Whether you’re settling in for a cozy evening or looking for a nourishing start to your day, this soup promises warmth and satisfaction with every spoonful. 😍😇 PUMPKIN SOUP Ingredients 2 cups red pumpkin, peeled and roughly chopped 1 medium onion, cut into quarters 7-8 garlic cloves ½ tsp dried mixed herbs A sprig of oregano A sprig of rosemary Salt to taste Crushed black peppercorns to taste 1 tbsp ghee 1½ cups vegetable stock Bread sticks for garnish Method 1. Preheat the oven to 180° C. 2. Take pumpkin on a baking tray, add onions, garlic, dried herbs, oregano, rosemary, salt, crushed black peppercorns and ghee. Place the baking tray in an oven and bake for 16-20 minutes. Remove and set aside. 3. Heat vegetable stock in a nonstick pan. 4. Meanwhile grind together the roasted pumpkin mixture to a fine paste. Add it to the stock and let it boil. 5. Adjust seasoning. Garnish with crushed black peppercorns and serve hot with breadsticks.
