चुकंदर का शोरबा | Beetroot Shorba | Sanjeev Kapoor Khazana

A warm and soothing shorba made of beetroot. BEETROOT SHORBA Ingredients 4 medium beetroots, peeled and roughly chopped 2 tsps oil 4-5 black peppercorns 1 bay leaf ½ tsp chopped ginger 1 tsp chopped garlic 1 medium onion, roughly chopped 1 medium tomato, roughly chopped Salt to taste ¼ tsp crushed black peppercorns + to sprinkle Breadsticks for serving Method 1. Heat oil in a pressure cooker; add black peppercorns, bay leaf, ginger, garlic and sauté for 30 seconds. 2. Add onion, tomato, beetroot, salt and mix well and cook 2-3 minutes. Add 3 cups water and mix well. Cover the lid and cook till pressure is released 4-5 times. 3. Open the lid once the pressure is released completely, discard the bay leaf. 4. Transfer the mixture into a blender jar and blend into a fine paste. 5. Heat a deep pan and add the ground mixture. Add 1½ cups of water, crushed black peppercorns and mix well, cook for 2-3 minutes. 6. Transfer in a serving bowl, sprinkle crushed black peppercorns and serve hot with breadsticks. A Maharashtrian delicacy made with raw mangoes. It’s like an instant spicy and flavourful chutney! KAIRI TAKKU Ingredients 3 medium raw mangoes 2 tsps red chilli powder Salt to taste 2-3 tbsps chopped jaggery 2 tbsps oil 1 tsp mustard seeds 1 tsp cumin seeds Method 1. Remove the top portion and grate the raw mangoes. 2. Add red chilli powder, salt, jaggery and mix well. Set aside for 15-20 minutes or till the jaggery melts. 3. For tempering, heat oil in a small nonstick pan. Add mustard seeds and once they start to splutter, add cumin seeds and mix well. Allow to cool. 4. Add this to the grated raw mango mixture and mix well. 5. Use as required. SWEETCORN RAITA Ingredients ¾ cup boiled sweet corn kernels 1½ cups chilled yogurt ¾ tsp roasted cumin powder + for sprinkling Black salt to taste ¼ tsp chaat masala ¼ tsp red chilli powder + for sprinkling 2 tbsps chopped fresh coriander leaves + for sprinkling Method 1. A super popular drink made roasted cumin seeds and spices! Topped with chilled drinking soda to make it fizzy and exciting! MASALA JEERU Ingredients ¼ cup cumin seeds (jeera) 10-12 black peppercorns, coarsely crushed 3-4 cloves ¾ cup + 1 tsp sugar ½ inch ginger, roughly chopped Black salt to taste Salt to taste ¼ tsp + 4 pinches of chaat masala A pinch of red chilli powder 2 lemon wedges 2 small lemons Ice cubes as required Drinking soda as required Method 1. Heat a nonstick pan. Add cumin seeds and roast on medium heat till they turn dark brown. 2. Remove 1 tbsp cumin seeds and add black peppercorns, cloves and roast for a minute. 3. Add ¾ cup sugar, 1 cup water, ginger and cook till sugar melts and the mixture thickens. 4. Transfer the roasted cumin seeds in a mortar. Add black salt, salt, ¼ tsp chaat masala, red chilli powder and remaining sugar and crush coarsely. 5. Strain the prepared jeera syrup. 6. Apply lemon on the rim of the glass and press onto the prepared spice mix. 7. Add a portion of the prepared syrup in each glass. Add black salt, salt and a pinch of chaat masala in each glass. Squeeze ½ lemon in each glass. Mix well. 8. Add ice and top up with the soda and stir. 9. Serve chilled. Pineapple on pizza may sound strange to many but this combination of chillies with pineapple is sure to make everyone want to try this! PINEAPPLE CHILLI SAUCE Ingredients ½ medium pineapple, peeled and roughly chopped 2-3 fresh red chillies, chopped ½ cup sugar ½ cup reserved pineapple juice from the can 1 tsp chopped garlic ½ cup canned pineapple juice ½ tsp smoked paprika powder Method 1. Transfer the pineapple in a blender jar and grind to fine paste 2. Heat a pan. Add the reserved water from pineapple can, red chillies, garlic, pineapple juice and mix well. 3. Add ground pineapple, paprika powder and cook on medium heat for 4-5 minutes or till the mixture thickens. 4. Allow to cool and serve. Bowl meals are great to look at, fun to eat and you can make it of any cuisine you like. This one is a Japanese inspired sushi bowl with all the elements of sushi, served in a humble way! SUSHI BOWL Ingredients 1 cup sushi rice Salt to taste 1 tsp sugar 2-3 tbsps rice wine vinegar 2 tbsps sriracha sauce ¼ cup mayonnaise 150 grams boneless chicken breast, cut into thick strips ¾ tbsp ginger-garlic paste 1½ tbsps corn flour Oil for deep frying 1 medium carrot, peeled and thinly sliced 4-6 small red radishes, sliced 1 medium English cucumber, sliced 1 cup shredded purple cabbage 1 medium avocado, flesh scooped 4 tbsps shredded nori sheet Toasted white sesame seeds to sprinkle Method 1. Heat a deep nonstick pan. Add sushi rice, 2 cups hot water, cover and cook on medium heat for 8-10 minutes. 2. Take salt and sugar in a bowl. Add rice wine vinegar and mix well. Set aside. 