Chana aur Gud ki Chikki | चना गुड़ चिक्की | Sanjeev Kapoor Khazana

Health and fun come in many forms. The Chana aur Gud ki Chikki is just one of them. CHANA GUD KI CIKKI Ingredients 1 cup roasted and peeled chana ¾ cup chopped jaggery (gud) 1 tsp ghee + for greasing ½ tsp green cardamom powder Method 1. Grease a parchment sheet and a plastic sheet with some ghee. 2. Heat a non-stick pan. Add jaggery and 2 tbsps water and cook till the jaggery melts. Continue to cook till the mixture reaches hard ball consistency, while stirring in between. 3. Reduce the heat to low and add ghee, green cardamom powder and mix well. Add the chana and mix till well combine. 4. Place the greased parchment sheet on a worktop, add the jaggery-chana mixture over it and place the plastic on top with the greased side facing down and gently press to level the top. Remove the plastic sheet and make square marks with the knife on the chikki while it is still warm. Allow to cool completely. 5. Cut into required shape and serve as required. With coconut cream and semi-ripe bananas, the mixed vegetable makhani gets a Jain twist. JAIN MIXED VEGETABLE MAKHANI Ingredients 10-12 small cauliflower florets, boiled and drained 6-8 French beans, cut into 1 inch pieces, blanched and drained ¼ cup boiled green peas 1 medium raw banana, boiled, peeled and cut into1 inch cubes 2 tbsps oil 5-6 black peppercorns 1 inch cinnamon stick 2-3 cloves 3 green cardamoms 1 tbsp red chilli paste 2 cups fresh tomato puree Salt to taste ¼ tsp turmeric powder ¼ cup coconut cream 1 tsp sugar 1 tbsp butter ¼ tsp dried fenugreek leaves powder Fresh coriander leaves for garnish Method 1. Heat oil in a non-stick pan. Add black peppercorns, cinnamon stick, cloves, green cardamoms, and mix well. Cook till fragrant. 2. Add red chilli paste, mix and cook for 1-2 minutes. Add tomato puree, mix and cook till the oil separates. 3. Add salt, turmeric powder and mix well. Cook for 1-2 minutes. 4. Stir in the coconut cream and cook for 1-2 minutes. 5. Add sugar and mix, cook till it melts. Add cauliflower, French beans, green peas, and raw bananas and mix well. Cook for 2-3 minutes. 6. Add butter and mix well. Cook for 1-2 minutes. 7. Add dried fenugreek leaves powder and mix well. Transfer into a serving bowl. 8. Garnish with fresh coriander leaves. Serve hot. Varan Batti | वरण बट्टी | Dal Baati | Maharashtrian Recipe | Sanjeev Kapoor Khazana

This dal and no-onion version of the curry is the Khandeshi version of Dal Bati from Rajasthan that makes for a wonderful dish for any time of the day. VARAN BATTI Ingredients 2 cups cooked split pigeon peas (toovar dal) 1 cup whole wheat flour (atta) ½ cup maize flour (makai ka atta) ½ tsp carom seeds (ajwain) 1 tbsp melted ghee + as required Salt to taste 2 tbsps oil 1 tsp mustard seeds 1 tsp cumin seeds 2 tsps chopped garlic 2-3 green chillies, slit 1 large tomato, chopped ½ tsp turmeric powder 2 tbsps chopped fresh coriander leaves Oil for deep frying Method 1. Take whole wheat flour in a bowl. Add maize flour. Crush carom seeds and ad to the bowl. Add ghee, salt, 1 cup water and knead to stiff dough. Cover with a moist muslin cloth and set aside for 10-15 minutes. 2. Divide the dough into equal portions and roll into balls. Drizzle little ghee and pat into a thick disk. Drizzle some more ghee and roll out into a thin disk. 3. Drizzle more ghee, fold and roll out into balls again. 4. Heat sufficient water in a steam. Apply ghee on the base of the steamer container, arrange the prepared battis and steam for 10-15 minutes. 5. Heat oil in a pan. Add mustard seeds and once they start to splutter, add cumin seeds, garlic and sauté for 30 seconds. 6. Add tomato, salt and sauté for 2-3 minutes or till the tomatoes are pulpy. 7. Add turmeric powder and mix well. Add cooked dal, 1½ cups water and mix well. Add coriander and mix well and allow to boil. 8. Heat sufficient oil in a kadai. Cut the battis into 4 portions and deep fry till golden brown and crisp. Drain on absorbent paper and set aside. 9. Arrange the prepared battis in a serving bowl, pour the prepared dal over and serve hot. Bread Rabdi | ब्रेड रबड़ी | Instant Rabdi | Homemade Rabdi | Sanjeev Kapoor Khazana

When coarsely ground and cooked in milk, the simple bread becomes a delicious creamy dessert. BREAD RABDI Ingredients 5 white bread slices ¾ cup condensed milk 2½ cups milk ½ tsp green cardamom powder 2 tbsps chopped pistachios + to sprinkle 2 tbsps chopped cashewnuts 2 tbsps chopped almonds Dried rose petals for garnish Method 1. Transfer bread slices in a blender jar and blend to a fine mixture. 2. Heat a deep nonstick pan add condensed milk and cook for 4-5 minutes. 3. Add milk and mix well. Lauki ke Laddoo | लौकी के लड्डू | Laddoo Recipes | Sanjeev Kapoor Khazana

