. 5. Add prawns and sauté on high heat for 3-4 minutes. Reduce the heat to medium and continue to cook for 2-3 minutes. 6. Add coconut and mix well. Switch the heat off. 7. Heat a non-stick shallow pan. Brush some oil. Pour a ladleful of batter and swirl to spread evenly and thinly all over the pan. Cover and cook for 2-3 minutes. Fold into half and fold again into half to form a triangle. 8. Transfer the prawns into a serving bowl. Garnish with coconut and fried curry leaves. Arrange the neer dosa on a serving plate. Serve hot. Suran Ki Chutney | जिमीकंद/ओल/सूरन की चटनी | Yam Chutney | Chutney Recipes | Sanjeev Kapoor Khazana
Suran as fritters in Maharashtra, and as chutney in Bihar. Yes. Suran ki Chutney is a Bihari recipe. Same ingredient, just one of the many interesting preparations. Do try. SURAN KI CHUTNEY Ingredients 500 grams yam (suran), peeled and cut into 3 inch pieces 1 tsp turmeric powder Salt to taste 2 tbsps yellow mustard seeds 1 tsp carom seeds (ajwain) 2 green chilies, slit 1 tsp roasted cumin powder 1½ tsp finely chopped garlic 1 lemon cut into half ¼ cup mustard oil 1 tsp red chili powder Fresh coriander sprig for garnish Method 1. Put the yam in a pressure cooker, add 2 cups water, ½ tsp turmeric powder, salt and mix well, cover and cook under pressure for 3-4 whistles on medium heat. 2. Lightly roast the yellow mustard seeds in a pan for 1 minute. Transfer in a mortar and coarsely crush with the help of a pestle. 3. Open the cooker once the pressure has reduced completely, transfer the cooked yam on a plate and mash the yam with the help of a masher. 4. Add carom seeds, green chillies, roasted cumin powder, garlic, crushed mustard seeds, squeeze the juice of lemon directly into it and mix till well combined. 5. Heat mustard in a pan. Add remaining turmeric powder, red chilli powder and mix well. Switch the heat off and allow the mixture to cool slightly. 6. Pour the cooled oil over the yam mixture and mix well. Trasnfer this mixture in an air tight jar, place it in the refrigerator for 6-7 hours. 7. While serving, take a portion of the chutney, garnish with coriander sprig and serve. Don’t you love it when you make your favourite Pizza right from the dough, then the sauce, all for much lower than what you would have shelled out at a pizzeria or café? Try this recipe to make a restaurant-style pizza. VEG PIZZA Ingredients Dough 2 cups refined flour (maida) + for dusting 1 tsp salt 2 tsps dried yeast 1 tsp sugar 2 tbsps oil + for greasing Sauce 4 medium tomatoes 1 tbsp oil 1 tbsp chopped garlic 1 medium onion, chopped Salt to taste Black pepper powder to taste ½ tsp red chilli powder ½ tsp red chilli flakes 1½ tbsps tomato ketchup 5-6 fresh basil leaves + for garnish Topping 100 grams grated mixed cheese Onion rings as required Tomato slices as required Boiled corn kernels to sprinkle Sliced green capsicum as required 100 grams cottage cheese, cut into small pieces Salt to taste Red chilli flakes to sprinkle Method 1. Take refined flour in a bowl. Add salt and mix well. 2. Take dried yeast in a bowl. Add sugar, 2 tbsps warm water and set aside for 5 minutes. 3. Add yeast mixture to the refined flour, 1 tbsp oil, 1 cup water and knead to soft dough. Add remaining oil and knead again. 4. Cover with a moist muslin cloth and set aside for 40-45 minutes. 5. For sauce, roughly chop the tomatoes and transfer in a grinder jar and grind to coarse paste. 6. Heat oil in a nonstick pan. Add garlic and sauté for 30 seconds. 7. Add onion and sauté till translucent. Add tomato puree, salt, black pepper powder, red chilli powder, red chilli flakes and mix well. 8. Once the mixture comes to a boil, cover and cook on medium heat for 8-10 minutes. 9. Add tomato ketchup and cook for 1-2 minutes. 10. Tear basil leaves roughly and add to the pan. Take the pan off the heat and allow to cool. 11. Knock back the dough and knead again, Divide the dough into 2 equal portions, dust some refined flour on the surface and roll into thin disks. Prick 1 roundel with the help of fork. 12. Heat a nonstick tawa. Place the rolled disk and cook on medium heat for 5-6 minutes. 13. Flip and spread pizza sauce on top and sprinkle half the cheese on top. 14. Arrange onion rings, tomato slices on top. Sprinkle corn kernels and arrange capsicum and cottage cheese pieces on top. 15. Sprinkle salt and red chilli flakes on top. 16. Cover and cook on low heat for 8-10 minutes. 