3. Take sriracha sauce in a bowl. Add mayonnaise and mix well. 4. Take chicken in a bowl. Add salt, ginger-garlic paste, corn flour and mix well. 5. Heat sufficient oil in a kadai. Slide the chicken pieces and deep fry till golden brown and crisp. Drain onto an absorbent paper and set aside. 6. Transfer the cooked rice in a plate and allow to cool. Add rice wine vinegar mixture and mix well. Transfer in a bowl and press well. 7. Turn it upside down in serving bowl. Place the fried chicken on 1 side, arrange carrot ribbons, red radish slices, cucumber, cabbage and avocado around the edge. 8. Drizzle sriracha-mayonnaise mixture on top. 9. Place nori sheet on top of rice, sprinkle sesame seeds and serve. This vibrant and deliciously pink curd rice is not just great to look at but tastes divine and is loaded with all the goodness of beetroot. A great way of including veggies in the food especially for kids! BEETROOT CURD RICE Ingredients 2 medium beetroot, boiled, peeled and roughly chopped 3 cups cooked rice 1 ½ cups chilled yogurt ½ tsp grated ginger 2-3 tbsps fresh cream Salt to taste 2 tbsps oil 1 tsp split Bengal gram 1 tsp mustard seeds ¼ tsp asafoetida (hing) 15-20 curry leaves Fried papadam for serving Method 1. Transfer the boiled beetroot in a blender jar and blend into fine paste. 2. Take cooked rice in bowl, mashed with the spoon add grated ginger, yogurt, fresh cream, salt, and prepared beetroot puree. Mix well till well combine. And set aside. 3. Heat oil in a non-stick pan add Bengal gram, sauté till golden brown. Add mustard seeds when they splutter add asafoetida curry leaves and sauté for 30 seconds. 4. Pore the prepared tempering on a beetroot mixture mix well and keep into the refrigerator for 1 hour. 5. Transfer on a serving bowl and serve with fried papadam. A firangi twist to our beloved aamrakhand! Sweet, delicious and creamy aamrakhand stuffing inside crunchy cannoli! AAMRAKHAND CANNOLI Ingredients 1 ripe mango, peeled and roughly chopped 1 cup hung yogurt 4 spring roll sheets (6’ x 6”) ½ cup powdered sugar ½ tsp green cardamom powder A pinch of saffron strands Oil for deep frying Melted dark chocolate as required Finely chopped pistachioss Method 1. Put the mango into a blender jar and blend to a fine paste. Transfer into a bowl. Add hung yogurt, powdered sugar and green cardamom powder and mix till well combined. Add saffron strands and mix well. Refrigerate for 1-2 hours. 2. Take 2 spring roll sheets and cut them into 4 equal squares. Similar repeat the same with remaining spring roll sheets as well. 3. To make cannoli, take a spring roll quarter and roll it over a cannoli mould and seal with water. 4. Heat sufficient oil in a kadai. Add the cannolis along with the mould and deep fry on medium heat till light golden and crisp. Drain on an absorbent paper. Allow to cool slightly, carefully demould the cannoli. 5. Dip both the corners into melted dark chocolate and dip in chopped pistachios. Keep aside to set completely. 6. Take the aamrakhand in a piping bag fitted with star nozzle. Pipe out the mixture into the prepared cannoli. Arrange on a serving plate. Serve. As the name suggests it all! A salad, perfect for Summer and involves seasonal fruits and veggies like tadgola (water apple), white onion, watermelon and many more! SUMMER SALAD Ingredients 6 ice apples (tadgola) 20-25 assorted lettuce leaves 1 cup watermelon balls 2 baby red radish, cut into thin roundels 4-5 cherry tomatoes, halved 1 small English cucumber, cut into triangles ½ small carrot, peeled, roughly chopped, boiled and drained 1 small white onion, thinly sliced 20-25 fresh mint leaves 10-15 fresh coriander sprigs Dressing 2 tsps dried mango powder (amchur) ½ tsp chaat masala ¼ tsp red chilli powder Crushed black peppercorns to taste Salt to taste ¼ cup apple juice 2 tbsps chopped fresh coriander leaves ½ tsp onion seeds (kalonji) Method 1. Peel ice apples and cut into quarters. 2. To make the dressing, combine together dried mango powder, chaat masala, red chilli powder, crushed black peppercorns, salt, apple juice, coriander leaves and onion seeds in a bowl. 3. Tear the lettuce leaves and add into a large bowl. Add watermelon balls, red radish roundels, cherry tomatoes, English cucumber, carrot and ice apple quarters. Add white onion, mint leaves, and coriander sprigs. Drizzle the prepared dressing and toss with light hands. 