A rich and crunchy version of lauki as a sweet dish, far from its halwa version. LAUKI KE LADDOO Ingredients 2 cups coarsely grated bottle gourd (lauki) 5 tbsps ghee + for greasing 2 tbsps edible gum resin (gond) ¼ cup grated mawa ¾ cup sugar ¼ cup coarsely crushed mixed nuts (almonds, cashew nuts and pistachios) 3 tbsps melon seeds (magaz) ¼ cup desiccated coconut ¾ tsp green cardamom powder ¼ tsp nutmeg powder Gold varq for garnish Pistachios powder for garnish Method: 1. Heat 2 tbsps ghee in a nonstick pan, add edible gum resin and sauté till they puff up. Transfer on a plate. 2. Heat the remaining ghee in the same pan, add bottle gourd and sauté for 6-8 minutes or till the mixture become dry. 3. Add mawa, continuously mix and cook for 2-3 minutes. Add sugar and continue to cook till the sugar melts completely and mixture thickens. Take the pan off the heat and allow to cool slightly. 4. Coarsely crush the puffed edible gum resin, add the bottle gourd mixture, mixed nuts, melon seeds, desiccated coconut, green cardamom powder, and nutmeg powder and mix till well combined. 5. Grease your palm with ghee, take small portions of the mixture and shape each portion into a ball. 6. Arrange on a serving plate, garnish with gold varq and pistachios powder. Serve. This quick-fix light snack from Chandrapur is a spicy puffed rice and pressed rice preparation that is finished off with an onion-coriander garnish. KACHCHA CHIVDA Ingredients 2 cups puffed rice 2 cups thin pressed rice (patla poha) 3-4 tbsps oil 1½ tsps mustard seeds 1 small onion, finely chopped ¼ cup daliya dal 3 tbsps chopped fresh coriander leaves ½ cup fried peanuts 2 tbsps ready-made thecha ½ tsp turmeric powder ½ tsp red chilli powder ¼ tsp roasted cumin powder Salt to taste Mixture of chopped onion and chopped fresh coriander leaves for garnish Method 1. Heat oil in a pan, add mustard seeds and let them splutter. Take the pan off the heat and allow to cool completely. 2. Take puffed rice in a parat. Add pressed rice, onion, daliya dal, coriander leaves, fried peanuts, ready-made thecha, turmeric powder, red chilli powder, roasted cumin powder and salt. Think a quick and filling meal and Dal ki Dulhan is one dish you must dry. The Bihari version of Gujarati Dal Dhokli and of Maharashtrian Varan Fala… DAL KI DULHAN Ingredients 1 cup split pigeon pea (toor dal), soaked ¼ cup split Bengal gam (chana dal), soaked ¾ tsp turmeric powder Salt to taste 1½ cups whole wheat flour 3 tsps mustard oil 2-3 tbsps ghee 1½ tbsps chopped garlic 2 tsps cumin seeds 4-5 dried red chilies 1 medium onion, finely chopped ½ tsp red chili powder ½ tsp coriander powder ½ tsp garam masala 1 tbsp chopped fresh coriander Method:- 1. In pressure cooker add the toor dal, chana dal; add 3½ cups of water, ½ tsp turmeric powder, salt to taste and mix well. Cover the lid and cook for 4-5 whistles on medium heat. 2. Meanwhile to make the dough, take whole wheat flour in a parat add salt to taste, mustard oil. Mix well and gradually add the ¾ cup water, kneed into semi soft dough. Cover with the damp muslin cloth, set aside for 5 minutes. 3. Take a big portion of a dough roll it into a boll, dust the work top with some whole wheat flour, place the ball and roll it into the large disk. Cut with the small stainless steel bowl or a round cookie cutter. 4. Apply the water on four sides of disk, 5. For the tadka heat ghee in a deep pan, add cumin seeds, chopped garlic and sauté till it becomes light golden, add dried red chilies and sauté till golden brown. 6. Add onion and sauté till golden brown add ¼ tsp turmeric powder, red chilli powder, coriander powder, garam masala and cook for 1 minute. 7. Open the lid once the pressure reduced completely, add cooked dal into the prepared tadka, and mix well. 8. Add in the prepared dumplings, gently mix, and bring the mixture to boil, reduce the heat to low cover and cook for 6-8 minutes. 9. Add chopped coriander and mix well, transfer the dal on serving bowl, drizzle some ghee, garnish with fresh coriander sprigs, and serve hot. Heat 4 cups water in a small deep non-stick pan, cover and bring to boil. Add rice and salt, cover and cook till rice is done. 2. Heat oil in a deep non-stick pan. Add cumin seeds and sauté till fragrant. Add turmeric powder and sauté for 10 seconds. Add ginger-garlic paste, mix and sauté for 30 seconds. 3. Add onion puree and sauté for 1 minute. Add green chillies, coriander powder and cumin powder, mix well and sauté for 30 seconds. 4. Add tomato puree and salt, mix and cook for 1 minute. Add garam masala powder and mix. 5. Finely chop coriander sprigs, add to the pan and mix. Add corn kernels, mix, cover and cook for 2 minutes. 6. Strain cooked rice in a colander. Spread rice on top of onion-tomato mixture, cover and cook for 1-2 minutes. Mix lightly. 7. Serve hot. Take as many as you can… It has the goodness of wheat flour with that aromatic whiff of green cardamom. It’s simply wonderful. ATTE KI NANKHATAI Ingredients 1¼ cups whole wheat flour (atta) ¾ cup melted ghee 1 cup powdered sugar ¼ cup gram flour (besan) ¼ cup semolina ½ tsp green cardamom powder Slivered pistachios to sprinkle Slivered almonds to sprinkle Tea for serving Method 1. Preheat the oven at 180°C. 2. Take melted ghee in a bowl. Add powdered sugar and mix till sugar dissolves. 