17. Preheat the oven to 200ºC. 18. Transfer the other disk on a baking tray and similarly make other pizza. 19. Bake in preheated oven for 8-10 minutes. 20. Cut the pizzas into wedges, garnish with basil leaves and serve. A superb and quick salad meal. Tender, juicy shredded chicken with corn gently tossed in a delicious dressing is a simple and yummy dish. CHIPOTLE CHICKEN SALAD Ingredients 2 tsps chipotle sauce 2 boneless chicken breasts Salt to taste Crushed black peppercorns to taste 3-4 tbsps olive oil 1 corn on the cob Dressing 1½ tbsps mayonnaise 1 tsp chipotle sauce 1 tsp honey 1 tbsp lemon juice 2 tsps olive oil Salt to taste Salad Assorted lettuce 5-6 cherry tomatoes, halved 1 small English cucumber, thinly sliced Croutons for garnish Microgreens for garnish Method 1. Take chicken breasts in a shallow wide bowl. Add salt, crushed black peppercorns, chipotle sauce, and 1 tbsp olive oil and apply the mixture well on both the sides of the chicken. Set aside to marinate for 10-15 minutes. 2. Heat 1-2 tbsps olive oil in a non-stick grill pan. Place the chicken breasts along with the corn on the cob and grill on high heat till done. Drizzle the remaining olive oil, sprinkle salt and crushed black peppercorns on the corn. 3. Take the chicken breasts on the worktop and thickly slice them. Slice the corn on the cob into roundels. 4. To make the dressing, take mayonnaise in a jar. Add chipotle sauce, honey, lemon juice, olive oil and salt. Place the lid on and shake till well combined. 5. Tear the lettuce leaves and arrange in a large bowl. Add cherry tomatoes, cucumber, corn roundels, chicken and drizzle the dressing on top. Gently mix and arrange on a serving plate. Garnish with croutons and microgreens. Serve immediately. Lasaniya Dhebra | लसनिया ढेबरा | #MilletKhazana | Gujarati Snack | Sanjeev Kapoor Khazana
This thick flatbread made from healthy flours and flavoured with methi and garlic is a take-away dish for picnics and long travels. LASANIYA DHEBRA Ingredients 2 tbsps chopped garlic 1 cup sorghum (jowar) flour ¼ cup whole wheat flour (atta) 1 cup chopped fresh fenugreek leaves 2 tbsps chopped fresh coriander leaves 1 tbsps ginger-green chilli paste 1 tsp toasted white sesame seeds ¼ tsp carom seeds (ajwain) ½ tsp black pepper powder ½ tsp turmeric powder ¼ tsp asafoetida (hing) 1 tbsps grated jaggery Salt to taste 1 tbsp ghee + for cooking 1 cup yogurt Pickle for serving Method 1. Take garlic in a parat, add sorghum flour, whole wheat flour, fenugreek leaves, fresh coriander leaves, ginger-green chilli paste, white sesame seeds, carom seeds, black pepper powder, turmeric powder, asafoetida jaggery, salt and ghee. 2. Mix well add yogurt and knead to a soft dough. 3. Dust some flour on rolling board, divide the dough into equal portions and roll into a thick discs. 4. Heat a non-stick tawa, place the dhebra and cook for 2-3 minutes on medium heat. Flip and drizzle some ghee and cook for 2-3 minutes more. 5. Flip the dhebra drizzle some more ghee and cook for 1 minute more. 6. Transfer on a serving plate and serve hot with pickle. A fun, delicious dessert with a bit of crunch when the heat starts to become unbearable. CHOCOLATE PEANUT BUTTER ICE CREAM Ingredients ¾ cup fresh cream 1 cup chopped dark chocolate 1 cup crunchy peanut butter 1 cup condensed milk 1 cup whipping cream ½ cup roasted peeled peanuts Method 1. Heat cream in a non-stick pan. Add dark chocolate and mix well. Cook on low heat, stirring continuously till the chocolate melts. Take the pan off the heat and allow to cool completely. 2. Take crunchy peanut butter in a large bowl. Beat with an electric beater till the light. Add condensed milk and beat again till well combined. Add whipping cream and beat till the mixture is light and fluffy. Transfer this into an air tight container. 3. Coarsely crush peanuts and sprinkle this over the ice cream mixture. Soya Kofta Curry | सोयाबीन कोफ्ता करी | Restaurant Style Recipe | Sanjeev Kapoor Khazana