4. Transfer in a serving bowl. Serve. Dates are great snacks especially for a boost of energy! So, make them fun with different stuffings and toppings for an exciting snack! STUFFED DATES Ingredients 12-16 dates, seeded and slit Khoya Stuffing ½ cup grated khoya/mawa 1½ tbsps roasted and chopped almonds 1 tbsp pistachio powder 1 tbsp honey A pinch of green cardamom powder Coconut Peanut Stuffing 1½ tbsps desiccated coconut 1½ tbsps roasted peanut powder 2 tbsps dried rose petals 2 tsps toasted sesame seeds 1½ tbsps honey Orange Cream Cheese Stuffing ¼ cup cream cheese 2 tsps digestive biscuit powder 1 tsp orange marmalade ½ orange Garnish Pistachio powder Toasted white sesame seeds Desiccated coconut Roasted and chopped almonds Candied orange peel Method 1. For the khoya stuffing, take khoya in a bowl. Add almonds, pistachio powder, honey, green cardamom powder and mix well. 2. For coconut-peanut stuffing, take desiccated coconut in a bowl. Add peanut powder, dried rose petals, sesame seeds, honey and mix well. 3. For orange –cream cheese suffing, take cream cheese in a bowl. Add digestive biscuit powder, orange marmalade. Zest the orange directly in the bowl. 4. Fill up the cream cheese mixture in a piping bag and stuff the dates with the mixture. 5. Stuff other 2 mixtures with hand. 6. Spread the pistachio powder on 1st Plate, sesame seeds and desiccated coconut on 2nd plate and roasted almonds on 3rd plate. 7. Roll the stuffed dates one by one. 8. Garnish with candied orange peel and serve. कॉर्न पाइनॲपल सलाद | Corn Pineapple Salad | Sanjeev Kapoor Khazana

A salad full of flavours is sure to refresh you. The beautiful colours and taste will be the game changers. Try it now. CORN PINEAPPLE SALAD Ingredients ½ cup boiled sweet corn kernels 1 large pineapple 1 small white onion 1 fresh jalapeno 5-6 red cherry tomatoes 1 small green capsicum 10-12 fresh coriander sprigs ½ lemon 1½ tbsps extra virgin olive oil Sea salt to taste Crushed black peppercorns to taste Method 1. Trim the top of the pineapple and peel it. Cut into 1 inch cubes and transfer into a bowl. 2. Finely chop the onion and cut the jalapeno into roundels. Transfer this on to a plate. 3. Halve the red cherry tomatoes. Trim the top of the green capsicum and remove the seeds. Cut into thin strips. 4. To make the salad, transfer the pineapple cubes into a large bowl. Add the capsicum strips, tomato halves, jalapenos roundels and onion. Add the boiled sweet corn kernels, coriander sprigs, squeeze the juice of the lemon directly into it and drizzle extra virgin olive oil. Crush the sea salt and add into the salad. 5. Add the crushed black peppercorns and mix well. 6. Transfer the salad on a serving plate and serve immediately. All the mango lovers, here is an amazing Kairi ki Kadhi made using raw mango (kairi). You can imagine the blast of flavours this kadhi has, so try it out now to welcome the mango season. KAIRI KI KADHI Ingredients 2 medium raw mangoes, peeled, seeded and chopped ½ cup gram flour (besan) ½ tsp turmeric powder ½ tsp red chilli powder 2 tbsps oil 1 tsp mustard seeds ½ tsp fenugreek seeds 8-10 curry leaves 1 medium onion, sliced Salt to taste 1 tbsp chopped jaggery 2-3 tbsps chopped fresh coriander leaves + to sprinkle Steamed rice for serving Method 1. Transfer the raw mangoes in a blender jar. Add ½ cup water and grind to fine paste. 2. Transfer in a bowl. Add gram flour and whisk well. Add turmeric powder, red chilli powder and mix. 3. Add 2½ cups water and mix well. 4. Heat oil in a deep nonstick pan. Add mustard seeds and once they start to splutter, add mustard seeds and once they start to splutter, add fenugreek seeds, curry leaves, onion and sauté till onions turn translucent. 5. Add the raw mango mixture, salt, 1 cup water and mix well. Cook on medium heat for 8-10 minutes. 6. Add jaggery, coriander and mix well. 7. Transfer into serving bowl. Garnish with coriander and serve hot with steamed rice. Add cumin seeds to the pan and once they start to change the colour, add asafoetida, garlic, ginger, green chillies and sauté for 30 seconds. 3. Add onions and sauté till golden brown. 4. Add tomato puree and mix well. Cook till fat separates. 5. Add turmeric powder, coriander powder, red chilli powder, salt and mix well. 6. Crush the mangodis coarsely. 7. Add 1 cup water to the pan and once the mixture comes to a boil, add the crushed mangodis. Add 2 cups water and once the mixture comes to a boil, cover and cook for 15-20 minutes on low heat. 8. FUTI KADHI Ingredients 10-15 kokum petals 2 green chillies, chopped 1 tsp sugar Salt to taste 2 tbsps chopped fresh coriander leaves 1 tbsp ghee 1 tsp mustard seeds ¼ tsp asafoetida (hing) Method 1. A unique burger to satiate your cravings. Tikki is made using Kabuli Chana making it even more delicious. KABULI CHANA BURGERS Ingredients 1½ cups chickpeas (kabuli chana), soaked 4 mini whole wheat burger buns Oil for deep-frying 2 stalks spring onion greens, chopped 3 garlic cloves 8-10 fresh coriander sprigs Salt to taste 3-4 dried breadcrumbs 1-2 tbsps lemon juice ½ tsp red chilli powder A pinch baking soda 2-3 tbsps yogurt 4 x 2 inch lettuce leaves 4 tomato roundels 4 cucumber roundels 4 onion roundels Method 1. Heat sufficient oil in a kadai. 