3. Add whole wheat flour, gram flour, semolina, green cardamom powder, baking powder and mix well to form soft dough. 4. Divide the mixture into equal portions and flatten slightly. Arrange on a baking tray. 5. Sprinkle almonds and pistachio slices on top and press slightly. Bake in preheated oven for 10-15 minutes. 6. Allow to cool. 7. Store in air tight container or serve with tea. Also, some ingredients in the marinade will surprise you. 4 TYPES OF TANDOORI MARINATIONS Ingredients 1200 grams chicken leg boneless, cut into 1 inch pieces 2-3 tbsps butter + for basting + for brushing Chaat masala to sprinkle Onion rings to serve Lemon wedges to serve Mint leaves to serve Green chutney to serve Red marination 1½ tbsps red chilli paste ½ cup hung yogurt 2 tbsps ginger-garlic paste Salt to taste 1½ tsps red chilli powder ¼ tsp black salt 1 tsp garam masala powder ½ tsp roasted dried fenugreek leaves (kasuri methi) powder ½ tsp chaat masala 1 tbsp roasted gram flour (besan) ½ lemon 2 tbsps mustard oil Yellow marination ½ tsp turmeric powder ½ cup hung yogurt 1½ tbsps ginger-garlic paste Salt to taste ¼ tsp yellow chilli powder ¼ tsp black salt 1 tsp kasundi mustard paste ½ tsp chaat masala ½ tsp garam masala powder ½ tsp roasted dried fenugreek leaves (kasuri methi) powder ½ lemon 2 tbsps mustard oil 1 tbsp roasted gram flour (besan) Green marination 1/3 cup blanched spinach puree ½ cup hung yogurt 1½ tbsps ginger-garlic paste 1 tsp green chilli paste Salt to taste ¼ tsp black salt 1 tbsp fresh coriander paste ½ tsp garam masala powder ¼ tsp roasted dried fenugreek leaves (kasuri methi) powder 1½ tbsps roasted gram flour (besan) ½ lemon 2 tbsps mustard oil ½ tsp chaat masala White marination ½ cup hung yogurt 1 tbsp ginger-garlic paste ½ tsp green chilli paste Salt to taste ¼ tsp black salt ¼ tsp white pepper powder ¼ tsp mace (javitri) powder ¼ tsp green cardamom powder ¼ tsp garam masala powder ¼ tsp roasted dried fenugreek leaves (kasuri methi) powder ¼ tsp chaat masala 1/3 cup fresh cream 2 tbsps roasted gram flour (besan) 40 grams processed cheese 2 tbsps butter, room temperature ½ lemon Method 1. To make red marination, take hung yogurt in a large bowl. Add red chilli paste, ginger-garlic paste, salt, red chilli powder, black salt, garam masala powder, dried fenugreek leaves powder, chaat masala, roasted gram flour, and squeeze the juice of lemon and add mustard oil and whisk till well combined. 2. To make yellow marination, take hung yogurt in another bowl. Add ginger-garlic paste, turmeric powder, salt, yellow chilli powder, black salt, kasundi mustard paste, chaat masala, garam masala powder, roasted dried fenugreek leaves powder, and squeeze the juice of lemon. Add mustard oil and whisk till well combined. Add roasted gram flour and mix well. 3. To make green marination, take hung yogurt in yet another large bowl, add ginger-garlic paste, green chilli paste, salt, black salt, spinach puree, coriander paste, garam masala powder, roasted fenugreek leaves powder, roasted gram flour, squeeze the juice of lemon into it, add mustard oil and chaat masala and mix till well combined. 4. To make white marination, take hung yogurt in another large bowl, add ginger-garlic paste, green chilli paste, salt, black salt, white pepper powder, mace powder, green cardamom powder, garam masala powder, roasted dried fenugreek leaves powder, chaat masala, fresh cream, roasted gram flour, grate the processed cheese, and add butter, and squeeze the juice of lemon and whisk till well combined. 5. Add 300 grams chicken into each marination and mix well. Set aside to marinate for 1-2 hours. 6. Thread the chicken pieces onto individual skewers. 7. Heat butter in a non-stick grill pan. Place the chicken skewers on it and grill on high heat for 3-4 minutes. Flip and cook the other side till done, basting with butter in between. 8. Arrange the cooked chicken skewers on a serving plate and brush some butter over them. Sprinkle chaat masala and serve hot with onion rings, lemon wedges, mint leaves, and green chutney. A wonderful, rather sweet and a lightly spiced take of raw papaya. Makes for an interesting accompaniment. PAPAYA RELISH - PLASTIC CHUTNEY Ingredients 2 cups grated raw papaya ¾ cup sugar A small pinch of onion seeds (kalonji) A large pinch of fennel seeds (saunf) A small pinch of red chilli flakes A pinch of salt Method 1. Heat a non-stick pan, add papaya and sugar and mix well. Cook till the mixture turns translucent. 2. Add ¼ cup water, mix, cover and cook for 8-10 minutes or till soft. 3. Poi | Poee | पोई | Goan Bread | Goan Recipes | Sanjeev Kapoor Khazana