From among so many delicious kofta curries, this one is an interesting one. Koftas just as soft and the creamy gravy perfectly balances the tastes. SOYA KOFTA CURRY Ingredients Kofta 1 cup soya granules, soaked for 1 hour and drained 3 medium potatoes, boiled, peeled and grated ¼ cup dried breadcrumbs Salt to taste 1 tsp ginger-green chilli paste ¼ cup fried onions ½ tsp cumin powder ½ tsp red chilli powder ¼ tsp garam masala power Black pepper powder to taste 1 tbsp chopped fresh coriander Corn flour for coating Stuffing ¼ cup finely chopped cashew nuts 2-3 tbsps finely chopped raisins 1 tsp chopped ginger A pinch of green cardamom powder 1 tsp sugar A pinch of salt A pinch of garam masala powder ¼ tsp cumin powder 2 tbsps chopped fresh coriander Curry 3 tbsps ghee 1 tsp cumin seeds 2 bay leaves 1 inch cinnamon stick 8-10 black peppercorns 5-6 cloves 1 cup onion paste 1½ tbsps ginger-garlic paste 2 cups fresh tomato puree ½ cup yogurt ½ tsp turmeric 1 tsp red chilli powder Sat to taste 2 tsps sugar 2-3 chopped green chillies Black pepper powder to taste 2 tsps cashew nuts-melon seeds paste ½ tsp garam masala powder 1 tsp dried fenugreek leaves (kasuri methi) powder A large pinch of green cardamom powder ¼ cup fresh cream + for garnish Fresh coriander sprig for garnish Method 1. Take soya granules in a large bowl, add potatoes, breadcrumbs, salt, ginger-green chilli paste, fried onions, cumin powder, red chilli powder, garam masala, black pepper powder, coriander leaves and mix till well combined. 2. To make the stuffing, take cashew nuts in bowl, add raisins, ginger, green cardamom powder, sugar, salt, garam masala, cumin powder, fresh coriander and mix till well combined. 3. Take a small portion of soya mixture, make a cavity in the center, stuff it with a portion of the stuffing. Bring the edges to the center and roll into a ball to form a kofta. 4. Coat each kofta in corn flour and dust off the excess. 5. Heat sufficient oil in a kadai, slide in the koftas into the hot oil. Deep fry till golden brown and crisp. Drain on an absorbent paper and set aside. 6. To make the curry, heat ghee in a pan, add cumin seeds, bay leaves, cinnamon stick, black peppercorns and cloves and sauté till fragrant. Add the onion paste and cook till golden. Add ginger-garlic paste, mix and continue cook till the mixture turns golden brown. 7. Add tomato puree and mix well, continue to cook till fat separates. 8. Reduce the heat to low add yogurt and cook till the fat separates. 9. Add the turmeric powder, red chilli powder, salt, suger, green chillies, black pepper powder and mix well. 10. Add the cashew nut-melon seeds paste, mix well and cook for 1 minute. 11. Add 2 cups water and mix well. Continue to cook for 2 minutes. 12. Add garam masala powder, dried fenugreek leaves powder and green cardamom powder and mix well. Add the fresh cream and mix till well combined. 13. Transfer the gravy in a serving bowl, arrange the fried koftas over it and garnish with fresh cream and coriander sprig. Serve hot. There’s something about tea and namkeen pairings tasting great together. Make tea times tasty and healthy with fried bottle gourd dumplings. DUDHICHE MUTKE Ingredients 2 cups grated bottle gourd (dudhi) ½ tsp turmeric powder 1 tsp red chilli powder 2 tbsps white sesame seeds Salt to taste 1 tbsp ginger-green chilli paste 3 tbsps sorghum (jowar) flour 3 tbsps ragi flour 3 tbsps rice flour 2 tbsps gram flour (besan) 2 tbsps chopped fresh coriander leaves 2 tbsps oil + for deep frying Tea for serving Method 1. Take bottle gourd in a bowl. Add turmeric powder, red chili powder, white sesame seeds, salt, ginger- green chilli paste, sorghum flour, ragi flour, rice flour, gram flour, coriander leaves and mix well. 2. Add oil and knead to stiff dough. 3. Grease palms with oil, divide the mixture into equal portions and shape in into cylinders. 4. Heat sufficient oil in a kadai, slide in a few dough cylinders at a time and deep fry till golden brown and crisp. Drain on absorbent paper. 5. Serve hot with tea. A unique dal made from pound soya beans. This dal is a Kumaoni speciality. Isn’t it amazing what delicious recipes are yet to be discovered? BHATWANI DAL Ingredients 1 cup soya beans 2 tbsps black sesame seeds 2-3 tbsps mustard oil 1 tsp cumin seeds ¼ tsp asafoetida (hing) 10-15 garlic cloves, crushed 2 medium onions, chopped 2-3 green chillies, chopped 2-3 dried red chillies, stemmed 1 large tomato, finely chopped ½ tsp turmeric powder 1½ tsps coriander powder 1 tsp red chilli powder 2 tbsps chopped fresh coriander leaves Steamed rice for serving Method 1. Heat a non-stick pan, add soya beans and dry roast on a medium heat for 4-5 minutes. 2. Add black sesame seeds and roast for a minute. Take the pan off the heat and allow to cool. 3. Transfer in a grinder jar and grind to coarse powder. 4. Heat mustard oil in a nonstick pan. Add cumin seeds and once they start to change the colour, add asafoetida and mix well. 5. Add garlic and sauté for a minute. 6. Add onions and sauté till golden brown. 7. Add green chillies, dried red chillies and sauté for 30 seconds. 8. Add tomato and sauté till it turns pulpy. 9. Add turmeric powder, coriander powder, red chilli powder and mix well. 10. Add ground mixture and mix well. Add 3-4 cups hot water and mix well. 11. Once the mixture comes to a boil, lower the heat, cover and cook for 10-15 minutes. 12. Add coriander and mix well. 13. Transfer in a serving bowl and serve hot with steamed rice. Chicken Fajita Tacos | चिकन फहिता टाकोस बनाने का तरीका | Sanjeev Kapoor Khazana