2. Grind together chickpeas, spring onion greens, 2 garlic cloves, coriander sprigs, salt and breadcrumbs to make a coarse mixture. Add lemon juice and grind again. Transfer in a bowl. 3. Add chilli powder and baking soda and mix well. 4. Divide the mixture into equal portions, shape them into patties and roll the edges on the worktop. 5. Deep-fry the patties in hot oil till golden and crisp. Drain on absorbent paper. 6. To prepare burnt garlic yogurt sauce, roast remaining garlic clove directly on the flame till golden. Transfer on the worktop and finely chop. 7. Take chopped garlic in another bowl. Add salt and yogurt and mix well. 8. Heat a non-stick tawa. 9. Halve the buns horizontally and roast from both sides till golden. Transfer on the worktop. 10. Place one lettuce leaf, tomato roundel, cucumber roundel and 1 pattie on top of the roasted base of a bun. 11. Put some burnt garlic yogurt sauce and 1 onion roundel on top. Cover with the remaining bun half and insert a skewer in the center. Similarly, prepare the remaining burgers. 12. Serve immediately. A perfect snack for your tea-time, Beetroot vada. It is crisp, loaded with goodness of beetroot and lots of taste. BEETROOT VADA Ingredients ¾ cup grated beetroot 1½ cups Bengal gram (chana dal), soaked with 6-8 dried red chillies for 5-6 hours and drained 10-12 curry leaves, shredded 1 tsp crushed black peppercorns 1 tsp fennel (saunf) powder 1 tbsp finely chopped ginger 2 tbsps chopped fresh coriander leaves 1 medium onion, finely chopped Salt to taste ¼ cup rice flour Oil for deep frying Filter coffee to serve Method 1. Put the soaked Bengal gram and soaked dried red chillies in a mixer jar. Grind to a coarse paste. 2. Transfer the paste into a large bowl. Add curry leaves, fennel powder, ginger, coriander leaves, onion, grated beetroot and salt and mix till well combined. 3. Add rice flour and mix. 4. To make vada, take small portions of the mixture and shape it into a ball. Flatten it lightly. 5. Heat sufficient oil in a kadai. Gently slide in a few vadas at a time and deep fry till golden brown and crisp. Drain on an absorbent paper. 6. Arrange the vadas on a serving plate and serve hot with filter coffee. Here is a unique dosa made using kidney beans! Of course, best things in life usually take a lot of time, just like that, you need to spend some time to ferment this dosa batter, but the final product is ultimate. Health and taste both in one. RAJMA DOSA Ingredients 1 cup kidney beans (rajma) ¾ cup short grain rice, soaked for 6-8 hours and drained ½ tsp fenugreek seeds (methi dana), soaked for 3-4 hours and drained Salt to taste Oil for drizzling Coconut chutney to serve Method 1. Take kidney beans in a large bowl, add water and wash it 1-2 times. Add fresh water and set aside to soak for 6-8 hours. Drain and add into a mixer jar. Add the soaked rice and soaked fenugreek seeds. Add 1½ cups water and blend to a smooth batter. 2. Transfer into a large bowl, cover and set aside to ferment for 6-8 hours. 3. Add ½ cup water and salt and mix till well combined. 4. Heat a non-stick tawa. Pour a ladleful of the batter and spread it in a circular motion to make a disc. Drizzle oil and cook for 2-3 minutes on medium heat. Fold in half and place it on a serving plate. 5. Serve hot with coconut chutney. These deep-fried delights are not only tasty but also loaded with nutritious methi. It makes for a lovely snack along with some garma garam chai. METHI MAKAI VADA Ingredients 2½ cups chopped fenugreek leaves (methi) ¾ cup maize flour (makkai atta) 2 tbsps whole wheat flour (gehun ka atta) 2 tsps toasted white sesame seeds ½ tsp red chilli powder ¼ tsp turmeric powder 1 tsp coriander powder ¾ tsp cumin powder ¼ tsp garam masala powder Salt to taste 1 tsp sugar 2 tsps ginger-green chilli paste ¼ tsp carom seeds (ajwain) 1¼ cups buttermilk 1 tsp fruit salt Tomato ketchup to serve Green chutney to serve Method 1. Take fenugreek leaves in a large bowl. Add maize flour, whole wheat flour, toasted white sesame seeds, red chilli powder, turmeric powder, coriander powder, cumin powder, garam masala powder, salt, sugar, ginger-green chilli paste, carom seeds and mix well. Add buttermilk and mix till well combined. Add fruit salt and mix well. 2. Heat sufficient oil in a kadai. 3. Take small portions of the mixture and shape each portion into a ball. Gently slide in a few of them into the hot oil and deep fry till golden brown and crisp. Drain on an absorbent paper. 