The pita bread from Goa.. Light and quite healthy owing to the wheat flour and bran. Goes well with chicken cafreal or pork vindaloo POI Ingredients 2 cups refined flour (maida) + for dusting 1 cup whole wheat flour (gehun ka atta) ¾ tsp sugar 1 tsp salt 1¼ tsps instant dry yeast 1 tbsp oil + for greasing + for brushing Wheat bran for dusting Method 1. Sift the refined flour and whole wheat flour in a large bowl. Add sugar, salt, instant dry yeast, and oil and mix well. Add 1¼ cups warm water and knead into a soft dough. Dust the worktop with some refined flour and continue to knead for 5-6 minutes. 2. Brush some oil in another large bowl and place the dough in it. Cover and set aside to prove for 1 hour. 3. Knockback the dough and divide them into portions of 70 grams each and shape them into a ball. 4. Generously dust the worktop with some wheat bran, place the dough ball on it an dust with wheat bran and roll it into a disc. 5. Grease a baking tray and line with a parchment paper. Brush some oil, and place the disc at equidistant. Set aside to prove for 30 minutes. 6. Meanwhile, preheat the oven at 220ºC. 7. Place the tray in the preheated oven and bake for 10-12 minutes. Bring them out of the oven and arrange on a serving bowl. Serve. Dabeli gets spicy with the fiery garlic-red chilli paste and puts on oodles of cheese minus the potato stuffing …. You will love it nevertheless. CHEESE LASUN PAV Ingredients 1 tsp red chilli-garlic chutney 8 cheese slices 4 pavs¸ slit without cutting through 1 tbsp butter + for toasting 2 tbsps dabeli masala 1 tbsp date and tamarind chutney Salt to taste 2 tbsps chopped fresh coriander leaves + for garnish Masala peanuts to serve Sev to serve Method 1. Heat butter in a non-stick pan. Add red chilli-garlic chutney and sauté till fat separates. 2. Add dabeli masala, date and tamarind chutney, salt, and coriander leaves and mix well. Cook for 2-3 minutes. 3. Switch the heat off and transfer it in a bowl. 4. Generously spread the prepared mixture inside the pavs. 5. Heat butter in a non-stick tawa. 6. Open the pavs and place it on the hot tawa with the masala side facing up. Place two cheese slices over each pav and fold it in half to make a sandwich. Toast on both sides till the cheese melts and the pavs turn crisp. 7. Arrange the pavs on a serving plate, garnish with masala peanuts, sev, and coriander leaves. Serve hot. The kokum fruit as a refreshing and stimulating rasam, will work up an appetite. Also brings out the light flavours from the curry leaves and spices wonderfully … KOKUM RASAM Ingredients 15-20 kokum petals, soaked in 2 cups warm water for 30 minutes ¼ tsp turmeric powder 2 tbsps rasam powder ½ tsp asafoetida (hing) ¾ crushed black peppercorns 2 cups cooked pigeon peas water Salt to taste 2 tbsps chopped fresh coriander leaves Steamed rice to serve Tempering 1½ tbsps ghee 1 tsp mustard seeds ½ tsp cumin seeds ¼ tsp asafoetida (hing) 6-8 curry leaves Method 1. Strain the soaked kokum petals in a large bowl with the help of a strainer. Add turmeric powder, rasam powder, and asafoetida and mix till well combined. Transfer this into a deep pan and cook till it reduces to half. 2. Add crushed black peppercorns, cooked pigeon peas water, and salt and mix well. Boil for 2-3 minutes. 3. To make the tempering, heat ghee in a small pan. Add mustard seeds and let them splutter. Add cumin seeds, asafoetida, and curry leaves and mix well. Immediately transfer this into the rasam and mix well. 4. Continue to cook for 1-2 minutes. Add coriander leaves and mix well. Switch the heat off and transfer the rasam into a serving bowl. 5. Serve hot with steamed rice. This tomato lentil soup will surely whet your appetite what with the lovely orange colour and the light garnishing of toasted pumpkin seeds and crushed black peppers. TOMATO LENTIL SOUP Ingredients 4 large tomatoes, roughly chopped ½ cup soaked and drained split red lentils (masoor dal) 2 tsps extra virgin olive oil + to drizzle 1 bay leaf 5-6 black peppercorns 2 tsps chopped garlic 2 medium white onions, sliced 1 tsp chopped celery 6-8 coriander stems Salt to taste 3 cups vegetable stock 2 tsps butter Toasted pumpkin seeds to sprinkle Crushed black peppercorns to sprinkle Method 1. Heat olive oil in a deep pan. Add bay leaf, black peppercorns, garlic and sauté for 30 seconds. 2. Add onion, celery, coriander stems and sauté till onions turn translucent. 3. Add tomatoes and mix well. Add red lentils, salt and mix well. 4. Add vegetable stock and mix well. Cover and cook on medium heat for 10-15 minutes. 5. Discard the bay leaf, switch off the heat and grind to fine puree with the help of a hand blender. 6. Add butter and mix well. 7. Transfer in a serving bowl, drizzle some extra virgin olive oil, sprinkle toasted pumpkin seeds, crushed black peppercorns and serve hot. Spicy steamed chicken momos tossed in a mildly fiery sauce are a great way to … CHILLI CHICKEN MOMOS Ingredients 500 grams chicken mince (keema) Readymade momo dough made using 1 cup refined flour Salt to taste Crushed black peppercorns to taste 1 tbsp finely chopped ginger 1 tbsp finely chopped garlic 2-3 green chillies, finely chopped 2 spring onion bulbs, finely chopped with the greens + for garnish 1 tsp soy sauce Oil for greasing Sauce 1½ tbsps oil 2 tsps finely chopped garlic 1 tsp finely chopped ginger 2-3 green chillies, slit 1 small onion, sliced 1 small green capsicum, thinly sliced 2 tsps soy sauce 1 tsp red chilli sauce Salt to taste Crushed black peppercorns to taste 1¼ cups chicken stock 1½ tbsps corn flour slurry Method 1. Take chicken mince in a large bowl. Add salt, crushed black peppercorns, ginger, garlic, green chillies, spring onion bulbs, soy sauce, and spring onion greens and mix till well combined. 