Delicious chicken fajita tacos are seriously yummy. Spicy, seared chicken in crunchy tacos are a quick snack or meal when all you want to do is relax and that’s what Sundays are for. CHICKEN FAJITA TACOS Ingredients 250 grams boneless chicken breasts, cut into thin strips 4 readymade refined flour tortillas Salt to taste Black pepper powder to taste 1 tsp dried oregano 2 tsps paprika powder 2 tsps cumin powder 1½ tbsps garlic paste 1 tbsp lemon juice 2 tbsps olive oil 1 medium white onion, thickly sliced ½ medium green capsicum, seeded and thickly sliced ½ medium yellow capsicum, seeded and thickly sliced Assorted lettuce leaves as required Sour cream to drizzle Readymade salsa as required Fresh coriander leaves for garnish Method 1. Cut the tortillas into small roundels using a cookie cutter. Use the leftovers to make nachos. 2. Heat a nonstick tawa. Place the cut roundels and roast on medium heat for 2 minutes on each side. 3. Place on a rolling pin and hold for a minute so as to retain the shape. 4. Take chicken in a bowl. Add salt, black pepper powder, dried oregano, paprika powder, cumin powder, garlic paste, lemon juice and mix well. Set aside to marinate for 10-15 minutes. 5. Heat olive oil in a nonstick wok. Mushroom Pot Stickers | मशरूम पॉट स्टिकर्स बनाने का आसान तरीका | Sanjeev Kapoor Khazana
These pot stickers are crispy dumplings stuffed with a mushroom filling and a fab option for light and special meals that are not very elaborate. MUSHROOM POT STICKERS Ingredients 10-12 button mushrooms, roughly chopped 4-5 dried shitake mushrooms, soaked for 30 minutes, drained, and finely chopped 5-6 tbsps sesame oil 1 tbsp finely chopped garlic ½ tbsp finely chopped ginger 2 fresh red chilies, finely chopped Salt to taste Crushed black peppercorns to taste 2-3 tsps finely chopped spring onion greens + for garnish 1 tbsp light soy sauce Readymade momos dough Soy dip to serve Slurry 2 tbsps corn flour 1 tsp salt Method 1. Heat 1-2 tbsps sesame oil in non-stick pan. Add garlic, ginger, red chilies, and sauté on high heat for 1-2 minutes. 2. Add the button mushrooms and sauté on high heat for 2-3 minutes. 3. Add shitake mushrooms, mix and cook for 1 minute. Add salt, and crushed black peppercorns and mix well. Cook for 1 minute. 4. Add spring onion greens and light soy sauce and mix well. 5. To make the slurry, take corn flour in a small bowl. Add salt and 1 cup water and mix well. 6. To make the dumplings, roll out the ready-made momos dough into a large thin disc. Cut into small round discs with the help of a cookie cutter. 7. Take a disc, apply some water on the edges, place a portion of the mushroom mixture in the centre, fold the disc in half, pinch in the middle, now using your thumb and index finger, pinch and pleat the right side and similarly pleat the left side. 8. Heat the remaining sesame oil in a non-stick wide pan on high heat. Place the dumplings on it and cook for 2-3 minutes or till the bottom of each dumpling is golden brown and crisp. Sprinkle some of the cornflour slurry and immediately cover the pan with a lid. Reduce the heat to medium and continue to cook for 3-4 minutes. Open the lid, and gently place the dumplings along with the crisp sides on a serving platter. Garnish with spring onion greens. 9. Serve hot with soy dip. Ragi (Finger Millet) and chicken cooked in tasty and healthy broth! A perfect nutritionally balanced meal served with masala bread sticks! RAGI CHICKEN SHORBA Ingredients 2 tbsps finger millet (ragi) flour 200 grams boneless chicken breasts, cut into ½ inch pieces 2 tsps oil 1 tsp cumin seeds 6-8 black peppercorns 3 green cardamoms 1 inch cinnamon stick 1 bay leaf 1 tbsp chopped ginger 2 tsps chopped garlic 1 green chilli, slit 4 cups chicken stock 2 tsps chopped coriander stems Salt to taste 2 tbsps chopped fresh coriander leaves Masala breadsticks for serving Method 1. Heat oil in a pan. Add cumin seeds, black peppercorns, green cardamoms, cinnamon, bay leaf and sauté till fragrant. 