MOONG SPROUTS BROWN RICE Ingredients ½ cup moong sprouts 1 cup Basmati brown rice, soaked for 2 hours 2 tbsps split skinless green gram (dhuli moong dal), soaked 3 tbsps oil 3 medium onions, roughly chopped 4 green chillies 1 tsp cumin seeds 7-8 cloves 2 bay leaves 2 one-inch sticks cinnamon 5-6 cauliflower florets 5-6 French beans, chopped 2 medium carrots Salt to taste ½ tsp garam masala powder ½ cup shelled green peas Method 1. Heat oil in a pressure cooker. Chop onions and green chillies in a chopper. 2. Put cumin seeds, cloves, bay leaves, cinnamon in the cooker and sauté till fragrant. 3. Add onion-green chilli mixture and continue to sauté. 4. Add cauliflower, French beans and moong dal and mix. Cut carrots into cubes and add. 5. Add 3½ cups water and mix. Add drained brown rice, salt, garam masala powder and sprouted moong and mix. Let the mixture come to a boil. Add green peas and mix. Put the lid on the pressure cooker and cook under pressure till 3-4 whistles are given out. 6. Open the lid when the pressure reduces completely and serve hot with yogurt or pickles and papads.