2. Roll out the dough into a large thin disc. Cut out roundels using a cookie cutter. 3. To make a momo, take a roundel, place a portion of the chicken mixture in the centre, apply some water on the edges, and shape the momo as desired. 4. Heat sufficient water in a steamer. Arrange the momos in the steamer basket and steam for 8-10 minutes. 5. Meanwhile, to make the sauce, heat oil in a pan. Add garlic, ginger and mix well. Cook for 1-2 minutes. Add green chillies and mix well. 6. Add onion, and green capsicum and sauté for 1-2 minutes. Add soy sauce and red chilli sauce and mix well. Add salt, crushed black peppercorns, and chicken stock and mix well. 7. Slide in the momos and gently mix till the momos are well coated with the sauce. Garnish with spring onion greens and serve hot. Vegetable Barley Soup | वेजिटेबल बार्ली सूप | Healthy Recipe | Sanjeev Kapoor Khazana

A healthy broth made from a bunch of exotic veggies, wholesome barley that’s just mildly spicy, means full nutrition guaranteed. VEGETABLE BARLEY SOUP Ingredients ½ cup sweet corn kernels 1 small carrot, peeled and chopped 1 small green zucchini, chopped 10-12 small broccoli florets ¼ cup chopped pumpkin 1 cup cooked barley 1½ tbsps olive oil 1 tbsp chopped garlic 2 inch celery, chopped 2 tbsps chopped leeks 1 medium onion, chopped Salt to taste Black pepper powder to taste 1 cup tomato puree 3-4 fresh thyme sprigs 4-5 cups vegetable stock Crushed black peppercorns for garnish Method 1. Heat olive oil in a non-stick pan. Add garlic, celery, and leeks and mix well. Cook for 1-2 minutes. 2. Add onion and sauté till translucent. 3. Add sweet corn kernels, carrot, green zucchini, broccoli, pumpkin, salt, and black pepper powder and mix well. Cook for 1-2 minutes. 4. Add tomato puree, and mix. Pluck the leaves of thyme and add into the soup. Add vegetable stock, and mix well. Cook till the mixture comes to a boil. Add barley and mix well. Cook for 2-3 minutes. 5. Transfer into serving bowls, garnish with crushed black peppercorns. Serve hot. A must try … BAINGAN KA CHOKHA Ingredients 1 large green brinjal (baingan) 3-4 garlic cloves 2 medium tomatoes 1 medium onion, finely chopped 2 green chilli, chopped 3 tbsps chopped fresh coriander leaves Salt to taste 2 tbsps mustard oil Method 1. Make a few slits on the baingan, insert a garlic clove into each slit. 2. Heat a wire rack on direct flame, place the baingan and tomatoes over it and roast, rotating in between till well charred from all sides. 3. Place the roasted baingan and tomatoes on a worktop, peel, trim the tops and finely chop them along with the roasted garlic cloves. Transfer in a bowl, add onion, green chilli, coriander leave, salt and mustard oil and mix till well combined. 4. Transfer into a serving bowl and serve. Turkish Kebab | टर्किश कबाब | Kebab Recipes | Chicken Kebab | Sanjeev Kapoor Khazana

Chicken cubes marinated in a unique Turkish dressing and grilled to a wonderfully, lightly charred perfection. TURKISH KEBAB Ingredients 300 grams chicken leg boneless, cut into ½ inch cubes 2 tbsps olive oil 1½ tbsps finely chopped garlic 2 tsps red chilli flakes ¼ tsp turmeric powder ½ tsp dried thyme Crushed black peppercorns to taste Salt to taste ½ tsp cumin powder 1 tsp paprika powder 2 medium white onion, grated ½ cup thick yogurt 2 tsps lemon juice 2 small tomatoes 2 small white onions 2 green jalapenos Butter for grilling Khabus to serve Method 1. To make the marination, take olive oil in a large bowl. Add garlic, red chilli flakes, turmeric powder, dried thyme, crushed black peppercorns, salt, cumin powder, paprika powder, and squeeze the juice of white onion directly into it. Add yogurt, and lemon juice and whisk well. Add the chicken cubes and mix till each cube is well coated with the marinade. Set aside to marinate for 2-3 hours. 2. Cut the tomatoes and white onions in half. Diagonally cut the green jalapenos in half. 3. Alternatively thread green jalapeno, onion and tomato on to skewers. 4. Thread 8-10 chicken cubes on to the skewers. 5. Heat a non-stick grill pan. Brush with some butter and place the chicken skewers along with vegetable skewers on it and grill on all sides for 2-3 minutes or till done. Baste with butter in between. 