2. Add ginger, garlic and sauté for 30 seconds. Add green chilli and mix well. 3. Add chicken stock, coriander stems and mix well. Cover and cook for 5-6 minutes. 4. Take ragi flour in a bowl. Add ½ cup water and mix well. 5. Add salt and chicken pieces to the stock mixture. Discard the whole spices and cook for 4-5 minutes on medium heat. 6. Add the ragi slurry and cook for 5-6 minutes on medium heat. Add coriander and mix well. 7. Transfer into serving bowls and serve hot with masala breadsticks. For those who love the Pina Colada, recreating the same as a baked version is a great way to savour the sweet and tangy fruit for some more time. EGGLESS PINA COLADA SLICE Ingredients 1/3 cup pineapple jam Chopped fresh pineapple to sprinkle ¾ cup butter 1 cup castor sugar 1½ cups refined flour (maida) 1½ tsps baking powder ½ tsp baking soda A pinch of salt ¼ cup coconut milk A dash of vinegar Crumble ¼ cup cold butter ¾ cup desiccated coconut 2 tbsps castor sugar ¼ cup refined flour Method 1. Preheat oven at 180ºC. 2. Take butter in a bowl. Add castor sugar and beat till light and fluffy. 3. Sift refined flour, baking powder, baking soda and salt directly in the bowl. Mix with light hands. 4. Add coconut milk, vinegar and mix well. 5. Transfer the mixture in a greased and lined baking tray and press well. 6. Bake in preheated oven for 20 minutes. 7. Take cold butter in a bowl. Add desiccated coconut, castor sugar and refined flour and mix well. 8. Spread pineapple jam evenly over the baked mixture. Sprinkle pineapple pieces, crumble mixture and press lightly. 9. Bake in preheated oven for 10-15 minutes. Allow to cool completely. 10. Demould, cut into squares and serve. Special guests deserve special dishes. Like this all-time favourite, Tandoori Chicken. Just the mention of it and, one envisions a lovely, charred-at-the-edges leg piece with sides of onion rings, lemon slices and mint chutney. Takes time to make, but it’s all worth it. The party has just begun! TANDOORI CHICKEN Ingredients 1 kg chicken, cut into 4 parts Salt to taste 1 tsp Kashmiri red chilli powder 1½ tbsps ginger-garlic paste 1 tbsp lemon juice Melted butter for brushing Second marination ½ tsp carom seeds (ajwain) 2-3 tbsps gram flour (besan) 1 cup hung yogurt 2 tbsps Kashmiri red chilli paste 1½ tbsps ginger-garlic paste 2-3 tbsps mustard oil, smoked and cooled Salt to taste Black salt to taste 1 tsp garam masala powder ½ tsp Kashmiri red chilli powder To serve Green chutney as required Onion rings as required Lemon wedges as required Method 1. Make incisions on both sides of the chicken pieces. Transfer in a large bowl. Add salt, Kashmiri red chilli powder, ginger-garlic paste, and lemon juice and rub the mixture well on all sides of the chicken. Set aside in the refrigerator for 1-2 hours to marinate. 2. To make the second marination, dry roast carom seeds in a non-stick pan. Add the gram flour and roast till fragrant and it turns light brown. Take the pan off the heat and allow to cool slightly. 3. Take hung yogurt in a large bowl. Add Kashmiri red chilli paste, ginger-garlic paste, mustard oil, salt, black salt, garam masala powder, Kashmiri red chilli powder and mix well. Add the roasted gram flour and carom seeds and whisk well. 4. Add the marinated chicken and apply the marinade on all sides of the chicken. Refrigerate the chicken again to marinate for 1 hour. 5. Preheat the oven at 200ºC. 6. Arrange the chicken pieces on a greased baking tray. Place it in the preheated oven for 40-45 minutes, baste with butter in between. 7. Bring the tray out of the oven and baste the chicken with melted butter. Serve hot with green chutney, onion rings and lemon wedges. Thai Green Curry | वेजीटेरियन थाई ग्रीन करी रेसिपी | Food on Budget | Sanjeev Kapoor Khazana