4. Arrange on a serving plate and serve hot with tomato ketchup and green chutney. Sambhar with the flavour and taste of pumpkin is sure to make your experience of eating south Indian food better. PUMPKIN SAMBHAR Ingredients 500 grams pumpkin (kadu), peeled and cut into 2 inch pieces Salt to taste 2 tsps coconut oil ¼ tsp asafeotida (hing) 20-25 madras onions 1-2 green chillies, slit 2 medium tomatoes, finely chopped 2 medium brinjals, quartered 2 tbsps sambhar masala ½ tsp turmeric powder ½ cup tamarind water Fresh coriander sprig for garnish Steamed rice to serve Tempering 2 tbsps coconut oil 1 tsp mustard seeds 15-20 curry leaves 4-5 dried button red chillies ½ cup scraped fresh coconut ¼ cup chopped fresh coriander leaves Method 1. Put the pumpkin in a pressure cooker. Add 2 cups water and salt and mix well. Cook till 3-4 whistles are released. 2. Heat coconut oil in an earthen pot. 3. Add asafoetida and mix well. Add madras onions and sauté till translucent. Add green chillies and mix. Cook for 1-2 minutes. 4. Add tomatoes and mix and cook till soft and pulpy. 5. Add brinjals, mix and cook for 1-2 minutes. 6. Sprinkle salt, sambhar masala and mix well. Cook for 1 minute. 7. Stir in the turmeric powder and cook for 1-2 minutes. Pour the tamarind water along with 1 cup water and mix well. Cover and cook for 8-10 minutes. 8. Open the cooker once the pressure has reduced completely. Completely mash the cooked pumpkin with the help of a wooden churner. Transfer this into the brinjal-tamarind mixture and mix well. 9. Add ¾ cup water and mix, cover and cook for 3-4 minutes. 10. To make the tempering, heat coconut oil in a pan. Add mustard seeds and let them splutter. Add curry leaves and dried button red chillies and sauté for a few seconds. Add coconut and mix well. Cook till it turns golden. 11. Add the coriander leaves and mix well. Immediately pour this into the prepared sambhar and mix well. 12. Transfer the sambhar into a serving bowl. Garnish with coriander sprig and serve hot with steamed rice. MUTTE THORAN Ingredients 6 eggs (mutte) 2 tbsps coconut oil 1 tsp mustard seeds 1½ crushed ginger-garlic 2 large onions, thinly sliced Salt to taste 2-3 green chillies, slit 1 medium tomato, thinly sliced Crushed black peppercorns to taste 1 tsp coriander powder ½ tsp fennel (saunf) powder ½ tsp turmeric powder 10-15 curry leaves 2-3 tbsps scraped fresh coconut Method 1. Heat coconut oil in an iron kadai. Add mustard seeds and let them splutter. 2. Add crushed ginger-garlic and sauté for a few seconds. Add onion and mix well. Cook for 1-2 minutes. 3. Add salt and mix well. Cook till the onions turn translucent. 4. Add green chillies and mix. 5. Add tomato, mix and cook for 1-2 minutes. 6. Sprinkle crushed black peppercorns, coriander powder, fennel powder, and turmeric powder and mix well. Cook for 1-2 minutes. 7. Stir in the curry leaves and cook for a few seconds. Break in the eggs and mix till well combined. 8. Continue to mix till the eggs scramble and cook for 3-4 minutes. 9. Add coconut and mix well. Switch the heat off and transfer on to a serving plate. Serve hot. RAJMA & DALIA TIKKI SLIDERS Ingredients 1 cup kidney beans (rajma), soaked for 6-8 hours, boiled and drained ½ cup broken wheat (dalia), soaked for 1 hour and drained 8 slider buns 1½ tbsps chopped fresh mint leaves 2 tbsps chopped fresh coriander leaves ¼ cup browned onion 1 tbsp ginger-garlic-green chilli paste ½ tbsp kitchen king masala Salt to taste 1 cup corn flakes 1 cup panko Salt to taste ¼ cup corn flour Oil for deep frying Assorted lettuce leaves as required Onion roundels as required Mint mayo for drizzling 8 tomato roundels 2 cheese slices, cut into 4 squares Mustard mayo for drizzling French fries to serve Tomato ketchup to serve Method 1. Coarsely mash the kidney beans and transfer in a large bowl. Add soaked broken wheat, mint leaves, coriander leaves, browned onion, ginger-green chilli paste, kitchen king masala and salt and mix till well combined. 2. To make tikkis¸ take small portions of the mixture and shape each portion into a ball. Slightly flatten them. 3. Take the corn flakes in a wide plate and coarsely crush it. Add panko and salt and mix well. 4. Mix together corn flour and ¾ cup water in another bowl. 5. Dip each tikki in the corn flour slurry and coat it with the corn flakes-panko mixture till well coated from all sides. Repeat the process one more time. 6. Heat sufficient oil in a kadai. 7. Slide in the tikkis a few at a time into the hot oil and deep fry till golden brown and crisp. Drain on an absorbent paper. 8. Heat a non-stick tawa. Slit the slider buns in half and place them on the hot tawa. Toast for 1-2 minutes, flip and toast the other side for 1 minute. 