6. Serve hot with khabus. This is insanely delicious. Shredded chicken sautéed with veggies becomes the top layer of a simple egg omelette and your breakfast is nothing but amazing. MASALA CHICKEN OMELETTE Ingredients 6 eggs Salt to taste ½ tsp red chilli powder ½ tsp turmeric powder 4 tbsps onion 4 tbsps tomato 2 green chillies, chopped 4 tbsps chopped fresh coriander leaves + for garnish 4 tsps butter 4 tsps oil Processed cheese as required Buttered pavs to serve Stuffing 200 grams boneless chicken, cut into thin strips 3-4 tbsps oil 1 tsp cumin seeds 2 small onions, chopped 2 green chillies, chopped ½ tsp turmeric powder 1 tsp red chilli powder 1 tsp coriander powder 1 tsp cumin powder Salt to taste 2 small tomatoes, chopped 2 tbsps chopped fresh coriander leaves Method 1. Break the eggs in a large bowl. Whisk it well with a fork. 2. Add salt, red chilli powder, turmeric powder, onion, tomato, green chillies, and coriander leaves and whisk well. 3. To make the stuffing, heat oil in a non-stick pan. Add cumin seeds, and let them change colour. 4. Add onions and green chilli, mix, and cook till golden brown. 5. Add turmeric powder, red chilli powder, coriander powder, cumin powder, and salt and mix well. Cook for 1 minute. 6. Add chicken and sauté on high heat for 3-4 minutes. 7. Add tomatoes, and coriander leaves and mix. Reduce the heat to medium, cover the pan and continue to cook for 4-5 minutes or till the chicken is done. 8. To make one portion, heat 1 tsp butter with 1 tsp oil in a small non-stick pan. Add a portion of the eggs mixture, cover and coo for 2-3 minutes. Spread a portion of the chicken mixture on top of the eggs, grate some processed cheese over it, cover and cook till cheese melts. 9. Transfer the omelette on a serving plate, garnish with coriander leaves. Handi Biryani | हांड़ी बिर्यानी | Chicken Biryani | Biryani Recipes | Sanjeev Kapoor Khazana

Chicken pieces marinated to perfection and cooked with aromatic spices and flavourful rice to make this delicious popular recipe of biryani. HANDI BIRYANI Ingredients 750 grams chicken, cut into 2 inch pieces on the bone Salt to taste ½ tsp turmeric powder 2 tsps ginger-garlic-green chilli paste 1 tsp red chilli powder ½ cup yogurt ½ cup fried onions + for sprinkling + for garnish 2 tbsps dried rose petals 2 tbsps chopped fresh coriander leaves + for sprinkling + for garnish 1 inch ginger, cut into thin strips + for sprinkling A large pinch of saffron, soaked in 1 tbsp warm milk + for drizzling 4 tbsps ghee + for drizzling 3 medium potatoes, cut into half 1 inch cinnamon stick 3-4 green cardamoms 3-4 cloves 81-0 black peppercorns 1 tsp caraway seeds (shahi jeera) 2 medium onions, thinly sliced 2 medium tomatoes, sliced 2-3 green chillies, slit 1 tbsp chicken masala 1 tbsp chopped fresh mint leaves Fresh mint leaves for sprinkling 2-3 green chillies, slit and deseeded Ready-made refined flour dough for sealing Fresh mint sprigs for garnish Green salad to serve Roasted papads to serve Boondi raita to serve Rice 1½ cups Basmati rice, washed, soaked for 20 minutes, and drained 3-4 cloves 1 black cardamom 3-4 green cardamoms 8-10 black peppercorns 1 bay leaf Salt to taste Method 1. Marinate the chicken with salt, turmeric powder, ginger-garlic-green chilli paste, red chilli powder and yogurt for 15-20 minutes. 2. Add fried onions, dried rose petals, coriander leaves, ginger, and soaked saffron into the chicken mixture and mix well. Set aside for 15-20 minutes more. 3. Heat ghee in a handi. Add the potatoes and sauté till golden brown. Drain. 4. Heat the ghee remaining in the handi, add cinnamon stick, green cardamoms, cloves, black peppercorns, and caraway seeds and cook till fragrant. 5. Add onions and mix well. Cook till translucent. 6. Stir in the tomatoes, salt, and green chillies and cook till the tomatoes turn soft and pulpy. 7. Add the marinated chicken and sauté on high heat for 3-4 minutes. 8. Add chicken masala, coriander leaves, mint leaves, and fried onions and mix well. Add potatoes and sauté for 1-2 minutes. Reduce the heat to medium, add ½ cup water, mix, cover the handi and continue to cook for 10-12 minutes. 9. Meanwhile, Heat sufficient water in a non-stick deep pan, add cloves, black cardamom, green cardamoms, black peppercorns, bay leaf, and generous amount of salt. Mix and bring the mixture to a boil. Add the rice, mix and cook for 8-10 minutes or till the rice is ¾ done. Drain the rice and spread it over the chicken mixture. 10. Drizzle soaked saffron, sprinkle fried onions, mint leaves, green chillies, ginger strips, and drizzle ghee. Sprinkle coriander leaves. 11. Apply the dough over the edges of the handi, place the lid over it and press it to seal properly. Cook on high heat for 8-10 minutes. Reduce the heat to low, place a tawa below the handi and continue to cook for 10-15 minutes. 12. Switch the heat off, and allow to rest for 10 minutes. 13. Open the lid of the handi. Transfer the biryani into a serving plate. Garnish with fried onions, coriander leaves, and mint sprigs. Serve hot with green salad, roasted papads. And boondi raita. RATALYACHE KAAP Ingredients 2 medium sweet potatoes (ratalu) 2 tbsps ginger-green chilli paste Black pepper powder to taste 1 tsp cumin powder 1 tbsp lemon juice 1 tbsp chopped fresh coriander leaves Rock salt (sendha namak) 1 cup barnyard millet (samo) flour Oil for shallow frying Chopped fresh coriander leaves for garnish Method 1. Peel the sweet potatoes and slice them into roundels. 