THAI GREEN CURRY Ingredients Coconut Milk 1 cup scraped fresh coconut 1 tsp soaked and drained rice Rice 1½ cups short grain rice, soaked and drained 8-10 pandan leaves Salt to taste Thai Green Curry Paste 3 tsps cumin seeds 3 tsps coriander seeds 8-10 black peppercorns 1 inch lemongrass stalk, roughly chopped 1 inch galangal, roughly chopped 8-10 garlic cloves 15-20 shallots 15-20 coriander stalks 2-3 kaffir lime leaves 1 lemon 5-6 fresh basil leaves 10-15 fresh coriander sprigs Tempering 2 tbsps oil 1 tbsp chopped garlic 2-3 spring onion bulbs, sliced 1 medium carrot, peeled and sliced 6-8 cauliflower florets 3-4 small brinjals, stemmed and halved 5-6 French beans, stringed and cut into 1-inch pieces Salt to taste 1 medium green capsicum, seeded and cut into 1 inch pieces 1-2 kaffir lime leaves 2 tsps sugar 5-6 fresh basil leaves Fresh basil sprigs for garnish Method 1. Take coconut in a bowl. Add ½ cup water hot water and mix well. 2. Transfer this mixture in a grinder jar and add rice, 1 cup water and grind to fine paste. 3. Strain through a fine muslin cloth and squeeze well. This is the first extract. 4. Transfer the coconut back in the grinder jar, add 1 cup water and grind to fine paste. 5. Strain through a fine muslin cloth and squeeze well. This is the second extract. 6. Add ½ cup water in the grinder jar and strain it. 7. Heat a pan. Add rice, 3 cups water, pandan leaves, salt and mix well. Cover and cook on medium heat for 10-12 minutes. Take the pan off the heat and set aside for 10-15 minutes. 8. Heat a nonstick pan. Add cumin seeds, coriander seeds, black peppercorns and dry roast till fragrant. Take the pan off the heat and allow to cool. 9. Take a grinder jar. Add lemongrass, galangal, garlic, shallots, coriander stalks and kaffir lime leaves. 10. Remove the skin of lemon and add to the jar. Add roasted spices, ¾ cup water and grind to a coarse paste. 11. Add basil leaves, coriander leaves, ¼ cup water and grind to a fine paste. 12. Heat oil in a deep pan. Add garlic and sauté for 30 seconds. Add spring onion bulbs and sauté for 1-2 minutes. 13. Add ¾ of the prepared paste and cook till oil separates. 14. Add carrot, cauliflower, brinjals, French beans and mix well. 15. Add salt, thin coconut milk and mix well. Once the mixture comes to a boil, cover and cook on low heat for 6-8 minutes. 16. Add green capsicum, kaffir lime leaves and mix well. Cook for 1-2 minutes. 17. Add thick coconut milk, sugar and mix well. Cook for 2-3 minutes. 18. Tear basil leaves and add to the curry. 19. Transfer in a serving bowl, garnish with basil sprig and serve hot with cooked rice. Sriracha Paneer Millet Bowl | सिराचा पनीर मिलेट बाउल | #MilletKhazana | Sanjeev Kapoor Khazana
When you are craving for a wholesome bowl of food packed with nutrients and flavours, Sriracha Paneer Millet Bowl is the answer! This bowl will not only fill your tummy but also your soul! SRIRACHA PANEER MILLET BOWL Ingredients 300 grams cottage cheese (paneer) 2½ tbsps sriracha sauce ¼ cup kodo millet ¼ cup banyard millet 2½ tsps + 1 tbsp chopped garlic Salt to taste Crushed black peppercorns to taste ½ tsp dark soy sauce ¼ tsp red chilli sauce 1 tsp lemon juice 1 tbsp rice flour 1½ tbsps + 1 tsp oil + for grilling 2 medium onions, chopped 4-5 button mushrooms, quartered 1 medium onion, quartered and layers separated ½ small green zucchini, cut into triangles ½ small yellow squash, cut into triangles ½ medium red capsicum, seeded and cut into triangles ½ medium green capsicum, seeded and cut into triangles 4-5 fresh parsley sprigs + for garnish 1 tsp butter 1 tbsp peanut butter ¼ cup coconut milk 1 tbsp honey Method 1. Slice the cottage cheese block thickly and further cut into triangles. 2. For the marination, take 1½ tbsps sriracha sauce in a bowl. Add 1 tsp garlic, salt, crushed black peppercorns, dark soy sauce, red chilli sauce, lemon juice and rice flour and mix well. 3. Add the cottage cheese triangles and mix well. Set aside for 10-15 minutes. 4. For the spiced millet, heat 1½ tbsps oil in a nonstick pan. Add 1 tbsp garlic and sauté for 30 seconds. 5. Add 1onion and sauté till translucent. Add kodo and banyard millet and mix well. Sauté for a minute. 6. Add 1¼ cups water, salt, crushed black peppercorns and mix well. Cover and cook on high heat for 5 minutes. Reduce the heat and cook for 2-3 minutes. Set aside for 5-10 minutes. 7. For sautéed vegetables, heat remaining oil in a nonstick pan, add 1 tsp garlic and sauté for 30 seconds. 8. Add mushrooms and cook for 2 minutes on high heat. Add onion, green zucchini, yellow squash, and sauté for 2 minutes. 9. Add red capsicum, green capsicum, salt, crushed black peppercorns and toss well. 10. Chop the fresh parsley and add to the pan. Transfer in a bowl and set aside. 11. For the sauce, heat butter in a nonstick pan. Add remaining garlic and sauté for 30 seconds. Add remaining onion and sauté till translucent. Add salt, crushed black peppercorns, remaining sriracha sauce and sauté for a minute. 