9. To make the slider, place base portion of the slider bun on the worktop. Place some lettuce leaves on top`and sprinkle salt. Arrange some onion roundels, place one tikki over it. Drizzle mint mayo, place a tomato roundel, cheese slice and drizzle the mustard mayo. Cover with the top portion of the slider bun. Secure it with a toothpick. 10. This is an unusual rice dish from Tamil Nadu which is filled with the goodness of curry leaves. We all know that curry leaves are nutritious but we often discard it instead of eating, but if you make this recipe, everyone will love it. KARUVEPPILAI SADAM Ingredients 1 cup curry leaves (karuvepillai) 3 cups cooked kolam rice (sadam) 1½ tbsps Bengal gram (chana dal) 1½ tbsps split pigeon peas (toor dal) 1½ tbsps split skinless black gram (dhuli urad dal) 1½ tbsps coriander seeds ½ tsp fenugreek seeds (methi dana) 1 tsp cumin seeds 1 tsp black peppercorns 1 tsp white sesame seeds ½ lemon sized tamarind ball Tempering 2 tbsps sesame oil ½ tsp asafoetida (hing) 1 tsp mustard seeds 1 tsp split skinless black gram (dhuli urad dal) ¼ cup peanuts, roasted and peeled 8-10 curry leaves 2-3 dried red chillies Salt to taste Method 1. Dry roast Bengal gram, split pigeon peas, split skinless black gram, coriander seeds, fenugreek seeds, cumin seeds, black peppercorns and white sesame seeds till golden brown. Add curry leaves and sauté till crisp. 2. Add the tamarind and mix well. Cook for 1 minute. Switch the heat off and allow the mixture to cool slightly. 3. Put the roasted spices in a mixer jar and grind to a fine powder. 4. For the tempering, heat sesame oil in an earthen pot. Add asafoetida, mustard seeds and let them splutter. 5. Add split skinless black gram and peanuts and sauté for a minute. Add the curry leaves and mix well. 6. Add the dried red chillies, mix and stir in ground powder and mix well. 7. Add the cooked rice and mix till well combined. Add salt and mix well. 8. Transfer on to a serving plate and serve hot. Do you have some rice left at home? Here is an amazing way to give your leftover rice a new life. This instant dhokla as the name suggests can be made instantly and tastes delicious. INSTANT RICE DHOKLA Ingredients 1 cup leftover cooked rice ¾ cup yogurt 1 cup semolina (rawa) 2 tsps ginger-green chilli paste 1½ tbsps finely chopped green capsicum 1½ tbsps finely chopped yellow capsicum 1½ tbsps finely chopped red capsicum 1½ tbsps finely chopped carrot 1½ tbsps finely chopped spring onion bulbs 2 tbsps finely chopped spring onion greens Salt to taste 1 tsp sugar Oil for greasing 1 tsp fruit salt Tempering 1 tbsp oil 1 tsp mustard seeds A pinch of asafoetida (hing) 10-12 curry leaves 1½ tsps white sesame seeds Method 1. Put cooked rice in a blender jar. Add yogurt and blend to a fine paste. Transfer this into a large bowl. Add ginger-green chilli paste, green capsicum, yellow capsicum, red capsicum, carrot, spring onion bulbs, spring onion greens, salt, sugar and 1 cup water and mix till well combined. 2. Heat sufficient water in a steamer. 3. Grease a dhokla thali with some oil. 4. Add fruit salt into the batter and mix well. Transfer this into the greased thali and place it in the steamer and steam for 10-15 minutes or till done. Switch the heat off and allow to cool. 5. Cut the dhokla into squares. 6. To make the tempering, heat oil in a small pan. Add mustard seeds and let them splutter. Add asafoetida, curry leaves and white sesame seeds and sauté for a few seconds. Pour this immediately over the dhokla. 7. Arrange on a serving plate and serve with green chutney. Take chicken in a bowl. Add salt, light soy sauce, ginger-garlic paste, red chilli sauce, white pepper powder, vinegar and mix well. Set aside to marinate for 20 minutes. 2. Heat sesame oil in a shallow nonstick pan. Add the marinated chicken and sauté on high heat for 2-3 minutes on each side. 3. Add onions, salt and cook on high heat till the onions turn golden brown. 4. Add oyster sauce, red chilli, brown sugar and mix well. Cook on high heat for 1-2 minutes. 5. Add coriander and mix well. 6. Transfer in a serving bowl, garnish with fresh red chilli and serve hot. Baby corns tossed in a flavourful mixture and then baked to perfection make for a tasty snack. The aromatic tandoori flavour makes it a delectable snack which you must try. TANDOORI BABY CORN Ingredients 12-15 baby corns, blanched and drained ½ cup hung yogurt 1 tbsp roasted gram flour (besan) ½ tsp turmeric powder 1 tsp red chilli powder 1 tsp cumin powder 1 tsp coriander powder ½ tsp garam masala powder 2 tsps mustard oil 1 tbsp Kashmiri red chilli paste Salt to taste 1 tsp lemon juice 2 tbsps fresh cream ½ tbsp ginger-garlic paste 2-3 cloves 1 tsp butter + for basting Onion rings to serve Lemon wedges to serve Green chutney to serve Chaat masala for sprinkling Method 1. Preheat the oven at 180ºC. 2. Take hung yogurt in a large bowl. Add roasted gram flour, turmeric powder, red chilli powder, cumin powder, coriander powder, garam masala powder, mustard oil, Kashmiri red chilli paste, salt, lemon juice, fresh cream and ginger-garlic paste and mix well. Make a well in the centre. 