Delectably English. These fruity scones with orange and cranberries are perfect to be served at high-tea. EGGLESS ORANGE CRANBERRY SCONES Ingredients 1 Malta orange 2 tbsps chopped dried cranberries 2 cups refined flour (maida) 1½ tsps baking powder ½ tsp salt ¼ cup castor sugar 1 cup chilled butter, cut into cubes 1½ tbsps white chocolate chips Jam to serve Whipped cream to serve Method: 1. Sift together refined flour and baking powder in a large bowl. Add salt, sugar and zest of Malta orange and mix well. 2. Add butter and mix with your fingertips till mixture resembles to the bread crumbs consistency. 3. Squeeze the juice of Malta, add the dried cranberries, white chocolate chips and knead with light hands till the mixture comes together and forms a dough. Wrap it in a parchment sheet and refrigerate for 15-20 minutes. 4. Preheat the oven at 180°C. 5. Roll the dough into a sheet of 1-inch thickness. Cut into roundels using a cookie cutter. 6. Arrange on a baking tray and bake in the preheated oven for 20-25 minutes. 7. Remove the tray out of the oven and allow to cool slightly. 8. Arrange the scones on a serving plate and serve with jam and whipped cream.