12. Add ¾ cup water and mix well. Add peanut butter and sauté for a minute. 13. Add coconut milk and mix well. Add honey and mix. 14. Heat oil in a nonstick grill pan. Place the cottage cheese triangles and cook on medium heat for 3-4 minutes on each side. 15. For assembling, place the millet in the serving bowl. Arrange the vegetables on 1 side. 16. Drizzle little sauce and place the cottage cheese pieces on millets. Drizzle some more sauce on cottage cheese pieces. 17. Chop some parsley over and serve hot. Ready in no time, the crunchy deep-fried parcel of cream cheese and chicken mince is a lovely deep-fried pastry. Love it. CHICKEN AND CHEESE PARCELS Ingredients ¾ cup chicken mince 8 wonton sheets 2 tbsps chopped spring onion bulbs 1 tbsp chopped garlic 2 tbsps chopped spring onion greens Crushed black peppercorns to taste Salt to taste ¼ cup cream cheese 1 tbsp blended sesame oil Corn flour slurry as required Oil for deep frying Sweet chilli sauce for serving Method 1. Take chicken mince in a bowl. Add spring onion bulbs, garlic, spring onion greens, crushed black peppercorns, salt, cream cheese, blended sesame oil and mix well. 2. Place the wonton sheets on worktop. Place the mixture in the centre and brush the cornflour slurry on the edges. Bring 4 edges together to make a pocket. 3. Heat sufficient oil in a kadai and slide the prepared pockets in. Deep fry till golden brown and crisp. 4. Drain on absorbent paper and serve hot with sweet chilli sauce. ALOO BEANS KI SABZI Ingredients 2 medium potatoes (aloo), peeled and cut into batons 200 grams French beans, stringed and cut into 2 inch pieces 2-3 tbsps oil 1 tsp mustard seeds 1 tsp cumin seeds 1 tsp red chilli powder ½ tsp turmeric powder ½ tsp cumin powder 1½ tsps coriander powder 1 tsp garam masala powder 1 tsp dried mango powder (amchur) 2 tbsps chopped fresh coriander leaves Chapatis for serving Method 1. Heat oil in a nonstick pan. Add mustard seeds and once they begin to splutter, add cumin seeds and mix well. 2. Add potatoes, cover and cook on medium heat for 4-5 minutes. 3. Add French beans and mix well. 4. Add red chilli powder, cumin powder, coriander powder, garam masala powder, dried mango powder and mix well. 5. Sprinkle 2-3 tbsps water, add salt and mix well. Cover and cook on low heat for 6-8 minutes. 6. Add coriander and mix well. 7. Transfer in a serving bowl and serve hot with chapatis. PRAWNS MAPPAS Ingredients 16-20 medium prawns, peeled and deveined 2-3 tbsps coconut oil 1 tsp mustard seeds 2 tsps chopped ginger 1 tbsp chopped garlic 2-3 green chillies, slit 2 medium onions, sliced 15-20 shallots, sliced 4-5 dried red chillies, stemmed 1 tsp garam masala powder ½ tsp turmeric powder ½ tsp fennel powder ½ tsp crushed black peppercorns 3-4 fish tamarind pieces (kudampuli) 1 large tomato, cut into wedges 1 cup thin coconut milk 8-10 curry leaves Salt to taste ½ cup thick coconut milk Steamed rice for serving Method 1. Heat coconut oil in a pan. Add mustard seeds and once they start to splutter, add ginger, garlic, green chillies and sauté for 30 seconds. 2. Add onions and sauté till translucent. Add shallots and sauté for 2-3 minutes on medium heat. 3. Add dried red chillies and mix well. Add prawns and sauté on high heat for 2-3 minutes. 4. Add garam masala powder, turmeric powder, fennel powder, crushed black peppercorns and mix well. 5. Add fish tamarind pieces, tomato and sauté for a minute. 6. Add thin coconut milk, curry leaves and allow the mixture to come to a boil. 7. Add salt, thick coconut milk and mix well. Cook for 2 minutes. 8. Transfer in a serving bowl, and serve hot with steamed rice. Harissa Falafel | छोले से बनाये स्वादिस्ट तीखा फलाफ़ल | Sanjeev Kapoor Khazana