2. Take ginger-green chilli paste in a large bowl, black pepper powder, cumin powder, lemon juice, coriander leaves, and rock salt and mix well. Add the sweet potato roundels and mix till each roundel is well coated with the masala. Set aside for 5 minutes. 3. Take the barnyard millet flour in a large plate. Coat each sweet potato roundel on both sides. 4. Heat sufficient oil in a non-stick tawa. Place the sweet potato roundels on it and shallow fry till golden brown and crisp on both sides. This Rajasthani special is going to be a great addition to the list of your sham ka nashta. So, get ready for a spicy & yummy tickle to your taste buds. MIRCHI VADA Ingredients 4-5 bhavnagri chillies Stuffing 2 tbsps oil 1 tsp mustard seeds ¼ tsp asafoetida (hing) 8-10 garlic cloves, crushed ¼ tsp turmeric powder 3 medium potatoes, boiled and peeled Salt to taste 1 tbsp chopped fresh coriander leaves 2 tsps white sesame seeds Batter 1 cup gram flour (besan) Salt to taste ¼ tsp turmeric powder A pinch of red chilli powder A pinch of asafoetida (hing) A pinch of baking soda Oil for deep frying To serve Green chutney to serve Date and tamarind chutney to serve Method 1. To make the stuffing, heat oil in a kadai, add mustard seeds, asafoetida, garlic 8-10 and sauté till golden brown. Add turmeric and mix well. 2. Add potatoes, mix and cook for 1-2 minutes. Add salt, mix and cook for 1-2 minutes. Add coriander leaves and white sesame seeds and mix. Take the pan off the heat and transfer on to a plate and allow to cool to room temperature. 3. Meanwhile, make a vertical slit in the green chillies without cutting through. 4. To make the batter, take gram flour in a large bowl, add salt, turmeric powder, red chilli powder, asafoetida, baking soda and ¾ cup water, mix to a smooth batter of coating consistency. 5. Heat sufficient oil in a kadai. 6. Stuff each green chilli with a portion of the potato stuffing. Dip and coat each stuffed green chilli in the batter and slide into the hot oil. Deep fry till golden brown and crisp. Drain on an absorbent paper. 7. Arrange on a serving plate and serve hot with green chutney and date and tamarind chutney. Marwadi Pyaaz Besan ka Parantha | मारवाड़ी प्याज़ बेसन का परांठा | Sanjeev Kapoor Khazana

One of the most unusual fillings to go into a paratha… besan and onion cooked in spices and herbs makes the paratha even more delectable. MARWADI PYAZ BESAN KA PARANTHA Ingredients ¾ cup gram flour (besan) 2 medium onions (pyaz), finely chopped Ready-made parantha dough made using 1 cup whole wheat flour 1 tbsp oil 1 tsp cumin seeds ¼ tsp asafeotida (hing) 1 tsp chopped garlic ½ tsp chopped ginger 2 green chillies, chopped 1 tsp red chilli powder ½ tsp turmeric powder Salt to taste 2-3 tbsps chopped fresh coriander leaves Whole wheat flour (gehun ka atta) for dusting Ghee for applying Yogurt to serve Pickle to serve Method 1. To make the stuffing, heat oil in a non-stick pan. Add cumin seeds and let them change colour. Add asafoetida, garlic, ginger, and green chillies and sauté for 1 minute. 2. Add onion, mix and cook till golden brown. Add red chilli powder, turmeric powder and salt and mix well. 3. Add the gram flour and coriander leaves, mix and cook on medium heat for 6-8 minutes while stirring occasionally. Take the pan off the heat and allow the mixture to cool completely. 4. Take a portion of the dough and shape it into a ball. Dust with whole wheat flour and place it on the worktop. Roll it into a small disc and stuff with a portion of the mixture. Bring the edges to the centre and press to seal. 5. Dust some more whole wheat flour and roll it into a disc. 6. Heat a non-stick tawa. Place the disc on it and cook on medium heat for 2-3 minutes. Flip, apply ghee and cook the other side for 2-3 minutes as well. Flip again, apply some ghee and cook for a few seconds. 7. Serve hot with yogurt and pickle. Given the health benefits of samo/sama, this vada is lightly spiced and is a simple preparation but filling. FARALI SAMA VADA Ingredients 1 cup barnyard millet (samo) flour 1 tsp ghee Rock salt (sendha namak) to taste 1 tsp cumin seeds 1½ tbsps white sesame seeds 2-3 tbsps roasted unsalted peanuts powder 2-3 green chillies, chopped 2 tbsps chopped fresh coriander leaves 1 tbsp grated ginger 1 large potato, boiled, peeled, and grated Oil for deep frying Yogurt to serve Method 1. Pour 1 cup water in a deep pan, add ghee, rock salt, and cumin seeds and mix. Bring the mixture to a boil. Add barnyard millet flour and mix till well combined. Sprinkle 2-3 tbsps water, cover and cook for 3-4 minutes. Transfer the mixture into a large bowl. Allow to cool slightly. 2. Add white sesame seeds, peanut powder, green chillies, coriander leaves, ginger, and potato and mix till well combined. Take small portions of the mixture and shape each portion into a ball. Flatten it slightly to shape it like a vada. 3. Heat sufficient oil in a kadai. Gently slide in the vadas a few at a time and deep fry till golden brown and crisp. Drain on an absorbent paper. 