3. Take a few hot charcoal pieces in a small stainless steel bowl. Place it in the well, add cloves and add 1 tsp butter. Immediately cover for the flavour infuse for 2-3 minutes. 4. Arrange the baby corns at equidistance on a greased baking tray. Place them in the preheated oven and bake for 15-20 minutes, while basting with butter in between. 5. Bring the tray out of the oven and place the tandoori baby corns on a serving plate. Sprinkle chaat masala and serve hot with onion rings, lemon wedges, and green chutney. Light, fluffy and chocolaty cake is delightful for any celebration. CREAM CHEESE POUND CAKE Ingredients ⅓ cup butter, softened ⅓cup cream cheese, softened ¾ cup castor sugar 2 eggs 1 tsp vanilla essence ¾ cup refined flour (maida) ¼ tsp salt 1 tbsp dark chocolate chips ⅛ cup milk (optional) Method 1. Preheat the oven at 180ºC. 2. Put the butter in a large bowl. Add cream cheese and beat with an electric beater till light. Add the castor sugar in batches and beat till the mixture turns light and fluffy. 3. Break in the egg one at a time and beat well in between each addition. 4. Add the vanilla essence and beat till well combined. 5. Sift the refined flour and salt directly into the mixture. Add the chocolate chips and gently fold in till well combined. 6. Pour in the milk and gently fold in till a smooth batter is formed. Transfer the batter into a desired silicon mould. Place it in the preheated oven and bake for 50-55 minutes. 7. Bring the cake out of the oven and allow to cool completely. De-mould and cut the cake into slices and arrange on a serving plate. वियतनामीज वर्मिसेली सलाद | Vietnamese Vermicelli Salad | Sanjeev Kapoor Khazana

Vietnamese salad made with rice vermicelli topped with variety of veggies, tasty chicken and flavourful dressing is a filling yummy dish. VIETNAMESE VERMICELLI SALAD Ingredients 100 grams rice vermicelli 2 boneless chicken thighs, cut into 2 inch pieces 8-10 garlic cloves 4-5 fresh red chillies A pinch of sea salt ½ lemon 1½ tbsps Siracha sauce A pinch of castor sugar ¼ tsp soy sauce ½ tsp fish sauce (optional) ½ tsp vinegar 2 tbsps oil Salad 1 medium English cucumber, cut into thin strips 1 medium carrot, cut into thin strips ¼ medium purple cabbage, finely shredded ¼ cup bean sprouts 2-3 fresh red chillies, chopped 10-12 fresh mint leaves 6-8 fresh coriander sprigs + for garnish Lemon wedge for garnish Method 1. Take rice vermicelli in a large bowl. Add sufficient hot water and mix. Set aside for 10 minutes. 2. To make the dressing, put the garlic cloves in a mortar, break the red chilies in half and add into this. Coarsely pound it with the help of a pestle. Add sea salt, squeeze the juice of lemon, add Siracha sauce, castor sugar, soy sauce, fish sauce and vinegar and whisk till well combined. Add ¼ cup water and mix well. 3. Drain the noodles into ice cold water. Drain through a strainer and keep aside till all the water is drained out. 4. Take chicken pieces in a large bowl. Add 1 tbsp of the dressing and rub it well on all the pieces of the chicken. Set aside to marinate for 15-20 minutes. 5. Heat oil in a non-stick pan. Place the chicken pieces and cook on high heat for 3-4 minutes. Flip and cook the other side for 3-4 minutes on high heat as well. 6. Reduce the heat to medium and continue to cook till the chicken is done. 7. To make the salad, take the noodles in a large bowl. Add cucumber, carrot, purple cabbage, bean sprouts, mint leaves, coriander sprigs and toss well. 8. Transfer the salad into a serving bowl. Place the chicken pieces and drizzle the dressing over it. 9. Garnish with lemon wedge and coriander sprig. Serve immediately. पेर मोहितो | Pear Mojito | Sanjeev Kapoor Khazana

A chilled frizzy mojito with the flavour of pear (नाशपाती) is the best thing for this summer. Try out this refreshing and simple recipe now. PEAR MOJITO Ingredients 2 medium pears, seeded and roughly chopped A dash of lemon juice 8 lemon wedges 16-20 fresh mint sprigs 4 tbsps sugar syrup Ice cubes as required Drinking soda as required Pear slices for garnish Lemon slices for garnish Method 1. Transfer the pear in a blender jar, add ½ cup water and grind to fine paste. Strain the juice through a fine strainer. 2. Transfer the lemon wedges in 4 individual glasses. Add mint sprigs and muddle with help of a muddler. 3. Add the prepared pear juice, sugar syrup and mix well. 4. Add ice cubes, top up with soda. Stir well. 5. Serve chilled garnished with pear slices and lemon slices. Serve immediately. मसालेदार चिकन स्लाईडर्स | Spicy Chicken Sliders | Sanjeev Kapoor Khazana