A doubly flavourful falafel made with the mildly spicy Harissa when served with hummus is a wonderful treat. HARISSA FALFEL Ingredients 1 tbsp coriander seeds 1 tsp cumin seeds 1 medium red capsicum 2 cups soaked chickpeas 4-5 dried red chillies, soaked and drained 5-6 garlic cloves Salt to taste 8-10 fresh parsley leaves 1 tbsp white vinegar Oil for deep frying Hummus to serve Micro greens for garnish Red chilli powder for garnish Olive oil for garnish Method 1. Dry roast coriander seeds and cumin seeds till fragrant in a pan. Take the pan off the heat and allow to cool slightly. 2. Peel the capsicum, cut it in half, discard the seeds, and roughly chop the capsicum. 3. Put the soaked chickpeas in a food processor jar, add the roasted coriander seeds-cumin seeds mixture, soaked dried red chillies, garlic cloves, chopped capsicum, salt, parsley leaves and vinegar and coarsely process. Transfer in a shallow bowl. 4. Heat sufficient oil in a kadai. Take small portions of the mixture and shape it into an oblong shape. Slide into the hot oil a few at a time and deep fry till golden brown and crisp. Drain on an absorbent paper. 5. Arrange the falafel on a serving plate, serve with hummus garnished with micro greens, red chilli powder, and olive oil. Eggless Orange Scones | Scones without Egg | बिना अंडे के बनाये स्कोन्स | Sanjeev Kapoor Khazana
Delectably English. These fruity scones with orange and cranberries are perfect to be served at high-tea. EGGLESS ORANGE CRANBERRY SCONES Ingredients 1 Malta orange 2 tbsps chopped dried cranberries 2 cups refined flour (maida) 1½ tsps baking powder ½ tsp salt ¼ cup castor sugar 1 cup chilled butter, cut into cubes 1½ tbsps white chocolate chips Jam to serve Whipped cream to serve Method: 1. Sift together refined flour and baking powder in a large bowl. Add salt, sugar and zest of Malta orange and mix well. 2. Add butter and mix with your fingertips till mixture resembles to the bread crumbs consistency. 3. Squeeze the juice of Malta, add the dried cranberries, white chocolate chips and knead with light hands till the mixture comes together and forms a dough. Wrap it in a parchment sheet and refrigerate for 15-20 minutes. 4. Preheat the oven at 180°C. 5. Roll the dough into a sheet of 1-inch thickness. Cut into roundels using a cookie cutter. 6. Arrange on a baking tray and bake in the preheated oven for 20-25 minutes. 7. Remove the tray out of the oven and allow to cool slightly. 8. Arrange the scones on a serving plate and serve with jam and whipped cream. If you always catch yourself thinking “a moment on the lips, forever on the hips” whenever you’re going to indulge in something sweet, these delectable Custard Tarts are the perfect sweet indulgence for you! These bite sized delights pack a rich, creamy, fruity flavour that is bound to impress your taste buds. But the great thing about these tarts is that not only do they help you in portion control (with their cute little bite-sized goodness), they also have ABSOLUTELY NO SUGAR! That’s because they are sweetened with Sugar Free Green – a sweetener made from 100% Natural Stevia Leaves from the house of @SugarfreeIndia CUSTARD TARTS Ingredients 2-3 tbsps vanilla custard powder 12 readymade tart shells ¾ cup milk 6-8 strawberries 13 measures Sugar Free Green 2-3 tbsps dried rose petals 1 cup unsweetened whipped cream Blanched and slivered pistachios for garnish Method 1. Now that we are sharing the Tandoori Masala recipe here, you can get the perfect masala that makes delicious marinations so that your recipes turn out lip-smacking. TANDOORI MASALA POWDER Ingredients 8 tbsps coriander seeds 2 tbsps cumin seeds 2 tsps fennel seeds (saunf) 10-12 green cardamoms 4 inch cinnamon stick, broken 4-5 black cardamoms 4-5 mace blades 2 tsps black peppercorns 15-20 cloves 16-20 dried Kashmiri red chillies 1 tsp fenugreek seeds (methi dana) 1 tsp stone flower (dagad phool) 1 tbsp dried fenugreek leaves (kasuri methi) 1 tbsp dried ginger powder (saunth) 2 tsps dried mango powder (amchur) 1 tbsp ratanjoth 2 tsps turmeric powder ¼ nutmeg 1½ tsps black salt Method 1. Lightly dry roast coriander seeds, cumin seeds, and fennel seeds in a non-stick pan. Transfer in a large plate and allow to cool. 2. Dry roast green cardamoms, cinnamon stick, black cardamoms, mace blades, black peppercorns, and cloves in the same pan for 1-2 minutes. Transfer in the same plate. Allow to cool. 3. Similarly dry roast dried red chillies in the same pan for 1-2 minutes. Transfer in the same plate. Allow to cool. 4. Dry roast fenugreek seeds in the same pan for 1 minute. Transfer in the same plate. 5. Put the stone flower and dried fenugreek leaves in the same pan and roast for 30 seconds. Transfer in the same plate and allow to cool completely. 6. Once the roasted spices have cooled, transfer them in a grinder jar. Add dried ginger powder, dried mango powder, rattanjoth, turmeric powder, nutmeg and black salt and grind to a fine powder. This is tandoori masala powder. 7. Store this in an air tight container and use as required.