4. Arrange the vadas on a serving plate. Serve hot with yogurt. Who says no to this delicious, creamy, fruity custard !! And why would anyone when this dessert has lovely fruits and a creamy, soft custard !! FRUIT CUSTARD Ingredients Chopped assorted fruits (apples, kiwi, banana, black grapes, oranges) to serve 2 tbsps sugar 1 tbsp corn flour 2 tbsps milk powder ¼ tsp edible yellow food colour, mixed with 1 tbsp water 1 tsp vanilla essence 2 cups milk 2 tbsps sugar Fresh pomegranate pearls for garnish Fresh mint sprigs for garnish Method 1. To make the custard powder, put the sugar in a mixer jar, add corn flour, milk powder, edible yellow food colour, and vanilla essence and grind to a fine powder. 2. Mix together milk and 1 tbsp prepared custard powder in a pan and whisk till well combined. Place the pan on heat and continue to whisk and cook for 5-7 minutes or till the mixture thickens. Add sugar and mix well. Set aside to cool. 3. Pour the custard into individual serving bowl, add a portion of the assorted fruits and garnish with pomegranate pearls and mint sprigs. Vrat ki Burfi | व्रत की बर्फी | Fasting Recipes | Vrat Recipes | Sanjeev Kapoor Khazana

A treat for your efforts when fasting .. This vrat ki burfi is a wonderful fudge made from chestnut and almond flours with dessicated coconut to add a crunch. VRAT KI BURFI Ingredients 1½ cups water chestnut flour (singhade ka atta) ¾ cup ghee ¼ cup almond flour 1 cup desiccated coconut 1 cup milk 1½ cups sugar ½ tsp green cardamom powder Slivered almonds to sprinkle Method 1. Heat ghee in a nonstick pan. Add water chestnut flour and sauté on medium heat for 10-15 minutes or till it turns golden brown in colour. 2. Add almond flour, desiccated coconut and mix well. Cook for 2-3 minutes 3. Add milk and mix well. Add sugar and cook till it dissolves and the mixture becomes thick. 4. Add green cardamom powder and mix well. 5. Transfer the mixture in a greased burfi tray and spread evenly. Sprinkle almonds on top and set aside for 3-4 hours. 6. Cut into squares and serve. Kale Chane ki Kadhi | काले चने की कढ़ी | Rajasthani Recipe | Sanjeev Kapoor Khazana

Kale chane simmered in a flavoured curd gravy and served with steamed rice is an absolute soul food. KALE CHANE KI KADHI Ingredients 1 cup boiled brown chickpeas (kala chana) 1½ cups yogurt 2 tbsps gram flour (besan) ½ tsp turmeric powder Salt to taste 1 tsp red chilli powder 2 tsps coriander powder 1 tsp garam masala powder 2 green chillies, chopped 2 tbsps ghee 1 tsp cumin seeds ¼ tsp asafoetida (hing) 2 tbsps chopped fresh coriander leaves Red chilli oil for drizzling Steamed rice to serve Method 1. Take yogurt in a large bowl, add gram flour, turmeric powder, salt, red chilli powder, coriander powder, garam masala powder and green chillies and whisk till a lump free mixture is formed. Add 3 cups water and mix well. 2. Heat ghee in a deep pan. Add cumin seeds and let them change colour. Add asafoetida and cook for a few seconds. Add boiled brown chickpeas and mix well. 3. Add the yogurt mixture and mix well. Cook for 10-15 minutes or till done. 4. Add coriander leaves, mix and cook for 1 minute. 5. Transfer the kadhi into a serving bowl and serve hot with steamed rice. Vrat ke Dahi Vade | व्रत के दही वड़े | Fasting Recipes | Vrat Recipes | Sanjeev Kapoor Khazana

Dahi vade ka vratwala judwaa … This is a simple, upwas vala preparation of our traditional dahi vadas. VRAT KE DAHI VADE Ingredients 1½ cups cooked banyard millet (samo) Oil for deep frying 2 medium potatoes, boiled and peeled 1 tsp cumin seeds 2 tsps ginger-green chilli paste Rock salt to taste Thin buttermilk as required Sweetened yogurt as required Red chilli powder to sprinkle Roasted cumin powder to sprinkle Chopped fresh coriander leaves to sprinkle Method 1. Heat sufficient oil in a kadai. 2. Take banyard millet in a bowl. Grate potatoes directly in the bowl. 3. Add cumin seeds, ginger-green chilli paste, rock salt and mix well. 4. Divide the mixture into equal portions and roll into balls. 5. Slide into hot oil and deep fry till golden brown and crisp. Drain and add to the buttermilk and set aside for 5 minutes. 6. Squeeze excess moisture and transfer in a serving plate. Drizzle sweetened yogurt on top. 7. Sprinkle red chilli powder, roasted cumin powder and coriander on top. 8. Serve immediately. Wonderfully amazing .. This all-mushroom pizza is a delight when you have tried all pizza toppings. MUSHROOM WONDER PIZZA Ingredients 10-15 button mushroom, sliced 300 grams wonder dough Refined flour Olive oil for brushing Pizza sauce as required Grated mixed pizza cheese as required 10-12 pickled jalapeno slices Onion sliced as required 6-8 baby cherry tomatoes, halved Salt to taste Crushed black peppercorns to taste Fresh basil leaves as required Method 1. Preheat the oven at 180°C. 2. Dust some refined flour on the surface. Place the wonder dough roundel and roll into a thin disk. 3. Transfer on a baking tray. Brush olive oil evenly on top. Spread pizza sauce and sprinkle cheese on top. 4. Arrange mushrooms, jalapenos, cherry tomatoes on top. Sprinkle salt, pepper and sprinkle some more cheese on top. 5.