Flavourful marinated chicken shallow fried to perfection and then packed in amazing slider buns along with some veggies is a lovely snack to munch on. Serve it along with some french fries and the prepared sauce. SPICY CHICKEN SLIDERS Ingredients 2 tsps chipotle sauce 2 boneless chicken breasts 4 slider buns, halved ½ cup mayonnaise 1½ cups corn flakes Salt to taste 2 tsps garlic powder 1 tsp red chilli flakes Crushed black peppercorns to taste 2 tsps Worcestershire sauce 2 eggs Refined flour as required Oil for shallow frying Assorted lettuce leaves as required Onion roundels as required Tomato roundels as required Cucumber slices as required French fries to serve Method 1. To make the spread, take mayonnaise in a bowl. Add chipotle sauce and mix well. 2. Transfer the corn flakes in a zip-lock bag and coarsely crush it with the help of a rolling pin. 3. Horizontally cut each chicken breast in half. Place them on a plate. Add salt, garlic powder, red chilli flakes, crushed black peppercorns and Worcestershire sauce and rub the mixture well on each chicken piece. 4. Break in the eggs in another bowl. Add salt and crushed black peppercorns and whisk well with a fork. 5. Coat each chicken piece with refine flour and dust off the excess flour. Dip it into whisked eggs and coat it with the crushed corn flakes. 6. Heat sufficient oil in a non-stick shallow pan. Place the chicken pieces and shallow fry till golden brown and crisp on both sides. Drain on an absorbent paper. 7. To make the sliders, apply some spread on to the base portion of the slider buns. Place a few lettuce leaves. 8. Place the fried chicken piece on to it. Place onion roundels, tomato roundels, cucumber slice, and apply some of the spread on to top potion of the slider buns and place them on top to make a slider. Secure it with a toothpick. 9. Serve with French fries and the prepared spread. करूवेपिल्लाई चिकन | Karuveppilai Chicken | Sanjeev Kapoor Khazana

Chicken cooked in a beautiful mix of curry leaves is a authentic chicken recipe that you must try. KARUVEPPILAI CHICKEN Ingredients 1 cup curry leaves (karuvepilai) 750 grams chicken, cut into 2 inch pieces on the bone 10-12 green cardamoms 2 tbsps coriander seeds 6-8 cloves 1 tbsp fennel seeds (saunf) 1 tbsp cumin seeds 1 tsp black peppercorns 5-6 dried red chillies (pandi chillies) 2-3 tbsps coconut oil 1½ tbsps crushed ginger-garlic 2-3 green chillies, slit 20-25 Madras onions, sliced ½ tsp turmeric powder 1 tsp garam masala powder Salt to taste ½ lemon Fried curry leaves for garnish Method 1. Dry roast green cardamoms, coriander seeds, cloves, fennel seeds, cumin seeds, black peppercorns, and dried red chillies till fragrant. 2. Add the curry leaves and sauté till they turn crisp. Transfer the mixture in a bowl and allow to cool slightly. 3. Put the dried roasted spices in a mixer jar and grind to a fine powder. 4. Heat coconut oil in a pan. Add crushed ginger-garlic, green chillies and mix well. Cook for 1 minute. 5. Add Madras onions and sauté till translucent. 6. Add the chicken and sauté on high heat for 3-4 minutes. Add turmeric powder and garam masala powder and mix well. Add ground masala and mix well. 7. Add 1 cup water and mix. 8. Add salt and mix well. Reduce the heat to medium and continue to cook for 8-10 minutes or till the chicken is done. 9. Squeeze the juice of lemon and mix well. Transfer in a serving bowl. Garnish with fried curry leaves. Serve hot. मूंगफल्ली पचड़ी | Peanut Pachadi | Sanjeev Kapoor Khazana

A wonderful accompaniment to the idli or dosa, this pachadi is a simple south Indian preparation. PEANUT PACHADI Ingredients 1 cup raw peanuts 1½ tbsps coconut oil 2 tsps cumin seeds 15-20 Madras onions 4-5 garlic cloves 3-4 dried red chillies 1 tbsp tamarind water Tempering 2 tbsps coconut oil 1 tsp mustard seeds 1tsp urad dal 10-12curry leaves 3-4 broken dried red chillies Salt to taste Idlis for serving Method 1. Dry roast the peanuts for 7-8 minutes or till crisp on low heat. Transfer on a large plate and allow to cool slightly. 2. Remove the skin of the roasted peanuts while they are still slightly warm. 3. Heat coconut oil in a non-stick pan. Add cumin seeds and let them change colour. Add Madras onions, garlic cloves, and dried red chillies and sauté for 2-3 minutes. Take the pan off the heat and allow to cool slightly. 4. Transfer the roasted peanuts in a mixer jar. Add the onion mixture and 1 cup water and grind to a fine paste. 5. Add tamarind water and blend again. Transfer into a bowl. 6. For the tempering, Heat coconut oil in a non-stick pan, add mustard seeds let it splutter, add urad dal, curry leaves, dried red chillies and sauté for few seconds 7. Pour the tempering in a mixture, add salt and mix well. 8.
